It’s the night we’re going to press on this issue and I’m sitting at my computer, staring at a blank page, and thinking about what I should write about for this February Editor’s Note. As I’m brainstorming ideas, I’m enjoying spoonfuls of Ben & Jerry’s Cherry Garcia ice cream. I haven’t eaten it in years, but it caught my eye while grocery shopping earlier today. I realized that it was a little ironic. Those who knew me way back during my college days would know that Cherry Garcia was my go-to during girlfriend get-togethers when any of us would have dating issues and feel sad. Now, I’m sitting here at my home computer, my husband in the other room, and my kids laughing in the background. My dog is at my feet (ok, scrounging for any food she thinks I may have dropped, but I’ll take it!), and I’m working doing a job that I dreamed about—running a magazine—as I was earning my journalism degree back then. I’m surrounded by love and happiness everywhere. How lucky am I? I hope that this “month of love” is like that for you, too—whether it’s family, friends, work, hobbies, or anything else that makes you happy. Speaking of love, February marks our “Local Love” issue. We explored the area through a variety of unique date ideas, we showcase local restaurants that offer decadent desserts, and we feature a local chocolate company—as well as so much more. As for our cover story, meet Scottsdale resident Paul Tracy, a household name in racing. He found his love of the sport when he was just 5 years old (and tells us how)! We are now into the swing of 2022—it’s February and we have settled in and are working on the things we said we’d focus on for the New Year. How is that going? Check in on it. Does it still make sense? Things change, and that’s okay. The most important thing is to stay focused. Love is a huge part of this… self-love; love for life; and love for family, friends, and furbabies. My life motto is and remains to be… all you need is love (yes, the line made famous by the beloved Beatles). I know this to be true. No matter what your situation is, at the end of the day it comes down to love. It feeds us, it fuels us, it keeps us honest and pure. Never lose sight of love! Obviously, love is a focal point in February because of the “Hallmark holiday” we all recognize as Valentine’s Day. Maybe take another look and use this time as an excuse to get back to the basics and what we all need…love. I love what I do! Our connection to the community is strong, and we appreciate that. While you can trace humankind’s love of sweets back to ancient civilizations, we have the French to thank for dessert as we know it today. As far back as the 17th century, the French offered sweet small bites between courses during formal meals, but eventually added a final course to allow for larger dishes that stand on their own. Fast-forward to the present day, and desserts have practically become an art form, especially here in the Valley. Take Zinqué, for example. The Frenchinspired bistro and wine bar offers a Flourless Chocolate Cake that has a perfect soufflé-like texture that feels as if you’re biting into a fluffy cloud of flavor. It is paired with Tahitian vanilla ice cream, which is known for being a

