Texas Style There is something unmistakable about Texas style. It is confident without trying too hard, timeless with a little bit of flair, and always authentic. Whether it is a perfectly worn pair of boots, a family recipe passed down through generations, or a hat that tells its own story, style is really about celebrating who we are. This September, we are embracing that spirit from cover to cover. We are thrilled to feature Brittany Cobb, founder and owner of Flea Style and the original creator of the hat bar in Dallas. Her newest book, How To Style A Hat, is packed with inspiration and personality. As Brittany loves to say, "Life is too short to wear a boring hat." We could not agree more. Speaking of true Texas style, we are also celebrating one of our own. Jennifer Taylor, owner of Old Quail Run Farm, shares her newest cookbook, Gatherings & Guitar Texas Edition. More than a collection of recipes, it is an invitation to gather around the table, slow down, and create memories with family and friends. It is filled with the warmth and hospitality that define life in Texas. Our hometown spotlight also shines on Sherman native Taylor Grice, founder of Taylor'd Apparel. Taylor has brought her passion back home, investing not only in local fashion creation but also by giving back to the community she proudly calls home. Her story reminds us that success is even sweeter when it gives back. No matter how you define style, through fashion, food, or the people making a difference where they live, we hope this issue inspires you to embrace your own unique story with confidence. After all, great style never goes out of fashion. Thank you for reading, Texoma. We'll see you around town!

FOUNDER OF FLEA STYLE, B R I T TA N Y COBB, TREASURES THE UNIQUE AND LAUNCHES HER NEW BOOK

ashion trends come and go, but one accessory has stood the test of time: the hat. Brittany Cobb, owner and founder of the Flea Style lifestyle brand, understands this better than most. A longtime hat lover, Brittany has always considered a hat her signature accessory. She wanted others to experience the same confidence and creativity that comes from finding the perfect hat, so she created one of the first hat bar experiences in Frisco at her Flea Style store. So, what exactly is a hat bar? Inside Flea Style, customers will find a dedicated space where they can design and customize a hat that reflects their personal style. Guests choose from custom designs and one-of-a-kind accessories, many of which Brittany discovers during her own flea market adventures. The hat bar features a variety of cowboy hats, including straw, felt, wool, short-brim, and wide-brim styles, along with made-to-order trucker hats. While Brittany had incorporated smaller custom hat sections in previous store locations, she recognized an opportunity after COVID to create something more interactive: an experience. “I saw the need for people to decorate hats as a fun experience,” says Brittany. “In 2020 and 2021, people were only seen from the waist up during Zoom meetings. I thought having a festive, unique hat to wear online could at least make things a little more fun.” With available space in the Frisco store, Flea Style launched the Original Hat Bar on National Hat Day in January 2021. Today, men and women alike can find a hat they love and personalize it however they choose. Walk-ins are welcome, but appointments with a stylist are recommended. Corporate events, wedding parties, sporting events, and special celebrations are all perfect opportunities to reserve a private hat-making experience. “I have always worn hats and can’t remember a time when I didn’t,” says Brittany. “As a hat lover, I always carried hats in my businesses.” Her mantra is simple: “Life is too short to wear a boring hat.” As a former writer, Brittany had always dreamed of writing a book. Recognizing that many people aren’t sure how to wear or style a hat, she knew exactly what she wanted to create. The result was How to Style a Hat, a guide designed to help everyone embrace their personal style. Released last April, the book features a foreword by Grammywinning country music artist Miranda Lambert. Brittany knew Miranda would be the perfect choice because of her signature style and love of hats. “She always wears a hat with her own personal, unique style,” Brittany says. “The book is for the hat curious—for those who may not think they look good in a hat,” explains Brittany. “It’s a guide in so many ways to help you find what might be the best hat for you.” She believes a hat can transform more than just an outfit. “A hat can change the course of the day,” says Brittany. “The confidence a crisp-brimmed hat can give you, or how a trucker hat can completely change the vibe for your kid’s soccer game.
“As a hat lover, I always carried hats in my businesses.” Her mantra is simple: “Life is too short to wear a boring hat.” - Brittany Cobb It is the oldest accessory of all time. We have worn them since the beginning of time. Why not have fun with that?” Beyond the hat bar, Flea Style is a lifestyle boutique featuring bohemian and vintage-inspired fashion, accessories, gifts, jewelry, and home goods. The store showcases one-of-a-kind pieces with influences ranging from western and southern flair to nature-inspired and rocker styles. Originally from Southern California, Brittany is a graduate of Southern Methodist University. After earning her degree, she spent years as a writer covering fashion and décor for publications including The Dallas Morning News and DailyCandy. Drawing from that experience, she launched Flea Style as a pop-up shop, which quickly gained popularity and expanded to Houston, with the first flagship Dallas location opening in 2018. “I want you to not just shop but have fun, make memories, and create special hats that last a lifetime,” she continues. “It could be art in your home, a piece that you love, or a future heirloom for your family.” Flea Style expanded and opened at The Star in Frisco in the fall of 2019. The brand also has a location in Prosper at The Gates of Prosper. Both the Frisco and Prosper stores feature Heirloom Haul, a modern tearoom and coffee shop located inside the boutique. Guests can enjoy salads, sandwiches, shareable bites, and classic tea service, making it the perfect place to relax after shopping or creating a custom hat.
Founder of Flea Style, Brittany Cobb
Flea Style’s success in Texas has helped the brand expand nationwide, with 10 locations across four states. Additional stores include locations in Louisville, Kentucky; Nashville, Tennessee; and Laguna Beach, California. For Brittany, opening a Laguna Beach location was especially meaningful, as she was born and raised in Orange County and spent many summers there. “My goal is for people to walk into our stores and enjoy a special experience in retail,” says Brittany. “Retail is hard, especially with all the opportunities available online, but we want customers to walk away with a memorable experience.” “I want you to not just shop but have fun, make memories, and create special hats that last a lifetime,” she continues. “It could be art in your home, a piece that you love, or a future heirloom for your family.” Brittany describes Flea Style as being similar to “a cool friend’s home that you walk into and don’t want to leave.” With plans for additional Texas locations potentially being announced soon, Brittany knows the Flea Style brand continues to grow because it offers something shoppers crave: connection, creativity, and a little fun. How to Style a Hat is available at all Flea Style locations and online, with signed copies available in stores. FleaStyle.com

