Once we’ve recovered from the busyness of the holidays, the turn of the new year always brings some measure of excitement, like anything is possible. A new venture? A new job? A new you? Who knows? Traditionally, January is reserved for resolution-makers, and often those resolutions revolve around making improvements, whether physical, financial, or some other measurable means. Whatever you have planned for the new year, we hope you’ll be inspired by the stories in this issue.

For our cover story, we visited WBIR’s Robin Wilhoit in her home to talk about her 30-year career as a broadcast journalist. (Liberty, the family pup, joined us!) She shared some of her favorite stories from over the years as well as her tried-and-true healthy habits she strives to keep each day. Robin is a delight, and we are so grateful to have spent a morning with her.

A January issue wouldn’t be complete without some health-focused stories, so we sat down with Bryan Carter of Carter Sport Therapy and Herman Demmink of 3D Performance Training. Both men built their businesses out of passion for their work and spend their days helping clients live stronger, healthier lives. If you’re looking to challenge your body physically this year, and do it safely, these two articles are for you.

Environmental concerns and rising fuel costs are encouraging many people to make the switch from gasoline-powered cars and trucks to electric vehicles (EV) and hybrids.

While electric vehicles have some advantages, they also lead to questions about convenience and keeping the battery charged.

How Long do Electric Car Batteries Last?

EV batteries are usually warranted for 8 years or 100,000 miles but can last 10 years or longer under normal driving conditions.

It is estimated that batteries degrade about 2.3 percent of range annually. Extreme temperatures and frequent use of DC fast chargers can degrade an EV battery quicker.

January Home Games with the Ice Bears

SPORT THERAPY: IT’S NOT JUST FOR ATHLETES WHY SPORT THERAPY? I get to see people do things after seeing us that they couldn’t do before coming in. We do predominantly myofascial tissue work, which is the clear membrane over the muscle. When Bryan Carter moved to Knoxville from Nashville in 1990 to attend the University of Tennessee, his career goal was to become a physical therapist. He’d been in the martial arts world for more than 15 years, which led to him teaching Taekwondo to other college students in the basement of Clement Hall. As his studies got underway, Bryan realized that PT school wasn’t in the cards for him, so upon graduation, with a degree in child and adolescent development and sport psychology, he threw his energy into teaching martial arts and eventually went to massage therapy school. He wanted to build a career helping other people achieve their physical goals, whether those people were professional athletes or everyday folks. After being introduced to the positive effects of consistent myofascial work, he was hooked. Carter Sport Therapy opened in 2007 and has been consistently successful in helping people heal after injuries and prevent future ones. Bryan works alongside seven other therapists to help clients enjoy life without aches and pains.

We’ve seen everyone, from an eight-week-old with a tongue tie to a 94-year-old woman who wanted to keep ballroom dancing. We see a lot of athletes, but we also see hobbyists. Our target is anyone who moves. We see desk jockeys who are at computers all day and road warriors who are in their vehicles all day. We see tons of people in the CrossFit community, as well as doctors and nurses who are on their feet all day. Whatever you’re doing all day, we help give your body the space to do the things you want to do, and then give you suggestions and ideas to do at home.

WHAT’S THE DIFFERENCE BETWEEN REGULAR MASSAGE THERAPY AND SPORT THERAPY? Coming from a martial arts background, stretching was a big thing. I was able to take some of the martial arts stuff and incorporate it into the work I was doing, creating a hybrid, a different way to approach massage. With Western massage therapy, you might see a client once a month for a session focused on relaxation. That’s not what this is, and it’s not deep tissue massage either. By trade, we’re massage therapists, but we understand functional movement patterns. Fascia can have adhesions that get sticky, so we create space in the fascia so your body can move more efficiently.

WHAT CAN A NEW CLIENT EXPECT ON A FIRST VISIT? The consultation happens on the table. You’ll fill out an intake form and we’ll talk about what’s going on.

I’ll ask questions about what they do for a living, what a normal day looks like, and when they notice their problem the most. For example, if they have pain when they first wake up in the morning, I’ll ask how old their mattress is. I want to understand where and why they hurt. They may feel pain in their neck, but that doesn’t mean that’s where the problem is. If you have neck pain, I might start on your pecs. If your shoulder hurts, then I’m looking underneath your arm. So, we’ll go through a myofascial spread session. I’ll work on them and then see how they move. We’re looking at the whole picture, not singular motions.

