ur travel plans this summer are to visit Mike’s parents, who live outside of DC. The last time I went to DC was with my parents and sister in ’77. I’m sure things have changed a little since then. Mike is dreading the endless walking and wants to rent Segway’s to see everything, which we all know will end up with a trip to the closest ER for me. We gave Pace the choice to go wherever he wanted and this elicited the best response. I am looking forward to this family vacation and hope he will take at least one picture with me.

This month’s issue is inspired by the men in my life. Pace is the mastermind behind us sharing District Barbershop’s story. He is blessed/cursed with somewhat frizzy hair. We have been to stylist after stylist, with little success until one day I received a press release about a new place located on Rosedale. When we walked in we knew we were in the right place. Edward and Francisco gathered some of Fort Worth’s best barbers and created an amazing environment for guys to get their hair/shave/style done. The fellas have since tamed Pace Storey’s crazy hair!

Shoot Smarter SHOOT SMART, WHICH WILL SOON OPEN ITS THIRD LOCATION IN BENBROOK, HAS REVOLUTIONIZED THE LOCAL SHOOTING SCENE. ARTICLE DOUGLAS MATUS
F
ort Worth’s Shoot Smart has generated accolades and won recognition as the best shooting range in Fort Worth. The reason why? Because it takes the concept of the ‘shooting range’ to a whole different level. A
forward-thinking establishment that keeps the comfort, safety, and fun of its guests at the forefront, Shoot Smart has rapidly expanded on the basis of its popularity. Since its foundation in 2011, the original Fort Worth location at 10305 North I—35 has expanded to a sister location in Grand Prairie at 2440 W. Main St. This summer, area residents can experience the Shoot Smart experience at a brand new location, conveniently located in Benbrook at 9455 Benbrook Boulevard. The Shoot Smart story began in 2010, when the owners failed in their search to find a clean, pleasant place to shoot. Unwilling to compromise when it came to their patronage of a range, they decided to open one themselves. “The owners just wanted a nice place to shoot,” says Jared Sloane, operations manager of Shoot Smart. “They found a location, opened in March of 2011, and it was off to the races. We became real popular, real quick.” This popularity paid off in a huge clientele, eager to take advantage of Shoot Smart’s amenities and friendly atmosphere. Local response was so enthusiastic, in fact, that a second location came hot on the heels of the first.
12
West FW Lifestyle | June 2017
“That first holiday season, we had long wait times,” says Jared. “Because of that, we decided to accelerate the growth of the business and built out the second phase of the first store.” In December of 2012, tragedy struck in Newtown, Connecticut. The incident caused a wave of grief and anger around the country, with repercussions felt across the political and public sphere. “The tragedy generated a lot of anxiety and grief, and the industry was rocked hard,” says Jared. “It became hard to find supplies and inventory. We had a lot of strong relationships with businesses that helped us make it through, when a lot of ranges did not.” One of those that didn’t, a local competitor, contacted Shoot Smart in 2013 with a buyout proposal. The Shoot Smart team completed the acquisition that summer and fall, and opened a second store in Grand Prairie. “Now we have Benbrook,” says Jared, “which we’ve worked on for a year-and-a-half. We wanted an opportunity in southwest Fort Worth, and we found it.” The Benbrook location, slated to open in late May or early June, puts to work all the lessons that Shoot Smart has learned. Private suites represent a unique feature that will see ample representation at the Benbrook site. Privacy brings with it a sense of safety and confidence, and new shooters especially will enjoy the amenity. The Benbrook location will have six of these private suites, in addition to seven traditional lanes. All lanes are set to feature two-way video and voice communication with the Shoot Smart control station, which makes it a breeze to rent a new firearm or order more ammunition. “You go in and have your private space,” says Jared. “People like their own environment, because it creates a sense of safety and confidence. We get a lot of new customers, and the private suites are a great option for someone learning the shooting sports.” New customers represent a large part of Shoot Smart’s business. Approximately half of their clientele on any given day has never visited a shooting range before. Education thus becomes a big part of Shoot Smart’s business. “We’ve introduced customers to shooting for our entire existence,” says Jared. “We work to show people it’s okay, that shooting has a lot of entertainment value, not to mention it’s rooted in tradition. This area is rapidly growing, and people arrive from areas where it’s not normal or acceptable to own a firearm.” Shoot Smart seeks to break through these barriers, and showcase the fun, challenge, and competitiveness of shooting at the range. In addition to shooting, the Shoot Smart experience includes training. If you’ve never picked up a gun before, but have become interested in this fun and challenging hobby, you can join a comprehensive suite of classes that will get you trained quickly, thoroughly, and responsibly. To learn more about Shoot Smart, enroll in classes or learn about memberships, visit www.shootsmart.com. June 2017 | West FW Lifestyle