THE BCBA BRIEF

by THE OWEN ACADEMY EVIDENCE BASED AUTISM EDUCATION FOR FAMILIES
Why Does My Child Keep Doing That? UNDERSTANDING THE PURPOSE OF BEHAVIOR Every behavior happens for a reason. When we understand the “why,” we can teach better skills and create meaningful change.
LANCE SHELTON, BCBA Clinical Director of Operations The Owen Academy
"The goal is not to get rid of behavior, but to understand it and teach something better." — Lance Shelton, BCBA
THE SCIENCE
MYTH vs. FACT
Applied Behavior Analysis (ABA) is the science of behavior. One of the core principles of ABA is that all behavior serves a purpose. This purpose is referred to as the function of behavior.
MYTH: My child is doing this on purpose. FACT: Behavior is never "just because." There is always a reason, even if we don't know it yet.
There are four primary functions of behavior: gaining attention, gaining access to something desired, escaping or avoiding something, and meeting a sensory need. Understanding which function a behavior serves helps us teach more effective and appropriate skills that meet the same need. When we understand the function, we can teach skills that meet the same need in more effective and appropriate ways.
REAL-LIFE EXAMPLE Ethan, age 5, screams and throws toys when it's time to leave the playground. After observation and data collection, we discovered the behavior was occurring to escape leaving a preferred activity.
MYTH: If I give in, the behavior will stop. FACT: Giving in may stop the behavior in the moment, but it teaches that the behavior works. Teaching a better skill is the key to lasting change.
PARENT TAKEAWAY • All behavior has a purpose. • Understanding the "why" helps us respond with empathy and strategy. • Teach a better skill, and the need gets met in a more appropriate way. • You are not alone. Support makes a powerful difference.
By teaching Ethan how to ask for "5 more minutes" and using a visual timer, the tantrums decreased.

