RED LIGHT THERAPY AT
In 2019, Sunsations Sun Spray Spa brought the first FDA Cleared Red Light Therapy device to Topeka. “We recognized immediately the unparalleled rejuvenating effects the device had on the skin,” said owner Kelly Robbins. “I was hopeful that it would help fade a stubborn dark spot I had been treating for years with a cream to no avail, within a year of starting treatments with the Poly, my dark-spot disappeared!” As pioneers of the cuttingedge spa experience in Topeka, Sunsations has had time to explore the other potential benefits of Red Light Therapy treatment. After trying the device on her arthritic knee and experiencing relief, Kelly began encouraging others on the alternate benefits of Red Light Therapy.

LIFESTYLE LETTER
Welcome to February: Love is in the air! February - the month of love. Valentine’s Day and romance take their rightful places front and center. Heart-shaped boxes of chocolates, bouquets of roses, and surprise proposals abound. Need a little help picking out sweets for your sweetie? Check out our story on chocolate and wine pairing. Speaking of romance, we'd like to introduce you to an adorable local couple who share not only a love of one another but a love of music as well. Follow them as they spread happiness and harmony around our town. Some of their favorite venues to play are local wineries, so get out and take a listen! Mrs. Kansas United World, Kayla Schadegg graces our pages and tells us how she uses her platform to advocate for people with Down syndrome. Also, we are happy to share with you information about the return of the Kansas Lawn and Garden Show. As I was thinking about the month of February, one of my most cherished memories takes me back to grade school and the tradition of creating a Valentine's Day mailbox out of old shoeboxes. Armed with an assortment of art supplies I'd pour my little heart into decorating these makeshift mailboxes with colored markers, paper doilies, and shiny gems with the anticipation of exchanging homemade Valentine's with my classmates. If you get a moment, email me and share your favorite Valentine's Day traditions. Thank you Topeka for being a part of our vibrant "Golden City", and may this Love Local issue bring warmth and inspiration to your heart. We’ve always believed what we can do together is so much more than what we can do apart. We continue to see that tucked into the many stories we share in this magazine month after month. Thanks for letting us be a part of the life you’re building, whatever that may look like. We hope that we inspire you to love it just a bit more than you did before. Wishing you a February filled with love, joy, and discovery.

A MOTHER’S LOVE 14

“I WANTED TO BE A PART OF THE MOVEMENT.” In a world where pageant queens are often confined to stereotypes, Mrs. Kansas United World Kayla Schadegg shatters expectations with her petite frame, pixie haircut, and athletic build. Her journey is not just about pageantry and glamour; it’s a testament to a mother’s love, resilience, and a commitment to making a positive impact. Kayla and her daughter, Kerrie, are not unlike one another when it comes to shattering stereotypes. After what Kayla calls a “remarkably boring” first pregnancy and delivery, she and her husband Kelly learned their new baby could have a potential medical condition. “When the doctor finally returned with our baby, he pushed her to the foot of my bed, out of reach, stood in the doorway, and told us very clinically and bluntly that he believed our new baby had Down syndrome,” she remembers. “He rattled off facts and risk factors, and when we were too stunned to even ask questions, he told us that the hospital social worker would reach out to us to help make sure our quality of life suffered as little as possible.” CONTINUED >

Eventually, the Schadeggs realized their traumatic experience didn’t adhere to best practices preached by major medical and advocacy organizations. A seed was planted inside Kayla. “It clicked for me that I wanted to be a part of the movement to improve the diagnosis experience for families receiving this unexpected news,” she explains.
Her initiative, Strong Over Wrong, is based on the idea that we should look for what makes people strong, rather than focusing on what’s “wrong.” That is the message she imparts on medical professionals she works with now. “The striking bit is that it’s 2024 and families are still being given a disability diagnosis as if it’s a death
KERRIE IS NOW A SPIRITED YOUNG GIRL: FUNNY, SASSY, AND FOCUSED. Kayla’s pageant journey began when Kerrie was three years old. At the age of 27, Kayla stepped onto the stage for the first time, motivated by a desire to authentically represent her personality and passions, including advocating for a cause that had become deeply personal. “I know for a fact that a crown and sash will help me get my foot in the door in places that might not otherwise ever answer my email or take my call,” she says. Over the course of a year, Kayla traveled more than 10,000 miles across the United States, representing Kansas on the international stage. Placing First Runner-Up further solidified the impact of her advocacy work.

sentence,” she says, adding that the life expectancy for someone with Down syndrome is nearly 60 years old and continues to climb as access to preventative and life-saving health care increases and stigma decreases. Embracing the love for the pageantry world, Kayla is set to return in 2024, now holding the title of Mrs. North America United World. Kerrie is now a spirited young girl, described by her mom as funny, sassy, and focused. She looks and behaves like her mom, and is extremely proud of her tap dance lessons. Kerrie and her little brother love to tag along to events and appearances. But the entire operation wouldn’t stay afloat without the support of Kelly.
“I couldn’t be wife, mom, professional, and pageant queen if I didn’t have him backing me up at home,” Kayla gushes. “He is endlessly supportive and sees the value pageantry brings to my life personally, but also what I’m able to do for our community.” Looking to the future, Kayla envisions combining her small business management experience with her skills as a children’s fitness expert and disability advocate. The dream is to open a fully inclusive and accessible facility for children with various physical and intellectual disabilities, along with sensory needs. Kayla’s story challenges preconceived notions of beauty queens and emphasizes that advocacy and impact transcend stereotypes. For those wanting to follow her adventures, learn about Down syndrome, or receive advocacy pointers, Kayla invites everyone to visit her Facebook and Instagram pages @strongoverwrong.

