How Springdale Won Our Hearts (and Stomachs)

John Engleman, Heidi Faires

When I first fell in love with Springdale, I fell in love with its food. Before I knew the area, before I knew the people, the one thing I knew was the restaurants. I knew how to order tacos at a restaurant with a menu entirely in Spanish -- mostly by pointing enthusiastically. And I knew the feeling of sitting across from someone I loved splitting good food and enjoying the conversation. That's how my partner and I have always connected — over good meals. A good dinner, a drink we'd never tried before, a place we'd wander into on a whim and end up talking about for weeks. Springdale gave us that, early and often, and it's a big part of why we decided to buy a house here over two years ago. So when it came time to put together our October issue, a food and beverage issue felt less like an editorial decision and more like something we'd been researching every weekend for the past couple of years. Narrowing it down was almost impossible— there are simply too many incredible spots to fit into a single magazine, which is the best kind of problem to have. Springdale's dining scene is growing, and it's growing into something worth paying attention to. We're so glad to be here for it and so glad to share it with you. With love and a great appetite,

Not many restaurants can say they have been on board Air Force One. AQ Chicken House can. With a rich history and deep local roots, AQ Chicken represents a special kind of establishment that once gone was always bound to return. From hosting Bill Clinton’s birthday party to hosting countless locals and their families for generations, AQ Chicken has a place in our hearts. AQ Chicken first opened on July 20, 1947. Roy Ritter founded the restaurant on his chicken farm, where the chicken went straight from the farm to the kitchen to the table. In the decades that followed, the beloved restaurant changed hands, but it always kept locals with fried chicken at their fingertips. AQ Chicken became a major regional destination almost immediately, and within a single generation, it became world famous. By the late 1960s and early 1970s, the children of the original 1947 patrons were eating the same fried chicken but alongside international tourists, Hollywood celebrities, and U.S. presidents. Multiple locations eventually opened up across the state.

In 2023, AQ Chicken House closed; in July of this year, however, it reopened. But one could make the case that AQ Chicken never really left: it is the spirit of a community that keeps a place alive, something that silently persists in memory of what was. Over nearly eight decades of serving Northwest Arkansas, just five families have served as owners of the AQ Chicken House brand. It started with Roy Ritter in the 1940s before passing on to Frank Hickingbotham and Ron Palmer in the 1980s. Dick Bradley took over in the 1990s, and he owned it until the closing in 2023. Now, the Lundstrum and Lively families have led the reopening. The return of AQ Chicken House began, fittingly enough, over a meal at AQ. While Tom and Robin Lundstrum, their daughter Gracie and her husband Jacob Lively, and the rest of their family were eating together, Tom mentioned that he had always wanted to own the iconic restaurant. Jacob took the comment as a challenge. Before leaving, he gave his contact information to someone at the restaurant and asked that the owner give him a call. The Livelys (left) and Lundstrums (right)

“THE LUNDSTRUM AND LIVELY FAMILIES WERE NOT INTERESTED IN SIMPLY REBRANDING AQ CHICKEN; THEY INTENDED TO CARRY ON THE TRADITION.”

That conversation led the Lundstrum and Lively families, through Catalyst Capital, to acquire the AQ Chicken House brand, intellectual property, and secret recipes from Dick Bradley. From there, bringing AQ back became a true family effort, with the four owners each playing important roles in restoring the brand and preparing it for its next chapter.

On Saturday, July 4, 2026, AQ Chicken House was brought back with a highly anticipated new location on West Emma Avenue in Downtown Springdale. The community’s collaboration on this project is impossible to overstate. The effort involved an eighteen-month process of recovering the secret recipes. Former cooks and general managers Larry Mounce and Mark Henry as well as former owner Ron Palmer made hands-on adjustments, ensuring that everything tasted the same as it always had. The Lundstrum and Lively families were not interested in simply rebranding AQ Chicken; they intended to carry on the tradition. Everything on the interior was put together with the same level of intentionality. At AQ Chicken, generations of people were greeted with the same “Hi, Hon!” by longtime hostess Miss Jeri. Today, those words are engraved on the host stand right when you walk in. Detours into the gift shop revealed toddlers rummaging through a treasure chest full of toys in search of new finds. Nearby, an oversized ledger awaited new guests to mark their arrival, a historical record of sorts for all those who visited over the years. These, too, can be found at the new location. CONTINUED >

To make it even more special, every part of the revival—from the ledger to the wallpaper to the woodwork—was made by local artisans. The ledger was put together by Ross Egaer at Arcom Plus and Seth Tomboli at Tomboli Leather Works. The wallpaper was designed across town at Painted Paper. The tables, chairs, podiums, and booths—“just about everything made of wood”—were crafted by Jared Breedlove at Beloved Furniture. As a local destination, AQ Chicken made a point to put the spotlight on local craftsmanship. “You walk in and you’re supposed to feel like it’s grandma’s house,” Gracie said. “That’s what we wanted for the design, the furniture, even the smell.” This makes AQ Chicken feel almost like a secret that’s too personal to tell. And yet, this is precisely its charm: we

