e celebrate the month of May as it brings sunshine to our faces and Love to our Hearts as we honor all mother's on the 14th. 'Mother's Day' is a celebration honoring the mother of the family, as well as motherhood, maternal bonds, and the influence of mothers in society. This May let us think about all the women in our lives, be it our mother, sister, aunt, friend or grandmother. Also, 'Dance Like a Chicken Day' is observed each year on May 14th. Everyone has probably danced the “Chicken Dance” at least once in their lifetime. This silly, fun song is a tradition at wedding reception's, Oktoberfest and other celebrations. The song gets people of all ages up dancing and mingling, and it puts a smile on everyone's face. All 'ya gotta do is dance like a chicken. While any dance song will do, there's no dance like the Chicken Dance. The only problem is that events are way too infrequent for a chicken dance lover. Therefore, May 14th exists to provide you with another opportunity to dance like a chicken. So, don't pass up this opportunity. Speaking of mothers, May 1st is National 'Mother Goose Day'. This day honors Mother Goose, the imaginary author of a collection of fairy tales and nursery rhymes we loved as children. Mother Goose is often illustrated as an elderly country woman in a tall hat and shawl, but she is also sometimes depicted as a goose wearing a bonnet. Charles Perrault is believed to be the initiator of the fairy tale genre when he published his fairy tale collection in 1695. His publication marks the first authenticated starting point for the Mother Goose stories. An English version of Perrault’s collection appeared in 1729: Robert Samber’s Histories or Tales of Past Times, Told by Mother Goose. Mother Goose’s Melody – A book of poems for children was published in 1781. And of course, when we think of Mothers, we think Apple Pie. May 13th is National Apple Pie Day. While the apple pie existed well before the Pilgrims landed on the eastern shores of what is now The United States, Americans wax poetic about the how American apple pie is. The phrase “as American as apple pie” has been around for more than 100 years. Teddy Roosevelt was impressed to have a taste of home when he was served an American apple pie while traveling in Africa and soldiers during World War II were often quoted they were fighting “for Mom and apple pie.” This May, San Clemente Lifestyle Magazine celebrates Mothers, Women and Life, Thank You!

Future Problem Solvers of San Clemente ARTICLE LINDSAY LINEGAR

f you want to know how bright the future is for San

Clemente, high school freshmen Sophia Mains and Chloe

Kamp can give you a glimpse. Mains and Kamp have been leading the San Clemente High School branch of

Future Problem Solving Program International (FPSPI) since the beginning of the school year.

FPSPI is an international organization with a mission, according

to FPSPI.org, “to develop the ability of young people globally to design and promote positive futures through problem-solving using critical and creative thinking.” As leaders of the Future Problem Solvers at SCHS, Mains and Kamp have been encouraging the youth in San Clemente to lead active, healthy lives. In the fall, the girls met with various figures in the community to discuss issues facing San Clemente locals. Through conversations with the assistant principal of SCHS, the City Manager, and the Parks and Recreation Director, they decided to focus on childhood obesity. In October 2016, Mains and Kamp held their first club meeting at the high school. In February 2017, they gave presentations at three local elementary schools: Marblehead, Las Palmas and Vista Del Mar. Through the presentations, the elementary schoolchildren were informed about nutrition and fitness and played interactive games. Mains and Kamp ensured those in attendance, “It doesn’t have to be boring to be healthy and eat your veggies. It should be fun.” The girls also held a “Food, Fitness and Fun Fair” at Marblehead Park on February 11, 2017. With the help of sponsors like Orangetheory Fitness, California Junior Lifeguards, Redline Athletics, Fox and others, as well as funds they secured from a Disney Summer of Service Grant, Mains and Kamp were able to provide a fun and informative experience for some of the children and their family members in the community. So far in their efforts, the girls have been successful. Mains says their goal from the beginning was to help their community however possible and have fun doing it. Kamp was surprised by the attention they received. The girls quickly went from handing out flyers to getting press coverage. It showed Kamp the power of using her voice.

n January 2011, 23 year-old Dana Point native, Lyndsey Harhay was diagnosed with cancer. Her specific diag-

nosis was Acute Myeloid Leukemia (AML), which is a swift cancer of the blood and bone marrow, and a secondary form called Leukemia Cutis, which is a cancer of the skin. Post-diagnosis, Lyndsey spent 11 months of the next year in and out of the hospital. She initially went through a few rounds of chemotherapy, but the only way for her to beat the cancer was to get a bone marrow transplant. Her father, Tom Harhay who’s now a retired San Clemente firefighter, rallied the community to support his daughter.

