Steve and Epi Goldstein, owner and operator of Texas Range Honey, recently shared the secret to their tasty wild honey. Wild honey is processed differently from honey you find in most grocery stores. It has never been heated past temperatures that naturally occur inside the hive. As bees deposit nectar which becomes honey into their hives, their activity increases the temperature inside the hive. Bees suck the nectar from flowers and store it in their stomachs. Later, bees will pass the nectar to other bees through their mouths. As the bees pass the nectar, the sugary substance turns into honey. Then, the bees store the final product in honeycomb cells. Large producers of honey will usually harvest honey with commercial bee blowers and large quantity spinners. They will also heat honey to make it faster and easier to filter and bottle, removing many of the nutrients in the process. Wild honey is not pasteurized or altered in any way. It is unfiltered and responsibly harvested, free of any chemicals, additives, antibiotics, pesticides, herbicides, and pollutants. Raw and wild honey is an all-natural and readily available option with many health benefits. Some evidence suggests that honey helps reduce the risk of heart disease and diabetes and supports a healthy stomach. It has a mix of amino acids, vitamins, minerals, iron, zinc and antioxidants. In addition to its use as a natural sweetener, honey is used as an anti-inflammatory, and antibacterial agent. People commonly use honey to treat coughs and apply it topically to treat burns and promote wound healing. Interestingly many people eat bee pollen sprinkled on their morning toast, in a sandwich at lunch to lower cholesterol, reduce hardening of the arteries, improve metabolism, and increase hormone
levels. It may also improve stamina and strength, reduce depression, decrease inflammation, as well as improve immunity, menopausal symptoms, and wound healing. While both Steve and Epi say the flavor of pollen is not sweet like honey, they cannot dispute the health benefits. If you are interested in starting a bee pollen regimen, start slowly with as little as ¼ tsp per day. People can have allergies to bee pollen. Eating unfiltered, unheated, raw honey produced within your area, (50-mile radius or less) is like receiving a natural anti-allergy shot. Quercetin, a component of honey, has been found in studies to reduce inflammation and pollen allergy symptoms. It stabilizes the cell membranes that release histamine, which triggers allergic reactions. HONEY GARLIC SALMON INGREDIENTS SAUCE • 4 tbsp honey • 2 tbsp soy sauce (all purpose or light soy sauce) • 1 tbsp white vinegar (or sub with any other vinegar except balsamic) • 1 large garlic clove (or 2 small) , minced SALMON • 2 salmon or trout fillets, skinless (6oz / 200g each) • Olive oil • Salt and pepper OPTIONAL GARNISHES • Sesame seeds • Finely sliced chives or shallots/scallions

Take salmon out of the fridge 20 minutes before cooking. Pat salmon skin dry with a paper towel and sprinkle with salt and pepper. Whisk together the Sauce ingredients in a small bowl. Drizzle oil in a non stick fry pan and heat over medium high heat (or just under, if your stove runs hot). Place salmon in the pan, and cook the first side for 3 - 4 minutes until golden. Turn, then cook the other side for 2 - 3 minutes or until golden. Pour sauce over salmon. Cook for 1 minute or until it starts to thicken slightly. Check the side of the salmon to tell how cooked through the middle is. If Sauce thickens too much before your salmon is cooked to your taste, just add water 1 tbsp at a time. Remove onto serving plates. Serve salmon drizzled with Sauce, sprinkled with sesame seeds and chives/shallots, if desired.

“Exploring wellness as a whole.” That is the mantra for Spa 31 and its owner, Alisha Rosenthal. Alisha notes there are eight dimensions of wellness, and the spa will focus on each one helping people feel and look their best. Spa 31 is unlike other spas in the Texoma area and along 75. As a med spa with Alisha as a board-certified medical massage practitioner plus having a medical director on staff, the spa offers unique services not available elsewhere. For example, they provide body sculpting and post-surgical lymphatic drainage massage, one not found anywhere else. Her extensive massage training helps her
understand pathologies and create treatment plans “not typical for everyone,” she notes. Soon the spa will add botox and fillers to the services already presented. Spa 31 also provides the Face Reality acne program, every type of massage available, and corrective facials like micro-needling and BioRepeel. Alisha says there is one negative to her facials, “you’ll be addicted to it.” Alisha and her employees are constantly educating themselves on skincare corrective and massage, always focused on what they can do to heal the client. In fact she is so invested in education, she also operates a massage
school in Sherman to help train, educate, and hire employees. Like many in the service industry, there is a shortage in trained workforce. There is no other Texas massage therapist school for at least 30 or more miles. The school, 31 Institute, has been open for about a year with four graduates to date. But that isn’t all, because the demand for estheticians is also high, she hopes to open a school for that in the future. Alisha Rosenthal, originally from Texoma, opened Spa 31 in Sherman nine years ago. The original location was built in 2014, and the spa expanded in 2019 to the current location of 2200 square feet and 5 rooms. Spa 31 is still growing, doubling its size to an even newer downtown location just under 4000 square feet and more than ten rooms in the new year. CONTINUED >

