Summer is the perfect time to come up with a bucket list of activities to enjoy and ways to unwind and relax. Some of the best summers spent are often not filled with constant activities and trips, but are those that reflect a slower pace and simple moments of enjoying those around us. Although the “lazy days of summer” isn’t always something we can attain with our packed schedules, it is so refreshing to take some time to slow down and enjoy some of the simple pleasures that remind us of our own childhoods. Some of the best times spent can be a backyard barbecue with friends, making s’mores by a fire pit, spending a day on the water, eating ice-cream on a hot summer day, or simply taking in the night sky with someone you love. In this issue, we wanted to share about some of the happenings around our city this summer and ways to get out and explore together. In addition, it is our privilege to shine a light on local veterans in our community and to thank them for their service in honor of the Fourth of July. We have an immense respect for the men and women who make the selfless decision to serve and protect our nation. There is no greater sacrifice than to risk your life in order to protect others. The team at Lifestyle wants to thank all veterans, those still serving and all of their loved ones for your service. Roaring Fork residents Michelle Smith, Diane Chapin and Roslyn Bernstein know roller derby. You know, the fastpaced, full-contact sport played on roller skates. But like everything else, COVID-19 shut down the competitive league the three women had been a part of for 12 years. “And that team was really competitive,” Michelle says. “We were in the top 100 in the world, which is pretty significant considering most of the teams are from major cities like New York. “Then, during the pandemic, we kept seeing people posting about roller skating on social media,” she continues. “And, of course, we’ve always been skating.” The three friends decided they wanted to start their own group in Glenwood Springs, but … there was no rink in the town. Realizing that the Glenwood Spring Community Center had an ice rink that went unused in the summer—and that under the ice was polished concrete—the women asked the center if they could rent the rink for roller skating. And Roaring Fork Roller Derby was born. “We did that last year kind of started to get some interest,” says Michelle. “Then this winter we realized we needed to be a little bit more inclusive. We decided to make it more about roller skating than roller derby. We changed the name of the club to Roaring Fork Roller Skate so we could include all ages, genders, and level of abilities, and now we’re teaching basic skills as well as how to play roller derby. We’re really hoping it picks up momentum again, because it’s just a great sport. It’s really challenging, both mentally and physically. We’re committed to keeping it going.” Maybe one of the best parts of being in roller derby is you get an awesome nickname. Michelle’s is Chelle on Wheels, Roslyn’s is Vicious Kitty and Diane’s is Di’an Grenade. “And in a lot of these groups, I don’t even know what their actual names are. Your nickname becomes your new identity. We have a skater who’s a baker and her name is Whisk Taker. Another girl chose a name for herself, and we were like, ‘No, you’re your Little Ninja. You’re a little ninja.’ And it totally suits her.” Ready to skate? The club practices every Tuesday and Thursday, 6–8 p.m., at the Glenwood Springs Community Center. Michelle says anyone can just drop in and give it a try for a $6 drop-in fee. “If you show up once you’ll be hooked.” And who knows, maybe you’ll get a cool nickname too.

Nothing communicates the happiness of summer better than a beautiful bouquet of flowers, and thanks to Sue Schimmenti’s Bunch Flower Truck, Carbondale can find the perfect arrangements to celebrate all that the season may bring. July’s sunny blooms are making their way through the Roaring Fork Valley on the Bunch Flower Truck for those looking for a fun bouquet or to spice up their décor. Crafted from her old landscaping truck, Sue Schimmenti has made the Bunch Family Truck the perfect vessel for locally grown floral arrangements, frequenting Carbondale, Basalt, and Aspen since last year. In June 2021 Sue Schimmenti felt she needed a change in her career, saying “I have a dietetics degree but then started working for landscapers. Once I started gardening, though, I realized this is where I have great passion and love for my work.” What landscaping design lacked; floral arrangements brought to the forefront, which was creativity.

So, why a truck? With the geography of the Roaring Fork Valley, Sue Schimmenti felt like mobility was the key, and after traveling almost daily from Carbondale to Aspen—and back again—she knew she made the right decision. “[The Bunch Flower Truck] is the mountain flower truck; you have to drive on a highway to get everywhere here, and with the truck I can get to your house up a mountain easily for a delivery,” Schimmenti comments. This year, the Bunch Flower Truck will be at both the Carbondale and Basalt Farmers Market each week. “The best part about the truck is getting out, seeing people, and watching the flowers brighten up people’s smiles,” says Schimmenti. Community engagement has become a core value of the Bunch Flower Truck. Sue Schimmenti beams, “Now my goal is to rent the truck out for parties so guests can build their own arrangements and take them home. Someone could also host a class by renting out the truck to get people together and try something new.” Whether you buy a pre-made arrangement or decide to construct one yourself, the Bunch Flower Truck can supply anything you may need. Stop by the Carbondale Farmers Market on Sunday or the Basalt Farmers Market on Wednesday to check out the truck and this year’s blooms.

