As the colors start to turn, it’s the most beautiful time of the year in East Tennessee, and there is no better view of Knoxville than from atop the Sunsphere. We were lucky enough to visit the 8th floor this month to interview and photograph Phillip and Donna Nussbaumer, who own and operate Rosa’s Catering and Sunsphere Events. (The view, y’all! Wow!) These two are the go-to for your next Knoxville event.

We also interviewed Frog Greishaw, who opened the Frog Juice Boocherie on Sutherland Avenue this summer. If you are a fan of kombucha, or if you’re looking for a non-alcoholic bar where you can hang out with friends, this place is for you. (We highly recommend trying the Fruity Booty.)

Investing in 2022 has been about as fun as squaring off against Bobby Flay in the kitchen or getting dismantled

by Paul Hollywood in a tent somewhere in England. The new year started off negative and has ridden a series of downturns throughout the year with inflation and the rising risk of a recession emerging as problems to solve.

All the while, many small businesses are simply desperate to hire workers. It is safe to say that the economy is giving some mixed signals to investors.

We have grown accustomed to blaming things on the Covid-19 pandemic, and we should probably toss a confusing economy on the pile as well. My favorite way to illustrate the intersection of Covid and the economy is like putting an injured patient into a medically-induced coma. Governments around the world shut down their economies back in 2020 in the effort to stop the spread of an uncertain disease. We can debate the effectiveness of that strategy, and how you feel about it likely depends on your health and how you make a living. As the world has emerged from its medically induced coma, it has experienced some side effects of living in a deep state

of unconsciousness. Real life patients lose the ability to breathe and need significant physical therapy to deal with the effects of living in such a state. The coma may allow the patient to live, but there are consequences of the path there.

I’ll never forget in March of 2020 my family had gone south towards the Florida panhandle for spring break.

Covid was starting to rear its ugly head and, over the course of that week, went mainstream. We stopped at a hotel along the way and pondered our future without toilet paper. Nearing check out time, I looked my sons in the eye and said, “This hotel has toilet paper, find it.”

I felt like a general sending warriors out into the battlefield to solve a problem. They did not disappoint.

Just as the ICU staff must triage the patient waking up from the coma, our global economies remain symptomatic. The good news is that the problems are most likely treatable with time. Successful investing is all about time. Watching the news too much will remind you of all the bad things in the world today. However, it won’t remind you that people are innovative and adaptable.

The builders and problem solvers of the world don’t stop and feel sorry for themselves as circumstances change against them. They keep working and get creative and find ways to move forward. You want to invest your money alongside the builders and problem solvers of the world, which is exactly what we spend our time researching. Finding a dominant, cash producing company whose products help solve life’s problems makes the short-term volatility irrelevant. Your greatest opportunity for making money will always be when the waves crash over these companies, and they cannot even be seen from the shore. But when the tide recedes, they will re-emerge never even having lifted their heads to take notice.

In 1971, Rosa Nussbaumer and her husband, Bill, went to a fish fry in Knoxville. Instead of enjoying the fluffy, crispy breaded fish they anticipated, the couple was served something that looked straight out of a deep freezer.

Rosa knew she could do better and thus marked the beginning of more than 50 years of Rosa’s Catering in East Tennessee.

Today, Rosa’s Catering is run by her middle son, Phillip, who took over the business in 1990 after watching it grow in the converted garage of his childhood home. “[My mom] is a fantastic cook, a self-taught chef,” says Phillip. “Her first catering event was a luau and she made Filipino Pork with baconwrapped bananas, which is a dish we still have on the menu.”