bit more delicate on the palate than other vanillas, but with an ultra-creamy richness. Since too much is never enough, the cake and ice cream are topped with high-quality bittersweet chocolate, powdered sugar, and blueberries. LeZinque.com Less delicate but just as addicting, the Signature Candy Bar at LON’s at The Hermosa Inn has earned acclaim nationwide for its elevated reimagining of a Snicker’s bar. To make, salted caramel sauce is combined with Marcona almonds—in place of traditional peanuts—and enveloped in a “candy shell” made using chili pepper-infused ganache versus milk chocolate. A brown butter ice cream is then made, with an infusion of bourbon for good measure, and scooped alongside the bar, acting as a chilled, ultra-rich take on nougat. HermosaInn.com Speaking of rich, there is nothing quite like the velvety richness in every bite of an expertly crafted cheesecake. The Cheesecake at Tarbell’s is made using a recipe inspired by chef/owner Mark Tarbell’s own mother, and it is among the best in town. Of course, there is a base of graham cracker. But, in a surprise twist, Tabell also adds toasted almonds for contrasting texture and depth of flavor. To develop the actual filling, Tarbell first creates a layer of cream cheese with flecks of vanilla bean and hints of lemon peel, and then gently adds a second layer, this time with mascarpone, before smothering the entire cake with warm rosemary caramel sauce. Tarbells.com Just as creamy and dreamy, but with a wholly different presentation and flavor profile, is the Foot-long Cannoli at The Sicilian Baker. The authentic Sicilian dessert consists of a tubeshaped shell made from fried pastry dough. Guests are able to choose the shell as it is, or can have it hand-dipped in chocolate before it is filled with one or two of 12 sweet, creamy ricotta-based fillings, including cookies and cream, lemon, espresso, pistachio, strawberry, or hazelnut. Did you know there are just three federally recognized American Viticultural Areas (AVAs) in all of Arizona? To put it in perspective, there are 18 AVAs in Oregon, 19 in Washington, and an eye-popping 139 in California. However, what we lack in quantity we make up for in quality, especially in Willcox. The Willcox AVA, which is located about three hours from the Valley, leads Arizona wine grape production by growing 74% of the state’s wine grapes, and is the source of the most highly rated Arizona wines by Wine Spectator, San Francisco Chronicle, Tastings.com, and the Arizona Republic. Still skeptical about Arizona wine? Why not make the drive down to Southern Arizona one weekend and sip, swirl, and swoon for yourself? Here are some of our favorite stops in the Willcox area.
KEELING SCHAEFER VINEYARDS For more than 20 years, Keeling Schaefer— Rod Keeling and Jan Schaefer to be exact—has led the surge in quality winemaking in Arizona. Almost all of their wines are single varietal, and all of the grapes are grown on just two vineyards. The team especially excels at Syrah, Petite Sirah, Grenache, Mourvedre, Viognier, and the little-known Picpoul Blanc. More popular in France, this white varietal has a crisp acidity and almost a pineapple essence. The bright and airy tasting room is located in the heart of Willcox in a refurbished building that was the Willcox Bank and Trust more than 100 years ago. An exceptionally cool bonus of visiting: the winery has a “share a glass” program with nearby with Birds and Barrels, Carlson Creek, Coronado, Pillsbury, Golden Rule, Bodega Pierce, and Zarpara wineries, meaning you can bring a glass in from tasting at any of their locations for a discounted flight. CARLSON CREEK VINEYARDS Though it has a tasting room in Scottsdale and winery/tasting room in Cottonwood, Willcox is home to Carlson Creek’s actual vineyard property, which—at 280 acres—is one of the largest in the state, though it is still a family business made up of two brothers and their dad. It is also home to the flagship tasting room, which is just across the railroad tracks from Keeling, set behind an adorable white picket fence that—for those of a certain age—will offer a fun “Ozzie and Harriett”

ARIDUS WINE COMPANY Like Carlson, there is a tasting room in Scottsdale for Aridus, which is also similarly family-owned. Given this month

marks Valentine’s Day, it is worth noting that the owners are a Canadian husbandand-wife team who first met in middle school and worked together in the wine business in Sonoma before making the move to Arizona to start Aridus. In 2009, they purchased land in the Willcox AVA and got to work, naming the vineyard Aridus, a play on the Latin word arid, as a tribute to their desert setting. The stylish cellar formally opened in 2012, and the tasting room nearby (nearly next door to Carlson, in fact) soon after. Both are open for tours and tastings, but the tasting room may be the most convenient as it is next door to Carlson Creek, so there’s no need for driving. Plus, the tasting room is super modern; with its cool combination of wood and steel inside, it gives a warm, industrial feeling that really sets the mood for an experience. The wine itself feels like a mix between New World and Old World,

and the rosé is so tasty it will be tough to leave without a case. AridusWineCo.com
PILLSBURY WINE CO. Now, there is a fabulous Pillsbury tasting room located in Northern Arizona—in Cottonwood—but the actual vineyards, and a more intimate tasting room, are down south in Cochise County. Though only open on the weekends, the trip to taste is worth it. It’s a rustic property with a toasty fire burning in a Franklin stove on colder days. Guests are encouraged to bring a picnic lunch to pair with their wines, and there are tables and chairs scattered under the lovely pine and pecan trees on-site, all in full view of the actual vineyard, and picturesque mountain views as well. Paul Tracy was just 5 years old and growing up in Canada when he was given a go kart by his dad, a motorsport enthusiast who had spent some time racing motorcycles in England. “That weekend, we went out to our local go kart track and we entered our first race—and I actually won. And that was it. That was what I wanted to do all the time,” Tracy says. So that’s exactly what he did. When Tracy was 7 to 10 years old, his dad would drop him off at the go kart track in the morning with his go kart, a can of gas, and some money for lunch. His family knew the owners of the track, and they would keep an eye on him. “I would literally drive that go kart all day long,” Tracy says. At just 16, Tracy became the youngest-ever Canadian Formula Ford Champion. At 17, he was the winner of the final Can-Am race in series history—making him the youngest winner in Can-Am history. From racing for Penske Racing, Newman/Haas, Team Kool Green, or Forsythe to competing in the PPG Indy Car World Series, FedEx Championship Series, NASCAR Busch Series, IndyCar Series, Indianapolis 500, or any of the other races, to working as a color commentator on NBC’s IndyCar coverage, or competing in the inaugural season of the Camping World Superstar Racing Experience, Tracy—who is also known by the nicknames “PT” and “The Thrill from West Hill”—hasn’t stopped his involvement in the world of racing since. “I knew from the first time that I drove a go kart that I loved driving,” he says of what draws him to the sport. “That’s all I wanted to do—drive, drive, drive.” CONTINUED >

