We live in an efficiency and productivity-obsessed age. And I admit - I fall into the trap sometimes too. The trap of believing the only things worth doing are those for which I can make an exact calculation of the time, effort and investment it will cost me. The things that result in the highest level of control and least amount of uncertainty. But the truth is - that is really a sad and unfulfilling way to go through life. We must leave some room for exploring, for trying new places and things, for being a beginner, even for getting lost. It is those times that are unstructured and open-ended where the space exists for connections to be made, friendships to be fostered and trust to be built. In the last few months I've really been analyzing my relationship with my kids, how our family operates as a unit and what we love spending our time doing. The way I made this more clear, was to first focus on the things that I don't love spending time on. For our family - it’s screens. For yours, it may be too many busy weeknights away from home or not enough dinners around the table together. But I've noticed that "adventures" and “exploration” doesn't even have to be something big and crazy. It can be playing a board game out on the patio, walking a new trail or going out to find a fun cookie place we've never been to before in a different part of town. Our hope is that this issue encourages you to make room for exploration. To prioritize time away from the regular schedule of life. To lose yourself on a trail or in a book. To book that trip you’ve been thinking about, to make time for the things that matter most to you, but often come last on the calendar. If April showers bring May flowers, make time to play in the rain! Here’s your reminder to - and I say this with warmth in my heart - get lost! ;) Happy April!

With a smile as wide as a Texas sunset, Texas country music star Coffey Anderson grabs a guitar mid-sentence and joyfully starts strumming a catchy tune. What follows is a voice that has caught the attention of country music fans across this state and beyond. Coffey grew up singing gospel music in the church, but it wasn’t until his freshman year at Howard Payne University in Brownwood that he learned to play a guitar. One day the father of the girl Coffey was dating at the time was playing a song on a guitar that Coffey recognized and quickly started singing along to. “Boy, you can sing! You’ve got something special. Take this guitar and learn how to play it,” the girl’s father told him. Soon, courtesy of the girl’s father, Coffey was headed back to his dorm room with much more than just a guitar and tuner in his hands. CONTINUED >

Much like a Texas thunderstorm slowly building momentum throughout the day before unleashing its powerful force of wind and rain on the dusty plains below, Coffey’s career didn’t immediately take off. Afterall, you don’t just walk onto the stage of the Grand Ole Opry the first day you pick up a guitar. No, that takes patience, perseverance, and a deep sense of humility; all of which Coffey possessed in abundance thanks to the small town characteristics instilled in him by his parents. Before the arenas packed with adoring fans, Coffey spent years perfecting his craft. Obscure days in a small dorm room teaching himself how to play guitar turned into seemingly endless days performing on the streets of Los Angeles after graduation, with nothing but a foldable IKEA table, a stack of homemade CDs, and an email sign-up sheet. Before the season 2 appearance on American Idol and his fourth place finish on Nashville Star, there were years of producing his own albums, booking his own shows, and editing his own music videos out of his garage. But like storm clouds billowing high above the horizon, Coffey’s magnetic personality, hard work, and brazen commitment to his values have meticulously taken the country music and entertainment world by storm; culminating in three standing ovations during his his May 2022 Grand Ole Opry debut, a first in Opry history. As well as a 12 episode original reality TV series on Neflix, Country Ever After, which focuses on the careers and family life of Coffey and his wife, Criscilla, and their children. But no amount of fame and success has uprooted Coffey’s passion for people and using his music to inspire hope and healing. “My biggest song to date is Mr Red White and Blue,” Coffey said. “I wrote that after meeting sergeant Craig Carp of the United States Marines. When the national anthem played before my concert, there was just a very different look in his eye than everybody else’s. He was part of a very small unit and he was the only one who made it back. There is survivor’s remorse, there is PTSD, there’s all these levels of hurt combined with overcoming, combined with feeling the fire - I want to be there but I need to be here - there’s a lot that happens. So I grabbed my guitar and I walked around the arena and I wrote Mr. Red White and Blue. It’s people. It’s all people.” CONTINUED >

