Reflections on the Season The holidays are here and as the spirit of the season is upon us, we often try to replicate what made the season feel so magical to us in our youth. The traditions we share with our own families and friends often mirror some of what we experienced as a child. I cannot imagine Christmas without sugar cookies – the recipe by Betty Crocker, but perfected by my sister. Read up on local food favorites in our Traditions at the Table article on page 20. We are so lucky here in Western Massachusetts to be within reach of plenty of great winter activities. From Bright Nights to the Symphony to Thunderbirds games, there’s something for everyone at this most wonderful time of the year. Although this season can be beautiful for some, it can be difficult for others, especially those who have recently lost a loved one. In the true spirit of the season, let’s care for those in our community who need assistance or the cheer of good company. My hope for you this December is that you feel gratitude and peace and that we all remember to take care of each other, extending grace, empathy, and love.

New Year’s Eve is the traditional night to break out the bubbly. But what exactly is “champagne”? Michael Quinlan, ambassador at Table & Vine at 1119 Riverdale Street in West Springfield, explains. According to Michael, sparkling wine has a high carbon dioxide content, making it fizzy—but not all bubbly wines can officially be called “champagne”. Champagne is the name reserved for sparkling wines produced in the

Champagne region of France. Cava, on the other hand, is the name for Spanish sparkling wine, made using the same method as champagne. The popular Prosecco is Italian bubbly wine made in both sparkling (spumante) and lightly sparkling (frizzante) styles. For those who enjoy German wines, Sekt is that country’s term for sparkling wine. Michael offers his favorite recommendations to make it easy to choose your New Year’s Eve bubbly:

CHAMPAGNES Albert Le Brun Blanc de Noirs Extra Brut ($34.99) Blanc de Noirs, meaning white wine from red grapes, is a fabulous, super-dry champagne. Fresh and fruity notes lend a crisp palate that is the perfect aperitif, or pairs well with delicate first courses. Albert Le Brun Grand Cru ($44.99) Just five percent of the vineyards in the Champagne region are classified as Grand Cru. This bold, powerful champagne has bright acidity and lovely citrus notes. A great match for any seafood, especially oysters on the half shell. Nicolas Feuillette ($36.99) Always a staff favorite at Table & Vine, this is an elegant champagne that has it all, with floral notes and ripe flavors like pear and toasted hazelnuts. A great choice for poultry dishes.

Veuve Clicquot La Grande Dame ($199.99) An amazing way to splurge for the New Year! La Grande Dame is a blend made from historical Grand Crus that give an exotic floral character and pear and peach flavors. With silky texture and superb balance, this gorgeous champagne is the absolute best for pairing with lobster.

CHAMPAGNE-LIKE SPARKLING WINES Ferrari Brut ($19.99) Made via the champagne method in the foothills of Italy’s Alps, this one hundred percent Chardonnay has notes of ripe golden apples and wild flowers, with a touch of spice. Affordable and delicious; enjoy the finesse and elegance in this excellent value.

Martini & Rossi Asti ($12.99) The most famous sweet sparkler, Martini & Rossi Asti is made from Moscato grapes grown around the town of Asti in Italy’s Piedmont region. Lighter in alcohol and with a beautiful fragrance of fresh peaches, this is terrific with fresh fruit and light cheeses—or just on its own. Mumm Napa Brut ($19.99) From the California outpost of Champagne Mumm, this wine is made with the same method as champagne, but in Napa Valley, California. Layered flavors give a bubbly and natural richness with a creamy, citrus finish. Cava Dibon Cava Brut Selección ($9.99) Many cavas are great values; what sets Dibon apart is its extra aging, which amplifies the richness and brilliance of the fruit. Dry and clean, this is an amazing and delicious value.

Cinta Prosecco and Prosecco Rosé, $9.99

PROSECCO Masottina Prosecco ($13.99) Elegant, fresh, and sincere—hints of fresh green apples and soft sweetness of quince, with excellent harmony between silky softness and lively fruity freshness. Its elegance is enough for a great aperitif, while its well-balanced and lingering qualities make it ideal with fish and shellfish dishes. Cinta Prosecco and Prosecco Rosé ($9.99) Cinta Prosecco is one of our favorite sources for Italian value wines, with lively fresh apple and floral notes, good intensity, and an elegant, soft taste. The Prosecco Rosé is drier and more focused, with hints of strawberry and currant.

Shrimp Scampi takes on subtle differences depending on who's preparing it

When the Bruno family left the sunny shores of Naples, Italy to establish a new legacy in the leafy hills of the Pioneer Valley, they could not have imagined or anticipated the impact that their family’s culinary traditions would have on the area. Many of us have family recipes that get handed down from generation to generation, but few of those recipes end up gracing the tables of fine dining establishments. Such is the case with two of Casa di Lisa’s most popular dishes, Zuppa di Pesce and Shrimp Scampi. “Zuppa di Pesce” translates from Italian to “fish soup” and variations on the dish are many, thanks to

Naples’s location on Italy’s southwest coast and its access to the bounty of the Gulf of Naples. “We have given the Zuppa our own touches,” says Casa di Lisa owner Lisa Bruno. The Zuppa di Pesce recipe that is the star of the restaurant’s menu has been handed down through the Bruno family, starting with Lisa’s father, who passed it down to her brother, who then handed it over to Lisa herself. Casa di Lisa’s version of the seafood classic incorporates hot and sweet peppers to add subtle spice to the sauce. The main source of the Zuppa’s flavor is the combination of seafood. “You need all of the fish to get the CONTINUED >

flavor,” says Lisa. Lobster, clams, shrimp, mussels, calamari, and a flaky fish such as cod blend to create Casa di Lisa’s version. The tomato-based sauce rounds out the dish, which has been a customer favorite at the restaurant for many years. The Casa di Lisa Zuppa is a classic version of the dish, which takes its basis in its Neopolitan origins. Other styles of Zuppa vary by region. For example, the Tuscanybased version of the dish, Caciucco, often features cuttlefish, octopus, crab, and eel. The Burrida version of Zuppa di Pesce contains cuttlefish, anchovies, and angler fish and originates in Genoa. Shrimp Scampi is another customer favorite that has been perfected by the Brunos. Traditionally, Shrimp Scampi features garlic, butter, and wine sauce to complement the shrimp and pasta. Lisa’s mother and father each had their own spin. “My father would add a bit of anchovy and walnut for flavor,” says Lisa, “while my mom left those ingredients out of hers.” The restaurant’s take on Shrimp Scampi is traditional in its style and flavorings. Many of us are at a loss for what to do with jewelry that no longer has a place in our lives. Single earrings, pieces that are broken or out of style, or items that may have an unhappy history often sit in a box or drawer for years.