Rosa is 82 years old and has long since left her namesake business, but her focus and hard work in those earliest years set her up for success. At its inception, Rosa’s Catering was a quintessential 70s business, back when wedding receptions were primarily tiered cakes with nuts, mints, and punch on the side. Within a few years, the business expanded to larger events (this is around the time the attached garage morphed into a catering kitchen). Phillip and his two brothers often functioned as the labor, but it was the sort of experience that inspired Phillip to go into hotel and restaurant management. He graduated from UT with a hospitality degree in 1988 and went right to work for Aramark at Tennessee Wesleyan, then Union University in Jackson, Tennessee. However, his tried-and-true restaurant experience came

from a year-long stint at Houston’s in Nashville’s West End. Though the restaurant closed in 2005, it was a bustling, high-stress, learn-onyour-feet place in the late-80s, what Phillip calls “the Marine Corps of the restaurant business.”

“It was hard work. You never had a day off.

After a year, I called my father and said this wasn’t for me, that I needed to come home and think,” says Phillip. “He told me Mom wanted to sell the business, and I said I’d do it if I could move the business out of their home, which is what we did.”

With Phillip’s ownership came a remodeled kitchen-turned-commissary and eventually storage space for the growing stock of equipment. The updates Phillip made were primarily logistical and practical. Much of what made Rosa’s Catering successful in earlier years – incredible food notwithstanding – are business practices that Phillip continues today.

“We grow slowly but we don’t owe any money anywhere,” he says. “When the Great Recession hit in 2008, we lost 50 percent of our business. But we survived because we didn’t owe any money.”

Running a business debt-free also benefited Rosa’s Catering in 2020 when the pandemic forced operations to shut down. Coincidentally, the Nussbaumers had just acquired another business in 2019 – Sunsphere Events – and anticipated a banner year.

It was Phillip’s wife, Donna, who was particularly interested in shifting her corporate and property management career towards events.

When the Sunsphere opportunity came open in 2019, the Nussbaumers jumped, as it paired so

well with Rosa’s Catering and their passion for serving Knoxville and the surrounding community. Of course, it wasn’t without a hiccup.

“I officially left my job in February 2020 and then Covid hit,” says Donna. “The first go-to was to postpone events and do whatever we could to help people, but both companies had to refund money. We were all in the same situation.”

Fortunately, their good business sense paid off, and once the health department cleared events for limited numbers of people, both Rosa’s Catering and Sunsphere Events were able to reactivate the calendar and get folks back to celebrating their birthdays, weddings, and anniversaries.

“The Sunsphere got back to no limitations in March 2021, and we had 92 events last year,” says Donna. “Currently, we’re at 125, so it’s progressing nicely. We’re getting calls daily.”

The Sunsphere has five floors with Visit Knoxville occupying the fourth-floor observation deck and two radio stations on the fifth floor. Sunsphere Events holds two floors – the sixth level for larger events and the eighth (top) floor for medium-sized groups.

Despite the longevity of Rosa’s Catering, Phillip insists that complacency is never an option. Just as trends shift and change, so does Knoxville’s population and demographic. While there’s a well-established menu on hand, the chefs at Rosa’s Catering are proficient in myriad cuisines, from Indian and Middle Eastern to Italian and American. Because Phillip insists on feeding his employees daily, they have a make-shift test kitchen at the ready.

“One of the exciting things is that my son-in-law, Trevor, is working with me, so hopefully in a few years he’ll take over the business,” says Phillip. “We’re moving in the direction of Sunsphere Events running itself, so hopefully Rosa’s Catering will take care of itself too.”

“When I was very young, I told my parents I wanted to go to hair school after teaching myself to French braid on my friends and teachers at daycare. The desire to be a hairdresser stayed with me and when it came time to choose what school to attend it was a no brainer- Reuben Allen College. At the time, Ross the Boss had a cosmetology school and because I had my hair done at RTB my entire life it only made sense to go to that school. After completing beauty school, I only had my sights set on working for Ross the Boss, and that began my career in the hair industry in 2005.

During my time in the salon, I thoroughly enjoyed connecting with my clients and coworkers. Each of them became family. My clients’ loyalty to me was fierce and in turn that encouraged my responsibility to take care of them. I was where I’d always wanted to be, doing what I always wanted to do. My job had purpose- boost spirits, attitudes, perspectives. I got to watch kids grow up, go off to college, get married. I cried when life got tough and celebrated life’s victories with my clients. Every day was rewarding. I often watched people leave the salon feeling much happier than when they came in.