Ha r mony Beyond Music A Love Story With a Twist
the challenges of the pandemic in 2020, they faced difficulties booking the band because of changes to venue capacity rules. They used the challenge as an opportunity. “We decided to launch our duo, With a Twist,” Marvin explains, “and to work up music, which we had thought about for years, such as great American songbook material from the 1950s.” With a Twist plays primarily three styles: the “greatest American music” (e.g. Diana Washington, Peggy Lee, Nat King Cole), exotica/Latinesque, and originals that include R&B and country. Beyond the stage and their recording studio, the Hunts’ love story intertwines with the couple’s shared dreams, including living on a rural property. Fifteen years ago, they turned that dream into a reality, finding their perfect home in the country. Their focus has been on plant life and observing the various birds and animals who visit. “We plant several gardens and really enjoy watching wildlife every day,” Ann says of their land. “Our goal is to continue CONTINUED >

Marvin and Ann Hunt’s love story weaves together with strands of music, passion, and the serene beauty of rural life. It began decades ago when both were creating continuing education programs. Ann served as a professor at Washburn University for 16 years in the Department of Music, serving as Co-Chair her final year at the university. Marvin was inducted into the Kansas Music Hall of Fame in 2019. But the couple’s passion for music dates back long before they met. Marvin was inspired by the Beatles as a child. He created cardboard guitars and asked his classmates to pretend to be the band with him. He eventually took part in the real thing, playing actual instruments in school bands. Meanwhile, Ann’s great aunt played records she could sing along to when she was just six years old. She continued to sing in school choirs growing up. Their early starts set the tone for their shared musical journey and lifelong partnership. Marvin and Ann are part of a five-piece band called The House Jumpers. Amid

encouraging native grasses and vegetation. For example, we’ve planted over forty hardwood trees and expanded our fruit orchard.” The Hunts have filled the inside of their home with things they love as well. They record musical projects and welcome other regional artists to their home recording studio, which has been the birthplace of seven released CDs. Marvin’s artistic pursuits have expanded beyond music to painting, primarily focusing on rural scenery. His recent first art showing marked a new chapter in his creative journey, showcasing his talent with oils. “We support each other’s individual interests,” they say of their connection. “One of the important things for us is to nurture mutual friends with whom we regularly spend time, make music, and enjoy our homes.” Central to their bond as a couple is their genuine love and appreciation for each other. For Marvin and Ann, activities like gardening and daily walks are not just pastimes; they are rituals that bring them closer together.
For young couples aspiring to blend their personal and professional lives, the Hunts offer sage advice: “Find your mutual passions. Be patient and loving. Work diligently towards goals. Build in time for yourselves outside of work and demanding schedules.” Looking ahead to their musical odyssey, With a Twist was recently accepted on the Kansas Touring Artists roster, which they hope will help them expand into performing in other communities, especially smaller towns that want to increase their arts activities. Marvin and Ann’s love story is composed of shared passions, dedication to the land, and a commitment to creating beautiful music together. As they continue to inspire through their melodies, their journey stands as a testament to the enduring power of love and the pursuit of dreams. Follow With a Twist on Facebook @WithaTwistDuo or visit their website WithaTwistMusic.com. See them in person at Classic Bean, 2125 SW Fairlawn Rd., on February 23 and at Compass Point, 800 N Kansas Ave., on March 8.

CHOCOLATE and WINE The Key to a Successful Wine and
Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.
Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another. Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

TIP 1: M ATCH SUGA R WITH SUGAR When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.
TIP 2: M ATCH INTENSIT Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.
T I P 3 : PA I R F L AVO R S W I T H F L AVO R S Wine and chocolate both carry their own intense flavors. If the chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

CREATING THE PERFECT PAIR DA R K CHOCOLATE Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines. Pairs well with: Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo
MILK CHOCOLATE Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character. Pairs well with: Pinot Noir, Merlot, Sweet Riesling, Ice-Style Wine
WHITE CHOCOLATE White chocolate has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti. Pairs well with: Sweet Riesling, Moscato, Semi-Dry Sparkling Whites, Gewurztraminer

HOW TO MAKE
DIY GOLD LEAF JEWELRY DISHES These cute and colorful dishes work perfectly to organize and display your jewelry, keys, or you name it! And you know what? They’re so easy to make!
steps to do:
supplies you’ll need: • • • • • • •
Wooden bowls, trays, etc. Gold leaf (or metallic gold paint) Gentle Gold leaf brush Mod podge (or gold leaf adhesive) Acrylic paint Paint brushes Painters tape (optional)
• Grab a wooden bowl, some acrylic paint, and a brush. • Hand paint some paint on one section of the bowl. • Let the first coat dry and paint another two to three coats of paint until you’re happy with the result. • Let the paint fully dry. • I wanted my gold leaf paper to overlap the paint for a layered look, so I took a paint brush and painted some Mod Podge in an overlapping pattern. • Once the Mod Podge gets tacky, use your hand to apply the gold leaf and accompanying wax sheet. • Push the gold leaf onto the tacky glue, then remove the top layer of paper. • Use your fingers to gently push the gold leaf onto the glue a little further. • Next, use the golf leaf brush to smooth over the whole area and gently wipe away any excess gold leaf. Pay extra attention to the edges. • Next, smooth the gold leaf section as much as possible, but don’t worry about any imperfections. The organic look of the gold leaf being imperfect gives the piece character. • Next, work your way to the outer edge. • Once the gold leaf is perfected, gently brush over the leaf with some Mod Podge to seal it to the bowl. • Let it completely dry and enjoy!