Woodland Cottages Brings Independence, Communit y, And Comfort To Texoma ARTICLE BY MIKE ZAPATA PHOTOGRAPHY PROVIDED BY WOODLAND COTTAGES

Senior living in the Texoma area is experiencing a meaningful transformation. With the addition of Woodland Cottages in Sherman, local seniors now have access to a new option designed around independence, dignity, and a true sense of community. As residents transition into the next chapter of life, the need for senior living options that feel more like home has become
“I found that senior housing was a market with a lot of needs, and the majority of what was available was a poor product,” says Matise. increasingly important. Mark Matise, founder of Woodland Cottages, recognized that need and combined his development and brokerage experience to create a retirement community unlike traditional senior living options. After researching residential opportunities throughout the region, Matise discovered a significant gap in quality senior housing. “I found that senior housing was a market with a lot of needs, and the majority of what was available was a poor product,” says Matise. “That is how we got here. Like our website states, we know home is where you dream, plan, and get inspired about the future. That matters to us, and we carry that through each space and shared moment.” With successful communities already located in Belton, College Station, Fredericksburg, and Westover Hills, Woodland Cottages’ newest location brings a fresh approach to independent senior living in Texoma. Too often, senior living is associated with giving things up. Woodland Cottages aims to change that perception by creating a community where residents can maintain their independence while enjoying comfort, connection, and peace of mind.
The 55+ community offers privacy, a welcoming neighborhood atmosphere, and the freedom to enjoy life without the daily responsibilities of traditional homeownership. Located near Lake Texoma, residents have access to countless opportunities for recreation, including bass and world-class striper fishing, camping and hiking at nearby Eisenhower State Park, and exploring the historic downtown areas of Sherman and Denison, where shopping, festivals, and museums offer year-round entertainment. Woodland Cottages features 84 newly built cottages with a variety of floor plans, ranging from one-bedroom, 888-squarefoot cottages to two-bedroom, two-bath homes measuring 1,354 square feet with garages. Designed with both beauty and functionality in mind, each cottage features attractive landscaping, cut stone accents, and modern architectural details. Inside, residents will find spacious, efficient layouts with open-concept kitchens, stainless steel appliances, multi-cycle dishwashers, pantries, generous closets, two-inch window blinds, zero-threshold showers, and laundry rooms equipped for full-size washers and dryers. The community is also pet-friendly, with select cottages offering fenced backyards. Full-time staff and housekeeping services are available to provide additional support while allowing residents to enjoy the lifestyle they desire. For Samira Greenhalgh, Community Director at Woodland Cottages, the most rewarding part of her role is helping residents create meaningful connections and enjoy a fulfilling new chapter. “This has been a great experience for me,” says Greenhalgh. “Our residents are just as happy, if not happier, to be here than I am to have them here.” Greenhalgh describes Woodland Cottages as an amenity-rich community designed to encourage residents to stay active, engaged, and connected. “We cover onsite maintenance, landscaping, pest control, valet trash service, fiber internet, utilities including power, water, and garbage, and even offer a DirecTV package,” says Greenhalgh. “We also have community-hosted activities, a monthly activity calendar, a resort-style clubhouse, pool, fitness center, and two pickleball courts.” Her role goes beyond managing daily operations. She focuses on helping residents build relationships and create a vibrant social life within the community. “My job includes getting residents out of their homes, connecting them with each other, maintaining an active lifestyle, and creating friendships,” says Greenhalgh. “We want them to have a relevant social life while they are here with us.” Woodland Cottages is also designed to help families navigate the transition from traditional homeownership to a simpler lifestyle without sacrificing independence. “We hope families will come together to discuss downsizing and maintaining the independence and lifestyle they are used to,” says Greenhalgh. “Here, our residents won’t feel like they are giving up everything. They are just getting the support they want.” For many seniors, Woodland Cottages provides an ideal first step between maintaining a large home and moving into a more traditional senior living environment. “We are probably the easiest first step in making the transition from being a fully independent homeowner to living somewhere where the maintenance and responsibilities of homeownership are taken care of while still maintaining the dignity of independence,” says Greenhalgh. “I am happy to help these families take their first steps into their next stage of life here at Woodland Cottages.” Woodland Cottages is located at 3306 W. Houston Street, Sherman. To learn more or schedule a visit, contact Samira Greenhalgh at 903-328-1490 or email info@woodlandcottages.com