His career on the track has been illustrious, and, he says, fulfilling. “For the most part, my career has been fulfilling—every race that I set out wanting to win, I won at,” he says. “I won the championship in 2003. Pretty much every goal that I ever set for myself I achieved.” In the winter of 1988, Tracy arrived in Scottsdale from Canada to take advantage of the weather and practice at Phoenix International Raceway (PIR) and Firebird Raceway. “I was not at IndyCar level then,” he says. “We had a team out of Canada and we decided to come out here for the winter and practice at Firebird and PIR to get ready for the season. So, I spent the winter out here—and loved it.” By 1993, he was living full-time in Paradise Valley. He left in 1997, moving to Las Vegas—but by 2011 he was back. He settled in Scottsdale, where he lives today with his girlfriend, Lisa Richardson. “There’s great shopping, great nightlife, and great dining,” he says of the city. “And, I don’t think there’s any place nicer in the winter.” Tracy and Richardson also like to hike—they live near Pinnacle Peak and climb it frequently—as well as head to Lake Havasu. And, they often head out to Apex Motor Club. “We usually get out there first thing in the morning, get our laps in, then load up and come home in time for lunch.” Apex Motor Club is a luxury private motorsports country club located in Maricopa where members enjoy facilities and amenities that cater to automotive enthusiasts. The world-class race track features 4.2 miles of multi-configurable racing circuits, set within a country club-like atmosphere. At completion there will be a restaurant, bar, outdoor swimming pool, pro shop, fitness center, karting center, maintenance center, one-on-one racing instruction, and more. There are also 96 trackside private garages, 48 of which open directly into the pits. “I’ve been involved with them since it was just a concept,” Tracy says. “There’s such a huge motorsports and racing fan base here. There are a lot of people who have expensive sports cars here and there was really no place for them to go and drive in a safe and controlled environment. [Apex Motor Club] is like a golf country club but for cars, and for those who want to drive race cars and not on the street.” Speaking of racing, after retiring in 2011 and working in TV since 2014, Tracy returned to the track in 2021 when he competed in the Camping World Superstar Racing Experience, an American stock car racing series officially known as the Camping World SRX Series.

“It was a series that was designed for TV and it was on CBS. It took a bunch of drivers that were mostly semi-retired, like myself. It was a mix of IndyCar and stock car drivers that were in retirement, and it pitted us against mostly unknown local heroes—younger kids. Everybody had the same car, the same set-up. You came to a race track and had five laps of practice, and then we raced. It was six weekends and 18 total races. It was a lot of fun.” The experience gave him the bug to be back racing. “I’ve been working TV for the last eight years and I put my driving on the shelf for a long time. After racing SRX this past year, I realized how much I missed it. So, no more TV. I’m going back to racing before I’m too old for it. That’s what my passion has always been, and I hadn’t realized how much I actually missed it.” This year, Tracy will once again race in the SRX series. And, at the end of this month, he’ll be racing in South America and Mexico with some friends. “To this day, I love race cars. I love being in the car. I still love driving. … I’ve gotten the bug from being back.”

G R A N D M A’ S V E G E TA B L E BEEF SOUP INGREDIENTS + 2 tablespoons vegetable oil + 2 pounds beef chuck, cut into bite sized pieces + 2 medium onions, small chopped + 4 medium carrots, chopped in bite sized pieces + 3 cups of potatoes, chopped in bite sized pieces + 2 28 ounce cans good quality whole tomatoes + 1 cup each of your favorite vegetables. I recommend frozen corn, lima beans, peas, green beans. + 8 cups beef broth. You can use bouillon or Better Than Bouillon and add water to equal the 8 cups + 4 cups water
DIRECTIONS 01 Heat oil in large soup pot over medium high heat. 02 Salt and pepper beef, add to pot and brown. Don’t overcrowd so brown the beef in two batches. Remove browned beef from pot and set aside. 03 Add the chopped onion and carrots and saute until soft about 5 minutes. Add beef broth, water, potatoes, tomatoes and browned beef and cover and simmer until potatoes are tender about 30 minutes. 04 Add vegetables, cover, and bring back to simmer for an hour. Taste and add salt and pepper as needed. I sometimes add another cube or teaspoon of bouillon at this point if I want to up the beef flavor. 05 Allow soup to continue to simmer for another 30 minutes.
