More importantly, I love sitting down with my own family and friends to eat and reflect on the gifts of the previous year together. A holiday wholly devoted to gratitude?

I’m sure my family isn’t the only one that encourages declarations of thankfulness from each diner at the table. This Thanksgiving, nearly five months after the Lake Christine Fire erupted mid-valley, many of us locals will no doubt express appreciation for “the roofs over our heads,” as Nicolette Toussaint writes on page 19.

There is healing in gratitude, whether it’s expressed at the large scale of community or in intimate moments of personal reflection. Photographer and breast cancer survivor Renee Ramge shares her powerful story this month on page 28, and offers wisdom we can all take to heart this season.

YOU'LL NEED: + A small to medium-sized pumpkin + Floral foam (trimmed and soaked in water) + Plastic wrap + Carving knife + Scissors or floral snips + Fresh autumn-hued florals such as spider

STEP ONE: Cut a round hole at the top of the pumpkin, trimming the insides away and discarding all seeds.

STEP TWO: Place your pre-soaked and trimmed foam into the pumpkin; it should rise about one inch above the hole. A small square of plastic wrap beneath it will help retain moisture.

STEP THREE: Trim and arrange your flowers, sticking the largest blooms first. Taller stems should be placed toward the middle. Fill in with small sprays of more delicate flowers, greenery, or fall accents such as dried wheat.

WHEN THEY THOUGHT I HAD A THIRD CANCER, I IMMEDIATELY SAID TO MY PARTNER LEWIS, ‘I’D BETTER MAKE A JOY LIST.’ It wasn’t hard for me to imagine what was going to be on the top of that list, because it was something that we had been talking about for months. Our long-term future plans included Lewis retiring one day and getting a van and traveling.

I had tasted this lifestyle four years earlier when my daughter and I, in the midst of a challenging health issue, had traveled the west coast in an RV for three months. The days rolled by as we traveled as women, not just mother and daughter, and I loved every moment of our time together. I was hooked on travel.

Fortunately, I was never diagnosed with that third cancer.

Regardless, Lewis and I had already made up our minds: We weren’t waiting for another scary phone call or a long-term retirement plan to motivate us. Now was the time to go.

The catalyst for these travels happened one morning in 2016 while I was putting on lotion and felt a lump in my breast. Wisely, I went to the doctor’s office the next day. I wasn’t really all that concerned because a few years ago I had a lump and it turned out to be benign. However, during the ultrasound of the new lump, the technician’s mood changed from friendly banter to all business. Somehow in those moments I knew that things were more serious. What I could never have known in that moment of realization was that despite my impending cancer diagnosis, my life was about to change for the better. Being faced with your mortality gives you a chance for paradigm shifts and growth—an opportunity that isn’t granted to those who die suddenly.

During treatment I learned quickly that, for me, 70 percent of the battle each day was emotional; my greatest medicine came from my own power to heal myself. Every day before I let myself put my feet on the ground I make a point to set my intention: ‘Today is going to be a great day!’ This helps me gather the strength to take on whatever comes my way. Also, to improve my health, I prescribed myself an attitude of gratitude as the cornerstone of my well being. When I lean into gratitude, it gets me through even the most difficult days. For example, at the end of my breast cancer treatments, when I learned that I had a second cancer in my lung, I had to shift the way I was talking to myself from, ‘I can’t believe I have another cancer’ to ‘I’m grateful they found it early.’

Fortifying my self-talk with gratitude brought me out of the darkness. As things got harder in my cancer journey, I had to take it a step further and express my gratitude out loud. When I was in the hospital having a section of my lung removed, I’d stop anyone who was caring for me and ask to hold their hand to tell them I needed to share my mantra, “I’m grateful for you. Come do your work and save my life.” The mantra helped me and my caregivers, even though I think I may have startled the cleaning lady. All of these practices have improved my well being, and I continue them in my life as a survivor.

It’s hard for me to even fathom how many people have cared for me these past two years. With the loving care of my tribe of family and friends, the amazing folks at Calaway Young Cancer Center in Glenwood Springs and CU Health in Denver, I’m here today celebrating life.

are currently in our #VanGoNow RoadTrek exploring Canada and taking in the east coast colors. It’s not lost on us how fortunate we are to be in a position to travel and I can’t tell you how often we hear from people who say that we’re living their dream. Even though adventure and van life is great, what I’m most thankful for each day is the gift of connection. Focusing on being in the moment with whomever or whatever is present. Life lived now can be done wherever you’re standing.

THE LEFTOVERS. What’s more fun than raiding the fridge for a cold slice of pumpkin pie the morning after, or piling turkey, mayo, and fixings between slices of crusty bread for the best sandwich of the year?

Leftovers help extend the feasting through Thanksgiving weekend and beyond.

Sometimes though, you may find yourself staring down that vat of uneaten mashed potatoes or the half gallon of cranberry sauce and wondering what to do with it all. It’s a common conundrum.

