Dear Southlake Community, Welcome, fall! As the leaves begin to drop and the Texas heat gives way to crisp, cool mornings, the Southlake community finds its unity through football and food. Fridays center around Friday night lights and all the pageantry they encompass, in a way only a Texan can truly appreciate. It is a defining part of Texas culture that transforms us into a community with one heartbeat. After the games, I encourage you to shop local and enjoy one of our signature cocktail features. It is not just about the game; it is the food, tailgating, the cheerleaders, the Belles, the band, and the Carroll ISD support that create an experience you have to see to appreciate. The young boys who play Dragon Youth Football on Saturdays run around the varsity games on Friday nights until they can no longer keep their eyes open, while parents enjoy a few minutes of conversation. The band and the Belles will spoil us with pageantry fitting for a community that strives for excellence in every venture. Although our theme is the October food and drink issue, I had to call an audible and run the play that works. That said, our features in this issue have their own highlights to savor. Steve and Angelo, co-founders of Rosebud Steakhouse, gave us the winning recipe for a new pasta dish, short rib bolognese, which will be my new MVP. For our cocktail features, we did a deep dive with Golden Eagle Vodka's Cowboy Martini, a play that will earn you points in every stadium. Angel's Envy landed in the end zone with the Peach Smash recipe that will have you doing the griddy like a 10 year old after a TD in the backyard. If you like to have fun and compete in the arena yourself, I suggest visiting Crush It Social, where you can socialize, play like a pro, and enjoy a truly immersive experience for all ages. Rounding out the starting lineup is Dan Nieto at Powerhouse Investing Group, our newest partner, and his story is worthy of an issue all to itself. Ultimately, it is game time, so tell dad to strap up his favorite pair of velcro sneakers and mom to put on that Chanel No. 5 she's been wearing to ladies’ night on Wednesdays, and let's freaking go! Preser ving a Beloved Catering Legacy While Creating Thoughtful, Personalized Experiences That Make Ever y Celebration Uniquely Yours ARTICLE BY JENNIFER BROWN-THOMAS

Some businesses begin with a business plan. Tastefully Yours began, in a way, with a wedding. When Hunter Scheffler and his wife, Christine, married in 2019, they discovered something unexpected in the process: they loved creating an experience people would remember. The details, the atmosphere, the way a celebration could bring people together stayed with them long after the last guest went home.
“We’re not simply putting food on a table. We’re helping create an experience that reflects the people, occasion, and vision behind each event.” That spark became The Gardenia Venue in Valley View, which they completed and opened in September 2021. As they built relationships with vendors across North Texas, one company consistently stood out: Tastefully Yours Catering. “They always had the nicest staff, had the best customer experience, and of course, the best food,” Hunter recalls. So, when he learned at the end of 2023 that the longtime owners were preparing to retire and sell the company, the opportunity felt less like a pivot and more like a natural next chapter. Hunter and Christine acquired Tastefully Yours, officially taking over in January 2025 with a clear intention: honor what had made the company beloved for decades while giving it room to grow. That balance between legacy and possibility now defines Tastefully Yours.
For a company built around celebrations, that evolution feels especially fitting. Tastefully Yours is preserving the recipes, relationships and reputation that earned generations of trust while making it easier for today’s clients to dream bigger, personalize more, and spend less time coordinating the pieces themselves. The made-from-scratch food and high level of service remain at the heart of the business, but clients can now find more of what they need under one roof. Hunter and Christine have expanded in-house rentals to include linens, napkins, flatware and glassware, created a showroom where clients can make selections in person, and added bar and alcohol services. The result is more than convenience. It’s a more cohesive, inclusive experience, built around the belief that catering should never feel like simply choosing food from a list.

