The Lone Star Flight Museum Honors Ralph B. Thomas The Lone Star Flight Museum honored philanthropist and community leader Ralph B. Thomas at the Jet Setters Ball ’25: Destination, Paris. Give the Gift of Self-Focus Kale Luhrman, owner and co-founder of Control Pilates Studio, was deep in preparation for the Houston Marathon when a knee injury took her on a different wellness journey and career path. Advised by her physical therapist to try Pilates, she started taking Classical Pilates classes at an Eve Gentry lineage studio in Wisconsin, even signing up for teacher training before moving to Houston. Luhrman was trained in the lineage of Romana Kryzanowska through Alycea Ungaro's Real Pilates Teacher Training Program for more than 650 hours, in addition to her first 450 hours. Combined with her love of science and physiology, she dreamed of opening a Pilates studio in Houston that would offer private and small-group classes as well as classical teacher training to help others experience the transformative power of Classical Pilates. CHARDON REIMAGINES A CLASSIC DISH WITH A FRENCH TWIST, HIGHLIGHTING LOCAL FARE AND BALANCED BITES. Chardon is giving Houston a taste of classic French bistro cooking, with chef E.J. Miller leading the way. A graduate of Houston’s Culinary Institute LeNotre, Miller brings serious experience from kitchens like Riel, Coppa Osteria, SaltAir, and Muse. At Chardon, he blends his French training with local Texas ingredients for dishes that feel both elevated and familiar. Everything is made in-house, from the bread to the sauces, so every plate hits just right. THE ENDIVE

Instead of using a traditional lettuce, Endive, a vegetable in the chicory family, has a natural bitterness that adds a fresh, clean contrast to the richness of the crab and the depth of the caper aioli. “The slight bitterness wakes up the palate and balances the savory elements like the Parmigiano Reggiano, toasted breadcrumbs, and fried capers,” said Miller.

THE FILLING

The salad features 3.5 ounces of Texas blue crab per serving. Miller says nothing is incorporated with the crabmeat because they want the locally sourced crab to shine on its own.

THE TOPPING

The salad is topped with caper aioli, toasted homemade breadcrumbs, Parmigiano Reggiano, fried capers, fresh lemon juice, and cracked black pepper. “The caper aioli adds richness while the breadcrumbs bring a warm, buttery crunch that contrasts the crisp endive,” said Miller. “Parmigiano Reggiano adds a salty, umami element that enhances the crab, and the fried capers give a pop of sharp, savory flavor. Each topping plays a role in balancing richness, texture, and acidity.”

THE DRESSING

At the French restaurant, the dressing is a play on a classic Caesar, but with a few distinct twists. Instead of using the traditional anchovy-based approach, Chardon uses capers and fish sauce to bring a similar umami depth. “We also add white balsamic vinegar, caper juice, lemon juice, Tabasco, and Worcestershire for acidity and complexity, along with a touch of sugar to balance the brininess. Grated parmesan and minced garlic round it out, staying true to the Caesar profile but with a brighter, more briny character,” adds the chef.

homes of 4,000 to 5,000 square feet and a budget of $3 million to $5 million. “Elise and I are creative in different ways,” Jonathan says of the way they work together – him starting with construction and Elise handling finishes. “Design is the creative side and construction is the execution of an idea.” They believe that smart construction supports good health, so they factor in additional HVAC filtration, pay extra attention to insulation and choose lowor no-VOC paints to avoid dangerous off gassing. “One family may want everyone to have their own space while another family wants everyone to share a room and be together all of the time,” Elise says. “We talk to them about how they want to do life. Do they want to eat at the island or create a banquette for breakfast? If you’re living by yourself, how do you want to engage? How do you connect the spaces?”

