Welcome fall! With the change of seasons comes a shift in what we’re all craving. Luckily Venice is an amazing foodie town, so there are plenty of delicious articles to peruse in this, the October Food & Drink issue.
In “Crafting Culinary Artistry at Venice Yacht Club,” we learn how VYC Executive Chef Bryan Meek is creating inspired new gourmet dishes for members and for catered events. “Just Desserts” is a yummy exploration of how “Entertaining with Allegro Bistro’s Italian Cookies & Delicious Nothing Bundt Cakes,” is a great way to spend an evening with guests.
Speaking of special nights, “An Evening of Dining & Dance” is a tour de force of dining on the town suggestions to pair with tickets to the Sarasota Ballet’s “The Nutcracker”. Crafting Culinary Artistry at Venice Yacht Club
EXECUTIVE CHEF BRYAN MEEK RELISHES CREATING GOURMET DELIGHTS FOR VYC’S MEMBERS & FOR CATERED EVENTS
The Venice Yacht Club’s Executive Chef, Bryan Meek, is passionate about the culinary arts – emphasis on art. As a result, Chef Bryan doesn’t just create meals; he orchestrates culinary masterpieces.
The Detroit native earned a BA in Fine Arts from the College of Santa Fe, NM. He then turned his talent for artistic expression to the realm of flavors, honing his culinary skills at the Art Institute of Colorado in Denver’s Culinary Arts program.
Having worn the hat of an Executive Chef at establishments like Stonewood Holdings and the Halifax River Yacht Club in Daytona Beach. Chef Bryan’s experience is impressive, to say the least. However, his start at VYC was nothing short of an adventure. With the club undergoing a grand kitchen
overhaul, Chef Bryan found himself crafting gourmet delights from a makeshift kitchen in the parking lot, using a club conference room for food prep.
Many would’ve balked at such a challenge, but not Chef Bryan. Instead, he embraced the experience, giving valuable insights into the new kitchen’s design. This blend of artistry and adaptability has translated beautifully to VYC’s dining and catering menus.
In a short span, Chef Bryan has greatly enhanced VYC’s culinary landscape. A rooftop garden now flourishes, providing a readily available source of herbs that infuse his creations with fresh flavors. His menus feature sublime new items – including the Florida-influenced Citrus Scallops with Mango Gastrique and Apple Slaw – our featured recipe.

Citrus scallops with mango gastrique and apple slaw.
Dishes to Try:
Citrus Scallops With Mango Gastrique
And Apple Slaw
Ingredients:
Mango Gastrique
• 2 Mangoes
• 2 tbsps. Sugar
• 1 cup Champagne vinegar
Citrus Dressing
• 1 Orange
• 1 Lemon
• 1 Lime
• 1 tablespoon Honey
• ½ cup – 1 cup Extra virgin olive oil
Directions:
Gastrique
Scallops
• 4 Sea Scallops: size U10
• 2 tbsps. Olive Oil
• Salt & Pepper
Apple Slaw
• 1 Granny smith apple
• 1 Orange bell pepper
• 1 Yellow bell pepper
• 4 oz Shredded carrots
• ½ Jicama
Scallops and Complete Dish
Caribbean jerk grouper served over sweet potato mash, grilled zucchini and yellow squash, pineapple rum glaze.
Peel and dice the mangoes. Add mangoes, sugar, and vinegar to a small pot. Reduce on medium heat by half, while stirring. Puree reduction and cool.
Citrus Dressing
Juice orange, lemon, and lime into a bowl. Add honey. While continuously whisking, slowly stream in the oil. Season with salt and pepper to taste.
Apple Slaw
Julienne the apple, peppers, and jicama. Combine with the shredded carrots and toss with the citrus dressing.
Season the scallops with salt and pepper. Heat up a medium size skillet at medium high heat, then add the oil and wait for it to heat up. Sear scallops 3 -4 minutes on first side. Flip and finish them in 2 to 3 minutes.
Start with a portion of apple slaw on the plate and rest the seared scallops on top.
Dot the plate with the mango gastrique and serve.

Wellen Park’s newest outdoor destinations are designed to offer even more ways to enjoy the health and wellness benefits of time spent in nature and the community connections created by shared experiences. The Landing Fishing Pier, Oakheart Nature Trail and Harvest Community Garden will each enhance the quality of life for residents and visitors alike, fostering a sense of community, well-being and environmental stewardship.
“Research consistently demonstrates the healing properties of nature and water, its abilities to, ease stress, enhance wellbeing and inspire positive thinking,” said Rick Severance, president of Wellen Park. “Our community is dedicated to providing residents with engaging and unique active and leisure opportunities within the natural environment. We look forward to introducing these incredible new outdoor experiences which will complement Wellen Park’s 30 miles of multimodal trails, parks and downtown’s incredible recreation options.”
The first feature to launch is the Landing Fishing Pier, located along the shoreline across from Solis Hall. The pier, which has a shade structure, extends into the Grand Lake, which is stocked with largemouth bass, channel catfish, redear sunfish, bluegill and threadfin shad.
Fishing tackle and bait for rent or sale is available onsite at Kind Vibes Outfitters, and anglers can also preview the lake’s offerings by scanning the QR code at a red marker near downtown’s floating dock.
With the opening of The Landing Fishing Pier, outdoor enthusiasts can make a complete 3-mile loop on the trail encircling the Grand Lake.
Back To The Garden
The two-acre resident-only Harvest Community Garden will offer 85 raised irrigated garden plots, event lawn, covered picnic area, composting area, restrooms, parking and a fruit tree orchard providing an intimate destination for small gatherings and events.
Centrally located near CoolToday Park, Harvest Community Garden will also host local schools for educational opportunities. “The garden is envisioned as a communal farm-to-table experience, a connection to the land and educational opportunities,” Severance said. “We plan to curate and layer in the produce grown in the garden into our weekly farmers market, encouraging sustainable practices within the community.”