“Our catering directors work hand in hand with clients to create custom, personalized menus that fit any vision,” Hunter says. That might mean an elegant plated gala dinner one weekend and a playful menu built around a themed celebration the next. The team carries that vision beyond flavor, incorporating custom décor, thoughtful setups and food presentation designed to feel like part of the event itself. And behind every plate is a team Page Lewellen, Director of Catering, says is one of the company’s greatest strengths. “We’re fortunate to still have some of the same team members who were here when we started,” Page says. “Their experience, loyalty, and knowledge of our clients and events have become such an important part of who we are today.” Longtime employees work alongside newer team members and family, creating a culture that blends history with fresh energy. It’s a fitting reflection of the company itself. Some traditions, after all, are too good to change. For example, the Twisted Bacon. “Without question, our signature favorite is our Twisted Bacon,” Page says. The longtime Tastefully Yours staple has developed such a following that clients call throughout the year specifically to order it. At some events, it’s practically the guest of honor. But the memories Tastefully Yours helps create are not always found on a menu. Page remembers one wedding where the couple skipped a traditional cake altogether. Midcelebration, an ice cream truck arrived. Guests headed outside to choose treats, fireworks began overhead, and “Thank You for Being a Friend” played. “It was completely unexpected, wonderfully personal, and felt so perfectly suited to the couple,” she says. That story captures what this team understands so well: the best events feel unmistakably like the people at the center of them. It’s also why Tastefully Yours continues looking for ways to make the planning process more personal. The company is expanding tasting events and open houses, inviting clients to experience the food, explore menus, ask questions and discover possibilities in person rather than trying to imagine an entire celebration from a proposal. That sense of connection extends beyond events. Tastefully Yours supports SafeHaven of Tarrant County

It’s a fitting reflection of the company itself. by donating food and catering certificates for fundraising auctions, using what the team does best to serve an organization providing critical support to victims of domestic violence. For Page, the privilege of this work is found in its variety and its meaning. Weddings. Birthdays. Showers. Corporate milestones. Family celebrations. No two are exactly alike, because no two stories are. “We’re not simply putting food on a table,” Page says. “We’re helping create an experience

that reflects the people, occasion, and vision behind each event.” Perhaps that’s the real recipe behind Tastefully Yours. The food matters deeply. So does the presentation. So do the details. But beneath all of it is something harder to put on a menu: intention. “When all of those things come together,” Page says, “that’s when catering becomes more than just feeding people. It becomes part of the memory they’re making.” And that’s exactly what Tastefully Yours is serving.

ROSEBUD STEAK HOUSE ARTICLE BY ANGELO ELIADES

Discover the Italian Influence
Behind Southlake’s Destination for Exceptional Steaks and Unforgettable Flavors
Rosebud Steakhouse may be known for exceptional steaks, but what truly differentiates us from many other high-end steakhouses in the Southlake area is the Italian influence that has always been part of our identity. Our roots are in Chicago, where the Rosebud name has been associated with Italian dining and hospitality for decades. With Rosebud Steakhouse, we bring together two things we love: the tradition of a great American steakhouse and the warmth, flavors and generosity of an Italian kitchen. Of course, beef remains at the heart of our steakhouse experience. We proudly feature our Linz Heritage Angus program, offering beautifully marbled, carefully selected steaks prepared with the simplicity and attention exceptional beef deserves. But we never wanted Rosebud Steakhouse to be a restaurant where the experience begins and ends with a steak. Our Italian dishes give the menu another dimension, and one of the best examples— and my personal favorite—is our Short Rib Bolognese. Traditional Bolognese is generally a slowly cooked meat sauce prepared with tomato, ground beef and often pork or veal. Our version takes that Italian tradition and approaches it through the eyes of a steakhouse. We start with generous pieces of short rib, searing the beef to develop a deep, rich flavor. The short rib is combined with ground beef, fresh garlic, onions, carrots and celery before

red wine is added and reduced. Tomato, beef base and demi-glace build another layer of richness, and then we do something that can’t be rushed: we let it slowly simmer for approximately three hours. By that point, the short rib is so tender it begins to pull apart into the sauce. Whole milk is added toward the end of the cooking process, bringing everything together and creating the rich, velvety texture that defines the finished Bolognese. It’s hearty, comforting and unmistakably Rosebud. That dish represents what we want our food to be: familiar enough to feel welcoming, but distinctive enough to be remembered. Guests can enjoy the prime steaks and seafood expected from a great steakhouse while discovering Italian dishes that reflect our Chicago heritage. For us, Italian food isn’t an addition to the Rosebud Steakhouse concept. It’s part of who we are. We’re proud to bring that combination to Southlake: a Chicago steakhouse with an Italian soul, built around great food, generous hospitality and making every guest feel at home. CONTINUED >