WHAT DO YOU WANT FUTURE CLIENTS TO KNOW ABOUT CARTER SPORT THERAPY? One of the things I say all the time is that we are more than massage therapists. We’re able to connect with our clients and not only understand what they are feeling but also being able to empathize with where they are and what they’re going through. Everyone has heard the expression, “No one cares how much you know until they know how much you care,” and that’s what we live out here. We want way more for our clients than we want from our clients.

TRAIN WITH INTENTION At 3D Performance

Herman Demmink III doesn’t do anything without purpose. Born in North Carolina but raised in Virginia, he spent his formative years playing every mainstream sport minus hockey and lacrosse – golf, gymnastics, volleyball, football, all of it. However, baseball was his true love and it was baseball that landed him at Clemson University where he lettered all four seasons. He was team captain, awarded Most Dedicated Player, and drafted by the Philadelphia Phillies in 2006, where he played for four seasons.

Normally, professional athletes shift their focus post-career, but that wasn’t the case for Herman.

“In my freshman year of college, I got my first sports training certification, so when I was playing in summer leagues and needed a parttime job, I wasn’t mowing grass or bagging groceries,” he says. “That started my true interest in training. I had to be smarter than everyone else when it came to training because, while I was gifted with abilities, I wasn’t the most talented player. I had to be smart. As the saying goes, ‘my smarter beats your harder.’”

It was a mindset Herman developed early on, and both the Clemson and Phillies coaching staff noticed.

“I showed up to spring training and they noticed I was physically mature, that I was doing things differently. My work was

intentional. There was always a reason for doing what I did,” he says.

By 2007, Herman realized there was a market for his method of training. He worked for Clemson as a strength and conditioning coach during the Phillies off-season and took on clients by word-of-mouth. Professional athletes started following him back to South Carolina to train, and by May 2008, 3D Performance was officially up and running.

Herman had graduated from Clemson with a bachelor’s degree in 2006 and was midway through a master’s program when, in 2009, he was released from the Phillies and offered a strength coordinator job on the spot. Instead of staying in Philadelphia, he accepted an assistant director of sports performance position at the University of Tennessee, where he ended up finishing his master’s degree in biomechanics. Herman eventually became the unofficial Olympics director for UT as he was over all sports except for football, per the 2012 guidelines of the Bowl Championship Series. He stayed at UT until 2015, when he returned to South Carolina for a job in medical sales while continuing to train professional and emerging athletes.

“My wife, Blair, was pregnant with our first child, so I needed a job with insurance to take care of my family,” he says. “But my training practice continued to run because my

athletes would come see me or I’d come here. That’s when I met Kristian Montoya. He was a coach at the gym where we ran 3D, so I asked him to come on board while we stayed in South Carolina.” Two years later, the Demminks moved back to Knoxville and opened the current space for 3D Performance Training.

The key thing to know is that Herman’s approach to training – intentional, individual, intuitive – is not reserved only for professional or aspiring athletes. Yes, 3D Performance is home to Olympians and nationally recognized athletes through its Elite and Aspiring Elite programs, but it’s also open to everyday people who want to achieve a physical goal within the Performance Lifestyle program. In short, all are welcome as long as you’re ready to work hard.

“We’re the only gym that I’m aware of that combines science, experience, and real-world application. No client joins our family without one or multiple pieces of a movement assessment, a metabolic profile, or some other diagnostic test that gives us answers and direction for a desired goal,” says Herman. “You don’t have to be a professional athlete to reap the benefits of tailored programming. Robin Wilhoit When Robin Wilhoit was a little girl, she’d watch the evening news alongside her parents. Amid the reports on local politics and weather forecasts were human interest stories that piqued her interest.

Fascinated by the process, Robin decided she wanted to be the person with the microphone asking the questions and crafting the story.

The North Carolina native wrote for her high school newspaper and went on to UNC-Chapel Hill to study journalism. By her junior year she landed an internship at ABC affiliate WTVD in Durham, working with the health reporter Catherine Walters.

“I followed her on stories, organized notes – I even babysat for her.