A TASTE OF TEXAS Jennifer Taylor’s Latest Cookbook Blends Texas Flavors, Red Dirt Music, And Gatherings Into One Collection ARTICLE BY SHARLA DAVENPORT PHOTOGRAPHY PROVIDED BY OLD QUAIL RUN FARM
Making memories one meal and song at a time. That is the heart behind the Gatherings and Guitars cookbook series by Jennifer Taylor, owner of Old Quail Run Farm. As featured in the October 2024 issue of Texoma City Lifestyle, Gatherings and Guitars is more than a cookbook. It is a collection of moments, flavors, and melodies inspired by the unforgettable gatherings hosted at the farm. Now, two years later, Jennifer returns with her newest release, Gatherings and Guitars: Texas Edition. As the title suggests, the new cookbook celebrates Texas, featuring only Texas artists, Texas wineries, and Texas farmers. Many of the musicians represent the Red Dirt music scene, known for its independent spirit and authentic storytelling rooted in rural life, small towns, and everyday experiences. The Texas edition takes a fresh approach, with 13 chapters inspired by performances held at Old Quail Run Farm. Several musicians shared cherished family recipes, while others contributed signature dishes that have become favorites over the years. "They come from all walks of life," Jennifer says. "The recipes reflect their family traditions, from a Cajun dish with Mississippi roots to a Hatch chile recipe inspired by New Mexico." With more performances hosted at the farm since the first book, this edition naturally includes more chapters, recipes, and stories. The front of the book features a QR code that links directly to the featured artist's music, allowing readers to enjoy the songs while preparing the meal. "I had a hard time choosing this time because we have welcomed so many wonderful artists to the farm," Jennifer says.

"I selected the ones with whom I've built genuine relationships and who share a deep love of food, family, and gathering together." Featured musicians include Courtney Patton, Jason Eady, and Jamie Lin Wilson. This month, Jennifer will celebrate the release with a book launch party featuring dinner and a live performance by Bri Bagwell, who is also featured in the cookbook. Bathrooms are becoming more than functional spaces. In 2026, they’re designed to feel like personal retreats where thoughtful details create a sense of everyday luxury. D2 Built showcases this trend through custom spaces that balance timeless design with modern comfort. Bold statement tile continues to make an impact, from dramatic dark walls to textured geometric patterns. Warm wood cabinetry, natural stone, and soft organic finishes add warmth, while freestanding soaking tubs remain a favorite for creating a spa inspired atmosphere. Oversized walk in showers, sleek
frameless glass, layered lighting, and integrated storage bring both beauty and function together. Whether your style leans modern, transitional, or classic, today’s bathrooms prioritize clean lines, quality materials, and intentional design. As these D2 Built projects demonstrate, the best spaces are not just beautiful, they are designed to elevate daily living for years to come.

The Denison Arts Council Finds A Permanent Home In Downtown Denison

enison has always been a community rich in arts and culture, and with a growing need to support local artists, the Denison Arts Council (DAC) was founded in 1980. Later recognized by the Texas Commission on the Arts in 2009, the Denison Arts Council was selected for the Cultural District Designation Pilot Program, acknowledging the organization's role in contributing to economic development, attracting tourism, and fostering civic pride. Today, you can find art throughout many historic buildings, parks, murals, sculptures, and local festivals. After more than four decades of operating in leased space, The DAC announced in July the purchase of the 500 W. Woodard Street building in downtown Denison, establishing the organization’s first permanent home for the arts. “This had always been in the back pocket for us, but we hadn’t come across the right opportunity. This milestone represents the crux of hard work and timing.” DC Ramsey, Director of the Denison Arts Council, says. The three-story building, previously known as the Desk and Easel, will be home to classrooms for youth