ROSEBUD STEAKHOUSE SHORT RIB BOLOGNESE Serves: 5-6 INGREDIENTS: • 1½ lbs. boneless beef short ribs, cut into large pieces • 1 lb. ground beef • 1 medium yellow onion, diced • 2 carrots, diced • 2 celery stalks, diced • 3 cloves fresh garlic, sliced • ½ cup red wine • 1 (28-oz.) can whole peeled Italian tomatoes, puréed • 1 cup prepared demi-glace • 1 tablespoon beef base • ¾ cup whole milk • Salt and freshly ground black pepper • 1 lb. large rigatoni pasta
Rosebud Steakhouse Short Rib Bolognese
DIRECTIONS: Season and sear the short ribs in a heavy pot until deeply browned; remove and set aside. Brown the ground beef in the same pot, then remove. Sauté garlic until lightly golden. Add onion, carrots and celery and cook until softened. Return both meats to the pot. Add red wine and reduce by half. Stir in beef base, demi-glace and puréed tomatoes. Partially cover and gently simmer for approximately 3 hours, stirring occasionally, until the short rib is tender enough to pull apart. Shred the short rib into the sauce, season, then add whole milk and simmer another 30 minutes. At Rosebud Steakhouse, we serve our Bolognese with pappardelle, and we recommend the same at home. The broad ribbons hold the hearty sauce, ensuring every bite captures the rich short rib Bolognese. Large pasta shells are another great option—their shape catches the meat and sauce beautifully.

HOW DAN NIETO TURNED PRESSURE, DISCIPLINE AND TRUST INTO A POWERHOUSE BUILT TO CREATE OPPORTUNITY FOR OTHERS
There are men who build businesses from opportunity, and there are men who build them from pressure. Dan Nieto knows pressure. Before he was CEO and founder of Powerhouse Investing Group, before the capital raises, the portfolio, he spent years learning what happens when you stay steady while everything around you is moving. That lesson began long before P.I.G. Nieto spent 26 years in the mortgage industry, building a career and learning how money moves. One of those investments was in a friend’s first restaurant in Orange County, California. When the opportunity came to fund a second location, the amount was too large for him to take on alone, so he brought a few friends with him. Then the SEC called. If he was going to raise money, he needed to be licensed. So, the intent was to get licensed for one single restaurant. And, what followed was something far greater. Friends began investing together in vodka, solar, coffee, liver care and other companies. In less than three years, Powerhouse Investing Group has raised more than $15 million in capital, with a portfolio Nieto says is valued at more than $500 million at exit values. But numbers alone don’t explain or encapsulate Powerhouse. Trust does. P.I.G. was built around the idea that accredited investors should have access to diversified opportunities without being locked into six-figure minimums. By pooling capital, the group can create entry points across companies and sectors. Yet as the business has grown, Nieto has protected something he refuses to sacrifice: the feeling that this is personal. It started with a handful of friends. Then his wife, Jessica, stepped in. Nieto has been married to Jessica for 18 years, and when P.I.G. began growing faster than he could carry alone, she became COO. CONTINUED >

“She has been the most valuable asset our company has ever and will ever have,” he says. Today, the leadership team includes a CFO, head of marketing, a large legal team, board of directors and several key leaders Nieto describes as some of the smartest men and women he knows. More importantly, many are close friends, people he trusts. That matters to a man whose life has been shaped by knowing who’s beside him when the pressure hits. Nieto began training in jiu jitsu in 2013. What started with a friend encouraging him to compete became a relentless pursuit. He went on to become an eight-time national champion, threetime Pan American champion and world champion. In 2023 and 2024, he earned No. 1 world rankings in the super heavyweight and absolute divisions in both Gi and No Gi. And you know what? Jiu jitsu does not reward panic. It rewards preparation. Patience. Discipline. The ability to remain calm when another person is trying to force you into a position you never intended to be in. Those same qualities now sit at the center of Powerhouse. The group partners with a dozen companies including Golden Eagle Vodka, De-Liver-Ance, Elevest Capital, Strong Coffee, AKKRUSH bone broth and Land Run Whiskey. Every other Friday, Nieto hosts an Investor Hour of Power at P.I.G. headquarters near Moxies, where people gather to talk strategy, build relationships and sample portfolio offerings. But the deeper story isn’t what Powerhouse is building. It’s what Dan wants that success to make possible. Some investments are intensely personal. One portfolio company is connected to curing hepatitis (VIRION). Another focuses on liver care, (De-Liver-ance) a mission that carries weight after Nieto lost his mentor and best friend to liver cancer. Then there is P.I.G CARES. Through his foundation, the community has raised more than $155,000 for people in need, including $55,000 raised in 24 hours for Gold Star families. P.I.G. also sponsors young athletes in Southlake, supports 413 Jiu Jitsu professor Pedro Rocha and Dallas-based Jesus and Jiu Jitsu, and has hosted PIGFEST in Southlake for three years. At home, Dan and Jessica are raising daughters Serenity, 22, and Stella, 14. Their life is filled with Southlake dinners, summer days on the boat and family trips to Mexico. It’s a softer picture than strangers sometimes expect. Dan knows his impression can be intimidating. He has heard “scary looking” more than once. Then you sit across from him. And he talks about his wife. His girls. His team. His friend who died. The families his foundation has helped. The people he hopes will build wealth because he opened a door. Suddenly, Powerhouse makes sense. This was never simply about money. It was about building something strong enough to hold other people’s dreams alongside his own. His biggest financial goal is to someday give away $1 million every year. Because Dan already knows what he wants left behind when the deals are done and the numbers no longer matter. Not how much was made. But how many lives were impacted because he was here.