16

M UST SE E | FO O D + BEVE RAGE

can’t resist it because we all want to go back to grandma’s. Consequently, the secret becomes ours to share. In any case, food and place are closely tied to our sense of home. By creating a sense of home in the restaurant, the Lundstrum and Lively families have created a unique dining experience that carries on the AQ tradition. “Every artifact, from the host stand to the old ledger, was placed to make longtime customers feel at home again,” Gracie said. “Being a home has made it worth the drive since 1947.” Since the year it first opened, AQ Chicken House has been a central part of our community, and perhaps it always will be. Through all the years, all the stories, and all the people, this wasn’t really a revival after all. It was simply a return to something that had never gone away, for some places can never truly be forgotten.

FUN FACT During a 2000 campaign stop at Northwest Arkansas Regional Airport, George W. Bush requested AQ Chicken for his flight. The Secret Service picked up the order, and Bush ate his AQ Chicken aboard Air Force One. Laura Bush reportedly went with the catfish.

How To Stay Festive And Healthy? Sure Thing

20

H OST IN G T IP S | FO O D + BE VE RAGE

Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

stuffed

pumpkin

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.

spooky

CHARCUTERIE These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

DIP

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.

jack-o-lantern

VEGGIE TRAY The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.

AT RECENT SPRINGDALE STOPS As founder & host of the Flavors of Northwest Arkansas Podcast, these are my devourings and recommendations ARTICLE AND PHOTOGRAPHY BY JOHN ENGLEMAN The Springdale-area (includes Johnson, Lowell, Elm Springs and Tontitown) is beginning to be known as one of NWA’s top culinary hotspots. The contents of this article may not come as a surprise to those that live nearby, but when you have a restaurant on the verge of being 80 years old and another that made last month’s New York Times, the eyeballs on the scene multiply and the parking lots get a little tighter. Here are my favorites at recent Springdale stops (presented in alphabetical order). Handle: @flavorsofnorthwestarkansas

1 . C A R N I TA S L O S C UAT RO H E R M A NO’ S They’re deservedly having a moment — hopefully a long one. Last month, they were included in the New York Times article, “41 of the Greatest Mexican Restaurants Across the United States.” Have the mixed carnitas tacos and you’ll know why. The Palos family has run it for 30 years, and it may just be the start!

3

2. CA SA A LEJO It’s where I first had birria (*getting mistyeyed*). It also might be my favorite guac in all NWA. There are times where I’ve thought about hopping over just for that! Those quesabirria tacos are gospel, but their steak fajitas absolutely slay. I have so much on that menu to get to.

3. EL C U ERVO E X PR E S S TAQU E R I A I found them in their old location when they shared an old house with a CPA. I googled it and saw that they had 4.8 stars on Google reviews. I’ve now been twice. Think chips right out of the fryer, righteous asada and trompo street tacos. Next time I’m trying the barbacoa de borrego! CONTINUED >

My three favorites there are the carrot cake (not overly sweet — tremendous!), tres leches cake (strawberry with a delicious cream cheese layer between the cakes), and the Oreo concha—have that one with coffee and a GOOD MORNING will be had by you!

30

4. GA SK INS T R AT TOR I A

6. MJ’S

A new spot that we love! The folks from Gaskins on Emma opened this neighborhood spot at the end of July on the south end of downtown. I had the meatballs, chicken parm, and the tiramisu (twice in two days), all delish! Personally, I’d lick their red sauce from the bowl.

What a spot. Fantastic pizza, but it’s MUCH more than pizza. The Housemade Potato Gnocchi? Stunning. I hated that we shared it at our table—oven-roasted chicken, crimini mushrooms, fingerling potatoes, fresh herbs, and white wine butter sauce! Sidenote: the filet with layered potato galette is pretty freaking special as well.

T R E N D SE T T E R | FO O D + BE VE RAGE

7. P I Z Z E R I A R U B Y Death, taxes, and Pizzeria Ruby. The pizza is the bell cow there as well and it’s also flat out delish, but I have another favorite in the building. It’s the Spaghetti Pomodoro. My gosh. It’s all homemade and celebrated with the mag-freaking-nificent Sunday sauce with a pat of butter on top. Hold my calls.

8. R EI N SUSH I & H I BACH I

9. V E N E S I A N I N N

When you read reviews about Rein, not only do you read about the great food, but you also read about the great people. Though a favorite sushi and hibachi spot for many, they have so much more. Case-in-point? The spicy garlic dumplings. Where have these been all my life?! Cravings have started for them again.

Next year, they’ll be 80 years old! How? That Chicken & Spaghetti. Period. That house made spaghetti and meat sauce is iconic along with the soaked side salad (I love that garlicky vinaigrette). They don’t skimp there. And I’m weak for those rolls—we all are. 80 years of patrons would agree!
