Gratefulness In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition, and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride, and appreciating those around us who have helped us along our journey can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. After my daily meditation, I open my journal and make a list of all the people, things, and situations that I am grateful for. This community of ours is definitely at the top of that list. I am also very thankful for this magazine, which helps me bring the best of what the valley has to offer to our wonderful part of town. Our November issue is dedicated to stories of gathering, gratefulness, and giving back to our community. We are so thankful for the residents and businesses who support so many wonderful organizations and help make our city the vibrant community that it is. CHOCOLATE and WINE The Key to a Successful Wine and Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.
Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another. Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

CREATING THE PERFECT PAIR DA R K CHOCOLATE Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines. Pairs well with: Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo

Honoring Our Veterans Given the number of men and women who have served in our Armed Forces, it is not a surprise that nearly all of us either have family or friends who have been touched, in some way, by the heroic and selfless service of our amazing veterans. I remember, as a young boy, my first real experience on a military base with my grandfather. We were driving through the base when we heard the bugle play to signal the retiring of the colors. We stopped the car and got out, faced the flagpole across
the way, and put our hands on our hearts as they retired the colors. My grandfather’s commitment was not only to the flag and the freedoms it represents, but also to his children and grandchildren. Thankfully, there are ways our country gives back to veterans. Unfortunately, many of our veterans don’t understand or know all the benefits they are eligible for because of their service. As the owner of A Better Solution in Home Care, where we provide professional caregiving services to individuals and families, I see many veterans in this situation. With that in mind, I would like to share some of the benefits that are available: 1. Aide and Assistance: This is probably the most well-known program. To qualify, you must have served in the military during a time of war. The program pays a monthly stipend that will cover a variety of needs, such as caregiving, transportation, and additional support that is not covered by insurance. The qualifications for this program can be difficult to reach as it is income-based, has a low threshold that must be met, and requires a certain level of disability. 2. Respite Care: The VA provides respite care services to caregivers, allowing them to take a break from their caregiving responsibilities. This temporary relief can be critical for maintaining the health and well-being of caregivers.
3. Home and Community-Based Services (HCBS): Veterans may be eligible for various home and community-based services through the VA, depending on their needs. These services can include home health care, home-based primary care, homemaker and home health aide services, and adult day health care. These services are typically ordered by your VA primary care physician. 4. Transportation Assistance: Veterans who require assistance with transportation to medical appointments or other essential services may be eligible for transportation benefits through the VA. 5. Mental Health Support: Veterans who are struggling with mental health issues may receive counseling and support through VA mental health services. Caregivers can also access resources to help them support veterans dealing with mental health challenges. Day or night, there is always something to do for any budget. Even walking through the city during the day, finding bookstores, and people-watching is a magical experience. And you can never go wrong with one of the many kidfriendly versions of traditional tours in Rome, including an underground tour of The Colosseum. And for older kids without a fear of heights, a morning spent climbing up to St. Peter’s Dome will reward the entire family with spectacular views of the city. Pro Tip: Make sure kids and adults are ready for a steep and narrow climb.

And if your family is willing to go far yet wants something out of the way, sans typical tourist crowds? That’s easy, says Vickie. Riga, Latvia, or Hamburg, Germany, are both underrated cities in Europe and offer some of the best old and new architecture, beautiful views, and things to do. In Riga, you can explore the old town on foot, visit the Riga Zoo, and explore the National Library of Latvia. The harbor city of Hamburg offers a rich history with more modern architecture than other cities in Germany. For the best views, check out the free viewing platform at their new opera house, The Elbphilharmonie. “You certainly don’t need to vacation in a big, well-known touristy city to have an amazing time,” says Vickie. “And often, you’ll receive a more authentic experience, especially if you like to mingle with locals.” And while these exotic, expensive locations would be a dream come true for any family, it’s not realistic for all. Especially during economically challenging times, families are looking for more budget-friendly options closer to home. Luckily, there is no shortage, and Vickie has a list ready. “The National Park system in our country is an absolute treasure, and we are lucky to have so many of these amazing parks available, many of which are not far from Las Vegas,” says Vickie. “The Grand Canyon and Zion National Park are just some of the most stunning pieces of nature in our country, maybe even the world. And they’re less than a day’s worth of driving from Las Vegas.”

