Sautéed Flounder with Pine Nut Butter & Spicy Garlic Spinach

INGREDIENTS
For the Flounder:
• 4 (6-to-8-ounce) flounder fillets (or substitute with red snapper, grouper, or catfish)
• Salt and freshly ground pepper
• ¼ cup all-purpose flour (for dusting)
• 1 tablespoon olive oil
• 2 tablespoons butter
• ¼ cup pine nuts (or coarsely chopped walnuts)
• Juice of 1 lemon
• 2 tablespoons fresh flat-leaf parsley, chopped
For the Sautéed Spicy Garlic Spinach:
• 2 tablespoons olive oil, divided
• 6 garlic cloves, very thinly sliced
• 2 teaspoons Bomba (Calabrian chili paste)
• 10 ounces fresh baby spinach
• Zest of 1 lemon, finely grated
• Salt and freshly ground pepper

1. Cook the Flounder:
• Season the fillets with salt and pepper on both sides, then lightly dredge in flour, shaking off excess. • Heat a large nonstick skillet over medium-high heat. Add olive oil, tilting the pan to coat. • Cook fish for about 3 minutes per side, or until it flakes easily. Transfer to a platter and keep warm.
2. Make the Pine Nut Butter:
• Reduce the skillet heat to medium and add butter.
• Once the butter begins to melt, stir in pine nuts. Cook for 30 to 60 seconds, until butter is melted and nuts are lightly toasted (be careful not to burn the butter). • Add lemon juice and season to taste with salt and pepper. • Spoon the butter and pine nut mixture over the fish fillets and sprinkle with parsley.
3. Prepare the Sautéed Spicy Garlic Spinach:
• Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. • Add garlic and Bomba paste, stirring for about 30 seconds until fragrant. • Add spinach and toss with tongs until it begins to wilt. • While tossing, add lemon zest. Season with salt and pepper.

Gina Mellish, crowned Miss New Jersey USA in 2020, didn’t have the typical pageant queen upbringing. In fact, she grew up as a self-described tomboy in Oceanport, and had no idea what the world of pageantry even looked like. Fast forward to today, and Mellish is not only a former titleholder but also an inspirational coach who has helped young women across the country achieve their pageant dreams.
In a candid interview, Mellish opened up about her unlikely journey to becoming Miss New Jersey and how she now works fulltime as a coach, using her experiences to guide the next generation of pageant competitors.
The spark for Mellish's pageant career came during her time at Red Bank Catholic High School. As a sophomore, she was inspired by her senior volleyball captain, Christina Thompson, who had just won Miss New Jersey Teen USA. “She was so kind, smart, and hardworking. I thought, ‘I want to be like her,’” Mellish recalls.
That admiration led Mellish to her first pageant, where she placed third runner-up. But instead of walking away, she dove deeper, and the following year, she won Miss New Jersey Teen USA. “That’s when my parents became pageant parents,” she laughs, recalling how they got fully involved in the experience.
Mellish competed in Miss Teen USA, made lifelong friends, and, after graduating from Marist College, decided to return to the pageant world. “I thought maybe it would take a few years to win Miss New Jersey USA,” she says. “But I ended up winning on my first try. And I wasn’t even old enough to have a martini to celebrate!"
Mellish’s journey took an unexpected turn when the world shut down due to the pandemic in 2020. Crowned Miss New Jersey USA in November 2019, she was ready to compete in Miss USA that following year—but the world had other plans. As the pandemic
forced a postponement of the competition, Mellish had to train in the comfort of her own home.
“I was juggling school, interning at Giorgio Armani, and preparing for Miss USA all at once,” she says. “But when we were sent home, it was a hard time for many, but it gave me the chance to focus.” That focus paid off, as Mellish placed in the top 10 at Miss USA in 2020, a feat she still feels proud of today.
Mellish's time as Miss New Jersey USA was about more than just looking pretty in a crown. As she competed at Miss USA, she used her platform to raise awareness around healthy relationships, working closely with the organization One Love. “I had been in an abusive relationship when I was 16, and competing again gave me a chance to speak out and use my voice for something that mattered,” she shares.
Her message resonated deeply with others, as Mellish’s vulnerability and courage in sharing her story helped countless people navigate their own struggles. “I wanted to leave a legacy that wasn’t just about the crown and the glitz,” she notes. “It was about using my story to help others.”
After her reign, Mellish transitioned into coaching, and now she helps young women—both teens and adults—navigate their own pageant journeys. “My biggest job as a coach is to help girls find who they are,” she says. “I want them to feel beautiful, not just in the pageant world, but in their everyday lives.”
She works with women from ages 14 to 35, teaching them everything from interview prep to personal branding. “We talk about current events, styling, walking, and image consulting. But more than anything, I want them to leave with tools they can carry with them for the rest of their lives,” she explains.
Mellish has coached multiple pageant queens, including several Miss New Jersey Teen USA winners. “It’s incredible to think that my first national client won Miss Teen USA, and now I’ve had clients go on to win Miss Universe!” she says, looking back on her unexpected success as a coach.
But for Mellish, it’s not about the trophies. It’s about the people. “I’m just the catalyst between them and their dreams. My goal is to help women feel beautiful and empowered, no matter what stage they’re at in life.”
As Mellish reflects on her coaching career, she remains grateful for the opportunities pageantry has given her—and the chance to help others. “I’ve had some amazing moments, like coaching a Miss Teen USA and a Miss Universe,” she says. “But I’d love to have a Miss USA in my future. That’s the last piece of the puzzle for me.”
Above all, Mellish’s message for young girls and women who want to step into the pageant world is simple: take risks and have fun. “If I can do it, you can do it,” she shares with a smile. “Don’t be afraid to fail. You never know what can happen unless you try.”

