The Man Issue
June 2022 PUBLISHER
Tammy Fellows | tammy.fellows@citylifestyle.com EDITOR
My husband, Dan, loves a good steak. He’s your true steak-and-potatoes guy (or steak with a side of steak, if he could ... !). Of course, this is one area where we differ… me, I’m a pescatarian (I eat fish, but no meat). My favorite foods are sushi and Italian (and cookies, but that’s another story ... ). The good news? He doesn't have to share! When Dan heard we were working on a story on steak for this issue, well, let’s just say he was ready to grab the list. For the story, we scoured the area for the biggest steaks around—perfect for a manly appetite. It was a fun job, and a perfect story for our annual Man Issue. Speaking of our Man Issue, it’s no coincidence that this issue comes out during the month of June, right in time for Father’s Day! For this issue, we had the amazing opportunity to speak with celebrity chef Guy Fieri, who is not only a frequent Valley visitor, but is also debuting his latest restaurant, Guy Fieri Kitchen + Bar, at Chase Field. We also feature three inspirational men, an amazing Maserati, a bourbon recipe, steaks, and more. Speaking of the steak, well, let’s just say I’ve already made some reservations for a Father’s Day dinner. Happy Father’s Day, Dan! Yours,

3 MEN WHO INSPIRE MEET THREE MEN MAKING THEIR MARK ON THE WORLD

MICHAEL JONES PRESIDENT AND CEO, DELTA DENTAL OF ARIZONA Michael Jones, who joined Delta Dental of Arizona as president and CEO in 2021 while simultaneously taking on the role of president of the Delta Dental of Arizona Foundation, works quickly, strategically, and deliberately. Though at the helm of Arizona’s leading dental benefits provider for less than a year, he is already building on the organization’s stellar reputation and championing initiatives for at-risk populations. Jones recently announced 29 local nonprofits as Delta Dental of Arizona Foundation grant recipients. The grants, totaling over $750,000, increase access to dental care among underserved children, pregnant women, and seniors. He also announced a partnership with Arizona PBS to expand oral health education to children in rural communities. “Our mission is to improve the lives of Arizonans by promoting and providing optimal oral health,” says Jones. “Without focused, intentional effort to support those within our community without access to affordable, preventative dental care and education, we cannot achieve this goal.”—Alison Bailin Batz

C L AY TO N WOLFE REALTOR, PILOT
Clayton Wolfe isn’t just a realtor and a pilot. He’s also a former farmer, a Scottsdale 20/30 Club member, and a mountaineer currently in pursuit of the Explorers Grand Slam—an adventurer’s challenge to reach the North Pole, the South Pole, and all the Seven Summits. In April, he used that love of climbing to help those less fortunate. He sold $100 Golden Everest Tokens (which made the trek up Everest with him and then were mailed back) and raffle tickets, with all sales benefiting the Scottsdale 20/30 Club and the local children’s charities it supports. He raised more than $14,000. To train, he spent seven years climbing mountains all over the world, ice climbing, tackling avalanche training courses, doing weighted hikes, and months sleeping in an altitude tent. “I hope I inspire people to venture outdoors more, or better yet, experience the mountains firsthand. It’s life-changing,” he says. —Michelle Glicksman

Still, the achievement he’s most proud of is, “Hands-down, becoming a father is the best thing I’ve ever done,” he says. He’s opening a second location of The Americano in Atlanta, and other ventures are in the works, as well. “I didn’t come from a lot, so overcoming obstacles or things that are perceived as barriers have become my best motivators,” he says. “I love this quote from Bob Dylan: ‘Never think you’ve arrived, always be in a constant state of becoming.’ I’m constantly thinking of how I can better myself, better my life for my family and my team members, and continuing to evolve and grow.” —Michelle Glicksman

Great Escapes PAIN SPECIALIST DR. ASHU GOYLE IS A JACK-OF-ALL-TRADES WHEN IT COMES TO DECOMPRESSING FROM HIS DAY JOB
ARTICLE BY GEORGANN YARA PHOTOGRAPHY BY JAMES PATRICK
When he’s not giving patients a new lease on life by alleviating their physical pain, Dr. Ashu Goyle can be found in his at-home music cave, jamming out Grateful Dead hits on his guitar. Or getting in some cardio or weight lifting. Or savoring a big and bold glass of Napa Valley cab from Far Niente alongside one of his wife Nicolle’s culinary masterpieces. However, if you catch him first thing in the morning, the anesthesiologist and pain medicine specialist is meditating— his daily must-start. “It’s part of keeping me centered. It helps me realign with myself and my purpose,” says Goyle, the founder of Integrated Spine, Pain & Wellness. Professionally, Goyle knows multiple ways to give patients relief. Personally, the Ohio native is a jack-of-all-trades when it comes to finding his own respite in the precious downtime from the practice that keeps him busy.