“He’s a remarkable human,” Lyndsey says of her father. Eventually, Lyndsey got better. A match was never found, and she lived in fear of the cancer returning over the next five years. If she had been able to get a transplant through Be The Match, she would have been completely cured. She still considers herself incredibly lucky but she also attributes her success at getting well to all the community support she received. She thanks her father and others who came together to be a loving presence to her and her mother. She also believes things happen for a reason. Lyndsey has taken her own difficult experience and turned it into acts of service and love toward others. She volunteers her time with Be The Match to help raise awareness and fundraise for local people in need. She has joined over 2,000 people in the marrow registry, and approximately ten of her friends have donated stem cells. She proudly recounts a story from one of her friends who received a letter after she had donated. The recipient said the donor was the only one out of a mere seven matches that was willing to donate. She expressed gratitude that she could continue to be a mom to her three children. Lyndsey has been clear of cancer for six years now. Aside from her volunteer efforts, she helps run her father’s company called Candlelight Systems, which he started more than 30 years ago. Candlelight is a local company in Talega that specializes in window treatments and services. She is thrilled to be partnering with him. “My dad is a brilliant business man (and) an extremely hard worker with great morals,” she says. “Not only is he exemplary in his professional life, but he is an amazing family man that is extremely generous and dedicates his life to supporting his family.” As she recalls the depth of that dedication while she was in the hospital, Lyndsey sees her father as a hero. There’s room for more than one hero in this story, however. For more information, or if you are interested

A Flying Success At

GIVING BACK 20

San Clemente Lifestyle | May 2017

ccording to Denise Wilson, there are two keys to success: resilience, and a deep sense of knowing anything is possible. Wilson is the founder, president and CEO of Desert Jet, an aircraft charter, management and maintenance company based in Palm Springs. Since inception, Desert Jet has grown significantly and experienced much success. Before she founded Desert Jet, Wilson was a professional oboist in Los Angeles. She played in orchestras and taught music while also learning how to fly airplanes on the side. Her love of flying goes back to her childhood. Her mother was one of the first female engineers and became a subcontractor for Boeing in the early 1980’s. When Wilson was 13, she got to travel to Seattle with her mother for a meeting and was able to visit the Museum of Flight. Ever since then, she has had been fond of airplanes. When she was in high school, she asked her parents if she could do a demo flight, but they refused. On her 18th birthday, she went to a local airport in Claremont and paid 25 dollars for a demo flight. The experience was less than ideal and so she put flying aside for a time. It wasn’t until she was playing music that the flame was rekindled. She befriended a fellow musician who also happened to be a flight instructor. In Los Angeles, her new friend taught Wilson how to fly. On one occasion, after a 40-minute flight, she recalls thanking him as they descended into the Long Beach Airport airstrip. He reminded her she wasn’t done yet because she still had to land the plane. She was nervous. She didn’t think she could do it, but with a little help from a good flight instructor she landed the plane. As she got more flights in, she worked her way up to a commercial status change. In 2000, she decided to make a career change and became an airline pilot. She then upgraded to captain and eventually became a pilot for Aloha Airlines. As a pilot, she always felt like there was something bigger, something more. Wilson spent a short time working for a charter company at the Orange County airport in Santa Ana in 2005. In 2007, she realized there was a need for someone with her attention to detail and knowledge in setting up flight departments and assisting with aircraft acquisitions. In 2007, Desert Jet was founded. Since that time, Desert Jet has earned an air carrier certificate, started a maintenance company that repairs jets, and opened a private jet terminal and hangar facility. CONTINUED >

ANY INSPIRATION FROM HER? It was really cool to see

Rachael win the world title before me. We have been competing in the same contests for a long time and going back

and forth with heat wins, so her win made me really want to get a world title of my own.