This is where Carbondale resident, Food Network star, business owner, and culinary instructor Susie Jimenez steps in this month with ideas. Her favorite way to eat classic Turkey Day leftovers is to infuse them with fresh flavors inspired by her family’s Mexican heritage. Trust us,

TACOS: + Leftover mashed potatoes + Corn tortillas + Turmeric, cumin, coriander to taste

MASHED POTATO CRUNCHY TACOS WITH SLAW AND TOMATILLO SAUCE

+ Pinch salt

SLAW: + 4 cups cabbage, shaved + 1 cup fennel, shaved + 1/2 cup cilantro, chopped + 1 each jalapeno, chopped + 2 limes juice + salt to taste

TOMATILLO SAUCE: + 1 cup canned tomatillos + 2 garlic cloves + 1 jalapeno + ¼ cup cilantro + 2 tablespoons red onion + Salt to taste

DIRECTIONS Start with tacos by combining mashed potatoes with spices and salt. Place a small amount on one half of a corn tortilla and fry over medium heat in one inch of grapeseed oil. Place on paper towels to remove excess oil. Repeat until you have finished your desired amount of crunchy tacos.

Then, mix slaw ingredients quickly in a bowl. For the sauce, place ingredients in a pot and cook over medium heat for five minutes; when heated, place in a blender with the cilantro, onion, and salt and blend until smooth. To assemble the finished dish, crack your tacos open, add slaw, and top off with tomatillo sauce. Serve immediately.

HOMEMADE RED SAUCE FOR TURKEY ENCHILADAS SAUCE: + 3 Pasilla dried chiles + 3 California dried chiles + 3 Roma tomatoes, chopped + 2 garlic cloves, chopped + ¼ small yellow onion, chopped + 1 tablespoon each of cumin, coriander, and salt

ENCHILADAS: + Leftover turkey, shredded + Corn tortillas + Queso fresco and shredded lettuce, for garnish

DIRECTIONS Soak the dried chiles in warm water for 10 minutes. Remove seeds and stems. Place in a blender with ¼ cup of the soaking water and blend. Strain, and return to blender. Then, in a skillet with one tablespoon grapeseed oil, add the chopped tomatoes, garlic, and onion. Stir over medium heat for five minutes, then place in blender with the chile paste. Add the spices and salt, and puree until smooth. Heat corn tortillas on a skillet so they don’t break, stuff with your leftover turkey, roll, and place side-by-side in a large casserole dish until full. Pour your red sauce on top and bake at 350 degrees for about 10 minutes. Sprinkle with queso fresco and shaved romaine lettuce, and serve.

STUFFING AND TURKEY “MEATBALL” SOUP WITH CILANTRO LIME BROTH MEATBALLS: + 2 cups prepared stuffing

+ 1 cup leftover turkey, shredded + 2 eggs + ¼ cup crumbled cotija cheese (feta or parmesan will work too) + 1 teaspoon cumin + 1 teaspoon coriander

SOUP:

+ 2 carrots, peeled and sliced + 2 celery stalks, sliced + ½ onion, sliced + 3 garlic cloves, chopped + 1 tablespoon fresh ginger, chopped + 1 jalapeno, sliced + Salt and pepper to taste + 2 limes, juiced + Fresh chopped cilantro

DIRECTIONS In a soup pot, place one tablespoon grapeseed oil and add vegetables. Stir over medium heat for five minutes. Add two gallons water or stock, and reduce heat to low-medium for 15 minutes.

Meanwhile, combine meatball ingredients in a bowl and form small spheres; set aside. Return soup to medium heat, add meatballs, and cook for another three to four minutes. Season with salt and pepper, add the fresh cilantro and lime juice, and serve immediately with warm tortillas.

Stir in yogurt or crema for a creamier sauce.

We also recognize that each of you give to this community in myriad ways, and give thanks to you as well. + Civic Engagement: Our employees serve on the Glenwood Springs River Commission and Downtown Development Authority, and as directors of the Ninth Judicial District Bar Association, Rifle Animal Shelter, Roaring Fork Leadership, Roaring Fork Outdoor Volunteers, Grand River Hospital District, and United Way Battlement to the Bells. + Youth Sports: We helped found Roaring Fork Cycling and continue to provide free services and financial support for this amazing program that empowers local children through biking. We also financially support Glenwood Springs High School sports and the Sunlight Winter Sports Club, and our employees are coaches in lacrosse, soccer, and cycling programs. + Arts & Outdoors: We provided free legal services for Wilderness Workshop to help evaluate Pitkin County’s proposed Crystal River valley trail. We also donate legal services and funds to The Glenwood Springs Summer of Music concert series. + Community: We financially support many community services and events, including Aspen Public Radio, Carbondale Wild West Rodeo, Garfield County Fair, Glenwood Vaudeville Revue, and the Glenwood Springs Big Summer Block Party. + Veterans: In recognition of their service, an employee volunteers and raises funds to install headstones to identify the graves of veterans who lack these important memorials.