“My wife is an amazing cook. She makes these healthy and delicious meals. Relaxing with her and enjoying her company with our puppies is my favorite way to decompress.”
At 13, Goyle took up the guitar and fell in musical love. Today, he heads to his music room and plays solo or along to songs performed by his favorite guitar artists that span from his first love of classic rock to modern rock to jazz. Think main influences like David Gilmour, Jimmy Page, and Jerry Garcia. But there’s also Joe Satriani, Eddie Van Halen, Pat Metheny, Eric Clapton, and John Mayer. And if there were a guitar version of karaoke, his go-to selection would be The Grateful Dead trio of Help on the Way, Slipknot!, with a segway into Franklin’s Tower. “That’s my reprieve. It recharges me and takes me to a totally different world and place,” Goyle says of his harmonic therapy. His ultimate favorite way to chill, however, is spending quality time with his two puppies and his wife of seven years, Nicolle. His partner in life and business, she helms the regenerative aesthetic services, as well as handles all marketing and branding for the practice. Nicolle’s other talent dovetails with their passion for fine wine.

“My wife is an amazing cook. She makes these healthy and delicious meals,” Goyle says. “Relaxing with her and enjoying her company with our puppies is my favorite way to decompress.” A comfortable escape from the physical agony they’ve endured is what Goyle has given patients throughout his career. The goal is for them to finally be themselves after months or even years of feeling anything but that. Goyle talks about a former patient, a woman who underwent an epidural injection treatment to relieve her pain. When he checked to see how she was doing, a huge smile had taken over her face. Her husband by her side had tears in his eyes. Goyle reassured him that his wife was fine. But neither fear nor sadness were the reasons for the man’s emotional state. He told Goyle he was crying because this was the first time he had seen his wife smile in three months. “When we can make a difference in someone’s life on that level,” Goyle says before a brief pause. “For me, this was it. This is what I want to be part of.” ISPWScottsdale.com

GUY FIERI The Food Network Star on his New Restaurant at Chase Field, his Favorite Restaurants Around Town, and What he Likes to Eat When he’s Home ARTICLE BY ALISON BAILIN BATZ
In the coming weeks, celebrity chef—and frequent Valley visitor—Guy Fieri will debut Guy Fieri Kitchen + Bar at Chase Field, his first sit-down restaurant in Arizona. A collaboration with the Arizona Diamondbacks and Caesars Entertainment, Inc., the Food Network star’s restaurant is located at the newly opened 20,000-square-foot, state-of-the-art Caesars locale adjacent to Chase Field. The restaurant, a year-round Downtown Phoenix entertainment and culinary destination, comes on the heels of Fieri’s Flavortown Kitchen delivery-only restaurant chain, which became available to Valley customers in 2021. Leading up to the opening, we had the chance to sit down with Fieri to learn more about the concept and his love of all things epicurean across Arizona. You are no stranger to the Arizona food scene, are you? Heck no! We’ve probably shot with 30 to 40 different chefs and restaurants across the state for Diners, DriveIns and Dives (DDD) over the years. I could go on forever since so many are favorites, but love me some Salsa Brava in Flagstaff, Chino Bandido in Phoenix, and of course, Matt’s Big Breakfast, which has grown all over town. Are there any memories that stick out from all the time you’ve spent here? I’ve made so many great buddies here doing DDD, many right here in Arizona. Chefs like Aaron May, who is now also a staple on several Food Network shows, and John Conley from Salsa Brava. John actually won Guy’s Grocery Games.

What are your go-to restaurants in the Valley when visiting, and why? I always have to check out what my bruthas, chef Beau MacMillan—who just opened Cala in Scottsdale—and Scott Conant—killing it with The Americano and Mora Italian—[are up to]. They are the real deal.