arts education, public gallery space, culinary programming, housing studio space for working artists, photography and podcast studios, and a f lexible gathering space for community events and performances. "The acquisition of 500 W. Woodard creates new opportunities for arts education, cultural tourism, economic development, and community engagement," said Cindy Salem, Board President of the Denison Arts Council, in a recent statement. "We are excited to have a home where we can host events as well as manage the cultural arts district." The new space, while continuing the original mission, will expand the ability to serve North Texas creatives through development, presence, and education. “We want to grow intentionally,” Rasmey says. “Art, community, and economic development go hand in hand for the growth of the entire town.” The DAC will continue its popular events like the Día de los Muertos festival and the North Texas Arts Festival but look forward to expanding their smaller programming and will welcome new and seasoned artists to further their education through workshops. “There will be endless opportunities for programming,” says Ramsey. “The goal is to support artists who don't have their own space and provide a hub for creatives.” The new space will also feature an outdoor area for events like film nights, concerts and regular rotation of gallery shows. Small on the Wall, a Denison tradition dating back to 2009, is the inaugural show in DAC's new gallery and offers artists an accessible opportunity to exhibit work across a variety of mediums and price points, making it especially welcoming for first-time buyers. Also on display will be the HeART of Denison mosaic project, a community initiative inviting more than 100 residents across Denison's downtown and arts community to each contribute a canvas reflecting the people and roles that shape the city's creative identity. "Here in the City of Denison, the arts do more than beautify our community. They strengthen our sense of connection, celebrate our identity, bring people together, and help tell the story of who we are," said Robert Crawley, Mayor of Denison. "Investing in the arts, and in the Denison Arts Council, is an investment in our future. It enhances our quality of life, supports local talent, honors our storied past, and moves our city forward in meaningful ways." The new facility can be found one block north of Main, and starting after Labor Day, the DAC will begin introducing events and other opportunities. Bearcat Athletics Sherman’s New Stadium Prepares To Welcome The Next Generation

A NEW ERA FOR
This fall marks the beginning of a new chapter for Sherman ISD as students, athletes, and the community prepare to experience the new Tommy Hudspeth Athletic Complex. More than just a football stadium, the facility represents an investment in the future of Bearcat athletics, fine arts, and community pride. Opening ahead of schedule as part of the district’s 2023 bond program, the new multipurpose stadium was designed to serve generations of Sherman students while creating an elevated experience for fans. With seating for approximately 8,000 spectators, improved accessibility, expanded concessions, modern restrooms, enhanced security, and a state of the art video board, every detail was planned with both comfort and functionality in mind. The stadium’s thoughtful design also considers the fan experience, with the home side positioned to provide evening shade during games. More than 1,700 chair back seats offer premium viewing, while spacious concourses and upgraded amenities reflect Sherman’s continued growth and commitment to excellence.
The excitement officially begins on September 18 when the Bearcats host The Colony in the first varsity football game played at the new stadium. Before kickoff, the community will have the opportunity to tour the facility during a planned open house, offering residents a first look inside one of the district’s most anticipated projects. While Friday night lights will undoubtedly create unforgettable memories, the Tommy Hudspeth Athletic Complex is designed to be much more than a football venue. From track and field competitions to community events and school performances, the stadium will serve as a gathering place that celebrates achievement, school spirit, and hometown tradition. As Sherman continues to grow, this new landmark stands as a symbol of progress while honoring the legacy of Bearcat athletics. The next generation of memories is ready to begin, and this fall, Sherman fans will have a brand new place to cheer them on. Shermanisd.net

