LIFESTYLE LETTER

The Taste of Local There is something special about October. The temperatures begin to cool, the evenings become a little more inviting, and we start looking for reasons to gather. Whether it’s dinner with friends, a Saturday afternoon on a restaurant patio, a family meal at home, or a festive Halloween gathering, fall seems to bring us back to the table. That’s why I’m especially excited about this month’s Food & Beverage Issue of Weatherford City Lifestyle. Inside these pages, we’re highlighting some of the wonderful restaurants and food experiences throughout Greater Weatherford. I hope you’ll discover a new favorite—or perhaps be reminded of a restaurant you’ve been meaning to visit. We also have some fun recipes to help you welcome fall and celebrate the Halloween season at home. Food is about so much more than what is on the plate. It’s about the people who create it, the businesses that bring our community together, the conversations that happen over a meal, and the memories we make around the table. One of my favorite things about living and working in this community is the incredible variety of people and businesses that make it such a special place. From locally owned restaurants and chefs to the many entrepreneurs, service providers and community leaders who continue to invest in our area, there are so many stories worth telling. October is also a wonderful time to get out and enjoy our community. Take advantage of a beautiful fall evening, try somewhere new, invite friends to join you, and support the local businesses that help make Weatherford, Willow Park, Hudson Oaks and Brock such great places to live. And as always, I want to take a moment to thank our City Lifestyle partners. Your support makes it possible for us to bring our readers local stories, beautiful photography, community events and the people and businesses that make this area unique. I am incredibly grateful for your trust in Weatherford City Lifestyle. So this month, I hope you’ll slow down just a little. Try something new. Gather with the people you love. Enjoy a great meal. And maybe raise a glass to this wonderful community we are fortunate to call home. Happy October, and as always, thank you for being part of the Weatherford City Lifestyle family. Savor Local Flavor Local Dishes, Signature Drinks, and Unforgettable Flavors ARTICLE BY REBEKAH GIDDENS | PHOTOGRAPHY PROVIDED

Over the years, the charm of Weatherford and the surrounding towns has enticed some of the most talented chefs to settle in the area. These culinary creatives have devoted themselves to bringing their personal styles and dishes to our communities. It’s easy to write about the restaurants of Parker County; however, narrowing the list down to a few local spots is the challenging part.

While this list is by no means all-inclusive, it does provide a glimpse into the wonderfully atmospheric and delicious culinary experiences in Parker County. We hope showcasing a few of the popular, locally loved spots encourages you to make plans for an evening of scrumptious dining, refreshing beverages, and company as warm and welcoming as the autumn season.

Zeno’s on the Square: Z E N O S O N T H E S Q UA R E .C O M

Zeno’s brings authentic Italian cuisine to the heart of downtown Weatherford. Begin with a Tuscany Road Trip, a fabulous appetizer of Caprese, seasonal fruit, tomato bruschetta, Parma ham, and Parmigiano Reggiano. Popular main courses include Lobster Fettuccine, Penne Midnight, and Chicken Parmesan. With hearty dishes like Costata Della Casa (prime ribeye seasoned with house porchetta) and an array of soups and salads—and carefully chosen wines—the only difficulty will be deciding what to order.

Teddy Wong’s: T E D DY W O N G S .C O M

A fusion experience like no other can be found on the Square in Weatherford. At Teddy Wong’s, all the delicious flavors of traditional Chinese cuisine meet a strong, Texas twist. Pair a glass of wine with a tasty serving of lo mein—with your choice of protein, ranging from classic chicken to more southern options like BBQ pork. From spicy dumplings to Texas beef & broccoli, the Lone Star State’s influence can be experienced in each dish.

A FALL-INSPIRED MAPLE PUMPKIN GRANOLA WITH PUMPKIN YOGURT ARTICLE BY ALYSSA LAVY, MS, RD, CDN, CPT

4. Line a large baking sheet (9 x 13 inches works well) with parchment paper and spray with nonstick cooking oil spray. Transfer oats to baking sheet and spread in a thin, even layer. 5. Bake in oven for 1 hour, mixing at 30 minutes and 45 minutes. 6. Remove oats from oven briefly. Add pumpkin seeds, chopped walnuts, cinnamon, pumpkin pie spice and remaining ¼ C pure maple syrup. Mix with a spatula and return to oven to bake for another 30 minutes, mixing halfway through. Remove from oven and allow to cool for 5 minutes before using a spatula to transfer to container. Do not wait too long to transfer granola as it can stick to the parchment paper as it cools.

maple pumpkin granola

(Yields approximately 4.5 cups or 18 – ¼ C servings)

ingredients:

• 2 ½ C rolled oats • 1 C pumpkin seeds, hulled • ½ C unsalted walnuts, chopped • 2 Tbsp canned pumpkin puree (Note: the only ingredient should be pumpkin – this is different than pumpkin pie filling) • 1 Tbsp water • 2 Tbsp avocado oil or vegetable oil • ½ C pure maple syrup, divided into 2- ¼ C servings

• • • • •

2 tsp pure vanilla extract 1 tsp ground cinnamon 1 tsp pumpkin pie spice ¼ tsp salt Nonstick cooking oil spray

pumpkin yogurt

(Yields approximately 1 C yogurt)

ingredients:

• ¾ C plain Greek yogurt of choice • ¼ C canned pumpkin puree • ¼ tsp cinnamon • ¼ tsp pure vanilla extract • 1 ½ tsp honey

granola directions:

1. Preheat oven to 250 degrees Fahrenheit. 2. Combine canned pumpkin, water, oil, vanilla extract and ¼ C maple syrup) and mix until well combined. 3. Add rolled oats and salt to wet ingredients and mix until oats are evenly coated.

yogurt

directions: 1. Combine all yogurt ingredients in a medium sized bowl. Top with a handful of the maple pumpkin granola, serve immediately and enjoy! Note: This granola can be stored in an airtight container and stored in a cool, dry place for up to 1 week. While this granola is made with gluten free ingredients, I recommend using certified gluten free ingredients if needed . Yogurt can be made with a suitable dairy-free alternative if you need this recipe to be dairy-free and the honey can be swapped for pure maple syrup to make the dairy-free yogurt recipe suitable for a vegan diet. The granola and the yogurt can each be enjoyed on their own, but they complement each other so nicely! This Maple Pumpkin Granola Parfait is a perfect way to celebrate autumn’s most famous flavors in a nutritious way! Pumpkin, maple syrup and warm spices, such as cinnamon and pumpkin pie spice, give cozy vibes that are traditionally found in baked goods this time of year. However, while pumpkin bread, muffins, cookies and other fall flavored baked goods are certainly delicious and should be enjoyed, this Maple Pumpkin Granola Parfait provides the satisfaction of those fall flavors in a lighter way, while providing ample protein and fiber. It is the perfect, slightly sweet and balanced way to start the day – or to enjoy anytime! Website: alyssalavy.com Instagram: @alyssalavyrd

In an Unexpected Setting, Rio Brazos Pairs Fine Dining With a Hometown Flair

When John Saleebey first joined the new venture of Rio Brazos Ranch Grill on the outskirts of Weatherford, even beloved colleagues questioned the choice of location. They called it “the middle of nowhere,” and Saleebey admits he shared a bit of their uncertainty. What convinced him was owner Dean Williams and acclaimed chef Clint Connaway, whom John had worked with before. The three shared a vision crafted around exceptional food and uncompromising Texas hospitality. Connaway had dreamed of opening a premier restaurant in his hometown, creating what Saleebey calls a “local boy makes good” story. “There aren’t many chefs that would have had my curiosity piqued in this way,” Saleebey admits. “Chef Clint is one of only two chefs in my decades-long career that give me food cravings.” Despite its unlikely setting, Rio Brazos has quickly become a favored gathering place in Parker County. Saleebey says the community’s affection and support surpassed anything he had experienced during his storied career in the hospitality industry. CONTINUED > OCTOB ER 2 0 2 6 | C I TYL I FE STYL E . C OM/WE AT HE R F O R D

17

At the heart of the restaurant is a culinary style that feels distinctly Texan with an elevated flair. Chef Connaway describes it as up-front and honest ingredients with big, bold flavors like the great state of Texas. These flavors are paired with down-home friendliness and meticulous attention to detail steeped in traditional French service techniques. Guests may arrive as they are, but the food is anything but ordinary. The menu balances Texas ranching traditions with global influences and contemporary creativity. Couscous, ratatouille, roulade, poutine, and pozole have all appeared alongside familiar Texas spices, chiles and smoking techniques. Signature dishes include Spicy Calabrian Chile Shrimp, Red Snapper à la Plancha, and the Campfire Ribeye. The latter places a grilled ribeye over ranchero salsa, then tops it with a refried bean-stuffed poblano, grilled shrimp, pico de gallo, and queso fresco. Saleebey believes the dish perfectly captures Connaway’s Texas origins and inventive spirit. Daily chef features have also developed a devoted following, often selling out before the shift is halfway over. Some, including the Campfire Ribeye and Lobster Ravioli, became so popular they earned permanent menu placement. Other unexpected favorites include steamed Prince Edward Island mussels, Pork Tenderloin Roulade, and an ever-changing selection of flatbreads. “In fact, I have a guest who calls daily to check on what flatbread we are having on the menu that day,” Saleebey says. “I look forward to that call like I do my morning coffee.” That sense of community reflects the restaurant’s larger outlook. Rio Brazos sources locally whenever possible, working with Dryad Grove Farms, Timber Ridge Quail Farm, American Butchery, and Dolce Panda Creamery. For Saleebey, relationships with guests, employees, and suppliers have cemented the foundation of the business. “True hospitality is what drives our success,” he says. “Everything we do is built around getting the guest to feel something remarkable.” Now, Rio Brazos is preparing to grow. Plans include expanding into an adjoining nursery space to create a high-end cocktail lounge, along with a possible parking lot enlargement to accommodate increasing demand. Saleebey and Connaway welcome Weatherford’s widening restaurant scene. They believe more dining options will encourage residents to stay closer to home instead of traveling to Fort Worth. “We hope that our success prompts other restaurateurs to come and join us in the growth of the next dynamic restaurant community,” explains Saleebey. What began as a leap of faith in the backroads of Weatherford has become something much greater. Rio Brazos Ranch Grill is a destination where flavorful Texas cuisine, French-inspired presentation, and hometown relationships commune around the board. riobrazosgrill.com