And how to save even more money once you arrive? Vickie confirms the biggest expenses are lodging and food. So, finding less expensive lodging that’s slightly farther from the park can save money without a lot of extra time. Many of these parks offer shuttles and other types of transportation to the main gates that can save a good chunk of change. Being open to booking in the off-season will reduce both cost and crowds, which always makes for a more enjoyable experience. Finally, don’t fall for the expensive food options within the park, and try to pack your own food and snacks when possible. If there’s an option for a small kitchen at the hotel, you can find a local grocery store and cook easy meals like breakfast on your own rather than eating out. And, of course, packing snacks that your kids like will keep them happy during longer hikes or rides without places to stop. “You’d be surprised how quickly eating out can add up, especially inside the park,” says Vickie. In the realm of landscape and nature photography, there are few individuals whose artistic prowess transcends the ordinary, capturing the essence of the natural world with unparalleled finesse. Among these luminaries, William Carr stands as a beacon of creativity and dedication. With a remarkable career spanning over four decades, Carr has become synonymous with the art of capturing nature's sublime beauty. His work witnesses the ebb and flow of time, revealing the intricate details of the world's most breathtaking landscapes. Yet, there is more to Carr's work than meets the eye. Beyond the sheer technical mastery evident in his photographs lies a profound connection to the very essence of nature. As we delve into his 45 years of experience, we uncover a deeper narrative — one of gratitude and reverence for the world that
has both inspired and shaped his remarkable journey. Join us as we embark on a visual and philosophical exploration of William Carr's extraordinary career and the enduring bond he shares with the natural world. Around 1986, Carr was in high-pressure sales in Lake Tahoe. As a pressure release from the constant work grind, he would hike around the shores, taking photographs incorporating the overhung pine branches with the lake in the background. “I was trying to create a pleasing composition,” said Carr. People then started complimenting the work he had produced, mentioning that he had a great eye. “And now I have two great eyes,” Carr says with a laugh. “I didn’t just have an ‘interest’ in photography; I was addicted to it.” Carr was the only one in his family with a zeal for photography. His mother once
told him, ‘You need to have a vocation, not an avocation.’ Believing that to be good advice, he began submitting his images to local publications, getting the chance to see his art within that medium. He was also approached by a postcard publisher in San Francisco and began distributing his images on postcards all around the Tahoe Basin. “At the time, I had no idea where I was headed with photography. Nature found me,” said Carr. “Truth be told, it’s an emotional connection that speaks to the heart and feeds the soul. It is said that art is food for the soul. As for me? I am the messenger.” In 1991, Carr moved to Southern Utah and once again developed an extensive postcard line within the region named ‘The Color Country Collection.’ Las Vegas was his next adventure, as he established himself as Las Vegas’ largest postcard

publisher operating under the name ‘The Fortune Group.’ “This venture afforded me the opportunity to start traveling the world and collecting imagery that would be the genesis of the William Carr Gallery,” said Carr. “I wanted to create an awareness of the striking beauty of our blue marble that circles our sun and emphasize the delicate balance we must maintain in the future — which is why I named my parent company World Focus Images.” Carr looks back and appreciates such a rich, full life. “Having been fortunate to have traveled all over the globe, I have experienced different cultures and interacted with the people of the land,” said Carr. “It is both enriching and cathartic.” Landscape photography has taught Carr how to see instead of just looking. “The simplest of elements in a seemingly austere desert landscape can yield a beautiful image if one just takes the time to see what nature has provided,” said Carr. Carr notes that nature is a product of evolution. From the progression of an incredible array of plant life to the massive amount of water from the receding ice age that cascaded down the grand staircase,
carving out monumental canyons and forging historic rivers, understanding evolution’s creative power is what makes nature so compelling to him. “I look for perfect composition, maximizing the most important elements in a particular scene,” said Carr. “The human brain has the ability to see a scene like a telephoto lens and a wide-angle lens all at the same time. The camera can only see and chronicle one focal length at a time, so I must choose which of those options will yield the best and most aesthetically pleasing image.” “The temperament of an artist is forged from the dual fires of struggle and persistence. Nature can be unforgiving, random, and whimsical. There have been so many times I would hike for hours into a location with the promise of wildflowers or cactus blossoms or a unique rock formation but never actually take my camera out,” said Carr. “But then there are times when something magical happens and Mother Nature rewards you with a gift, a random and unique combination of elements captured for all to enjoy.” One particular experience that literally took his breath away was a quest to find