My love for what I did in the salon grew each year as I gained access to classes, both “in house” and traveling to fun destinations. I’ve been able to sit in with some amazing hair artists who travel the country teaching and networking with stylists. Being with Ross the Boss has offered a front row seat to some amazing events and opportunities in the salon industry.

Sadly, in 2021 my time behind the chair ended abruptly due to health issues. I was devastated. I felt I was letting my clients down, and Ross the Boss. REAL HOT YOGA OPENS A SECOND L O C AT I O N I N F A R R A G U T

“There’s a misconception that because it’s hot it’s more advanced, but it’s not. [Hot yoga] is better for the beginner because of that increased range of motion.”

Ten years ago, Cindy Coats, along with her two business partners, Aaron Goodman and Jeff Morin, opened Real Hot Yoga in Bearden’s Suburban Plaza, a novel idea at the time but one that has been proven successful. Today, the yoga studio is a franchise with six locations across East Tennessee, New Jersey, and Myrtle Beach and five more in the works, most notably a second Knoxville-area studio in Farragut.

Cindy was no stranger to yoga, as it had been part of her regimen since the 1990s. Along with running, yoga was something she could do anywhere, which suited her transient lifestyle working on cruise ships.

“I could run anywhere and do yoga anywhere, and with my love of travel, I’d check out yoga studios in whatever city I was in,” says Cindy. “I’ve been in places where the heat was suffocating and had little air flow. I don’t like that, and we don’t do that.”

With her years of experience, she and her partners designed a studio with forced air through UV filters, an arrangement that set them up nicely when Covid came around.

Intentional breathing is a crucial component of any yoga practice, so getting the air circulation right was essential.

“One of the most important things about yoga is the breath, so I want people to breathe deeply and breathe the cleanest air they could. We add humidity, which makes it easier to breathe, plus it’s a controlled environment,” she says. “You don’t have the sun on you. When you’re outside and feeling hot and miserable, you might be sweating but it’s evaporating. We keep the humidity up so your sweat doesn’t evaporate and your body stays cooled. We also want that for better range of motion and a deeper stretch.”

The Farragut location is owned by Lisa and Brad LeCoultre and will have more than 30 class options on the schedule. There are currently more than 40 class options on the schedule at the studio in Bearden, which is tucked in the center of the shopping center CONTINUED >

between Barnes & Noble and Trader Joe’s. There are two temperatures to choose from – 95 or 105 – and Cindy makes it clear: hot yoga isn’t exclusive to the experienced.

“There’s a misconception that because it’s hot it’s more advanced, but it’s not. [Hot yoga] is better for the beginner because of that increased range of motion. We have classes for people who want to do deep stretching all the way to aerobic yoga,” she says.

“We knew there wasn’t a big yoga community here, so the majority of people who come to us have zero experience.”

Cindy also notes that hot yoga isn’t ideal for someone with Multiple Sclerosis or other neurological conditions, and no one under 16 years old is allowed in the 105-degree room. As always, it’s important to consult with your physician before starting a new fitness regimen.

“Someone can purchase a single drop-in class to see what it’s like, but we also have a new client intro for $45 for 30 consecutive days of unlimited visits,” says Cindy. “Yoga helps you find a healthy state of balance, and yoga with the added heat makes every workout a little more cardiovascular.”

If you Google “Frog Juice,” you’ll get myriad suggestions for all sorts of products you may need (paints, sealants, or card games) and a few products you may not need (amphibian secretions, for example). Save yourself the confusion and add “Kombucha” to the search.

Frog Greishaw landed in Knoxville in 2017 following a 17-year stint in Chicago, which is where the idea for Frog Juice Kombucha was born. A friend asked her to take her SCOBY – the acronym for symbiotic culture of bacteria and yeast – off her hands, and she agreed.