Maurice Sendak’s Where the Wild Things Are is filled with imaginative characters, adorable prose and a sentimental lesson all parents and children can appreciate. Sendak’s Caldecott Medal-winning picture book has become one of the most highly acclaimed and best-loved children’s books of all time. With this delightful book about to embark on it’s own 60th Birthday being in print it seemed only fitting to share some ideas for throwing your very own wild rumpus perfect Birthday party this summer. The hero of the story, Max, reminds us that imagination is important and finding your friends that you don’t want to leave is a true treasure of life. The little attention to details for your party do matter and having great photos taken to capture your child’s birthday are priceless. But to truly make a party unforgettable is just let everyone have fun and not make it too structured with activities that don’t allow for the kids to enjoy each other and see where their imagination takes them. Sendak said it best, “Children do live in fantasy and reality; they move back and forth very easily in a way we no longer remember how to do as adults.” Having your child’s friends show up in costumes is always fun and aids in the theatrics of the celebration. Another important tip is deciding how long the party should last. Typically dependent on the age of children and the activities planned. However, as a guide, parties should last about 2 hours. This is long enough for the kids to have fun and not run out of steam or get bored. Last but not least, celebrating a birthday for a child is a memory that lasts a lifetime. What child would forget having a backyard or park like setting transformed into where they reigned as King over the Wild Things.

Summer entertaining has never been so easy. Impress your guests with our easy dinner party recipes.
T O M AT O P E A C H B UR R ATA S A L A D Serves 6 beginner INGREDIENTS • A few big pinches of Kosher salt • Freshly ground black pepper • 1 teaspoon dried oregano or 2 teaspoons fresh oregano • 1 tablespoon balsamic vinegar • 1/4 cup extra-virgin olive oil • 2 large heirloom tomatoes or large plum tomatoes, or cherry tomatoes. (about 2 1/2 pounds total) • Two peaches • 8 ounces mozzarella pearls or small balls • 4 ounces burrata cheese • 1/4 cup torn fresh basil leaves plus additional whole leaves for garnish
INSTRUCTIONS 1. Combine salt through olive oil. 2. Place the burrata cheese round on a platter. Arrange the tomatoes, peaches and mozzarella balls around cheese. 3. Drizzle with dressing from bowl. Sprinkle with more salt and pepper. Garnish with additional basil leaves and serve.

HUMMUS WITH TOPPINGS Serves 6-8
INGREDIENTS • Your favorite store-bought hummus, or make my recipe @ Lauren-Lane.com
TOPPING OPTIONS • 1 small zucchini or a few radishes, thinly sliced • 1 cup cherry tomatoes, quartered • 1 handful watercress or microgreens
ADDITIONAL TOPPING IDEAS • fresh basil, • crumbled feta cheese • 1/2 cup toasted pine nuts or capers
INSTRUCTIONS 1. Spoon the hummus into a serving bowl. Using your spoon, make a few swirls on the top. 2. In medium bowl, toss toppings together. Add a drizzle of olive oil and a pinch of salt and pepper. Toss well to combine. 3. Drizzle hummus with olive oil and top with the dressed toppings. Serve with pita chips and/or veggies for dipping.

PITCHER VODK A LEMONADE Makes 6 cocktails
INGREDIENTS • 48 ounces homemade lemonade (or store-bought) • 12 ounces vodka • Ice, for serving • 1 lemon, sliced thinly • Fresh mint for garnish INSTRUCTIONS 1. Make the lemonade or pour storebought in a pitcher. 2. Add vodka and lemon slices (can be made the day before). 3. To serve: pour cocktail over ice and garnish with fresh mint.
GRILLED CORN SAL AD Serves 4-6
INGREDIENTS • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional) DIRECTIONS 1. Place corn kernels into a bowl with the rest of the ingredients and stir to combine. 2. Taste, and re-season with salt, pepper, and vinegar to taste.

STEAK WITH CHIMICHURRI SAUCE Makes about 1 cup:
INGREDIENTS • 1 cup (packed) fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup (packed) fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt
STEAK • 1 ½-2 pounds flank steak, or steak of choice.
PREPARATION 1. Make sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.) 2. Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the middle. 3. Thinly slice steak across the grain and top with Chimichurri sauce.
