As summer begins to wind down and the start of school commences, the carefree days of slower morning routines and spending more time adventuring is exchanged for busier school and sport routines and schedules. The summers tend to progressively feel like they fly by the older we get, as do the years, but the simple pleasures of summer never get old. Although the coming return of the routine of school for our children can feel like a welcome friend by the time August rolls around, it is generally a little bittersweet. But don’t worry, there is still time to make the most of summer! This month we bring you great ideas for one last summer get-together, fun recipes for your dog that are easy enough for kids to make, a round-up of local spots for delicious frozen treats, and a spotlight on Drench salad dressings to enhance your freshest summer salads. Our August issue is dedicated to the cutest members of our community— kids and pets. They both have a way of making us feel special and their loyalty and sense of wonder is refreshing. We talked with Karen to learn more about her dressings, herself, and how she makes her summer salads sing. WHAT INSPIRED YOU TO CREATE SALAD DRESSINGS? The inspiration for my dressings came when I was reading labels on traditional

store-bought dressings and couldn’t believe the ingredients! It sounded like I was reading a science project! It made me so angry. Why is this even allowed in our food? That’s when I said I will never buy these chemical-laden dressings again and I will make my own. My friends and family told me how much they loved them and this inspired me to bottle them. HOW DO YOU DEVELOP YOUR RECIPES? I like to create dressings that are on trend with current food trends and lifestyles. I’m a foodie and I love to create recipes and share them! Many of my recipes are available on my website, idrench.com. IN ADDITION TO FRESH SUMMER SALADS, WHAT OTHER SUGGESTIONS DO YOU HAVE FOR USING YOUR DRESSINGS? I love using our dressings as marinades! I love marinating chicken with our Mediterranean Lemon, it gets real tender and juicy. I love marinating fish, especially salmon, with our Citrus Honey Vinaigrette. Many have told me they love marinating their steaks with Balsamic Fig Vinaigrette! I also use Mediterranean Lemon as a drizzle on our seven-layer Mediterranean dip (recipe at idrench.com) or drizzle it on avocado toast with microgreens or arugula. Our Balsamic Fig Vinaigrette is also great as a finishing sauce for roasted vegetables. I love to experiment with my dressings and mix them! I created a light summer salad (shown) using Citrus Honey Vinaigrette and Balsamic Fig Vinaigrette with watermelon, cucumber, feta, mint, and greens. It was delish!
TELL US A LITTLE ABOUT YOUR FAMILY, INCLUDING ANY FURRY MEMBERS! My husband Jim and I have three kids, Annabella, Jimmy, and Angelina and they all help with the family business. I don’t know what I would do without them! They’re incredible! Our cat Boots was a gift to my daughter on her birthday. He is named Boots because he’s all gray but his paws are white and it looks like he’s wearing a pair of boots!

PEANUT BUTTER AND PUMPKIN DOG TREATS
Celebrate your dog’s next birthday or treat your pooch for no reason at all! Peanut butter and apple combine to create a taste your dog will love as much as you do. Apples provide vitamins A and C, along with beneficial fiber for your dog. Make sure to remove all the seeds, as they contain potentially harmful compounds. If small children want to help, they can do it! Core and cut the apple into large slices, then let your little one finish chopping with a plastic knife. Challenging your child to cut tiny pieces not only makes the recipe work best, but also provides great fine motor practice which can help strengthen muscles used for writing.
Unsurprisingly, most dogs love peanut butter! Peanut butter provides protein and healthy fats for your pup (and you, too!) When allowed to dry completely while baking, these treats store well at room temperature. If you choose to bake them to a softer consistency, store them in the refrigerator for best results. Children will love to help make these as well. The ingredients are safe if they sneak a bite, and children love using cookie cutters. Dog bone-shaped cutters make this recipe even more fun to make.

Preheat oven to 350 degrees. Grease a ramekin and set aside. In a small mixing bowl, combine all ingredients and mix thoroughly. Pour batter into ramekin. If desired, garnish with a few additional apple slices. Bake for 20 minutes or until done. Makes 1 serving.

Roll dough ½ inch thick. With a cookie cutter, cut shapes and transfer to an ungreased baking sheet. Bake for 40 minutes or until golden brown and crunchy. Makes about 25 treats, depending on size of cookie cutter.