Frog had been working as a bartender and read somewhere that kombucha was a good cure for hangovers. So, she started “messing with it,” and by the following year, an idea started to take hold.

“I got better with it over time and took it to a music festival for my camp. One of the women in my camp, who’s a world-traveling yoga instructor, said she’d had kombuchas from all over the world and I should make mine, that it was good. I set up the business in Chicago in 2014.”

It was an operation that began in her kitchen, and when she started looking for a new city to call home, Knoxville had “the most green lights.”

“When I was scouting Knoxville, one thing I noticed was that change was coming. People were gravitating towards the culture of wanting to take care of themselves,” she says.

Frog Juice was already in stores in Chicago, but by 2019, Frog was working steadily on expanding the product and refining its branding. She and her business partner, Ben Clingner, who has more than 20 years of brewery experience, prioritized the importance of keeping everything local, from the canning line in North Knoxville to buying most of their ingredients from local and regional farmers. With his wealth of knowledge, Ben helped Frog grow from making 100 gallon batches a day to 300 gallon batches a day with efficiency. Today, Frog Juice can be found in more than 180 retail spaces in East Tennessee.

Kombucha is a functional beverage, one that ferments and metabolizes sugar into probiotics. Frog says it doesn’t quench your thirst as much as it feeds your body’s function, which is particularly ideal for those who seek to live a sober lifestyle.

“Two years ago, I finished a business plan for a hotel that was going to offer a non-alcoholic bar. It was a $2 million project, but that was February 2020,” she says. “But then this bar fell into our laps and it just made sense. We’re working on our Safe Bar Certification.

We’re meeting with some recovery centers who want to have safe places to have events, hang out, and see that a sober existence is possible.”

The Frog Juice Boocherie opened on June 1 of this year and enjoys a steady rotation of food trucks, adults-only events, and locally-made kombucha on tap. “We’re just trying to make something that’s good for you, that tastes good, and then make it enjoyable and fun,” says Frog.

knoxville’s literary heritage ARTICLE BY JACK NEELY AND PAUL JAMES

This month, the Knoxville History Project publishes “Knoxville: A Walking Literary Guide,” a free booklet designed to increase awareness for the city’s rich literary heritage, which forms a significant part of a city’s public persona.

KHP’s guide connects readers to a dozen Knoxville authors of national or international significance and suggests places where you can visit that have informed their work.

Highlighted in particular are James Agee and Cormac McCarthy, authors strongly associated with Knoxville settings. While very different from one another, they shared one trait especially unusual among novelists: they employed real names of people and businesses of their eras. Also notable is Frances Hodgson Burnett, who lived in Knoxville during the early part of her career, and who authored dozens of internationally popular books of literary value during the Victorian era. Other writers with Knoxville roots have also caused a stir with their work include unconventional novelist David Madden, free-verse poet Nikki Giovanni, Pulitzer-winning historian Bernadotte Schmitt, and author Alex Haley, who spent his final years in Knoxville and frequently spoke here.

James Agee James Agee (1909-1955) is best-known for works such as Let Us Now Praise Famous Men and A Death in the Family. The latter, set in Knoxville in 1915-1916, is his autobiographical novel concerning the sudden car-accident death of his own father.

It won the Pulitzer Prize posthumously in 1957 following the author’s untimely death. The book has been in print ever since, inspiring an award-winning Broadway show, All the Way Home, as well as four different motion pictures.

Agee was born in Knoxville and lived here for most of his first 10 years, mostly on Highland Avenue in Fort Sanders, and then again for a period when he was a teenager in the mid-1920s, when he attended Knoxville High School. The house where he grew up in Fort Sanders is long gone but a park named in his honor now graces his old neighborhood. The suggested “Lifesaver Walk” follows an early scene from A Death in the Family, where Agee’s protagonist, Rufus, walks with his father from the old Majestic Theatre on Gay Street to their home in Fort Sanders.