Taylor Grice Weaves Success Throughout The Texoma Community Spend any amount of time in Texoma, and you’ll quickly become familiar with the names and faces that help shape this community. One of those familiar faces belongs to lifelong Texoma resident Taylor Grice. At just 30 years old, Grice is leading a new generation of entrepreneurs and business owners who are bringing fresh ideas, creativity, and determination to the region. As the owner of Taylor’d Apparel, one of Texoma’s leading custom branded apparel companies, she has built a business rooted in quality, relationships, and community connection. Grice recently shared her journey as a young business owner, the lessons she has learned along the way, and the importance of building a brand with purpose. “I think it helps to have a connection to the community,” says Grice. “I have roots here. I attended Sherman High School. Fun fact: I was actually Sherman High School’s mascot my junior year.” That deep connection to Texoma, along with the support of her family, has played a significant role in her success. Her husband, Christopher, a Veteran, has been one of her biggest supporters and was even the person who came up with the name Taylor’d Apparel. “In the beginning, he really helped me get started,” says Grice. “Then I took over and built it into what it is today.” Grice’s entrepreneurial mindset began developing early. After graduating from Kansas State University with a bachelor’s degree in Business Administration with a specialization in Marketing and a minor in leadership studies, she explored her passion for fashion, retail, and business development.

“Growing up, I was always into fashion,” says Grice. “I had an opportunity to work for a local company focused on retail and e-commerce, and I just fell in love with it. The sales aspect and the business development side really interested me. I wanted to learn more, so I explored every opportunity I could.” Through those experiences, Grice discovered that she wasn’t simply selling products; she was learning how branding influences customer connections and purchasing decisions. She also recognized a growing demand for customized apparel and merchandise that went beyond simply placing a logo on a shirt. “It was more than just slapping a logo on a shirt and calling it a day,” says Grice. “I saw an opportunity to create something more elevated and focused on branding.” Taylor’d Apparel launched online in 2023, and by February 2024, the company moved into its current Sherman location. Through plenty of trial and error, Grice refined her vision and expanded the company into a full-service branded merchandise provider. Today, Taylor’d Apparel offers custom embroidery, printing, promotional products, signage, laser engraving, and corporate apparel. The company is also home to the only six-head embroidery machine in Grayson County, allowing them to take on larger-scale orders that many smaller operations cannot accommodate. Local clients include Texoma FC, the Sherman ShadowCats, and the Sherman Fire Department. “We believe great branding builds confidence,” says Grice. “Our company motto is, ‘Branding Your Legacy Starts Here.’”

For Grice, success as a business owner is about more than growth. It’s also about giving back to the community that helped support her journey. “I think it is important to be involved in the community,” says Grice. “I currently serve on the Sherman Chamber of Commerce Board of Directors, the Charlie Willie Foundation, and the Junior League of Grayson County board.” Through these organizations, Grice continues to grow as a leader while helping strengthen the community around her. “So many people have supported me and encouraged me, but I want to be that person for other new business owners as well,” says Grice. “I know how hard it is to get started and find success. I know what local small businesses go through, so I want to support them however I can.” With a passion for entrepreneurship, a commitment to community, and a vision for the future, Taylor Grice represents the next generation of Texoma business leaders—one custom creation at a time. Taylor’d Apparel is located at 2315 S. Travis Street, Sherman, TX 75090. For more information, visit TaylordApparel. com or call 832-219-2328.

H AP PY H OU R | FO O D + BE VE RAGE
As the season transitions into fall, it still features the warm, sunny days of summer but nights start to drop into the crisp temperatures. That leaves us in the limbo of wanting cool, refreshing drinks part of the time but also craving the deeper, spice-infused flavors of autumn. This recipe for apple cider sangria is the perfect blending of the seasons, leaving you feeling both refreshed and warmed through the deep flavors and interesting hints of spice. It’s a great drink to add to any dinner party, cocktail gathering, back deck after-hours get-together, or birthday bash. Here’s what you need to make the perfect mid-season cocktail to enhance whatever event you have planned.

DIRECTIONS:
• • • • • •
Combine all ingredients together and stir. Refrigerate for an hour or so (or longer) before serving. The drink can be enjoyed immediately, if desired, but the longer you let the ingredients sit and mix, the deeper the flavors will be. Giving it time to develop will make the drink more captivating and interesting.
1 bottle, standard size, of pinot grigio 2 1/2 cups fresh apple cider 1 cup club soda 1/2 cup ginger brandy 3 Honeycrisp apples, chopped 3 pears, chopped
NOTE: Regular brandy can be used, but ginger brandy gives it an extra kick of flavor.