When homebuilders Elise and Jonathan Williams launch a construction project, they think about how their own family of six functions, both indoors and outdoors. The couple met as freshmen at Texas A&M University but didn’t start dating until they were nearly finished with their degrees. When they both ended up in Houston – Elise for a teaching job and Jonathan for a mechanical engineering job – that’s when things heated up. The Williamses are the December honorees for the Houston Design District’s Leaders In Design program. When they married 17 years ago, the couple bought a home in the Heights and gutted it, falling in love with remodeling in the process. They did remodeling projects for a decade before launching their Williams House LLC business 7 years ago, just after the birth of their fourth child. For more than half a century, The Nutcracker has been a dazzling must-see during Houston's holiday season. Since Houston Ballet first presented the classic in 1969, generations of families have made it part of their December tradition, returning each year for the snowflakes, the sweets, and the beautiful artistry onstage. This year, the magic returns to the Wortham Theater Center from November 28 through December 28, with Stanton Welch's dazzling reimagining of the beloved Christmas tale. His 2016 production remains the company's most ambitious, filled with lavish sets, glittering costumes, and a cast that brings the fantasy to life on a grand scale. There are five major set changes, a 39-foot Christmas tree, and 75 pounds of faux snow swirling across the stage each night. Behind the scenes, it is a small city in motion. Every performance calls on 36 stagehands, 16 dressers, six hair and makeup artists, and a flurry of teachers, chaperones, and costumers who keep the production running seamlessly. In all, more than 400 performers take the stage across 38 performances, including 61 company dancers, 229 Houston Ballet Academy students, and 45 community children. And if you have ever admired the Sugar Plum Fairy's shimmering tutu, know that it has been recreated four separate times since 2016. Each version requires thousands of yards of delicate netting and detailed handiwork. The Nutcracker continues to delight audiences of all ages, and the company's annual student matinees on December 11 and 12 will introduce more than 2,300 Houston-area students to the magic of live ballet. Over its five-week run, more than 70,000 guests will experience Welch's whimsical and adventurous reimagining of this timeless masterpiece. SPICED CINNAMON RUM FLIP A luscious holiday cocktail with warming spices, rich texture, and a beautiful cinnamon garnish.

INGREDIENTS:

Garnish: cinnamon stick and a light dusting of nutmeg or cinnamon

INSTRUCTIONS:

• 2 oz dark or spiced rum • 3/4 oz cinnamon simple syrup • 1 oz heavy cream • 1 whole egg • Dash of ground nutmeg • Dash of vanilla extract

Make Cinnamon Simple Syrup: Combine 1/2 cup sugar, 1/2 cup water, and 2 cinnamon sticks in a saucepan. Simmer for 10 mins, let cool, and strain. Store in the fridge. Add rum, cinnamon syrup, cream, egg, vanilla, and a pinch of nutmeg to a shaker. Shake vigorously for 15–20 seconds to emulsify the egg. Strain into a coupe or stemmed glass like the one in your photo. Top with a cinnamon stick across the rim and a dusting of nutmeg or cinnamon. Optional: Add 1/2 oz chilled espresso for a coffee kick.

INGREDIENTS:

INSTRUCTIONS: In a cocktail shaker, combine gin, cranberry juice, lemon juice, simple syrup, and egg white. Shake vigorously for about 20 seconds to create the frothy top. Double strain into a chilled coupe glass to get that smooth, foamy top. Add a small splash of sparkling water if you’d like a bit of fizz. Gently place a sprig of rosemary or thyme on top of the foam.

INGREDIENTS:

An ultra-creamy, chocolatey holiday drink with a hit of warm bourbon and a vanilla bean twist.

• 2 cups whole milk • 1/2 cup heavy cream • 1/2 cup high-quality dark chocolate (chopped or chips) • 2 tbsp unsweetened cocoa powder • 2 tbsp sugar or maple syrup • 1/2 tsp pure vanilla extract • Pinch of sea salt • 2 oz bourbon Topping: 4 large marshmallows Optional garnish: grated dark chocolate, whipped cream, cinnamon

INSTRUCTIONS: In a small saucepan over medium heat, combine milk, cream, cocoa powder, sugar, vanilla, and salt. Whisk until smooth and heated through. Add chopped dark chocolate and stir constantly until melted and silky. Lower heat if needed to avoid scorching. Remove from heat, then stir in bourbon. Taste and adjust sweetness or strength to your liking. Top with marshmallows. Add whipped cream, a sprinkle of cinnamon or nutmeg, and shaved chocolate. Optional: Add a pinch of cinnamon and cayenne for spicy depth Kid-friendly version: Omit bourbon and add peppermint extract or caramel syrup instead.