“We have an open dialogue about what’s going on around the country, and we share ideas about where we think we can collaborate.”
What do you love about Arizona? First and foremost I love the weather, so let’s start there. Also—and this is one thing I think a lot of people may not know—but there is a great deal of diversity in the local food scene, both in people and the actual menu items. Many mistakenly assume it is just Southwestern and Mexican food, but there is so much more that Arizona offers. How did this new concept come about? I have worked with the Caesars team for nearly a decade, opening restaurants all over the country together, including Guy Fieri’s Vegas Kitchen & Bar at The LINQ Hotel. They are the best of the best. We have an open dialogue about what’s going on around the country, and we share ideas about where we think we can collaborate. When the idea of coming to Arizona and working with the Arizona Diamondbacks came about, it was a no-brainer for me. Tell us about Guy Fieri Kitchen + Bar ... Our Kitchen + Bar concept is all about scratch-made food, great cocktails, and a lot of fun. To me, it doesn’t matter if you’re on the Vegas strip, in the heart of Dubai, or the magic of the Valley desert because good is good, and fun is fun. Expect us to serve up all of our greatest hits, from the world-famous Trash Can Nachos to our award-winning Bacon Mac ‘n’ Cheese Burger. If we’re visiting for the first time, what should we order and why? I’d go with those Trash Can Nachos. It is a tower of delicious power with layers of tortilla chips, cheddar, black beans, pico de gallo, jalapeños, cilantro, pickled red onions, Guy’s Super Melty Cheese Sauce, and Guy’s Brown Sugar BBQ sauce piled sky-high. Tell us about the cocktail and drink menu… We aren’t snobby about our cocktails, but they are darn good. Of course, you know we must have a good margarita, and I am stoked for guests to try this one as it features Santo Tequila, which I developed with my friend and The Red Rocker himself, Sammy Hagar.
Courtesy Food Network
You also have a ghost kitchen concept here. Can you tell us about that? Right, we’ve got our Flavortown Kitchen brand at 200-plus locations around the country. The ghost kitchen—or virtual brand idea—has been around for a while and we’ve seen a lot of iterations come and go, with the pandemic lockdowns really raising the profile of the delivery-only brand. As opposed to most delivery-only brands, our kitchens are all company-controlled, so you’ll never find our food CONTINUED >

Our philosophy is to always be looking for new ways and environments to present our food to people if we can properly express the brand. Many people stepped up for the restaurant industry during COVID, but your work was truly inspiring. I appreciate that but you know, it wasn’t about me. I’m fortunate to be in the position that I am. I got my team on the horn, and a conversation that started with buying gift cards turned into a partnership with the National Restaurant Association and a bunch of the biggest brands in the world to raise some impactful dollars. At the end of the day, as much as the money may have helped some folks, I hope it’s the spirit of it and the support and love that was shared that people will remember. When you’re not working, what do you like to eat at home? Believe it or not I’m a big veggie guy, so when I’m at home and I get to choose my own food destiny, I’ve even been accused of eating like a vegetarian … but let’s keep that between us.