f you honor and love the ideal of the barbershop, Fort Worth has a new offering to keep you looking sharp. As a cultural institution, barbershops have a
long and storied history. According to the National Barber Museum & Hall of Fame, barbering as a profession dates back to Egypt in 5000 BC. Egyptian nobles performed this honored calling, and practiced their trade with tools made from sharpened flint and seashells. Fast forward to the Middle Ages, and ‘barber-surgeons’ were trusted to dress wounds and perform surgery, in addition to cut hair. By the time of the Civil War, most barbers had given up bloodletting, and developed refinement in the grooming of beards. Around this time, the barbershop became a frequent inhabitant of Main Street. Men would flock to the barber not just to get cleaned up, but to swap news and gossip, or just while away the hours. As the years have passed, it has become less common for men to frequent the barber. Statistically speaking, the trade has become more populated with women, and the ubiquity of chains and salons has led many men away from what ‘oldschool’ barbershops remain. Thankfully, the glorious tradition of the barbershop lives on in near southside. District Barbershop, the brainchild of Edward Ramirez and Francisco Castaneda, opened recently to much excitement. To learn more about District Barbershop, we spoke with Edward and Francisco. WHAT INSPIRED THE CREATION OF DISTRICT BARBERSHOP? EDWARD: I knew I wanted to have my own shop, and I knew that I wanted
to create a shop where barbers wanted to come to work and people enjoyed themselves. Our overall goal from the start was to treat people, along with our barbers, the way we wanted to be treated. Nothing crazy, just do great haircuts and take care of people while you do it. FRANCISCO: My hope was to create a good work environment, and give
that positivity back to the people who come in. We wanted to make a happy place that welcomed families, where people can come and joke around and laugh — a place where different personalities could be in the same room without being judgmental.

WHAT SETS YOU APART FROM OTHER BARBERSHOPS AND SALONS? EDWARD: First of all, we’re barber-owned
and operated. With us, customer service always comes first. A lot of barbers have this mentality that it’s a privilege to have them cut your hair. We’re the complete opposite of that, and consider it a privilege to cut your hair. That philosophy where the customer always comes
first; you don’t find that in a lot of places. Other barbers may not honor appointments, or put some clients in front of others, and those are things we simply don’t do. Our online scheduling alone sets us apart. At other barbershops, you might have walk-ins only, which doesn’t work for a lot of busy people. Francisco: We’re definitely one-of-akind. We give hot towels and do authentic barbering. We don’t cut corners, and we give every client a neck shave and the hot towel. My grandpa used to take me to the barbershop, and they would use the straight razor and everything, and we just want to keep that tradition alive. WHAT’S ONE THING YOU WANT PROSPECTIVE CUSTOMERS TO KNOW? EDWARD: The people who come to us are
looking for something better, but haven’t been able to find it. Really, we just want people to know about the service. We do all the little details, from the hot towels to the lather. We also use products that most people can’t get, that are better for your skin. All of our barbers have been trained in the best way to shave someone, and most guys don’t always know how to do that kind of stuff. You’ve got five-bladed razors at home, but you only need one to do a proper shave. FRANCISCO: That we offer proper cus-
tomer service. A lot of barbers now are into quantity over quality. We dole out the quality and don’t worry too much about the quantity. We take the time for consultations, so we’re clear on how you want your hair to lay, things like that. Overall, we make sure that your time in our chairs is well spent.

LEADING B Y EX AMPLE
IN HIS DUAL ROLES AS LAWMAN AND FATHER TO NINE, TARRANT COUNTY'S SHERIFF BILL WAYBOURN PROVIDES AN EXAMPLE OF HONOR.
ARTICLE DOUGLAS MATUS | PHOTOGRAPHY RICHARD DALTON

