Can we talk about the new year without mentioning resolutions? I think not. I used to make my New Year's resolution every year to lose weight. I try to eat healthy-ish and definitely exercise regularly but the older I get it seems like no matter what kind of diet I partake in, my body is going to do what it is going to do. So this year, I'm happy to say my resolution is to be content in all things and not sweat the small stuff - even if the small stuff is not my waistline anymore.

In this issue, we'll delve into topics relating to health and wellness. We may even help you find a new home for the new year! Embrace the spirit of renewal as you explore inspiring stories, expert insights, and captivating features that promise to ignite your curiosity and fuel your aspirations.

If you are not adding a variety of vegetables to your diet, you could be missing out on a rich flavor palette and a multitude of minerals and vitamins. In an interview with Cheryl Mussatto, a clinical dietitian and author of The Nourished Brain, we delve into the myriad health benefits of plant-based eating, the seasonal root vegetables, and ways to incorporate them into our meals.

Q: BEFORE WE DIVE INTO THE BENEFITS, WHAT MAKES UP THE ROOT VEGETABLE FAMILY? A: Root vegetables are the edible portions of plants that grow underground and are an abundant source of fresh produce during fall and winter thanks to their long storage times.

There are the usual root veggies many of us use frequently, such as potatoes, onions, and carrots. But let’s not forget parsnips, beets, radishes, jicama, turnips, artichokes, rutabagas, shallots, garlic, water chestnuts, turmeric, ginger, and sweet potatoes.

Q: WHAT ARE THE HEALTH BENEFITS OF ROOT VEGETABLES? A: Root vegetables evolved to store nutrients for the plants themselves so when we eat them, we can be assured we are eating a true powerhouse of energy, minerals, and vitamins.

One health benefit is their dietary fiber content. Most Americans lack eating sufficient fiber.

Root vegetables also contain a substance called resistant starch. Some indirect benefits include reducing the risk of inflammatory diseases, type 2 diabetes, obesity, heart disease, and possibly some cancers.

Another health benefit of root vegetables is because they grow underground having close contact with the soil, they are especially rich in minerals like potassium, zinc, copper, phosphorous, and magnesium. These same root veggies are also good sources of vitamins A, C, and B6. Roots that come with edible greens, such as radishes and beets, are also good sources of vitamin K. Q: WHAT IS YOUR PREFERRED PREPARATION METHOD FOR THE BIGGEST NUTRITIONAL IMPACT? A: I think the best way to answer this question is to provide examples of ways to cook certain root vegetables to retain their nutrients.

To help retain beet’s nutrients, it is best to keep the skin on and avoid overcooking them. They can be steamed or roasted, but the longer they are cooked, the more nutrient loss that will occur.

When cooking carrots, try to leave the skin on for better nutrient retention and steam rather than boil.

Avoid over-peeling onions as some of their most concentrated nutrients are found in the outermost layers.

Sweet potatoes can be baked, roasted, or mashed, but skip the sugary toppings.

I prefer roasting root vegetables.

Roasting brings out rich, complex flavors.

Here are the basics: 1. Heat oven to 400 degrees.

2. Line a rimmed sheet pan with foil, spray with non-stick cooking spray.

3. Wash 3-5 root vegetables under cold water.

4. Chop vegetables into 1-inch cubes. Place in a mixing bowl.

5. Lightly drizzle veggies with 1-2 tablespoons of extra virgin olive oil, season with salt and pepper to taste and add any favorite herbs, such as rosemary, thyme, or sage. Toss gently to coat.

6. Spread veggies in a single layer on the prepared baking sheet.

7. Cook 30-45 minutes or until vegetables are tender and can be pierced with a fork.

Q: IF SOMEONE CHOOSES A PLANT-BASED DIET, WHAT ARE IMPORTANT NUTRITIONAL CONSIDERATIONS THEY SHOULD KEEP IN MIND? A: It’s important for people to know that they do not have to resort to eliminating all animal or meat products to reap the health benefits of following a more plantbased way of eating. What I recommend to patients I work with is to fill their plate mostly with plant-based foods (about ½ the plate) and reserve about a quarter of their plate for healthy animal-based foods, such as lean beef or pork (look for cuts stating “round” or “loin”), chicken or turkey breast, fatty fish such as salmon, albacore tuna, or halibut, eggs, and lowfat dairy such as Greek yogurt.

Healthy eating should include a wide variety of foods both plant-based and animal-based.

Each type has a plethora of nutrients our bodies require for lifelong good health. And ultimately, that should be the goal for all of us – learn how to plan and eat a healthy, nutrient-rich diet, have a consistent exercise routine, and health benefits will follow.

Paul Regnier was drawn to physical therapy after four different providers attempted to help him with a back injury and finally a graduate assistant athletic trainer helped him heal with the therapy he provided. “I went on

At least that’s the goal according to Lisa Regnier who helps run the practice with her physical therapist husband Paul. “The fun part is intentional,” Lisa said. “But the serious side is that we truly want to help people.”

“A big part of repairing the body is helping the mind,” Lisa said. At Restore Physical Therapy, they keep things relaxed, fun, and light. “Our office is not sterile and formal and that’s on purpose,” Lisa said. “We’ve found that keeping things light opens up conversations for healing and that’s our main goal.”

