-Frank Sinatra Drift into October's issue with a story about a San Clemente couple who've created a charming distillery here in town, crafting some truly remarkable spirits. Also spotlighted is another phenomenal local company, KonaRed, who's been producing a delicious CoffeeBerry juice and wonderful Ice-Brewed coffees since 2009. These two companies have collaborated to make a fantastic signature cocktail tabbed Red-Tide, which was unveiled at the inaugural Celebration of San Clemente Lifestyle party, held at the quaint, and local-artist friendly, OC Contemporary Gallery this past August.

There is no more innate pairing in the world than beer and the coffee bean. Beer and coffee are each aroma-driven, and each is a common part of many people’s daily lives.

The deep roasted flavors of dark beers impart themselves fittingly to the beautiful, black bitterness of coffee. With this being the most apt month for a good brew or two, we’ve featured the story of the welcoming Lost Winds Brewery, along with the tale of the warmhearted Bear Coast Coffee. These two local businesses have also teamed up to concoct a fantastic tasting Imperial Porter coffee beer christened Lost my Bearings.

Without question, the greatest part of being associated with San Clemente Lifestyle Magazine is all the wonderful people we’ve had the pleasure to meet. As human beings, our lives are enriched by the connection to people, whether that be family, friends, people in the community, or around the world. The story in this month’s issue titled ‘Big Vision With a Small Focus,’ is absolutely heartwarming. The Pickle family, and everyone involved with their organization in Tanzania, either directly or indirectly, are to be commended for their intention, love, and gracious spiritual nature. Thank you!

SMALL STEPS FOR COMPASSION EMPOWERS PEOPLE TO TRANSFORM THEIR COMMUNIT Y IN USA RIVER, TANZANIA

I

n 2009, Shannin and Paul Pickle, along with their two children Corrinne and Ashton, took a trip to Tanzania, Africa to start Small

Steps for Compassion. Small Steps for Compassion is an organization dedicated to empowering individuals to transform their community through compassionate action. Currently, this vision is being fulfilled through two channels: a girls home and a school.

Shannin says the girls home exists for truly orphaned and abandoned children. At the moment, Small Steps only has a home for girls, but they are open to starting one for boys as well.

Corrinne, who’s also involved, says the verbiage Small Steps uses is different. It’s called a home because those living there are a family. Small Steps brings orphaned girls home and gives them everything a loving family has to offer. The hope is that this will enable them to positively impact their communities.

Kitau during their first trip to Tanzania. Shannin says he has been with them from the start and that they have developed a great relationship over the years. Kitau, Shannin and Paul have hired help at the home and there are currently 18 local people onboard, from the guard to the farmers. Everything the girls eat comes from the land surrounding the home. Corrinne says it’s important to the Small Steps team to partner with local people in a holistic way. She says it’s never been Small Steps’ vision to Westernize, or Americanize the community in Tanzania, but rather to train and empower locals while also going alongside their culture and values.

The school, which sits on two acres just next to the home, is called Steps Academy. Currently, there are about 25 local staff members, including a headmaster and 22 teachers. The education is based on an entrepreneurial teaching model.

Shannin says Small Steps has already seen so much growth and empowerment in the teachers.

Shannin says it was a God-given vision to start the organization. She says she has a strong faith and that the vision was inspired by God and the way she was raised. She has always thought it important to love your community where you are, and that’s how she and Paul have raised their children as well.

She says they had been doing this in San Clemente already, and it just made sense to expand the vision.

The Pickles have traveled extensively, and Shannin says the vision was also inspired by an orphanage they visited in Taiwan.

After seeing a positive example of how a home could be run well, the desire to make the vision a reality grew. With the founding of Small Steps for Compassion, the vision was made a reality. It’s a family effort, with Shannin as President and Founder, Paul as Vice President, Corrinne as a director on the board, and Ashton and his wife, Blair as part of the team, too.

Since that first trip to Tanzania in 2009, the Pickles have added a fifth member to their family: Loveness Pickle, or Love for short. When asked where she was from, Love said San Clemente, with a giggle.

Upon further investigation, it turns out she was born in Tanzania.

Shannin says it was the first time Love responded with San Clemente when being asked where she’s from.

When Love was asked if she wanted to add anything about the organization, she cheered, “Go Small Steps!”

Recently Bear Coast Coffee held an event in partnership with Small Steps. Corrinne and Manager of Operations, Rachel Burns wanted to

“It was incredible to see Jeff ’s heart,” says Shannin, in regards to his excitement.

The event took place on August 16th, after hours at Bear Coast Coffee.