After years in traditional medicine, local resident Dr. Rekha Mandel took a bold step in 2023, leaving Chester Medical Associates to dedicate her practice to women’s health and preventive medicine. Her journey led her to open Lilly Health and Wellness, a concierge menopause and lifestyle medicine practice, in October 2024.
Mandel’s transition was driven by a deep commitment to addressing the often-overlooked needs of women navigating menopause. Over the past year, she immersed herself in studying, attending conferences, and successfully passing the Menopause Boards.
Around the same time as her practice launch, The [M] Factor documentary was released, bringing national attention to the menopause crisis. Inspired by the film, Mandel partnered with menopause educator Beth Roche to organize a free community screening.
The response was overwhelming—an Eventbrite listing for the screening sold out all 189 seats in just 10 days, leaving many eager attendees turned away at the door.
Held this February, at Bernardsville Cinema, the screening featured a panel discussion where experts addressed audience questions, reinforcing the urgent need for menopause education and support.
Mandel’s mission extends beyond her practice. By hosting events and advocating for education, she hopes to empower women with the knowledge and resources to take control of their health.
As the demand for menopause awareness grows, Mandel remains at the forefront, ensuring women receive the support they need at every stage of life.

Instead of buying Mom a bouquet of roses this Mother’s Day, how about surprising her with a bouquet of rosé instead?
“One of the nice things about the timing of Mother’s Day is that it syncs up nicely with the release of the newest

Cree, who is New Jersey’s only Master of Wine, suggests rosés from the region of Bandol, which is a sub-region of Provence (Terrebrune’s Bandol rosé), or Sancerre region (Vacheron Sancerre rosé). “These bottles may be a little more expensive, but for Mother’s Day, we like to splurge a little bit,” he says.
Of course, you can also toast Mom — or your wife, grandmother, motherin-law — with an exquisite Champagne.
“Spring for the Champagne — with a capital C — for Mom,” says Cree. “The

Champagne is made by fermenting the grapes into a still wine, then adding yeast and sugar to the wine in the bottle to create a second fermentation, which is where the bubbles come from, he explains.
Although Champagne can be a splurge — “bottles start in the high-$30 range, and the sky’s the limit,” Cree says — Champagne alternatives like sparkling wines, which can be as affordable as $15 a bottle, are the best choice for mixing. He recommends Crémant de Bourgogne or Cava, a sparkling wine from Spain.
Use these less-expensive bubbles to make a Kir Royale (crème de cassis and Champagne/sparkling wine) or a Bellini
(Prosecco and peach purée), which you can jazz up for Mom with different juices.
If you don’t know what your Mom likes, you can “sneakily find out,” suggests Cree, who hosts wine tastings you can bring your Mom to prior to Mother’s Day to ascertain her preference.
Personally, Cree likes to give people wine from classic regions, like Sonoma County, California, and Burgundy and Bordeaux, France. “I love Robert Sinskey Vineyards in Napa, California. They make a classic rosé from Pinot Noir grapes that has a beautiful presentation in a tall, clear bottle,” he says. “Another nice gift is a bottle from Olga Raffault, a family of women winemakers in the Loire Valley in France.”
Or you can buy local from quality New Jersey vineyards. “Alba makes a good Riesling,” Cree says. “And Beneduce makes a good wine from Blaufränkisch, an Austrian grape.”

Knowing what your Mom likes might lead you instead to a fine liquor. If so, Cree suggests Pierre Ferrand Dry Curaçao, which is akin to Grand Marnier. “It’s just delicious,” he says. “You can sip it on its own, over ice or mix it in drinks to spice them up.”
Also — and this may sound strange — please, drink the wine. “A big mistake people make is they buy wine and save it for a special day,” Cree says. “They save, save, save and then it’s past it’s prime.”