The Nieto Family
Crush It! Social Before “eatertainment” became a buzzword and interactive social venues began appearing across the country, Mike Speets had already placed his bet on something simpler: people would always need a reason to gather. A self-described “golf nut,” Mike first saw the potential of golf simulator technology at a trade show in 2018. At the time, the idea of building a social experience around simulators, food and drinks still felt new. But to him, it felt like the future.
By 2019, the idea for Crush It was taking shape. In 2020, he was ready to open the doors. Then the world closed. “There was no grand opening,” Mike says. “I had to open in the middle of a pandemic.” For a business built around connection, the timing could not have been harder. Mike describes the first year and a half as survival mode. Still, little by little, people came. Local families showed up. The losses became break-even months. Eventually, the business found its footing. And truly, he’s never forgotten the neighbors who helped him get there. Today, Crush It Social, formerly Crush It Sports Lounge, looks far different from the original concept Mike launched with six multisport simulators. Those simulators remain part of the experience, offering golf, soccer, football, baseball, zombie dodgeball and carnival games, but he has continued adding new ways for guests to stay, play and connect. In 2024, a roughly 4,000-square-foot expansion, dubbed “Crush It 2.0,” brought six Duckpin Social bowling lanes, augmented reality darts and more interactive attractions. More recently, a pickleball simulator joined the lineup. “I’m constantly looking to innovate and stay ahead of the trends,” Mike says. That evolution is also behind the new name. Crush It Social better reflects what the business has become: not simply a sports lounge, but a place built around being together. Guests can stop in for lunch or a cocktail, reserve an activity for a night out, or celebrate everything from birthdays and corporate events to baby showers, team parties, Sweet 16s and engagements. Mike understands the magic

of that kind of gathering personally. He and his wife, Kristin, held their own wedding reception at Crush It, where guests played games between cake cutting and celebrating. For Mike, that kind of connection feels especially meaningful now. “In a post-COVID environment where everybody works from home and everybody’s communicating on direct messages and emails, you miss that face-to-face,” he says. Maybe that’s part of what makes Crush It work. The games draw people in, but the real experience is what happens around them: the laughter between turns, the stories shared over a drink, the simple joy of being in the same room. This fall, the menu leans into that sense of fun with shareable charcuterie, seasonal cocktails and an espresso martini flight featuring salted caramel, pumpkin spice and spiced chai flavors. The Texas Smoke Show adds a little theater of its own, topped with a bubble that pops and releases a cloud of smoke. The same community that helped Crush It survive its earliest days remains woven deeply into the business. Mike supports Southlake and Grapevine schools, youth

Sometimes being ahead of the curve means seeing what is coming before everyone else. sports teams and local events, including various Southlake Dragon events. He has donated to school programs, helped sponsor a pickleball court at Old Union Elementary and regularly hosts the GRACE Gifting Party ahead of the organization’s annual gala. For Mike, giving back is personal. He and Kristin live in Southlake with their son, Liam, a future Dragon, and are also parents to his stepdaughter, Maddy Matthews. There are already plans for another evolution in 2027, with upgrades to the bar and dining area and a few new attractions still under wraps. But for all the technology, expansion and innovation, the heart of Crush It Social remains surprisingly simple: for a few hours, the outside world can simply wait its turn. Sometimes being ahead of the curve means seeing what is coming before everyone else. And sometimes it means understanding what people will never stop needing: a place to come together.