WHO/WHAT INSPIRED YOU TO START SURFING? When

Tory's favorite pose at her favorite break in the world, Max's Left in the Telo Islands

I started surfing at seven, my best friend Charlotte and twin brother Randy got me inspired to start up. We would go down

to T-Street on the weekends and stand up on our boogie boards, and it all grew from there. Growing up I watched a lot of

Tory's secret spot in Australia, in all the best gear: Surfboards by Donald Takayama and wetty by Jonesea

longboard films with Belinda Bags and Joel Tudor. That's what got me into longboarding.

HOW DID IT FEEL TO BECOME WORLD CHAMPION? Although

not much has changed, it felt amazing to become a World Champion. It’s a great accomplishment and was always a goal of mine. I was always sort of the dark horse that could win but always messed it up somehow, so when I won, the support from the community and media was a bit overwhelming. It's been so fun to get recognized for something I love to do.

WHAT'S IT LIKE TRAVELING THE WORLD AS A PROFESSIONAL SURFER? Traveling as a professional surfer is so much

fun and such a privilege. I still have to work and pay my way, so I really appreciate every trip as an adventure and try not to put too much pressure on my performance in the events. We're all really lucky to have been to so many places and seen different things all because of our passion for surfing. THIS IS THE FIRST TIME EVER FOR A PROFESSIONAL SURF COMPETITION TO BE HELD IN PAPUA NEW GUINEA, WHERE YOU'RE CURRENTLY COMPETING. WHAT'S IT LIKE THERE? Papua New Guinea is one of the coolest places that

surfing has taken me. Having an event here has been so much fun and a cultural experience. Some locals here walked over night for 12 hours just to come watch us surf. It's the biggest thing that's happened in the Madang Province in a while. Every day there have been around 2,000 locals from all around that came to watch the surfing and cheer for us on every wave. The people are so nice, the kids playful and happy, and the waves are pretty epic, too. WHAT IS YOUR ADVICE TO YOUNG PEOPLE IN SAN CLEMENTE ON HOW TO ACHIEVE THEIR DREAMS? The beauty of young

people is that we all have dreams, and if you set goals and make plans any dream is achievable. My advice would be to stick to the course you've chosen, don't put too much pressure on yourself and just enjoy the journey because that is when we Tory walking across the inside section at The Left

tend to reach our full potential.

APPLE PIE Organic All American

Filling

6-8 Granny Smith apples (depending on size) ½ cup of organic coconut sugar 2-4 tablespoons of organic unbleached flour 1 tablespoon of cinnamon 2 tablespoons of freshly squeezed lemon juice 2 tablespoons of organic butter finely chopped Peel and cut the apples into thick slices, place in a bowl and toss with lemon juice. Add coconut sugar, organic butter, cinnamon and organic unbleached flour and mix. You should see the apples starting to sweat and form a coating. Let sit while you make the crust

Crust

2 ½ cups organic unbleached flour 10 tablespoons organic butter (very chilled and cut into tiny cubes) ½ cup organic all vegetable shortening 4-6 tablespoons cold water (I usually put ice cubes in a small bowl of water and let it sit) 1 pinch of organic pink salt Place flour in a food processor with cutting metal blade, add butter and shortening, slowly pulse your processor to cut up butter and shortening. Add two tablespoon of water at a time and pulse a few more times. After four tablespoons of water, check to see if the flour holds together. The dough should look crumbly if it does not add two more tablespoons of water and pulse again. I find I usually use six tablespoons, be sure that it does not get wet and sticky if it is too wet add a little flour and pulse. Pour out dough onto a cutting board that is floured and press together to form a ball and knead the dough. Divide the dough in half and roll out each half of the dough and cut two circles that are 2 inches wider than you pie dish. I use a 9-inch pie dish. Grease and flour the pie dish and place the one circle on the bottom. Poke several holes with a fork. Pour apples into the pie dish and cover with the other dough circle. Press the edges together with a fork. Cut several slits around the pie. Bake pie at 350 degrees for about 45 minutes. 5 minutes before it's done you can brush melted butter and sprinkle organic coconut sugar on top, pop back in the oven for remaining 5 minutes to form a glaze.

Enjoy