“WE ARE SO VERY LUCKY TO BE PART OF THIS UNIQUE PHENOMENON OF LIFE THAT DOESN’T EXIST ANYWHERE ELSE IN THE VISIBLE UNIVERSE.” an elusive ancient Bristlecone Pine Tree, 11,000 feet up in the Eastern Sierra. “Struggling to catch my breath, I hiked for hours searching for the oldest standing tree in the world, 5000-yearold ‘Methuselah.’ Seeded perhaps by a bird now extinct, it predates the beginning of the Bronze Age, the Great Wall of China, and the Pyramids of Egypt,” Carr reflected. People need to slow down and take in the beauty around them in order to truly appreciate what nature has to offer. “In our Solar System, there are eight planets. Some are freezing cold, others way too hot,” said Carr. “We are in the Goldilocks Zone of our sun, not too hot and not too cold, just right to sustain life, and oh, what a bounty of life we have been afforded. Plant life that grows in the soil of earth contains all the vitamins and minerals we need for ultimate health. The oxygen we breathe would probably be toxic to any other alien visitor. We are so very lucky to be part of this unique phenomenon of life that doesn’t exist anywhere else in the visible universe.” Carr is grateful that people can find a deep emotional connection to his art. “I am always humbled when this connection is found to a particular image of a location that I have been able to bring to life,” said Carr. It is said that a picture is worth a thousand words. Carr wants his images to speak to the joy of the abundance of life and natural beauty that surrounds us. “As I travel the world, I know I follow in the footsteps of those who came before me. I wish to lend my voice to the chorus of masters who have inspired my journey.”

Since our southwest winters are generally mild, they say it’s important to focus on routine maintenance. Testing things like tire pressure and tread, battery testing (there’s nothing worse than a dead battery in the middle of nowhere), and verifying optimal functioning of brakes and lights are just a few. And while it can be tempting to rely on the dealer for your vehicle, especially if you’re new to town, that’s not always the best and certainly not the only option. “We distinguish ourselves against a dealership because we’re a small shop and maintain real relationships with our customers,” said Josh and Angie. “We have open and honest communication and offer full transparency when it comes to pricing and timing. So now it’s cool to see them come up with features like the lane assist and drowsiness alerts that help prevent accidents.” Josh is always amazed at how cars are becoming more and more fuel-efficient. He says the higher level of horsepower available each year while maintaining good gas mileage is pretty impressive. “The emissions on cars these days are much lower than they used to be, but the power is still there. That’s cool to watch.” They both agree that in 10 years, cars will look even different and be easier and safer to drive. And they both know that cars can be the prized possession for some owners, so they take pride in caring for them.

a festive pairing The age-old question, “What wine goes with turkey?” is answered. ARTICLE BY MARY ABEL

It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and
I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

What if I’m serving ham this year? “Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious. “
What about dessert? “If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”
How much should I spend on a bottle of wine? “That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around 20 bucks, they should be able to find you something that’ll work really well. There’s no reason to break the bank.” James Lewis is a sommelier who has been in the wine business for more than 26 years, and he and his wife Nancie own Crush Wine Bar in Castle Rock Colorado.

Whether you’re hosting Thanksgiving or an autumn dinner party, setting a festive table creates the perfect cozy atmosphere. Improvise and use what you have around the house for adding elements to the table. Candlesticks, vases, little pumpkins and gourds, or fall decor you have on hand can make a great centerpiece. Add fresh flowers or dried foliage for that extra layer of texture and color.
The Traditional Table For this classic, traditional look, a plaid throw blanket stands in for a tablecloth to establish a festive base layer. Brass candlesticks with brown taper candles create a simple and elegant centerpiece. Use familiar accents such as amber jars filled with dried grass foliage and brass pheasants to adorn the table. To add a little character to the table, use a recycled wine bottle as a vase. The simple place setting is enhanced with a dried grass accent and brown silk ribbon tied into a bow to add a special touch to your traditional display.
The Fall Garden Party Table Are you planning to dine al fresco this fall? Create an earthy, fall garden party on the porch by using natural, organic elements, greenery and flowers. To make a statement, create a floral chandelier by hanging flowers upside down above the table using fishing wire (if your space allows). The centerpiece that runs down the length of this table consists of fresh eucalyptus with gold candlesticks and a ceramic pumpkin vase filled with flowers placed on top a tree trunk charger. Adding small pumpkins and fresh flowers along the center gives a little extra character. Instead of going with the classic white plate, enjoy a pop of color at your outdoor fall garden party with a blue place setting as a nod to the sky.

Pay Your Future Self-First FROM SPENDTHRIFT TO FINANCIAL ADVISOR: HOW ONE LIFECHANGING ADVICE TRANSFORMED MY FINANCIAL SUCCESS
When I think back to what got me on the road to a healthy and sustainable financial future — and ultimately planted the seeds that eventually led me to become a financial advisor — there was one single event, one single intervention that everything in my current life can be traced back to.