Allegretto Vineyard Resort — your next fall road-trip destination ARTICLE AND PHOTOGRAPHY BY CHAD JEFFRY

In the heart of Paso Robles sits Allegretto Vineyard Resort — a true wine oasis. Approaching the resort, you can feel the atmosphere begin to take over. Passing by other local wineries and pulling into the resort, you experience the blending of Italian heritage and world-class wines. The common theme at the resort is the Cello; everything from the shape of the property (the north edge of the property curves much like the instrument) to the design of the courtyard, the names of the wines, and the name of their on-site restaurant. Allegretto’s resort includes over seven acres, with one of its three local vineyards sitting directly on the property. We had a guide to lead us through our tasting, giving us the full experience - working with our palettes to get the perfect taste from each varietal. The tasting list included a 2022 Cello Chardonnay, which is finished in stainless steel barrels, and was light, crisp, and citrusy. The 2019 Heart of the Vibe, a blend of Petit Verdot, Cabernet Sauvignon, Malbec, and Tannat, had hints of lily and lavender and reminded me of my days in the Oregon wine country. The 2018 Cabernet Sauvignon from the Willow Creek Vineyard was a surprise because of how clean it finished. We ended with their 2018 Tannat from their Allegretto Vineyard on property. As someone early on in their wine journey, each tasting was truly unique and tasteful. The progression from Chardonnay to Tannat helped the palette develop and enjoy the flavors and notes of each unique bottle. The robust Tannat was easily the favorite. The grapes originated from southern France through Uruguay and are now grown across the globe. With notes of butterscotch, cherry, and tobacco, it was rich and smooth. Tannat is also touted as one of the “healthiest” wines due to its high level of antioxidants. Shortly after the tasting, there was a little time to explore the resort itself, from the breathtaking art pieces to the peaceful courtyard, bocce ball court, and the chapel. The most impressive piece may have been a cross-section of a sequoia tree that was felled in 1952, dating back to before 214 BC (before the Great Wall of China was built). Moving on to dinner, we sat down at Cello Ristorante, the on-site restaurant and bar. Our server picked out their top dishes and drinks that were currently on the menu. She also informed us about the fact that they have not only resort guests who eat here but also regular locals. CONTINUED >

I started off with one of Cello’s signature cocktails, the New Fashion — an amazing twist on the regular Old Fashioned that includes Basil Hayden Bourbon, Nitro-Infused Vanilla Espresso Turbo (made in-house and infused with a cinnamon smoke directly from a fresh cinnamon stick, an orange, and Angostura bitters. We started our meal with the Shrimp & Risotto dish, made with garlic roasted shrimp, spring peas, mascarpone, baby arugula, pecorino romano, truffle, tomato confit, and Calabrian romesco. As I took my first bite, it was almost an out-of-body experience. The blends of flavors from the garlic shrimp, bitter arugula, and smooth cheeses didn't last long on the dish. Shortly after, the 16-ounce Lamb Rack and a glass of the 2017 Tannat arrived. After admiring the truly beautiful plating (stacked upright and together), it was time to revel in the dish. Paired with fresh grilled vegetables, a buttermilk and confit garlic mash, and drizzled with a Tannat demi-glace, this dish was more impressive than the first dish, which I thought would be hard to top. Finally, it was time for the Triple Chocolate Bomb. A chocolate soufflé cake with raspberry dark chocolate mousse, framboise scented ganache, topped with toasted almonds, chocolate chunks, fresh raspberries and blackberries, and a white chocolate sauce. The softness of the cake and mouse, with the crunch of the almonds, made this subtle, sweet, and too good to pass up and completely devour. Next time you’re looking for an extended weekend trip, look no further than Paso Robles and Allegretto Vineyard Resort. They book fast for the weekends as they are always hosting music, art, yoga, and other events, so be sure to plan this one out soon.
