For the last few years, we’ve set aside space in the February issue to celebrate the “makers” in SW Lake County. What’s a maker? Anybody whose career is about creating things for others to enjoy. This month we’ve put together a collection of stories we hope you like about a few of the makers in our midst. Late last year a new art gallery opened in Lake Zurich that exhibits (and sells) the artwork of the very prolific Adam Mayster. He works across so many mediums that there’s something to suit just about anybody at The Absurd Art Gallery. Regular contributor Marty Jalove shares a story about how custom-made men’s clothing is now available at Mr. Tux’s Formal Wear. After a period of trial and error, Chad and Suzanne Dershaw of North Barrington (husbandand-wife proprietors) have hit upon a winning methodology to help any gentleman look sharp. My watch band broke on the morning of my wedding. Maybe it was just good luck since I’ve been happily married for more than seven years. With a busted watchband and a pending wedding ceremony, I took out my phone to search for something that would look and feel good, and make me happy. Within minutes I purchased a few different styles; some casual, and a couple more formal. While many men may love the thrill of the hunt, it’s a different story when shopping. CHOCOLATE and WINE February brings celebrations of love which frequently include the timeless treasure of wine and chocolate. Whether it’s over romantic dinners for two or between female friends at “Galentine’s” parties, wine and chocolate will be making lots of appearances this month. Use this as your guide to creating an exquisite experience for your loved ones this month. These aphrodisiacs have a lot of similarities to each other. For one, they both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. But because these characteristics affect flavor, it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. Fortunately, we’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

T I P 1 : M AT C H S U G A R WITH SUGAR What’s true of relationships is not true of wine and chocolate: opposites do not attract. When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. Sweet white chocolate pairs well with sweet wines high in residual sugars and bitter darks with dry wines with just a hint of residual sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

T I P 2 : M AT C H I N T E N S I T Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

TI P 3: PAI R FL AVORS WITH FL AVORS Wine and chocolate both carry their own intense flavors. If your chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

ON SERVING WINE AND C H O C O L AT E F L I G H T S : Just as you would with any other tasting, it’s best to start with light chocolates and wines, increasing the intensity as you go along. Start with white chocolates and light wines and save the richest, dark chocolates and wines for last. By doing this, you will keep your palate from starting out too strong and missing out on the subtle sensations found in more delicate chocolate and wine selections.

Scientists mapping how the brain works have assigned characteristics such as creativity and analytical ability to different sides of the brain. The theory is that most everybody is either left-brained or right-brained, meaning that one side of their brain is dominant. If you’re mostly analytical and methodical in your thinking, the theory says that you’re left-brained. If you tend to be more creative or artistic, you’re right-brained. But what if you’re both? In a nondescript building in downtown Lake Zurich a new business was launched last year—The Absurd Art Gallery. In a bright space flooded with daylight the walls are covered with a myriad of artworks: paintings, photography, mixed media, drawings and whimsical graphics. Nearly everything is the product of one artist, a CPA whose accountancy practice is in an office down the hallway. Adam Mayster is the man behind both businesses. He has pursued careers in art and accounting, impressively flexing both sides of his brain. With an undergrad degree in political science/legal studies and masters degrees in accounting and business, Mayster pairs those studies with

certificates earned from the New York Institute of Photography. Mayster provides tax planning and returns for individuals, and a full suite of services for small to mid-size businesses, including tax, bookkeeping, management consulting and CFO/Controller functions. He said that opening the art gallery “seems to have always been something I’ve been working out in my mind. I’m not sure when it all started but I definitely remember where I was when the name hit me. It’s all based on existentialism. There are a lot of quotes I could offer, but if I have to put it into my own words I’d say, ‘the meaning is for you to decide’.” Mayster’s artwork can’t be pigeonholed. The gallery includes explosions of color, precise photography, good humor, abstracts and more. GOLF BRAND IS A FAMILY AFFAIR AN IDEA THAT "CAME OUT OF NOWHERE" IS REALLY JUST FOR THE FUN OF IT. ARTICLE BY ERIC NIEMI | PHOTOGRAPHY BY ERIC NIEMI, DRAKE MCNAMARA & MICHAEL BEIGHTOL

A local golf apparel brand was launched during the pandemic, and it’s thriving. Eric Niemi is the founder of Snowman Golf, but his teenage daughter, Mia, was the one responsible for the distinctive Yeti-style logo that now adorns a variety of products that include shirts, hats, ball markers, club covers and gloves. SW Lake recently talked with Niemi about his start-up. SW Lake: What was the impetus for you to launch a golf apparel business? Eric Niemi: The idea really came out of nowhere. I was golfing with a friend, and he was yelling “Snowman” at me after scoring an 8 on multiple holes. An idea just kind of clicked. I came home that day and asked my daughter, Mia (a freshman at Lake Zurich High School) to come up with a logo which she created that day. We started an Instagram account, developed a following, and decided to launch with 12 hats to see if there was a market for a fun new golf brand. SWL: What sets you apart from other golf apparel brands? EN: We don’t take ourselves too seriously. We have six key ambassadors, including Christian Sereika (skateboarder),

Adam Pawlak (chef), AJ Cole (NFL punter), Beau Kuther (drummer for alt-rock band Smallpools), Stephanie Hoffman (welder), and Tyler Barham (country singer/ songwriter). They are all really good at their day jobs, and simply enjoy golfing. They fit our tagline to a tee: “Enjoy the Game - Embrace Mediocrity.” Also, our Yeti character has been widely embraced. There are endless opportunities for art and collaboration. My favorite so far has been a custom polo we designed for DJ Kilmore from the altrock band Incubus. It features our Yeti head as “Chuck,” a figure that has appeared on several of their album covers. It has been beyond exciting getting to meet new people and designing something fun and unique that is specifically for them. I even had the chance to play a round with DJ Kilmore during a stop in Chicago on the last Incubus tour. SWL: What was the inspiration for the name of the company—Snowman? EN: Golf is hard to play, and most people aren’t great at it. The focus is to not take the game too seriously. Our apparel adds a dynamic of fun and relatability to the game. While you may not play any better, our gear is a conversation starter and unique.

SWL: What differentiates your products from others on the market? EN: Our shirts are four-way stretch (92% polyester/8% spandex), and are manufactured by the same supplier that produces shirts that sell for more than $70. Our hats are all “cut and sew,” meaning every detail is covered, 5-panel vs. 6-panel, structured vs. unstructured, flat vs. curved brim. SWL: Who designs the products? EN: Other than the main logo, I design all or most everything. Most of my free time is spent scribbling on my iPad.