Cormac McCarthy Cormac McCarthy (b. 1933) is a Pulitzer-winning novelist whose stories have been made into several major motion pictures, including All the Pretty Horses, No Country for Old Men, and The Road. Born in Rhode Island, he was a preschooler when his father moved to Knoxville to work for TVA. Growing up in Knoxville, he attended Catholic High School and later UT, where he won awards for short fiction. He lived and worked in the Knoxville area for much of his young adulthood.

Suttree (1979), which enjoys a global cult following, includes vivid Knoxville scenes and multiple references to real people, places, and events, especially the Tennessee river, which plays a central role. His title character, who makes a meager living as a fisherman, lives in a ramshackle houseboat on the river, moored near the wharf between the Gay and Henley bridges, around 1951. The suggested “Catfish Walk” traces Suttree’s trek from the riverfront through downtown seeking buyers for his day’s catch of fish.

Frances Hodgson Burnett Frances Hodgson Burnett (1849-1924) is best known today for The Secret Garden, The Little Princess, and Little Lord Fauntleroy.

Financial hardship forced her widowed mother to bring the Hodgson family from England to Knoxville, where a relative was an established businessman and landowner.

She began her writing career in the 1860s in the rental house she called “Noah’s Ark,” located in Mechanicsville on what soon became the campus of Knoxville College.

Later, she lived in various locations downtown, including a place along the river she named “Vagabondia,” before moving north in the mid-1870s.

The Custom House on Market Street at Clinch Avenue, which hosted the U.S. post office, is where Burnett likely mailed her magazine stories to publishing houses.

Later, it was the workplace of James Agee’s father, who worked for the post office from 1901 to 1905, before the 1909 birth of his son.

Probate Horror Stories Three Cautionary Tales You Can Avoid ARTICLE BY MITAL D. PATEL

Happy Halloween! This month will be filled with haunted houses, ghoulish costumes, and terrifying tales. After years of practicing probate law and helping people with their estate planning, there are so many real-life horror stories that we have encountered. Last month I interviewed our Certified Estate Planning Attorney, Julie D. Eisenhower, on the importance of good estate planning. These stories will further reinforce what she shared and help you decide what to do to protect your loved ones.

THE TALE OF NO WILL FRANK INTESTATE Frank lived alone, never married, and never had kids.

With the help of his two nephews, he built a successful family business. Frank didn’t think much of not having children because his two nephews treated him with all the love and respect that he imagined came from being a dad. Unfortunately, of his 21 nieces and nephews, only two were a part of his life. When he passed away, he was survived by all of his nieces and nephews (most whom he hadn’t seen in over 20 years). The two nephews were the only family members at his funeral. Regardless, Frank had no will and his estate was ultimately divided amongst 21 heirs. In addition, it was very expensive and time consuming to track down many of the heirs. A simple will could have allowed Frank to decide his beneficiaries and prevent the extra costs to his estate.

THE HANDWRITTEN HORROR Molly thought writing her wishes down and signing it would be enough to ensure her estate went to the beneficiaries listed. After her death, Molly’s beneficiaries found seven

different handwritten documents. When I was retained by one of the two beneficiaries, there were already 14 heirs and two attorneys involved. The value of this estate made 12 of these estranged family members appear and the other beneficiary was ready to throw in the towel and agree to dividing Molly’s assets with the 12 estranged members. Luckily, after reviewing the seven documents and scouring through case law, we helped Molly rest peacefully by making sure her estate went solely to her two beneficiaries. A simple will would have saved valuable time, money and resources for the beneficiaries.

THE HAUNTED HOUSE WITH THE SURVIVING SPOUSE Jack and Nancy seemed so in love. A blended family that joined Jack’s three children with Nancy’s two children. Nancy owned a haunted house that had been passed down from her great grandfather and she also owned her own business and accumulated some wealth. This is what started the nightmare of the mirror image will. The couple made wills that left everything to each other and then equally to the five children. Nancy passed away suddenly and very soon after Jack executed a new will naming his three children only. Nancy’s children were asked to leave their mom’s house and were left with nothing. A trust or complex will could have protected Nancy’s children.