Forget a new tie or shaving kit. This Father’s Day, get dad what he really wants—a night out with the family to enjoy a big, juicy steak. Maple & Ash sources from Meats by Linz, which is widely regarded as the gold standard when it comes to high-quality aging and butchering in the United States. Linz features 100% Black Angus cattle from its own herd and uses Old World dry-aging techniques, going so far as to age some cuts for up to 85 days. Though there are copious options at Maple, consider The Eisenhower ($215) for dad. It is a 40 oz. porterhouse cooked on the coals of a live wood fire and served with bone marrow stuffing. Like Maple, Bourbon Steak at the Fairmont Scottsdale Princess should be on any meat-lover’s bucket list, especially on a special occasion. Every piece of protein on the menu is natural, organic, and hormone-free, not to mention slow-poached in butter and finished in wood-fueled flames on the grill. Splurge on the 20 oz. Kansas City Strip ($89) when visiting, and be sure to add the optional sauce trio. It features house-made béarnaise, peppercorn, and chimichurri sauces that will change your life. When it comes to insane enhancements, Steak 44 is also a must. Everything from a fried egg to black truffle sautéed Maine lobster can be added atop any steak, each of which is cut in-house daily by a master butcher. Of note is the eye-popping 12 oz. Westholme Australian Wagyu Filet. Westholme cattle graze on pristine tracts of Mitchell grass and are grain-fed proprietary blends to produce rich marbling, signature tenderness, and an ultra-juicy bite. Roka Akor also features exotically sourced cuts. The Scottsdale hot spot holds one of only 30 U.S. licenses to source Kobe Beef directly from the Hyogo Prefecture in Japan. Its highly recognizable texture and sophisticated flavor makes it one of the world’s most desirable and in-demand meats. At Roka, the Certified Tajima Kobe Beef is served by the ounce, based on market price. Keeping with the exotically sourced vibe, ever wonder what it is like to dine at a chic steakhouse in the heart of Spain or Latin America? Roka Akor also features exotically sourced cuts. The Scottsdale hot spot holds one of only 30 U.S. licenses to source Kobe Beef directly from the Hyogo Prefecture in Japan. the Four Seasons Resort Scottsdale at Troon North, where they feature a regularly changing selection of meaty options. The menu currently boasts a 30 oz. Dry Aged Prime Ribeye ($130). The grass-fed ribeye was sourced from Tasmania, which is known for its clean air, pampered animals, and decadent richness. Each cut is dryaged 28 to 40 days before being trimmed, seasoned, broiled, rested, and paired with seasonal sides. Need more to chew on? STK Steakhouse’s steaks, rubs, and recipes are so coveted that the restaurant offers STK Meat Market, which offers packages of flash frozen cuts paired with spices, chef-curated instructions, and restaurant dining credit. There is even a Cut of the Month Club. An in-person visit is also a must, especially for the Japanese Wagyu selection, which includes A5 Strips, A5 Filets, and even A5 Spinalis cuts. For each, consider adding Wagyu Umami Butter on top or on the side. For views that rival each bite, do not miss J&G Steakhouse at The Phoenician, especially at sunset. The lauded eatery features a 30 oz. Wagyu Tomahawk Ribeye ($155), which is perfectly seared inside a 1,100-degree combination grill and oven before being served still sizzling atop a heated salt block and carvedto-order tableside. Finally, while you know celebrity chef Scott Conant for his pasta, you need to make a date at The Americano or Mora Italian to see his interpretation of steak. At The Americano, his Tagliatelle Wagyu Bolognese ($36) features perfectly grilled beef tenderloin and sauce made with both a beef wagyu and pork ragu that is truly next level. At Mora, the 18 oz. Wood-Grilled Ribeye ($62) is an ample, juicy, ultra flavor-inflused cut for the ages.

The Maserati MC20 Super Sports Car combines luxury and racing like no other, pushing the boundaries beyond the expected. The ultra-light, high-tech Carbon Fiber Monocoque is stronger and safer, yet dynamically exceptional.
THE MC20 OFFERS FOUR DRIVING MODES: • GT Mode for the open road with fluid shifting and soft suspension. • Sport Mode delivers track-ready thrills with a stiffer suspension, fast gear shifting, and on-track traction. • Corsa Mode delivers maximum power with exhaust valves open, fastest gear shifting, and reduced traction control; activate Launch Control electronic aid for unparalleled acceleration. • Wet Mode lets you stay in control even when the road is slippery by limiting engine boost and activating dynamic controls.
AN ITALIAN-BORN SUPER SPORTS CAR DESIGNED TO PUSH THE BOUNDARIES ARTICLE BY SUSAN LANIER-GRAHAM PHOTOGRAPHY COURTESY OF MASERATI
While designed as a sports car, it doesn’t sacrifice comfort. The next-gen interface is customizable, with a 10.25” instrument panel and a 10.25” infotainment system. While the interior embraces racing minimalism, every component is of the finest leather, Alcantara, and carbon fiber. The MC20 doesn’t skimp on sound either. Speed and sound should always go hand-in-hand, as with the Italian-made Sonus faber High-Premium Audio System in the MC20. Outside, the Maserati MC20 is ergonomic perfection. The butterfly wing doors make stepping into your cockpit easy. It has a rear diffuser and front splitter that make this slice through air. While the MC20 hugs the road, you can push a button to employ the optional suspension lifter, raising the front axle by 2” for those special low-clearance moments. Get Out of the City and Experience a Working Ranch Vacation

