







It was the late 1990s and my boyfriend (now husband) and I would go watch Esteban play at the Hyatt Regency Scottsdale Resort & Spa at Gainey Ranch. We’d sit outside, listen to the tunes, and stare up at the stars.
Fast-forward all these years and now I had the honor to interview him for this issue. Who would have thought back then that more than two decades later we’d be working together on a cover story?
Watching Esteban’s success over the years has been wonderful, and you can read his story and learn all about him—as well as find out some of his favorite spots in Tempe!

HOW DID YOU GET STARTED IN MUSIC?
My uncle George played on his hi-fi beautiful music for me when I was 5 years old. Almost every weekend I was listening to his big hi-fi, and we heard everything from folk music to flamenco guitar to opera to symphonies, etc. As a little kid, I was mesmerized.
YOUR REAL NAME IS STEPHEN PAUL … CAN YOU TELL US HOW YOU BEGAN GOING BY ESTEBAN?
Andres Segovia saw my name Stephen, spelled with a “PH,” and from then on, he called me Esteban, which is Stephen in Spanish.
HOW LONG DID YOU STUDY WITH HIM?
I studied with maestro from 1975-1979.
THE BIGGEST LESSON HE TAUGHT YOU?
To play scales two hours a day.

What an adventure that was! I would love to have a steady [gig] in the Valley again. Who wants to recreate that? I do!
DURING THAT TIME, YOU RELEASED YOUR FIRST ALBUM. WHAT INSPIRED IT?
My first album was Songs from My Heart. What inspired it was my deep love of pure melody. Every song on that album has a lovely, pure melody and that in itself is very inspiring. When I hear or compose a melody, I drift away to another place. Peace and love are the only things present in this “another place.” No fighting, no wars, no poverty, no pain.
ACCOMPLISHMENT YOU’RE MOST PROUD OF?
Good question! I’ll have to say my eight Number One Billboard albums. Each one is a little different, but they are all straight from my heart.

We were happy when they opened the very first Cold Stone Creamery on Southern in Tempe! We love Macayo’s and had many a meal there as a family when my girls were young.

My daughter, Teresa Joy, and myself perform from our hearts! I really mean that. No mind. No structure. Just the pure love between us manifests in our music. She knows what I am going to play before I play it! The vibration between us is beyond incredible!
ONE THING WE’D BE SURPRISED TO LEARN ABOUT YOU?
I am 75 and I work out two-and-a-half hours a day. I play my scales two hours a day. I meditate an hour a day.

“I’ve known all my life that I was going to own a restaurant,” says Paul Gillingwater, the owner and operator of Tempe’s Freely Taproom & Kitchen. “I topped out at my previous job and made the leap into ownership. The scariest and most gratifying moments of my life.”
Gillingwater opened the destination in October 2021, and it’s been a hit ever since, drawing a loyal crowd for its top-notch food and drinks.
“Freely Taproom was designed to be a meeting place for the South Tempe neighborhood,” Gillingwater explains. “We offer a full bar, a bustling happy hour, and a mouthwatering menu. Our fine-casual counter service sets the tone to relax and enjoy a night out in the neighborhood.”
The local favorite offers 30 beers on draft (with many more in the retail cooler), 20 wines by the glass, a craft cocktail list, lunch and dinner, and a boozy brunch on the weekends.
“Our beer list is carefully curated with everyday drinking beers, along with hard-to-find beers you probably have never heard of,” Gillingwater says.
As for the wine, Freely is one of the only restaurants in Arizona where guests can find the cult-classic Pendulum Cabernet Sauvignon.
Menu items for lunch and dinner range from snacks such as a pretzel board and meatballs to salads, flatbreads, and sandwiches such as the Padrinio Sub or Chicken Parm.
“Our most popular item is our Prosciutto Flatbread,” Gillingwater shares. “A chewy fluffy crust, white sauce, ricotta cheese, fig jam, thin prosciutto ham, and arugula. So good!”
There’s also a menu for kids, making Freely perfect for the entire family.
On the weekends, brunch is served from 9 a.m. to 2 p.m., with options such as the Smoked Salmon Flatbread and Classic Breakfast.
“I love getting to know the neighbors over a pint of beer.”

I went into dentistry because I wanted a career in healthcare. I was exposed early on as my father was a dental laboratory technician. My hand-eye coordination is pretty good, and I was great at video games growing up, so I decided to pursue dentistry.
SO MANY PEOPLE ARE NERVOUS ABOUT DENTAL WORK. HOW DO YOU ALLEVIATE THAT?
I think that fear comes from not knowing. I tend to explain as much as possible to my patients so that they know exactly what to expect. And I try to be very gentle when treating patients. I try to give painless injections, and so far, it’s been working!

These 20-Minute Workouts Are All You Need for Optimal Fitness

Cassie and Gerard Richards, the co-owners of BODY20 Tempe, can make that happen.
BODY20, which they opened in December 2023, is a low- to no-impact personal workout experience that uses EMS (electro-muscle stimulation) technology.

USING THESE TIPS YOU CAN MAKE A DELICIOUS HOMEMADE BARBECUE SAUCE.
A good barbecue sauce is comprised of a variety of the same six components. The key is to discover what style you enjoy most, and don’t be afraid to experiment. Oh, and taste often during the preparation process to adjust if so desired.
SOMETHING SWEET
This can be honey, cola, molasses, preserves, brown sugar, or syrup. This caramelizes as you cook, bringing those smoky, sugary flavors.
SOMETHING TANGY
Think vinegar, mustard, or citrus. This is what brings the zing to your sauce.
SOMETHING SPICY
This provides your heat: a hot sauce is a great choice. A good rule of thumb is to use about 1/2 teaspoon for every cup of sauce you’re making.
SOMETHING LIQUID
It can be beer, water, chicken stock, soda, or wine. Start with about 1/2 a cup and see what happens.
SOMETHING TOMATO
You’ll most likely use ketchup, but you can also use tomato paste.
THE SPICE COMBINATION
This can depend on your liking and taste and can include anything from onion powder to garlic powder to chili powder to allspice to cayenne pepper to mustard powder to liquid smoke to cumin to Worcestershire sauce and more. Start with a teaspoon of salt, and keep tasting as you experiment with your desired spices.
• 2 cups ketchup
• 1 cup water
• 1/2 cup apple cider vinegar
• 5 tablespoons brown sugar
• 5 tablespoons sugar
• 1/2 tablespoon black pepper
• 1/2 tablespoon onion powder
• 1/2 tablespoon ground mustard
• 1 tablespoon lemon juice
• 1 tablespoon Worcestershire sauce
In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