How To Stay Festive And Healthy? Sure Thing

22

S EASON A L SE T U P S | FO OD + BE VE RAGE

Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

stuffed

PEPPERS

pumpkin

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.

ghostly

FRUIT BOWL

spooky

CHARCUTERIE These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

DIP

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.

jack-o-lantern

VEGGIE TRAY The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.

Healthy Eating for Every Lifestyle Nutritious Meals, Customizable Options, and Flavorful Dishes: How Clean Eatz Makes Eating Healthy Easier for Local Households

Busy schedules can lead to rushed mealtimes, poor digestion, or a reliance on take-out orders—and not enough emphasis on nutritious food and family time. The Clean Eatz corporation was founded on the desire to simplify healthy eating and make it an integral part of daily life, no matter how packed the calendar is. When her father developed health issues, Joyce Bohn became a caregiver, in addition to working long hours. With little time to prepare the healthy food her father needed, she began looking for alternative options. That’s when she discovered Clean Eatz. “It made it easier for me as a caregiver,” Joyce shares. “Then my husband and I started eating it, and we felt better. We saw great results in our own health.” After her daughter relocated to Texas, Joyce chose to move to Parker County to be close to family. Joyce recalls a conversation with her daughter, who expressed the desire for hassle-free, healthy meal options that fit her busy schedule. “This area needed something like Clean Eatz,” Joyce says. Seeing an opportunit y to make a difference, she became a franchise partner and brought the cafe to Parker Count y—a move that was ultimately life-changing for both Joyce and the communit y.

Aside from time limitations, many people struggle to manage food sensitivities. It can be especially difficult to find safe places to eat when trying to avoid allergens or reactive foods. “We get a lot of custom orders for adults and children with food sensitivities,” Joyce explains. “We get orders for children with diabetes, because the parents can monitor the macronutrients, like carbs, proteins, fats—everything that their kids are eating.” Where health conditions or food allergies and sensitivities normally limit options when eating out or meal prepping, the Clean Eatz menu is filled with customizable, flavorful items. Customers can swap ingredients for something better suited to them and their health needs. This not only helps families feel less stress at meal times, but it also opens doors for new experiences.

“I had some kids that were able to go to summer camp this year for the first time and take their meals with them,” Joyce says. “And the camp could prepare the meals without the risk of cross-contamination.” Athletes can also benefit from the menu and customizable options. Through nutritional guidance, Clean Eatz can help athletes and those who are highly active by gearing a diet towards their personal needs, such as extra protein or carbs. The Clean Eatz team even has a corporate dietitian on board who can answer questions about clients’ diets and their best nutritional path. In addition to the cafe, grab-and-go dishes, and meal plan options, Joyce and her team also provide catering services for sports organizations and area events. The Wrap Platter, Salad Buffet, or delectable Build-Your-Own-Bowl options help make food prep for any event simple, healthy, and delicious—a secret Joyce says is slowly spreading across the county. “We’re getting very busy meal prepping,” she says. “People are finding out that the food is really good, and it’s easy.” The Clean Eatz menu is packed with delicious items designed to fit perfectly into any nutrition or lifestyle need. Popular choices are the Turkey Burnt End Cuban—a guest favorite with a unique flavor—and the Southwest Bison Wrap, each with a side of air-fried Sweet Potato Fries. For grab-and-go, the Cowboy Shepherd’s Bowl is one of Joyce’s personal recommendations, along with the creamy Brisket Mac & Cheese.