She was a mentor and I owe her a lot,” says Robin. “She was a reference on my resume when I interviewed all over the southern region.”

In 1990, Robin landed her first job at a CBS affiliate in Johnson City, a smaller market that provided plenty of learning opportunities for a young reporter. It also provided Robin the opportunity to meet her future husband.

“You don’t have to attain superathlete status... Just move – both your body and your brain.”

“I interviewed him. Brent is from Johnson City, and he was a Marine Captain in Desert Storm coming home for a few weeks before going on to California.

When I saw him, I was like, ‘Oh, okay!’” she says, laughing. “I called him the next day to give him the VHS tape of the interview and he asked me out.”

Knoxville was the couple’s next stop. By 1992, Brent had accepted a job in Oak Ridge, and Robin began her role as a weekend reporter and then a morning anchor at WBIR. What followed has been a rewarding and meaningful 30-year career making connections and telling stories, from major events such as 9/11, the 2016 wildfires in Sevier County, and the pandemic to heart-warming local stories of success and survival.

One of the things about being a broadcast journalist is that the unconventional schedule is entirely unavoidable. Painfully early mornings and exhaustingly late nights come with the job. Add motherhood to the mix and quality sleep quickly becomes your most valuable asset.

“Sleep has always been elusive, working the schedule I do, which is 2:30 to 11:30 p.m. now,” says Robin. “Especially with two kids. Doing dinner, errands, all of it. For the longest time I felt like caffeine was fueling me.”

Her children are grown now. Catherine, which is both a family name and a nod to Robin’s mentor, is 24 years old and lives in Nashville, while her son Brandon is 22 and currently a senior at the University of Tennessee. However, her long career in television meant both pregnancies were carried out on air, a scenario that added to the physical and emotional pressure that already exists in the profession.

“I was very pregnant on air. The clothes … weren’t great. It wasn’t a good look,” she recalls, laughing.

“I didn’t pull off pregnancy beautifully, and I was back to work eight weeks after Catherine. It was a hard time. You want to be the best mother you can be while being the best employee you can be, but I

felt like I was doing neither very well. But you figure it out, and then you have another baby.”

Throughout her career, Robin has strived to make diligent decisions to bolster good health, from chasing quality sleep to keeping healthy habits part of her regular routine. She reads every night, even if it’s only a few pages, from physical books, not digital, something either inspirational or a work of historical fiction. She loves to cook and keeps a garden. She does Orangetheory Fitness and takes long walks. She does the New York Times mini-crossword puzzle and Wordle every day.

“As you get older, you are much more aware of your blood pressure, your cholesterol, and all those numbers you don’t care about when you’re younger.

If I see something creeping up, I take action,” says Robin. “You don’t have to attain super-athlete status. I’ll just take walks with friends. Just move – both your body and your brain.”

Robin also encourages women to stay on top of their health through the Buddy Check 10, a breast cancer awareness program that started at WBIR back in 1998.

“We tell stories of survivors and thrivers. I knew it had a huge value but that was solidified by the feedback we got. Reminding people to do a selfcheck, catching things early … I’m just telling the stories, so it’s really the buddies out there acting upon it,” she says.

Robin Wilhoit has become a respected fixture in the community, an acclaimed role model for young women, and a seasoned resource for professionals who are trying to do the best they can in every area of life. It is a careful dance but one worth balancing.

“Give yourself grace and give others grace. The images of perfection on TV aren’t real. You will mess up along the way. Give yourself permission to slow down,” she says. “My hope is that people will be kind to themselves and to others. There is so much benefit if you do both.”

It’s time to ask the age-old question: What was your New Year’s Resolution? In honesty, I almost gave up making official New Year’s resolutions.

I always start with great intentions and trickle off by March. Then, I’m tempted to wait until the next New Year to try again. We’ve all been caught in that cycle before. Luckily, there’s a way to break out and stay on top of meeting your New Year’s goals throughout the year.

A LOOK INTO THE PAST Each New Year’s I sit and reflect on the person I was on last New Year’s Day versus who I am today. That’s why New Year’s is my favorite holiday – it invites us to look back on the growth, trials, and triumphs we’ve been through. It’s fun and important to celebrate how far we’ve come.