As for ingredients, Ryan initially considered using corn and rye. Then he realized that the wheat his mother and step-father grew in Kansas was something he could use. His parents agreed to donate the first few bags, so Ryan drove a truck out to Kansas to pick up the wheat. He also brought back some wood from their barn to use for the interior of Drift.

When you visit the distillery, you will see the warm, wooden accents throughout the space, including on the barstools.

Things are drifting along well for the Winters. They started producing two months ago and have been selling bottles of whiskey and vodka to interested buyers. There has been plenty of interest from local restaurants, bars and grocery stores and once the Winters lock down their distribution, San Clemente residents will start seeing their very own bottled liquor on the shelves. Theirs is the first bottled whiskey in Orange County. Drift Distillery is the first distillery in San Clemente and only the second in Orange County since prohibition.

Ryan says it’s not beginner’s luck. He says it’s been a lot of planning and hard work. Now the Winters must keep working hard so they can connect with the community even more. They look forward to providing tastings in their tasting room, and to put on more private events. They have also started to collaborate with other local businesses, such as KonaRed. Currently,

tech space, and they had the opportunity to work with Ole Smoky Tennessee Moonshine. In 2014, Ryan got to the point of wanting to create his own liquor brand. Through research, Lesli discovered there were no existing craft distilleries in San Clemente, so the Winters decided to open one.

The first thing the Winters had to do was secure a space. They took a risk and signed a three-year lease on a building. Their landlord approved the building to be used as a distillery, but they had to jump through some hoops with the city to get a Conditional Use Permit for a tasting room. Ryan says along the way; they just had to trust and keep moving. The Winters then had to apply for a basic permit with the government – a process that can take anywhere from 6 months to a year. It took them ten months to secure the permit.

Ryan also had to figure out how to distill. He hired a consultant from Kentucky who came out and helped with planning. He then connected with a distillery in Spokane, Washington that had a private school. He attended the school and did grunt work. He cleaned the tanks and learned everything about the distilling process. He says it was a big investment, but in the long run, it was a smart move.

The Winters have been in the current space that is Drift Distillery for a year now. Ryan did freelance design work while they were ordering the equipment and beginning the distilling process. He says working with the city was not easy. Much like the meaning behind the name, they’ve had to just keep moving along, however slowly. Ryan says the October 2017 | San Clemente Lifestyle

KonaRed is a local San Clemente company founded on an interesting concept of coffee fruit.

President and COO of KonaRed, Kyle Redfield says some people may not know that coffee is actually a berry that grows on a bush. The seed inside of that berry is the coffee bean, which is the part that’s loaded with the caffeine and flavor of coffee. The fruit has traditionally been discarded. Redfield says because coffee is the second most traded commodity in the world, coffee fruit is the largest untapped food source on planet earth.

Because of the moist, tropical climates in the coffee belt – where coffee is grown across the earth – the coffee fruit goes bad quickly. The coffee seed, or bean, can be dried and preserved but it does not work the same way with the fruit. The climates make it difficult to dry and preserve the coffee fruit. Redfield says this has been the greatest barrier to entry for coffee fruit. The coffee bean is a cash crop for coffee farmers, and there has traditionally been no process in place to dry the coffee fruit.

Founder of KonaRed, Sean Roberts of Newport Beach has been living in Hawaii for the past 15 years.

He found out about coffee fruit, started meeting with coffee farmers there and expressed interest in doing research with the fruit. He wanted to see if there was any value to the fruit. He wondered if there was something in the fruit, such as iron or fiber, that would be useful for the human body. Through testing, Roberts found antioxidants and vitamins in the coffee fruit that would be safe for human consumption, so he started to develop a drying process.

Through a separate business, KonaRed started buying the coffee farmers’ fruit. It was basically like buying their trash, which Redfield says they loved.

RED TIDE DRIFTS INTO SAN CLEMENTE (CON TI N U ED)

KonaRed was able to dry the coffee fruit and ship it from Hawaii to San Clemente. At their local facility, they’ve been able to create a liquid extract or concentrate, with the coffee fruit. The concentrate is then used in all of the KonaRed products.

KonaRed has been in operation for nine years. Redfield says the flagship product was an antioxidant juice. The company did pretty well, but there was so much education around the coffee fruit. He says people were hesitant to pay for a red coffee juice because there was not enough knowledge or substantial science around the coffee fruit.

At that time, Redfield was working for The Wonderful Company. He had known Roberts for a long time and decided to join KonaRed. He brought his knowledge and skill from the practices he had learned with Pom Wonderful.

He says one day, it dawned on him and Roberts that they had relationships with some of the top coffee growers in the world, yet they didn’t have a single coffee product. They started doing their research around coffee.

