LIFESTYLE LETTER
Renewal in the New Year The arrival of the New Year always brings hope, optimism, and a renewed outlook for what is possible. Some say that we need to “renew our minds” continually and while more difficult than it sounds, I hope you’ll embrace the sentiment as we step into 2024 and at least consider what may be possible for you personally, for your family, and for our little corner of the world. I am continually reminded of what is possible as I have the opportunity to meet, begin new friendships, and eventually interview some of the citizens of our area. You, every single one of you, inspire and infuse me with optimism as I learn from where you came to where you are now. Every road has its ups and downs, difficulties, and unexpected circumstances but to a person, you have endured, overcome, and thrive. Our joy is to find you, learn your story, and do our best to share it with readers so they can be inspired by your character, resilience, and grit. While the year ahead will have surprises, challenges to answer, and even difficulties at times, it will also have blessings, new friends who come alongside, and lessons learned. All of which add to your story and make for great memories. From my family to yours, Happy New Year! May it be filled with renewal, optimism for the future, and fond memories.

Roger’s Riverview Bistro FARM-TO-TABLE DINING IN THE HEART OF SNOHOMISH
Window
The desire for fresh and local food products is not a new concept – for the majority of our history, people gathered and made food from their own backyard, traded with a neighbor down the street, or picked something up from a small specialty shop in town. While times have obviously changed, the desire to eat healthy and know where our food is coming from is still there – consumers and business owners alike are back to sourcing locally, whenever they can. Roger Eydt, owner and chef of Rogers Riverview Bistro, has orchestrated a farm-to-table restaurant for almost ten years – though he didn’t exactly plan it that way. “When I first took over the restaurant, there was a farmers market down the street every Sunday, so we would just go there and grab a bunch of stuff,” he said. “And that’s kind of how it started.” Eydt, who knew the farming history of Snohomish, said he knew he wanted to get as much as he could from local farmers. Over the years, Eydt has gotten fruits and vegetables from almost all the Snohomish farms, including Bob’s Corn Maze, Roots and Shoots, Flying Tomato, Caruso Farms, Bailey Farms, Radical Roots, Craven Farm, and more. Other suppliers include Skip Rock Distillers, Vista Clara Coffee and Snoqualmie Ice Cream. “I just see what they have and then make something out of it,” he said. But operating your restaurant this way is not always easy, or cheap. Eydt said he’s usually paying two or three times more than he would at the store. “I’m supporting my farmers and I think that’s important,” he said. “But if I got everything locally, like meat, I wouldn’t make any money. I can’t charge fifty dollars for a chicken cordon bleu. It has to be sustainable.”

Eydt said that in the first two years he was open, he had to borrow money to stay open through the winter, taking money from a friend one year and then money out of his 401K the next. “Those were hard decisions. I hoped it would be worth it,” he said. Eydt got his degree in hotel administration from Cornell University and worked various jobs before meeting his wife and setting down in Connecticut, where he took over a Swiss-German restaurant. “I always liked the food part better than the hotel part,” he said. After taking ownership of the restaurant, and under the mentorship of the previous owner, Eydt soon realized that in order to make a profit, he would have to be both manager and chef. “The former owner stayed with me for about two months in the kitchen, so I learned a lot from him,” Eydt said. “I’d been around cooking and kitchens a lot, but usually in the front. So the former owner stayed with me for about two months. It was really good. I learned a lot from him.” Just months after taking over the restaurant, Eydt’s wife told him she was pregnant – four years later with two young children, they decided to move back to Snohomish to be closer to family. A couple years later, when he saw the “for rent” sign on what was then “Rivers Edge,” he jumped on the opportunity. “It’s been more exciting for me here, as a chef, to get different vegetables from the farmers,” Eydt said. “I get to try and be creative and create something with what I’ve got.” Eydt said he’s pretty much always in constant communication with the farmers, seeing what they have and if he can do anything with it. If not, he picks whatever else inspires him that week. That inspiration, combined with consistency, is what Eydt feels like has continued to make the restaurant successful. “I mean I’m always the one cooking,” he said. “People know me because I’m here every day, rain or shine. And I think that helps.”

So what’s Eydt’s signature dish? Clams in leek sauce, he says. And the leeks? From right down the street at Bailey’s Farm, of course. When asked for a review a local diner stated, “I ordered the chicken cordon bleu and it was delicious. The mashed potatoes that came with the meal were fantastic. The person I dined with had the rib eye and it was huge and piled with mushrooms. Great place!” For more information about Roger’s Bistro or to make a reservation, visit http://rogersriverview.com. HEALTH BENEFITS OF
olive oil PROVIDED BY DEBE FRANZ OWNER OF A BIT OF TASTE LOCATED AT 1301 FIRST STREET
“Olive oil adds antioxidants and healthy fats to your diet and is a great option for cooking. In proper temperature conditions and What exactly is olive oil? Virgin olive oils are the oils obtained from the fruit of the olive tree under conditions that do not lead to alterations in the oil. There are many different types of olive oil, but extra virgin is the highest quality and most expensive as it’s not easy to produce – you must use fresh olives in good condition and monitor every step of the process with great care.
without overheating, olive oil undergoes no substantial structural changes, keeping its nutritional value better than other oils.”
16
LOCA L LIM E LIGH T | FO OD + BE VE RAGE
How is olive oil made and virginity determined? Extra virgin olive oil is made simply by crushing olives and extracting the juice. After the oil is extracted, it is graded. If the olive oil is found to be fruity, has no defects and has a free acidity that is less than or equal to 0.8, it is graded as extra-virgin. If the olive oil has minimal defects and is found to have a free acidy between 0.8 and 2.0, it is graded as virgin. The juice of fresh, healthy olives contains the health promoting nutrients that olive oil is famous for.
What are some of those health benefits? Olive oil adds antioxidants and healthy fats to your diet and is a great option for cooking. In proper temperature conditions and without overheating, olive oil undergoes no substantial structural changes, keeping its nutritional value better than other oils. It also has strong anti-inflammatory properties.
How should you store olive oil? Olive oil should always be kept in stainless steel or in tinted glass bottles as light, heat and oxygen destroy it. Olive oil is always healthier and more flavorful when it is consumed fresh.
What makes your oil different from those you can buy at the grocery store? Many are used to the flavor of oxidized (or rancid) olive oil. “Pure,” “light” and “extra light” olive oils are comprised of mostly chemically refined olive oils. Freshly pressed olive oil has a stronger flavor profile. As is the case with many other products, once you taste the real thing and discover the health benefits, it’s difficult to go back.