Spanning roughly four miles, out and back, the trail stretches north across East River Road to Playmore Road, and also provides convenient walkable access to Sarasota County’s planned K-8 and high school campuses, which are projected to open in 2025.
Wellen Park takes an intentional approach to champion sustainability and celebrates its environmental assets. For example, as part of its Heritage Tree Program, Wellen Park relocated more than 25 healthy live oak trees from various locations within the community to Downtown Wellen.
The nearly $1-million effort to relocate mature trees not only saved these well-established trees but also helped create an immediate sense of authenticity and scale for Downtown Wellen. Each year, the development team and resident volunteers plant hundreds of saplings around the masterplan to provide more shade areas, offer habitat to wildlife and increase the state’s pine population. Every day, thousands of children and their families may not know where their next meal will come from.
In the heart of this struggle stands a beacon of hope: All Faiths Food Bank. Since its inception in 1989, the organization has tirelessly served Sarasota and DeSoto Counties, becoming the largest hunger relief organization and the sole food bank in the area.
The need is enormous. For example, from January to June, All Faiths distributed 2,607,956 pounds of food in South County, which is Laurel, Nokomis, Venice, North Port and Englewood. This equals 2,173,297 meals. “We served over 5,000 households that visited our pantries multiple times during this period,” says MJ Horan, MS, MPH, Chief Program Officer at All Faiths Food Bank.
Founded by a community of individuals who were dedicated to feeding the hungry, All Faiths Food Bank joined the prestigious Feeding America network in 1990. This affiliation underscores its commitment, not just to feed, but to holistically address the issues that accompany hunger, like housing, employment, and healthcare.
Its tireless efforts have not gone unnoticed. Feeding America recognized All Faiths as one of the top four food banks of 2019 for its local community-building and innovative methodologies.
Using data-driven strategies, the food bank ensures the maximum efficient allocation of resources, aligning with its broader vision of ending hunger. To that end, recent initiatives include school nutrition programs and nutritional education, a program to identify food insecurity in the community, and on-site Case Management.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

A Bite of Fall: The Classic Caramel Apple
Ingredients
• 8 tart apples (Granny Smith recommended)
• 8 wooden sticks
• 2 cups brown sugar
• 1 1/2 sticks unsalted butter
• 1 cup heavy cream
• 2/3 cup corn syrup
• 1/2 tsp. vanilla extract
• Pinch of salt
• Optional toppings: nuts, chocolate chips, sprinkles, coconut flakes.
Instructions
Apple Prep: Wash apples thoroughly to remove wax and residue. Dry them well. Remove stems and insert sticks firmly.
Making Caramel: In a saucepan, mix sugar, butter, cream, syrup, and salt. Continuously stir on medium heat until mixture reaches 250°F on a candy thermometer (firm-ball stage).
Vanilla Addition: Next, remove from heat. Stir in vanilla. Let it cool for 2 minutes ensuring it remains dippable.
Dipping: Hold apples by the stick, dip into caramel ensuring full coverage. If adding toppings, do so while caramel is warm. Place on a parchment-lined tray.
Final Touch: Allow apples to set for approximately an hour until hardened. Once set, they’re ready to savor!

Venice Yacht Club Sets Sail with Major Kitchen Upgrade
A strategic overhaul of the club’s culinary facilities raises the bar for Dining & Events.
The Venice Yacht Club has undergone a monumental transformation while celebrating its 72nd anniversary in the Venice community. The club completed an ambitious 7-month overhaul – from an antiquated kitchen that hadn’t been renovated since the 1990s – to an ultra-modern facility. The new, state-of-the-art kitchen is set to provide optimum dining options whether that’s a la carte for members, or catering menus for special events and banquets.
VYC General Manager Bruce Furman explains that the renovation is part of its new strategic plan. “Our Long-Range Planning Committee developed a solid long-term strategy that proposed several projects. After a member survey, focus groups, and ample consideration to timing, we decided to prioritize the kitchen renovation.”
Bruce states the old kitchen layout was difficult to navigate and contained outdated equipment. “Our aim was to redesign the kitchen layout, streamline our food delivery process, increase food quality, and create better working conditions for the team.”
During construction, the VYC culinary team operated from a temporary mobile kitchen in the parking lot, a makeshift prep kitchen in a club conference room, and a pantry for food and equipment that took up half of the main dining room. Bruce recalls, “It was a tough time, but we stayed open, and our members supported us even though meals were served on paper plates!”
The renovated kitchen has been in operation since February 2023 and culinary operations are well equipped for present and future needs. Gleaming stainless steel brightens the reconfigured space, which has been optimized in design and layout for efficient workflow. The highlight? A top of the line, double stacked Combi Oven with features that allow for the preparation of smoked and braised meats, barbeques, and other unique cooking techniques.
As a result, menu options have expanded with the versatility of the kitchen, allowing the club to keep up with modern cooking trends. It also began working with Braveheart Beef, a premium supplier of meats that, paired with the new equipment, will elevate their cuisine to new heights.
VYC is pleased that it can now provide its members with high end menus for upscale events - Candlelight Ball, Gourmet Dinners, and Wine Tastings, and more whimsical menus for its entertainment themed events like their Circus Party, Fire and Ice, and Halloween Celebration. The club’s private events/catering menu can be simplistic or elegant based on a client’s needs – whether a wedding or celebration of life.
Bruce notes that the new facility has propelled VYC toward a bright and delicious future. “The kitchen is the heart of the Venice Yacht Club and, with Executive Chef, Bryan Meek at the helm, it’s beating strong.” The Venice Yacht Club is a private club that has been an active part of the Venice Community since 1951.