APPLE CHEDDAR DOG TREATS
NO-BAKE OAT BALLS Quick and easy, these dog treats also contain pumpkin. Pumpkin is packed with nutrition for your dog and can be soothing for pups with stomach upset. If you don’t have pumpkin, try replacing it with mashed banana, sweet potato, or even butternut squash--all tasty, healthy options for your dog. With no oven required, this recipe is simple enough for children to make on their own. Little ones will be so proud to make treats for your pet all by themselves! If you have concerns about peanut butter due to allergies in your home, use sunflower butter instead—it is also pet safe, and some dogs even prefer the taste.
INGREDIENTS • • • •
1 cup canned pumpkin 1/3 cup peanut butter ¼ cup milk or half and half 3 cups uncooked rolled oats, reserving ½ cup for topping
DIRECTIONS In a mixing bowl, combine pumpkin, peanut butter, and milk. Stir until combined. Add 2 ½ cups oats and mix until the dough is firm enough to roll into balls. With a spoon or scoop, form dough into 1 inch to 1 ½ inch balls. Roll balls in reserved oats to coat. Chill in refrigerator for at least one hour. Store refrigerated. Makes about 20 treats.

Instead of peanut butter, these treats feature cheese, another favorite of many dogs. What’s more, two tasty flavors of cheese combine to make them irresistible! While cheese is more of a treat than a nutritional benefit for your dog, the lower lactose levels in cheese makes it more digestible for Fido. These treats are baked until very dry, and store well at room temperature in an air-tight container. Children will love to help roll and cut the dough, and these are easy enough for them to make. Just be sure to help with the oven! Once again, choosing a dog bone cookie cutter will make these more fun to make and more fun for your dog to enjoy.

2 cups flour ½ cup uncooked rolled oats 1/3 cup shredded parmesan cheese 1/3 cup shredded cheddar cheese 1/3 cup unsweetened applesauce 2 tablespoons oil 3 tablespoons water
DIRECTIONS Preheat oven to 350 degrees. In a mixing bowl, combine cheeses, applesauce, and oil. Add flour and oats and mix until well combined. Add water, 1 tablespoon at a time, as needed until mixture forms a firm but workable dough. Roll dough ¼ inch thick. With a cookie cutter, cut shapes and transfer to an ungreased baking sheet. Bake for 30 minutes. Turn off heat and allow treats to dry thoroughly in the oven. Makes approximately 16-20 treats, depending on size of cutter.

1 ciabatta baguette or loaf, cut in half horizontally 3 tablespoons butter 3 medium red peppers 3 cups arugula, spinach or mixed greens, rinsed and patted dry 1 ball of mozzarella, sliced thin 10 oz assorted Italian deli meats (I used soppressata salami and mortadella) Olive oil Italian seasoning Salt and pepper to taste 1 tablespoon capers (optional)
INSTRUCTIONS Roast the red peppers as follows: Set your peppers on cooktop flame or grill. Cook until they are mostly black, turning as needed. Place the peppers in a plastic or paper bag and let sit for 15 minutes. Remove peppers from bag and peel off the blackened skin. Discard the skin and slice the peppers in wide strips. Place in a bowl and drizzle with a bit of olive oil and sprinkle with salt and pepper. Add a tablespoon of capers if using. Set aside. Butter each piece of ciabatta and sprinkle with salt and pepper. Place a generous layer of overlapping cold meats. Top with pepper strips. Add a layer of mozzarella slices, patted dry. Sprinkle generously with salt, pepper and Italian seasoning. Top with a generous layer of arugula. Top with ciabatta. Wrap tightly in plastic wrap and place on platter. Top with heavy skillet or brick and refrigerate six hours or overnight. Slice to serve.
NO-BAKE DESSERT BITES INGREDIENTS • • • •
1 store-bought pound cake 1 can of icing (I used buttercream) Berries Powdered sugar (optional)
INSTRUCTIONS With a cookie cutter, cut slices of cake into squares or circles. Place icing in a plastic sandwich bag. Carefully snip the corner of the bag, being careful not to cut it too big. Squeeze dollops of icing onto each cake bite. Top with berries and dust with powdered sugar if desired.