Did you have a health or savings goal last year?

Now’s the perfect time to evaluate how well you did! Give yourself credit for the work you put in and the successes you had. Then, make a note of the places you could do better next year.

YOUR VISION FOR NEXT YEAR What do you want this year to look like for you? Sometimes, I choose an important quote or word that I will keep with me throughout the year. For me, 2022 was the year of confidence. It could be that you want to spend more time with those you love, so community could be your mantra. Or you might want to be more conscious of your spending habits, so financial awareness could work great for you.

Another option is to cut out quotes and images for a vision board. In our office, we keep our mission statement and values on the wall to remind us why we do what we do each day.

Whatever your style, clearly stating your goals for the next year and then making a way to keep them at the front of your mind will be a big help in achieving them.

DAY-TO-DAY DECISIONS It’s not just about hanging your goals on walls.

If you stop there, you might end up with the classic broken resolution. The key is to have your day-to-day actions reflect what matters most to you. Each time you come to a fork in the road, remember what you want out of this year and those to come, and try to make a decision that helps you get there.

A Look at South Knoxville’s Community History ARTICLE BY JACK NEELY AND PAUL JAMES

The Knoxville History Projects begins the new year by commencing extensive research for a forthcoming community history book on South Knoxville. Given the recent south side development, coupled with the expansion of Ijams Nature Center and the Urban Wilderness, a history of South Knoxville is timely.

In the nineteenth century, the area across the river was outside of city limits, so remote it was known jokingly as “South America.” The landscape changed dramatically over the decades, marked by Civil War forts, marble quarries, and lumber mills. The Island Home area was developed by wealthy Massachusetts-born businessman Perez Dickinson, which ultimately transitioned from a progressive farm estate into a modern housing development spurred on by a new streetcar line across the Gay Street bridge.

The 1920s saw the emergence of a regional bird sanctuary along the river surrounding the Ijams family home, which also became a Girl Scout destination, and adjacent to it a new campus for the Tennessee School for the Deaf and the downtown Island Home Airport.

By the 1930s, the movement to establish a new national park brought increasing numbers across the Henley Bridge south to a new “Highway to the Smokies,” named after Col. David Chapman. Familiar sites such as Kern’s Bakery, Young High School, Candoro Marble, and Loghaven, all renovated and re-used, are all cultural icons and have stories to tell.

by Perez Dickinson (1813-1901), and cousin to poet Emily Dickinson. A 200-acre parcel of the estate, lined with white fencing, formed an experimental “model stock farm.” Following his death, a sizable portion of the property was developed into a subdivision known as Island Home Park, marked by stone columns at its entrances. KERN’S BAKERY Established by German immigrant Peter Kern in the 1870s, what became Kern’s Emporium on the southwest corner of Market Square (where the Oliver Hotel and Oliver Royale are today) was known for its exotic candies and Christmas treats, and fashionable ice cream and soda fountains. Long after Kern’s death, in 1931, the bakery relocated across the

river to Chapman Highway. After being added to the National Register of Historic Places in 2017, the site is currently under renovation to become a new food hall and multi-use space. (Sam Furrow Knoxville Postcard Collection / KHP.)

EAST TENNESSEE ORNITHOLOGICAL SOCIETY Members of the East Tennessee Ornithological Society meet on the lawn of the Ijams’ bird sanctuary for its spring bird census in 1952.

This spot, developed by Harry and Alice Ijams beginning in 1910, became a haven for birdwatchers and Girl Scouts for more than half a century before being reinvented as a city park and an environmental education facility. With the addition of two marble quarries and miles of new multi-use trails, Ijams Nature Center is now part of Knoxville’s expansive Urban Wilderness, including Baker Creek Preserve and High Ground Park. Kayla moved to Knoxville from Latrobe, PA in 2010, received her undergraduate degree form UT and is currently HR Manager at a heavy civil construction company. We met through mutual friends while attending the University of Tennessee and have stayed friends ever since.

WHAT WAS THE SPARK THAT YOU BOTH HAD TO CREATE THIS BUSINESS? We both have always been interested in supporting local makers of the community and throughout the years of our friendship, we’ve always talked about partnering and doing something fun.