“But no amount of fame and success has uprooted Coffey’s passion for people and using his music to inspire hope and healing.” In August 2021, thirteen members of the American military were killed in a bombing during an evacuation at the airport in Kabul, Afghanistan. When Coffey heard the news he offered to pay for his own travel expenses to perform his song Mr. Red, White, and Blue at each of the service members’ funerals; ultimately doing so for nine of the thirteen families. “The most rewarding moment of my career has been sitting with Corporal Kareem Nikoui’s momma, he was one of the thirteen killed in Kabul. He was a year and a half out of basic training. I was in the side wings sitting with the family at the funeral and his mom said, ‘I still have his truck. And the last song that he and I listened to together was your song, Mr. Red White and Blue, while sitting in his truck before he went to basic. For you to sing this it’s….it’s…,’ and she couldn’t finish the sentence.” There is a saying that if you don’t like the weather in Texas then just wait for five minutes because it will change. And while Coffey is humble enough to know that his success could change at the blink of an eye, there is one thing that he says will never change - his love and commitment to his marriage and his family. A fact that Coffey emphasized to the producers of Country Ever After, Roma

Downey and her husband, Mark Burnett - who has produced such successful TV series as Shark Tank, Survivor, The Apprentice, and The Voice, to name a few. Knowing the penchant for drama and shady circumstances prevalent in reality shows today, Coffey was sure to bring his small town Texas values with him to the meeting. “So he’s sitting at this big table and I told the guy, ‘Look man, congratulations on all of these series. But if you think we’re going to throw wine bottles across our kitchen for TV views then you’ve got the wrong family. When we play, we play for each other, not with each other.’ He said, ‘Mr. Anderson, I want to make a show that my mother would want to watch.’ And I said, ‘Do you have a good momma?’ He said he did, and I said I had a good momma before she passed. So we shook hands on good mommas, and that’s how we did our TV deal.” “My song Better Today was written when I saw this elderly couple at a Valentine’s Day event I was hosting at a church in Levelland, Texas. We did a longest marriage dance and this couple had been married for almost 70 years. They married when they were 15 or 16 years old. Who doesn’t want that? No matter who we are or what we are, my ugly and your ugly, can we get to the point where we’re still arm in arm?”

Stepping Stones Foundation ARTICLE BY KATIE BYNUM

Stepping Stones Foundation was founded in 1999 when Christina Bynum-Breaux began mentoring at the local middle school. It was through her mentorship that she discovered that children in her own community were struggling to receive basic necessities such as food and shelter. Christina did the only thing she could at the time: She welcomed these children into her home while beginning to lay the foundation to assist youth in crisis on a larger scale. Stepping Stones Foundation became fully formed in 2009 after Christina witnessed how early intervention and consistent support could change the course of these children’s lives. The local community rallied around Christina and her mission to support these children on their path towards a brighter future. People not only became involved financially but offered their time and talents to address the barriers that these children face. Donors in the medical field provided access for these children to receive medical care. Others volunteered countless hours sorting donations, delivering meals, and stepping in to provide rides to work and school. Their boutique, which is entirely stocked through donations and whose profits financially support all of the intervention efforts, is organized by volunteers. To this day it is the community and its spirit of generosity that makes the difference in these children’s lives. Without supporters willing to offer their time, talent, and treasure for local youth in crisis, Stepping Stones Foundation wouldn’t be able to provide life altering intervention. Doctored Desserts Chocolate Chip Cookies Recipe excerpt from the new cook book 'Doctored Desserts' by our Allergy Expert Dr. Atoosa Kourosh! Exploration as a chef or baker for me meant finding new ingredients and creating healthy versions of comfort foods. As a young adult I was diagnosed with food allergy to dairy and wheat, which explained many strange symptoms I had been struggling with since childhood. Removing these items from my diet made me noticeably healthier and happier. Soon after, my nephews were also diagnosed with these same allergies—which meant no treats for us all! Because I enjoyed cooking and baking (and especially experimenting!), I began creating recipes without our common allergens. This was decades before gluten-free vegan treats were easily found so you had to figure out how to make it yourself! Thankfully now most of these healthy substitute ingredients can easily be found in the baking isle at your local market or ordered online.