Paul graduated from Wichita State in 1995 with a master’s degree in physical therapy. He worked at other physical therapy clinics for several years usually with patients looking for relief after an injury or surgery. “I saw some amazing patients early in my career who inspired me to always give my best, but the organizations I worked with did not push for that standard of excellence,” Paul said. “I felt like Lisa and I could do better if we developed CONTINUED >

and pursued our own vision.” So they took a chance in 2008 and opened their own physical therapy office - Restore Physical Therapy.

They use traditional methods but their strength lies in the manual techniques that Paul has blended in over his 28 years. “Our manual therapies are essential in healing the musculoskeletal system,” Paul explained. “Physical therapy has changed a lot over the last couple of decades. We take pride in being very hands-on and looking at the whole body and the whole person.” They practice various muscle release techniques that can help with chronic pain by bringing the body back into balance and restoring range of motion, balance, and strength.

“There are so many new ways we can help people,” Lisa said.

Manual therapy can help with a wide variety of soft-tissue issues like TMJ, headaches, blurred vision, and vestibular (inner-ear) issues including dizziness and balance. It can relieve pain from inflammation like amplified pain syndrome and fibromyalgia, help to reduce migraines, and even increase muscle strength - a big benefit to older patients.

Through their years in business, their employees have been an important part of what makes them unique and effective.

They all work together for the benefit of the patient.

But, for the Regniers, this business has always been a family affair as well.

Two years ago, Lisa’s dad joined the team when he retired from the Topeka Public School District. “He works in a strategic role dealing with all the numbers and stats like patient flow, billable hours, etc. to find ways to make us more successful,” Lisa said. “Oh, and he keeps us all in stitches with his bad ‘dad’ jokes.”

The land that Timber Ridge now occupies has been in the Dultmeier family since the 1990s and was once prime terrain for the Washburn Rural High School cross-country team. THE POWER OF PERSEVERANCE TO BUILD MORE THAN HIS BODY

Tenacity is, without a doubt, the most important trait for an entrepreneur. And tenacity is what Joromono Martin has in spades. After surviving a childhood full of abuse, neglect, and abandonment, he was adopted at 14 by Tuck and Kathy Duncan.

Defying the odds, he graduated early from high school and joined the military at 17.

His love affair with physical fitness started his junior year in high school when he volunteered at the VA hospital and met a bodybuilder named David Taylor. He began training and never stopped. He was first certified in PT (Physical Training) in the military and became a certified personal trainer in 2001.

When he left the military, he competed in bodybuilding competitions while overseeing one-on-one personal training on the side. “I have mentored and put roughly 80 people on bodybuilding stages,” he CONTINUED >

said. A double hernia sidelined him in 2008, but he continued to help others with custom diets and workout plans. Little did he know he was planting the seeds of his future. As the years went by, he married, had four children, and earned a psychology degree. In 2018, he decided to get back on the stage.

He trained for eight months and took third place in a national men’s physique competition two years in a row.

Amid all of this training, while balancing a corporate job, marriage, and fatherhood, Martin’s tenacity finally failed him. “I had a breakdown,” he shared. “I found myself severely depressed, in the middle of a divorce, child custody…it was just too much.”

“It took me 41 years before I let anything bother me, but I realized that I had been battling against all odds my whole life,” he said.

And in true form, he used that realization to move himself forward. Against All Odds became the theme of his second national show along with the motto “You don’t have to face the mountain alone!” In 2021, Martin decided to start a mobile training and nutrition app and AAO was born. “I thought I was lost, but everything I’ve done in my life has led me to this point and when I realized it, it was like a thousand light bulbs went off. There was no stopping me!”

Today, AAO has roughly 300 subscribers who participate in specialized workouts from home with weekly weigh-ins to keep them accountable. Martin has also developed a line of nutritional supplements. “It’s the perfect platform to be able to share all of my knowledge and experience,” Martin said. “When I look at what’s been done in two years by one man from Topeka, KS, it really blows my mind. You just have to keep believing in yourself.”

hen Kathleen Heit heard that Juice Stop’s previous owners in Topeka were selling, she decided to buy the business. “It has been around for 25 years and is a Topeka institution,” she says.

Currently working in the financial industry, she looks forward to one day running it after she retires. In the meantime, she recruited her stepson, Lucas Heit, to manage it. Since he’s attending Washburn University studying business, it’s a great opportunity for him. “I'm going to be gaining experience and at the same time, doing something meaningful,” he said.

The smoothies, which are full of healthy ingredients, are also very delicious, and

a great way for adults and children to add more fruits and vegetables into their diets. And, in addition to the wide variety of choices, customers can also customize their own. All of the vegetables used are fresh and the fruits are individually quick frozen, which retains their flavors and nutritional values.

One of the most popular options is the Island Delight, which contains pineapple, strawberries, bananas, mangos, and peaches. Bench Press, which comes in chocolate, vanilla, or strawberry, is a favorite for its high-protein content. Tropical Greens with kale is also a much-requested offering.

“We have a lot of customers ask to include a power boost or a multivitamin boost as well,” says Kathleen.

Juice Stop is also partnering with Merit Weight Loss in Topeka to bring even more

varieties of healthy smoothies to the local community.