We’re both foodies, and this product was something we noticed wasn’t very big in this area. We started doing some research on it and coincidentally around the same time we started brainstorming, the Real Good Kitchen had an open house. We stopped in and spoke with the kitchen manager, and we kind of never looked back.

DESCRIBE SOME OF YOUR BUTTER BLENDS. We offer a variety of butters, savory and sweet. For the savory butter, we have: Roasted Garlic and Herb which is a roasted garlic blended with parsley, dill, chives, and basil. Black Truffle Garlic also has roasted garlic and black truffle sea salt. Sweet Heat is a

blend of calabrian chili peppers, habanero powder, and honey to round out and balance the heat from the spicy peppers. These butters can be used in anything from grilled chicken or steak, steamed or roasted vegetables, or mashed or roasted potatoes.

For the sweet butters, we have: Cinnamon brown sugar, Lavender Honey, and Bourbon Maple. These are great for any kind of breakfast items such as pastries, pancakes, waffles, scones, biscuits and also sweet potatoes or acorn squash. Some of our customers like to bake with our butters as well. We also feature monthly seasonal flavors with savory and sweet options.

The holidays are filled with giving and a focus on helping those with food insecurity, but nonprofits like XHunger focus on this year-round. Learn more from my interview with Terri Mauk, Executive Director of XHunger.

MITAL: WHAT MAKES XHUNGER UNIQUE? Terri: The 501(c)3 is known as the Scarecrow Foundation and our national initiative (assumed name) is XHunger. The Scarecrow Foundation is in its 13th year. We have been an all-volunteer organization with a zero budget, meaning that all proceeds we received through fundraising events have been donated back to food banks, pantries and other nonprofits who work with those who suffer with food insecurity. Our mission is “To Help End Hunger in America.”

And, we intend to do this by supporting our partnering organizations with volunteers from XHunger Clubs filled with high school and college students in need of service hours and funding through events and partnerships.

M: WHAT ARE THE LEGAL NECESSITIES FOR FUNDRAISING IN A NONPROFIT? T: Transparency is key regarding where the funds are going. It is also key when you are doing a contest or giveaway to make sure the appropriate disclaimers are used, the specifics are relayed to the public like who can enter, how they enter, how the winner is selected and what the expectations are of each contestant. We just did this when XHunger, with the generous donation from Beaty Chevrolet, gave away a vehicle to a student member of a local XHunger club. We also do numerous campaigns and events throughout the years, and it is important that we remain compliant with our 501(c)3 requirement and properly earmark all donations collected.

M: FOR THOSE WHO MAY START THEIR OWN NONPROFIT AND ARE TASKED WITH SELECTING A BOARD OF DIRECTORS, WHAT WOULD YOU SHARE WITH THEM ON HOW YOU VIEW THE ROLE OF THE BOARD OF DIRECTORS? T: The Board of Directors is the governing body of the nonprofit and has the final say so on other roles within the organization, like mine (as Executive Director) and the goals of committees formed. They are also charged with the financial integrity of the nonprofit and ensuring the mission’s integrity is met by reviewing and approving any events that are planned, programs that are created or that fundraising mechanisms remain compliant.

M: WHAT LEGAL STEPS DO YOU FIND IMPORTANT FOR YOU TO PROPERLY EXECUTE ON YOUR POSITION? T: Make sure we have the required documents for our nonprofit such as Bylaws, Charter, 501(c)3 approval. We also have a national initiative and need to ensure we are compliant in each state and on a national level. A key factor is to stay ahead of the changes happening and to be informed on how we in leadership need to manage the organization, raise funds, and stay compliant with the laws surrounding hiring practices and technical practices (i.e., social media posts, websites language, giveaway information, disclaimers, etc.). Lastly, having a defined policy and procedures would be important.

Ross Gay is an incredible poet and writer, and his latest book of essays did not disappoint. Gay thrives in the world of emotions, and this book is all about joy — the power of joy to connect, to heal, and to promote introspection. If you are not familiar with Ross Gay, I cannot recommend him highly enough.

I think this collection of advice columns should be required reading.

Cheryl Strayed is big-hearted, both empathetic and pragmatic. And she writes beautifully. I am sure that every reader will find a nugget of wisdom in this book that will knock their socks off.