Spa 31 will be expanding early this year to the new Urban Sherman location with the help of Texoma’s D2 Built design team. Alisha is excited about the new location in the historical building that will be keeping as much of the original character as possible. The building caught her eye in 2019 and she is glad to be a part of the downtown Sherman renovation. Alisha praises the City of Sherman for the city’s help with permits for construction. As a member of the Sherman Chamber of Commerce and on the

Downtown Sherman board, Alisha looks forward to the growth coming to the area. “I like the community support for small businesses here,” she says. Alisha continues, “People show up in droves for small businesses plus the city and the chamber supports us so well.” She returns that support by serving the community helping Santa for Seniors, Toys for Tots, and collecting food for Grand Central Station Dining Car. Besides the services that make Spa 31 unique, the business focuses on family. Alisha’s sister, Cassie, is an esthetician and Alisha’s daughter, Laila, and her daughter-in-law, Elizabeth, also work on occasion. Family is important to Alisha; she and her husband TJ recently celebrated their 25th anniversary. They have three children who Alisha says “support every aspect of the spa and businesses.” It is family and community support that keeps Alisha Rosenthal thriving with Spa 31 and the 31 Institute school. In the heart of Texoma, a basketball program is making waves, not just for its skillful play but for the life lessons it imparts. Willie Johnson, the founder of Sparks and Lady Sparks Basketball, is the driving force behind this initiative, showing what dedication, community spirit, and a love for the game can achieve. Willie Johnson’s journey into coaching began with his two daughters, who have been playing basketball under his guidance since they were old enough to join a team. This personal commitment soon blossomed into a community-wide endeavor, as more parents sought opportunities for their kids with Willie’s coaching. Johnson, a lifelong basketball enthusiast who played through college and continues to play in men’s leagues, uses his experience to enrich the lives of young athletes. Sparks Basketball is more than just a sports program. It’s an opportunity for year-round commitment that starts with kindergarteners and goes all the way to high school students. With hundreds of kids participating annually, Johnson’s winter program focuses on younger kids, while the summer sees him leading older students in travel ball, exposing them to varied levels of competition across the North Texas and Oklahoma regions. The philosophy driving Sparks Basketball is clear: “Always Earned, Never Given.” Johnson is not just coaching basketball; he’s teaching life skills like discipline, perseverance, leadership, and teamwork. He is known as a strong coach who is willing to put his teams in tough games to ensure nothing comes easy and every win is earned through working harder, running faster, and shooting better than the opponent. But what is his
ultimate goal? To see these kids grow, not only in their game but as individuals, potentially earning college scholarships through basketball just like he did. Johnson’s dedication is unwavering. With a son just starting his journey in the sport, he has many years of coaching ahead of him. In the last decade, approximately 300 to 400 kids from across the Texoma region, including Pottsboro, Denison, Sherman, Bells, and beyond, have been part of Sparks. This is a testament to the inclusive nature of the program, welcoming anyone with a passion for the game. For Johnson, Sparks Basketball is a daily commitment. He spends around 20-25 hours each week coaching, not including the additional time spent traveling for games. This devotion is a family affair, with his own children often training alongside him, while his wife supports the endeavor behind the scenes. Sparks Basketball isn’t just a program; it’s a community asset, shaping the lives of young people through the game of basketball. When you love to cook, sing, make music, and enjoy friendly gatherings, it only makes sense to bring it all together. Jennifer Taylor does all of that at the Old Quail Run Farm. Located in Sherman, Old Quail Run Farm is an intimate entertainment venue focusing on food, wine, and music, the whole experience. For their Farm to Table dinners, food is sourced locally within twenty miles of the farm and served literally farm-to-table. Jennifer owns a catering business in Sherman/Denison, Bon Appétit Y’all, which helped start the farm-to-table movement. In fact, she was one of the first in North Texas to focus on local food sourcing. Now at Old Quail Run Farm, the dinners become an event with performances by renowned musicians. This is partially because of Jennifer and her family’s background, touring the country performing Christian music at camps and churches. As young adults, Jennifer and her sister continued their career in Nashville writing, singing, and performing. Those music connections carried over to the dinners at the farm today. The size of event often determines the artist who performs. The farm has hosted artists such as Suzy Bogguss, Billy Dean, Texas Playboys, and Jack Ingram. Each dinner had a theme with Jennifer documenting each theme, recipe, and event. CONTINUED >