SNOHOMISH AQUATIC CENTER 22

When the historic Hal Moe Pool closed in 2007 and was later demolished in 2018, community members wondered if and how the city would ever see a new pool. After years of planning, waiting, and wondering, the Snohomish Aquatic Center finally opened its doors in 2014.
The pool water is also unique, as it’s treated through a system that produces natural chlorine out of simple salt water, reducing reliance on typical pool chemicals. The system creates a more swimmer-friendly environment with improved water and air quality.
“IT’S HARD TO BELIEVE TEN YEARS HAVE PASSED SINCE IT FIRST OPENED.” “It’s hard to believe ten years have passed since it first opened,” said Chris Bensen, Aquatic Center Supervisor. “Facilities like Snohomish Aquatic Center happen because of the passion of the people in this community. Not many small towns support their community the way Snohomish has.” The aquatic center, which is owned and operated by the Snohomish School District, prides itself on being diverse and having something for everyone, such as swim and dive lessons, recreational swim, surf lessons, diving boards, competitive swim, and water fitness. It features a recreation pool, a separate competition pool, a warm-water therapy pool, a spray pad with a zero-entry area, a lazy river and water slide. The FlowRider is the only indoor surf simulation machine in the entire Pacific Northwest.
Erica Cenci, a Snohomish High School graduate who won five state championships and still holds numerous records, went on to swim at Purdue University before settling back in Snohomish. She said almost all her young swim memories are from Hal Moe Pool, but now, her kids are growing up at the aquatic center. “My kids love going to open swim and ask to go all the time,” she said. “There’s always something different going on…people doing scuba diving, synchronized swimming…there are so many different ways for community members to engage and connect.” Bensen, a lifelong competitive swimmer herself, believes strongly in the physical, emotional, and social benefits that come from swimming and being in the water. “For many, the water helps provide peacefulness, a sense of focus, CONTINUED >

confidence, a sense of adrenaline, and helps with mental health,” she said. “Plus, it’s a lifelong sport that provides a total-body workout.” Cenci obviously knows the physical benefits that come from swimming, but for her and her husband, who was also a collegiate swimmer, swimming is more than that – as drowning ranks fifth among the leading causes of unintentional injury death in the United States, and second among children in Washington state, swimming is an important life skill that they want their children to learn. “We both feel so strongly that our kids need to know how to swim,” Cenci said. “And the aquatic center provides the opportunity for everyone to have access to that.” Those opportunities come in the form of scholarships, resident discounts, and third-party programs such as Swim for Life, a nonprofit organization formed and funded by local Snohomish community
“IT’S A LIFELONG SPORT PROVIDING A TOTAL-BODY WORKOUT.” members. Swim for Life even offers every second grader enrolled in the Snohomish School District a free session of swim lessons at the aquatic center, noting that participation in formal swimming lessons may reduce the risk of drowning by as much as 88 percent among young children aged one to four-years-old, who are at highest risk. “Our passion and goal is to help make sure that people of all ages have the skills, strategies, and tools to be safe when in and around water,” said Bensen. “And we are blessed to have such wonderful partners working with us within this community.” At the Snohomish Aquatic Center’s grand opening in 2014, community design team member Bill Fulton said he “hoped every member of the community would benefit from the wonderful facility.” “I feel like we’re continuing to fulfill those initial goals,” said Bensen. “We’re excited to keep enriching the lives of all our community members and see what the next decade holds.”

Whether you know him from the Netf lix hit Restaurants on the Edge or from his absolutely mouth-watering food photos as @dennistheprescott on the ‘gram, this former-musician turned internationallyrenowned Chef is an amazingly talented, thoughtful, and globe-trotting force to be reckoned with. When it comes to inspiration for creating experiences around food and your communit y, as well as creating travel bucket lists to some of the world’s most unique and delicious destinations off the beaten path, Chef ‘Dennis The Prescott’ is a culinar y change maker whose feed you’ll want to feast on. Host for two seasons of the show, Dennis and his two food and design co-hosts travel the world to revive failing restaurants by connecting them to the local culture. Filming included 13 episodes over 9 months that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland.
Travel Recom mend at ions for Foodies “Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.” Dennis also highly recommends Costa Rica, Hawaii and Finland. “Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.” In addition to travels, Dennis is a huge advocate for supporting local businesses and the connection grilling in your own backyard can make. “Grilling is inherently communal. You talk to your neighbors, they smell it, they ask you what you’re cooking; the whole act of it is a community. One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start?’ Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there. “Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.” JANUARY 2 0 2 4 | C I TYL I FE STYL E . C OM/S N O HO M I S H