West FW Lifestyle | June 2017
community needs a sheriff that reflects its values. Of course, sheriffs work to uphold the law and order that makes possible the community’s framework. But it’s as the visible paragons of justice that they have perhaps the greatest impact. In addition to their role as enforcer, sheriffs serve as examples of honor and justice for the entire community. The importance of this figure makes it no wonder that so many sheriffs — from Seth Bullock to Bat Masterson and Wyatt Earp — have passed into lore as legends. Tarrant County has had its own share of stellar lawmen over the years. Now you can add another name to that list: Sheriff Bill Waybourn, newly elected in November and sworn in earlier this year. Sheriff Waybourn, the longtime police chief for Dalworthington Gardens, has outlined an honorable agenda for his official capacities. He has promised to never “get comfortable” in his role, and has pursued a fair and compassionate stance that nevertheless remains steadfast in its enforcement of the law. As the first new sheriff Tarrant County has had in 16 years, Waybourn brings a breath of fresh air to his office. Sheriff Waybourn defeated his principal opponent, Dee Anderson, in a contentious Republican primary earlier in 2016. When Waybourn took the oath of office, state Senator Brian Birdwell praised the new sheriff and his wife together. The strength and integrity of this union undoubtedly supports the sheriff in his official duties. It also factors into his home life, one in which Sheriff Waybourn lives the moral example that he upholds as sheriff. A devout Christian and steadfast man of God, Waybourn, along with his wife, have felt called to adopt seven children from unfortunate situations. It’s certainly impossible to weigh the comparative importance of Sheriff Waybourn’s two principal roles. On the one hand, he’s charged with leading and protecting a massive community of people. On the other, he’s responsible for the care and upbringing of his children. We collectively celebrate Father’s Day to honor one of the most important people in each of our lives. In honor of this year’s Father’s Day, we took the time to talk to Sheriff Waybourn, not as a lawman, but as a dad. The Sheriff adopted his seven children with one purpose in mind: to do right in what he saw as divinely inspired moments. “From a faith-based position, my wife and I felt like we were called to adopt,” says Sheriff Waybourn. “We stepped out on faith in every one of those situations. They were circumstances where we weren’t out looking to adopt children. It just kind of presented itself in a miraculous fashion. We felt like from a Christian standpoint that that was exactly what we needed to do.” The best fathers approach their role from this very standpoint. A noble calling, one in which the earthly man can honor the divine example. Fathers create, nurture, and protect. When times get tough, you can always rely on dear old dad. Why? Most dads would say because supporting and protecting their children is never a choice. It’s just nature. In the moments when Sheriff Waybourn and his wife, Laura, felt called to intervene on the behalf of their adopted children, he became their father even before the official process began. CONTINUED >

LEADING BY EXAMPLE (CON TI N U ED)
Whether they realize it or not, fathers provide an example in every action they take around their children. When asked how he strives to serve his own children in this manner, the sheriff responds: “Hopefully I just do some of the things that my parents did for me. I hope that I model values that are worthy of my faith. I hope that I’ve demonstrated values such as honor and integrity. I’ve certainly fallen short in my span of time, but those are the things that I consider important and I hope they saw some of that.” The values that one adopts almost always come from the example of the parents. Sheriff Waybourn’s children range from the ages of 2 to 36, so the values that he absorbed from his own parents have cast a long shadow indeed. The values that Sheriff Waybourn personally honors have been apparent in his public life. Tarrant County’s new sheriff has been variously described as kind, humble, a righteous man, a man of honor, and a Christian. He is known to truly care for others, in a manner that manifests even towards inmates. As he passes men and women along into the justice system, Waybourn is known to promise he’ll pray for them. This foundation of faith plays an indispensable part in his life, and began, along with other honorable lessons, in his childhood. “From my parents, the big thing I can say I got from them was to model strong values,” says Sheriff Waybourn. “This is crucial to parenting. Modeling strong values is probably the most important thing, that and discipline.” Fatherhood changes a man. For someone who has raised nine children, Sheriff Waybourn has undoubtedly changed a lot over the years. The values that he holds true have not changed, however, and provide a guiding light in all the sheriff’s affairs. As for what he has learned, the sheriff has one word: patience. “I would say that I believe fatherhood is a lesson in patience,” says Sheriff Waybourn. “It has provided what I would consider the most exhilarating moments of my life. I want to remember the blessings that those children have brought to my home and heart.” For all the pains of fatherhood, the responsibility and dedication, most fathers would instantly agree: they wouldn’t trade it for anything. Nothing can compete with the sense of achievement, and the breathtaking bounty of love that fatherhood brings. “I think of the exhilarating moment when my daughter was born, seeing her for the first time,” says Sheriff Waybourn. “It was like a great story that I finally got to meet. With my other children there have been equally exhilarating moments. Sometimes just seeing them do simple things, and sometimes the great accomplishments. At that point, I’m just being thankful.” There’s truly no better way to describe the joy of fatherhood than the sheriff’s own words: a great story that you get to meet. When we raise children, we get to share in the story of a life outside our own. There can truly be no greater blessing than that. A wise young father-to-be, on the cusp of joining his own story, would do well to honor the sheriff’s words of advice. “Just love your wife,” says Sheriff Waybourn. “Create a great marriage and follow Christ, and the rest will fall into place.”
I WOULD SAY THAT I BELIEVE FATHERHOOD
IS A LESSON IN
patience