Fittingly, she created a series of cookbooks documenting the occasions. “Gatherings and Guitars: Making Memories one Meal and Song at a Time,” the first book, should be released early this year. According to Jennifer, each chapter features an artist who performed at the event plus all recipes from that special dinner, plus a QR code linking to their music. The artists contributed a recipe plus a story explaining the food or experience. Jennifer says it’s not a cookbook but “a storybook with recipes.” She has over five years of content for the books thus planning to release a series of books each with a different theme. Jennifer shares one of those recipe’s this month. Jennifer Taylor has considerable plans for Old Quail Run Farm. Having lived in Sherman for the last thirteen years, she is excited to expand the farm as the the community continues to grow. Almost certainly, Jennifer will live up to her book’s title, making memories, each meal and song at a time.

STR EET COR N & K A LE SA LA D ingredients: • 1 bunch of Kale, leaves cut from stems and chopped • 1 head of romaine lettuce chopped. • 1 cup of grilled fresh corn - cut from the ear • 1/2 cup of cotija cheese, crumbled 1/2 of a red onion, chopped • Cilantro Lime Dressing: • 1/2 cup of plain greek yogurt • 1 lime squeezed • 1/4 cup of fresh cilantro chopped fine 2 garlic cloves minced • Salt and pepper • 1/4 teaspoon of canned chipotle directions: Add all dressing ingredients to a food processor. Blend until smooth. Add chopped Kale to a bowl. Drizzle with a little olive oil. Massage kale until softened. Then add your corn, cheese, red onion, and avocado. INGREDIENTS

ROSEMARY SIMPLE SYRUP • 1 cup cane sugar • 1 cup water • 3 sprigs of fresh rosemary ROSEMARY PEAR MOCKTAIL • 5 tablespoons pear juice • 1 tablespoon rosemary simple syrup • 1 teaspoon lemon or lime juice • sparkling water to taste
HOW TO MAKE ROSEMARY SIMPLE SYRUP Combine sugar and water in a pot and cook over medium heat. Cook until sugar is completely dissolved. Turn off heat and toss in rosemary sprigs. Cool Completely. HOW TO MAKE ROSEMARY PEAR MOCKTAIL Pour pear juice, rosemary simple syrup, lemon juice, and sparkling water into a glass. Add ice and garnish if desired. CONTINUED > JANUARY 2 0 2 4

GRAPEFRUIT THYME MOCK TAIL INGREDIENTS THYME SIMPLE SYRUP • 1 cup cane sugar • 1 cup water • 1/3 cup fresh thyme GRAPEFRUIT THYME MOCKTAIL • 3 cups water • 1 cup fresh grapefruit juice • 1/3 cup thyme syrup • Ice
INSTRUCTIONS HOW TO MAKE SIMPLE SYRUP: Combine water and sugar in a pot. Bring to a boil and then simmer for a few minutes. Remove from the heat and add fresh thyme and steep. HOW TO MAKE GRAPEFRUIT THYME MOCKTAIL Rim glass with sugar if desired. Fill glass with ice. Add 3 tablespoons thyme syrup to each glass and fill up with 1/2 cup grapefruit juice and approximately 1 cup sparkling water. Garnish.
W I Z A R D LY BUTTER BEER INGREDIENTS BUTTER BEER • 2 liters of creme soda • 2 tablespoons butter extract • 2 teaspoons rum extract CREME TOPPING • 7 ounce container of marshmallow creme or fluff • 1 1/2 cups whipping cream • 1 teaspoon rum extract
INSTRUCTIONS Add the rum extract and butter extract to the 2 liters of cream soda. Close lid and gently mix. Prepare the topping by combining the marshmallow creme, whipping cream and rum extract. Beat on high for a few minutes until peaks appear. Add a few tablespoons of whipped topping to the bottom of glass. Pour cream soda over topping. Enjoy!