Golden Eagle: American Character Vodka Pioneering a New Category of Vodka Through Single Distillation and Montana-Grown Dark Northern Red Wheat For decades, vodka was defined by neutrality. Federal standards historically required vodka to be “without distinctive character, aroma, taste, or color.” That changed in 2020, when the federal definition was amended, opening the door for vodka to have distinctive flavor and character. Golden Eagle was built around that change and the simple idea that vodka can, and should, have character. The idea came from founder Dakota Rader’s career behind the bar. After years as a bartender and restaurant operator, he saw an opportunity to approach vodka differently. Instead of a neutral spirit designed to disappear into a cocktail, he created a vodka whose raw ingredients and production methods could actually contribute to the experience. Golden Eagle starts with Montana-grown Dark Northern Red wheat, selected for its naturally rich, sweet profile. While most vodka is distilled repeatedly to create neutrality, Golden Eagle takes the opposite approach. It is distilled once, preserving more of the grain’s natural body, texture, and flavor. The result is what Golden Eagle calls American Character Vodka: a vodka with enough character to enjoy on its own while remaining clean and versatile in cocktails. That difference has been recognized in competition. Golden Eagle has earned more than 40 international tasting accolades and ratings as high as 99 points.

JESUS & Jiu Jitsu Sending Missionaries to the Mats ARTICLE BY STERLING ARCHER PHOTOGRAPHY BY TYLER SMITH AND DAVID RODRIGUEZ, PROVIDED BY JESUS AND JIU-JITSU
In 2023, a handful of guys from a local gym started Jesus & JiuJitsu with a simple desire and goal: to build community and fellowship around Jesus and world-class Jiu-Jitsu. In a culture that devalues masculinity yet is desperate for community, they looked around at the men they trained with and saw an opportunity for the Gospel that others were just beginning to see. They realized the gym is one of the greatest mission fields of our generation, filled with men who might never darken the door of a church, yet are hungry for purpose, brotherhood, discipleship, and truth. What began at a local gym has now grown into an international movement. Through elite-level free Jiu-Jitsu seminars, discipleship resources, the Jesus & Jiu-Jitsu Podcast, weekly devotionals, gear, and a growing gym network, we are equipping a movement of Missionaries to the Mats, followers of Jesus who represent Him across Jiu-Jitsu communities everywhere. Our mission starts at the mats, but it doesn’t end there. Our partners help the mission move forward, whether they are likeminded churches, individuals, businesses, or organizations. We have the vision. We’re witnessing a movement. What we need are more partners to advance the mission. Help us mobilize this growing community of Missionaries to the Mats to reach men with the truth of the Gospel. For more information about Jesus & Jiu-Jitsu and to learn about partnering with us, visit jesusandjiujitsuusa.com or contact me at sterling@jesusandjiujitsuusa.com. Join the community. Support the mission.

The Art of THE FINISH ARTICLE BY SAMANTHA FARRIS PHOTOGRAPHY BY ANGEL’S ENVY
For Angel’s Envy, great bourbon is only the beginning. Founded in 2010 by legendary whiskey maker Lincoln Henderson, the brand was built around a simple question: What happens when great bourbon is finished in another type of barrel? That experiment laid the foundation for Angel’s Envy and its distinctive approach to finishing bourbon in carefully selected barrels. Today, the brand continues to explore what is possible. “We’re focused on continuing to push the boundaries of what American whiskey can be while staying true to the craftsmanship that the brand is revered for,” says Angel Teta, Global Brand Ambassador. “We don’t want to change whiskey just for the sake of changing it, but instead find ways to add layers and bring new flavors to American whiskey.” That spirit of experimentation continues with new expressions from Master Distiller, Owen Martin. This fall, whiskey enthusiasts can look forward to an exclusive distillery release in Louisville and Volume 6 of the Cellar Collection, available nationally. One of the brand’s most memorable milestones was the 2022 grand reopening of the Angel’s Envy Distillery. The destination introduced new tasting rooms, a Bottle Your Own experience and an

invitation-only bar. “There’s nothing better than the surprise and delight I see on their faces when they walk in!” Teta says. Angel’s Envy also maintains a strong presence throughout Southlake and DFW, with its whiskey available at local restaurants, bars and stores. New brand ambassador Lilly Rasoul will bring her flair and charm to unique events and education in the area. Beyond the bottle, Angel’s Envy gives back through its Toast the Trees partnership with the Arbor Day Foundation. Since 2014, the program has helped replenish American White Oak trees used in bourbon barrels while supporting tree planting in urban communities. And when it comes to enjoying Angel’s Envy, Teta keeps it simple: “There’s no right or wrong way to enjoy it.” For a refreshing way to raise a glass, she recommends the Peach Smash, an easy-to-make cocktail perfect for sharing with friends.