This is my take on a family and party favorite – the classic chocolate chip cookie. Although it is Gluten-Free Grain-Free Dairy-Free Paleo Low Glycemic with no processed sugar, it’s a real winner. So here’s your chance to explore and develop your skills as a healthy baker!

CHOCOLATE CHIP COOKIES - DAIRY-FREE GLUTEN-FREE PALEO LOW GLYCEMIC

DIRECTIONS: 01. Mix Maple syrup/Coconut Sugar and butter substitute until creamy, add extracts and egg (or egg substitute) and beat. 02. Add almond meal and coconut flour and mix well, then add chocolate chips.

Texas Glamping BRINGING GLAMOUR AND LUXURY TO THE OUTDOORS

Happy Campers - that’s the goal of Ashley Mertins and the Texas Glamping Company that she launched in September 2021. Glamping (a mashup of the words glamorous and camping) has gained in popularity as people have discovered ways to enjoy the adventures of camping without giving up the luxuries of comfort. “Glamping is an elevated style of camping,” Ashley explains. “We take it to a whole different level. I think what sets us apart, even in the glamping market, is we are very much luxury here at Texas Glamping Company. For example, all of our mattresses are memory foam mattresses, they’re on actual bed frames, we use down comforters, and our sheets are luxury sheets. We really invest in high quality products.” Even the tents themselves are not what you would find online on Amazon. Instead, Ashley painstakingly researched to find high-quality tents from Europe that weren’t treated with chemicals that are dangerous to the habitat or to humans. “Our tents are sourced form a company from Europe, not from China. That was a big deal to me,” Ashley says. “I wanted to be able to source them responsibly and have them manufactured responsibly. The ones you get online from China are sprayed with a chemical, they call it fire-retardant, but a third-party company has done research on it and the chemicals they use are banned in every country but our own. So for me it was an investment. I wanted the best of the best on the market and that’s what we provide

because I’m touching these tents, my kids are touching these tents, our customers are sleeping in these tents. We want people to get out in nature and breathe fresh air and not a bunch of chemicals. So we invested a lot in our tents, they’re not cheap.” Having done photography while living in Oklahoma, Ashley felt like it was time to do something different when she and her husband and two kids moved to Texas. “I’m a believer, and God is certainly a huge part of my faith and my business and how I run my life. And one night I was laying in bed listening to a preacher from Tulsa that I watch on TikTok, and I flipped to the next video and I saw a guy that was doing these backyard glamping videos. And no offense to men, but you know, it was simple. It was more on a masculine side with blow-up mattresses and a sleeping bag and a dome tent.” Just like a single spark on the right kindling can ignite a warm campfire, that simple concept lit Ashley’s vision for how much more it could be. “I just had this epiphany and I thought I could take this and I could elevate it and make it more feminine with luxury accommodations.” So I prayed and told God, ‘Okay, if I present this to my husband tomorrow and if he doesn’t say that I’m crazy, then we’re going to go with it.’ With her husband’s full support, Ashley tested the concept that September by setting up a single tent at her local community’s “Market Days” event and ended up booking every weekend through Christmas. Realizing the huge demand, Ashley and her husband invested in a couple more tents and started facilitating glamping parties in customers’ backyards. Now, less than two years later, Texas Glamping Company’s inventory has grown to 60 tents and has expanded to multiple-tent villages for larger parties and events. Last fall, Texas Glamping Company did a private corporate event on over 400 acres of land owned by Texas music legend Willie Nelson. “The great thing about us is we are mobile and you won’t have to do anything. We will come to you, set up and and tear down, and take it away. So you won’t have to lift a finger or do anything.” But while the comforts of camping might have changed, Ashley reiterates that the goal is still the same. “The whole reason why we started this business is we wanted people to really disconnect from the hustle and bustle of life. You know, we’re always on our phone, we’re always emailing, we’re always hurrying, hurrying, hurrying. It’s always magical to spend a night sleeping under the stars. In decades past, adventure seekers have packed the SUV or camper with tents and gear for ‘roughin’ it’ in the great outdoors.