After researching, they started experimenting with different products using both the coffee bean and the coffee fruit. Redfield says some of it worked, and some of it didn’t, but they kept refining. At that time, cold brew coffee was becoming popular, which was a concept that made sense to them. They made their own play on a cold brew version of Kona Coffee and started bottling it in 12-ounce bottles.

Redfield says, of course they had to bring coffee fruit back into the mix. He says they then developed a phenomenal cold brew coffee product that has a great flavor profile.

KonaRed was one of the first companies to start bottling cold brew coffee and taking it to the grocery stores. Now the company is doing quite well. You can find KonaRed products at Hanson’s Market, Vons, Albertson’s, Ralph’s, Bristol Farms and other markets.

Redfield says the company is still working on new ways to bring coffee fruit to different products. He says it lends itself well to tea and sweeteners, and there are a lot of other things you can do with it. Globally, the use of coffee fruit is having an effect. Redfield says the coffee farmers, whether in Kona or South America or Africa, are starting to get more revenue because they’re selling their trash.

“It’s a great feeling knowing that’s taking place,” says Redfield.

KonaRed is also doing their part to care for the environment. Every piece of their products are recyclable: the plastic, glass and burlap sacks. Redfield says the team realized burlap sacks are great to use for beach clean-ups, and they’ve been donating their sacks to Surfrider Foundation for this very purpose. Redfield says at KonaRed, they’re cognizant of what they do and they’re always striving to come up with better ideas.

ver since his parents allowed he and his brother to try beer brewing when he was 17, Tim Thralls has been passionate about it.

Growing up in rural Temecula in the 1980’s, Tim says his family was big on building things with their own two hands. This enterprising spirit, combined with his love for brewing beer led him on a 15-year journey to opening a commercial brewery. Just shy of a year ago, Tim and co-founders, Andrew Mack and Tim Burke opened Lost Winds Brewing Company in San Clemente.

After successfully brewing that first batch of beer when he was 17, and liking it, Tim started learning how to brew different styles. He took a break during college but then got right back into it, with a focus on developing brews that would be good in a brewery. He started visiting breweries in San Diego to see how it was being done on a grand scale. He fell in love with the

Reflecting on that time of learning, Tim says, “I thought, if ever there is a way to make this happen and to be part of this community, I’m going to make it happen.”

He loved the beach so much that he made a personal vow to live there. While still living in Encinitas, Tim met his wife, Erica, from Dana Point, and the couple decided to make San Clemente their home. He says he couldn’t have done any of this without her.

In 2014, about 13 years after relocating to San Clemente, Tim and Erica spent time trying to think of a name for the brewery that would pay homage to San Clemente. They had been playing with various names, but nothing seemed like a good fit. One day, they were with their kids at T-Street, enjoying the beach. As their kids surfed and bodyboarded, they were on the beach looking around and thinking of names. When they looked south, all of a sudden, a light went on. Lost Winds Brewing Company was the perfect name.

Locals knew the beach, Lost Winds, and there was a mystical element to the name for those visiting. Tim appreciated the history behind the name. Lost Winds is a morphed version of the street name, Calle Lasuen in south San Clemente.

Calle Lasuen was named after Basque Franciscan missionary, Fermin de Francisco Lasuen de Arasqueta, who was responsible for founding nine Spanish missions in California.

Along the way, Erica became friends with Andrew Mack’s wife, Darcy, which is how the two men met. Tim says he and Andrew, who was an entrepreneur and business developer, became fast friends. Andrew was interested in Tim’s idea to open a brewery and would ask questions about it. Tim thought he was just curious, 26

but Andrew eventually helped him with the plan. Andrew’s longtime friend, Burke also came on board and the three of them ironed out the business plan together.

At that point, Tim decided nothing was going to stand in his way.

With a name and business plan in place, the Lost Winds team finally secured a building for the brewery in October 2015. They then went through licensing to brew beer, broke ground with construction May 2016 and opened on October 27, 2016. Just before opening, they were also able to find another key member of the team: their Head Brewer, Brandon Winneker.

Winneker started home-brewing in college, alongside his microbiology studies. He later went through the Master Brewers Program at UC Davis and completed an internship in Oregon. He got a job working for Stone Brewery in Escondido and learned a lot about operations and best practices. He worked his way up and enjoyed his time at Stone, but when he met with Lost Winds, he knew it was a good fit.

Tim says Winneker was meant to be part of team. After he, Andrew and Burke had all heard about Winneker, separately, they knew they needed to invite him to interview. The day of the interview, as Winneker walked towards them wearing a t-shirt that read “Hops: the new sexy”, Tim knew he had to be their guy. The four of them hit it off and Winneker visited the building on the same day the team received their brewhouse, a day early. They were all excited, and Tim says it was like a sign from God.
