JOE “BEAR” MEADOW WAS BORN IN ENTERPRISE, ALABAMA, AND MOVED TO HOOVER IS IN 1982 WHERE HE GRADUATED FROM HOOVER HIGH SCHOOL IN 1996 AND WENT ON TO PLAY FOOTBALL AT UAB. Joe was a US Army Paratrooper from 2002-2005 and was deployed to Kirkul, Iraq, with the 173rd Airborne Brigade that provided security to highly valued personnel including Senator Hillary Clinton and Secretary of Defense Donald Rumsfield. Joe is married to Kayla Sellers Meadow and they have two children. The nickname Bear was coined from when Joe was just a little boy and his mom called him her “baby bear.” Additionally, he and his dad share the same name, so she needed just the right nickname for Joe and so Bear was it! Bear is a name that has been with Joe for as long as he can remember. Most of the kids he grew up with in Bluff Park (BP) called him Bear or Joe Bear.

WIPEOUT ADVENTURE COURSE Wipeout Adventure Course is the world’s first 360-degree interactive water-based obstacle course where guests control the action through an assortment of geysers, sprays, overhead deluges and even hand- and foot-activated water elements. The course includes a series of ropes, towers and bridges, while blasting others with spray, from rows of mounted water cannons and unleashing flood waters from above. Ropa Vieja Cubana THE NAME IS "ROPA VIEJA," MEANING "OLD CLOTHES."

INGREDIENTS • 2 pounds beef brisket

• Put brisket in a large pot of cold water add 1/2 onion, 1/2

• 1-1/2 large sweet Vidalia or sweet onion, diced small

green pepper, 1 bay leaf, 3 cloves garlic smashed and 1 tea-

Watermelon Margarita INGREDIENTS ++ 4 cups cubed watermelon ++ 2 tablespoons sugar ++ 3 limes, 2 for juice and 1

for garnish

++ 8 ounces tequila ++ 5 ounces triple sec, divided ++ 3 tablespoons kosher salt ++ 1 teaspoon chili powder

DIRECTIONS Puree watermelon and sugar in blender until smooth. Pour puree through fine-mesh strainer. Transfer liquid to a pitcher and add lime juice, tequila and 4 ounces triple sec. Stir to combine. In a shallow dish, combine kosher salt and chili powder. In a second small plate, add remaining 1 ounce of triple sec. Dip the rims of 4 margarita glasses in the triple sec, then coat in salt and chili mixture. Divide liquid between four glasses and garnish with lime wedges.