ARTICLE AND PHOTOGRAPHY BY SUSAN LANIER-GRAHAM
Whether you call it a working ranch, a dude ranch, or a guest ranch, a ranch vacation can mean great outdoor fun. There are a variety of ranch experiences, particularly across the Western U.S., ranging from rustic accommodations on working ranches to luxury stays with gourmet cuisine and spa treatments. You can get your fill of horseback riding, hiking, fishing, and relaxing in the outdoors. Each one offers special programs for the kids. Here are a few of our favorite Western ranch vacations. Drowsy Water Ranch, Colorado Drowsy Water Ranch (DrowsyWater.com) is an all-inclusive, family-friendly ranch sitting 8,200 feet above sea level in the Colorado Rockies. It is about two hours west of Denver in Granby. The ranch hosts guests from Memorial Day weekend through the first week of September for six nights/seven days in either a private cabin or a private room at the lodge. Drowsy Water is a favorite spot for family reunions, and guests return year after year. While at Drowsy Water Ranch, you’ll share meals with other guests in the main lodge each day. There are two daily horseback rides, each optional but included in your stay. You start on day one with a short riding clinic and saddle fitting, and you’ll keep the same saddle and horse throughout your visit. In addition to horseback riding, other included events are yoga, bike rides, rafting on the nearby Colorado River, hayrides, and barn dances. Of course, if you prefer, you can relax on your porch, take a dip in the pool, or wander about the property. Devil’s Thumb Ranch Resort & Spa, Colorado Situated a few miles up the road from Drowsy Water Ranch, Devil’s Thumb Ranch Resort & Spa (DevilsThumbRanch.com) also offers unforgettable ranch vacations.

You’ll find the same dramatic backdrop, but the actual experiences are quite different. While you can explore the working ranch on horseback and fly fishing and mountain biking in summer, you can also book this ranch vacation in the winter, when you can enjoy cross-country skiing. While this feels like the Old West, Devil’s Thumb caters to your luxury demands. You can book a spa treatment in the comfort of the spa, lounge by the heated pool and hot tub, chill by the fire pits, and relax in your luxurious room or cabin. One more experience you won’t want to miss at Devil’s Thumb is dinner at Ranch House Restaurant & Saloon. Open to guests and the public, this is an experience to remember. If the magnificent views from the dining room don’t inspire you, the mountain cuisine will. The chef uses full-blood Wagyu beef from the ranch’s private herd to create some of the most amazing dishes. Ranch guests can enjoy breakfast, lunch, and dinner daily at the more casual

of the two- or three-bedroom cabins a bit farther from the lodge for larger groups.
Vee Bar Guest Ranch, Wyoming Situated about 20 miles west of Laramie, Vee Bar Guest Ranch (VeeBar.com) is another all-inclusive working ranch. The Cole family owns the ranch and welcomes guests for either three or six nights from late May through mid-September. The all-inclusive stay features all meals and activities. You can book shorter B&B stays year-round that include breakfast and an optional dinner served buffet-style in the lodge. Activities during your stay include horseback riding, fly fishing, hiking, and wagon rides. You can book a room in the Main Lodge, but many prefer the tranquil Riverside Suites. These cute and comfortable two-bedroom cabins have great front porches for watching the creek but are also close to the hot tub and the Main Lodge, where you can enjoy drinks at the bar or in front of the fireplace. You can choose one
Tanque Verde Ranch, Arizona Tanque Verde Ranch (TanqueVerdeRanch. com) sits on the northeastern edge of Tucson, surrounded by the Rincon Mountains, Saguaro National Park, and Coronado National Forest. The working ranch began in 1868, and it has been welcoming visitors since 1928. Another all-inclusive ranch, this gives you an escape close to home. Rooms and casitas scattered across the property have an Old West vibe. There are activities available all day, every day, for those who want to stay busy. Tanque Verde offers everything from guided yoga, pilates, and tennis to fishing, mountain biking, and archery. The breakfast horseback ride is a favorite, as is the Cowboy Cookout held in the Cottonwood Grove twice weekly (also open to the public). Save time for a visit to The Dog House Saloon, where you can sip prickly pear margaritas or a local brew.