BISCUIT HOT BOX BISCUIT CLUB, FORT WORTH'S NEWEST "CAN'T MISS" CULINARY EXPERIENCE, ELEVATES THE BISCUIT TO AN ART FORM. ARTICLE DOUGLAS MATUS | PHOTOGRAPHY NANCY FARRAR
At a recent gathering of the Hot Box Biscuit Club, culinary Nirvana was achieved through Paris Hilton. No, the socialite and heiress has not refashioned herself as a chef, nor was she cannibalized. The Paris Hilton . . . That’s Hot was actually the name of the centerpiece dish. It (or she?) was accompanied with a selection of other cleverly named items, including the Hip Hop Lemon Drop and the Trill Daddy. If you feel confused, don’t worry: such an original concept as the Hot Box Biscuit Club can seem confusing without proper explanation. To whit: started by Chef Sarah Hooton and her partner, Chef Matt Mobley, the Hot Box Biscuit Club is a pop-up culinary experience. Once a month, Sarah, Matt, and their team get together to execute a themed menu based around the noble biscuit. “We keep the same format, with the biscuits coming first,” says Sarah. “We usually do a biscuit sandwich, a couple sides, and a dessert. We change up the items we’re doing based on the time of year, and use seasonal things.” In addition to the entree, guests get served a bowl of biscuits with delectable spreads as an appetizer. To experience the Hot Box Biscuit Club — which also includes a themed cocktail — you must be ‘in the know.’ Followers of the club on Facebook and Instagram can sign up for notifications of the next event. You have to act fast, however, as the pop-ups have begun to sell out in a matter of minutes. You might wonder how such an original concept got its start. Through a seed planted in Sarah’s mind while in Portland, the Hot Box Biscuit Club bloomed through a collaborative process with Matt and various friends. 24

“While I was in Portland for the 2015 Food and Wine Festival, I visited a popular biscuit restaurant." says Sarah. “I liked the concept, and realized we didn’t have anything like that — so good and simple — in Fort Worth.” Sarah brainstormed with friends and got Matt involved, and the idea took off. “Matt’s really good at everything else, while I handle the pastry stuff,” says Sarah. “He’s very meticulous with his cooking, and we played around with some ideas. Then we just decided to roll with it.” Each “meeting” of the Hot Box Biscuit Club requires an immense amount of prep from Sarah, Matt, and their team. Between the two of them alone, each event requires 40-50 hours of prep time. It all pays off, however, when the 50 or so guests sit down to enjoy the menu. On a Sunday in April, this writer (thanks to a generous editor) had the pleasure of experiencing the Hot Box Biscuit Club. The event was held at Magdalena, a caterer and supper club whose owners, Juan and Paige Rodriguez, graciously allow the use of his gorgeous space. Guests took seats at large tables, with an overall communal set-up. Many guests brought their own bottles of wine, and a convivial, lively atmosphere ensued as cross-table talk filled the air. A short introduction from Sarah preceded the first course: a heaping bowl of biscuits accompanied with homemade jam and butter. The Trill Daddy crawfish dip followed, and proved itself a ragin’ cajun success. The Paris Hilton arrived to awe all attendees through sight and smell. Compose of sugar-brined fried chicken with Louisiana hot sauce, a flavorful sauce called #tastydust, and whipped honey butter on a buttermilk biscuit, the Paris Hilton was an achievement in comfort food transcendence. The two side dishes, stewed okra with tomato and polenta grits with pimento cheese, served as the ideal accompaniment. Lastly, Sarah’s Buttermilk Pie arrived to tempt overloaded stomachs with its sugary perfection. The only downside of the experience was that, thanks to the heaping portions, it felt impossible to enjoy enough of each item. Word to the wise: if you plan to experience the Hot Box Biscuit Club, come hungry. The cost of the event is $45 per person, and prospective attendees should stay sharp in watch of their email. “The first couple of times, we sold out within a couple days,” says Sarah. “By the fifth, sixth, and seventh, we sold out in a manner of minutes. They fill up so quick I have to turn people away, which feels horrible. We’re trying to add a few more to get everyone in.”
