After three months of intense summer heat, we are blessed with the cooler days of fall. Cooler days mean yummy and comforting food. Las Vegas has many great places to choose from, whether you are a carnivore, pescetarian, vegetarian, plant-based, or vegan. A few months ago, I came across Vegas Vegan Culinary School and Eatery. My dad and I had lunch there and fell in love with the story and purpose behind the place. The owner, Heather Heath, is an amazing person and welcomes everyone who wants to venture into a whole new way of eating. Vegas Vegan has culinary programs for children and adults. Our cover this month features one of their new fall dishes – delish! Via Brasil Steakhouse is celebrating its 14th anniversary and is having a huge celebration later this month (check out the article for exact dates and charities each day supports) with samba music and dancers, caipirinha, and Brazilian food and drinks. Las Vegas Restaurant Week Supported Food-Insecure Southern Nevadans

NM Brows & Lashes Provides Free Services to Breast Cancer Survivors

Three Square Food Bank announced a total of 625,848 meals will be provided to the nearly 364,000 food-insecure valley residents, thanks to the efforts of the culinary community, residents, and visitors during Las Vegas Restaurant Week. This year, the 12-day epicurean event had a record-breaking 78 first-time participants, bringing the total number of participating restaurants and foodservice businesses to 211. One in six locals struggles with hunger, including more than 131,000 children (or one in four).

October is Breast Cancer Awareness Month. Every year NM Brows & Lashes participates in the breast cancer awareness call by the American Cancer Society by offering free areola restorations and three to five free microblading brows for breast cancer survivors. Strutt Your Mutt at Subaru of Las Vegas’ Halloween Hounds On October 30th, from 11:00 a.m. to 4:00 p.m. Findlay Subaru of Las Vegas and Michael's Angel Paws will combine two events into one for our furry friends — the Strutt Your Mutt Walk and a Fall Carnival. The event will include a decorated walk around Subaru of Las Vegas, ending in a carnival with a dog costume contest, food trucks, and a dunk tank. 15th Annual Women’s Leadership Conference Celebrates with Over 730 Attendees

Make-A-Wish® Southern Nevada, in partnership with Subaru of Las Vegas, made Colin’s wish of exploring the world come true with the help of an all-terrain wheelchair. Diagnosed with a severe nervous system disorder as a newborn, Colin has endured 12 surgeries. Unable to verbalize his thoughts, Colin, now 13, expresses joy while camping and exploring the outdoors. Colin and his parents arrived at sponsor Subaru of Las Vegas to find his wheelchair, and he smiled from ear to ear.

This fall, there’s no better place in Summerlin to take taste buds on a culinary adventure than JING. Since opening at Downtown Summerlin in January 2020, JING has become one of Southern Nevada’s most buzzed-about restaurants — and for good reason. Although best known for its see-and-be-seen dinner scene, which has attracted such celebrities as boxer Floyd Mayweather Jr. and comedian Pauly Shore to its tables, the 10,000-squarefoot restaurant is far from all flash and no substance, thanks to a talented executive chef who has learned from some of the best chefs in the business, including Thomas Keller, Andre Rochat, and Michael Mina.

Renowned for its global fusion cuisine, JING’s delectable dinner menu showcases some of the world’s greatest flavors alongside fresh ingredients from locally sourced and organic farms. Diners can start their meal with such flavorful dishes as the spicy garlic Edamame or the meltin-your-mouth pork belly Bao Sliders before feasting upon an array of sumptuous sushi or a succulent USDA Prime Black Angus steak from Kansas’ Creekstone Farms. The 14-ounce Center Cut New York Striploin, in particular, comes highly recommended by Griese. A selection of premium seafood and classic wok favorites are available, too, as well as a variety of noodle- and rice-based dishes, like JING’s signature Lobster Garlic Noodles made with wok-roasted lobster tail. Whatever items guests decide on, no visit to JING is complete without ordering Griese’s famous Brussels Sprouts for the table, topped in bonito, almonds, and a honey Szechuan glaze, and ending the evening with the light and refreshing Strawberry Shortcake for dessert. Whether you’re planning a much-needed date night with your significant other or you’re making plans with some friends, it’s always a challenge deciding where to go for dinner. Not that Las Vegas has any shortage of dining options — quite the opposite, actually. The sister company of Las Vegas’ award-winning guided group food tours, Lip Smacking Foodie Tours, Finger Licking Foodie Tours invites parties of two to 15 people to book their own self-guided food tour at one of six delectable dining destinations found off-Strip. Guests will be e-mailed an itinerary that includes scheduled stops at three noteworthy (and diverse) restaurants located near one another — like Echo & Rig, El Dorado Cantina, and Ada’s Wine Bar at Tivoli Village or Borracha Mexican Cantina, Bottiglia Cucina & Enoteca, and Hank’s Fine Steaks & Martinis at Green Valley Ranch Resort — and spend anywhere from 40 minutes to an hour at each place sampling some of its signature cuisines. “Dining at one restaurant is just a typical night out,” said Donald Contursi, a longtime Las Vegas food server who created Lip Smacking Foodie Tours and Finger Licking Foodie Tours as an easier way for people to experience some of the city’s top restaurants. “Dining with immediate seating and VIP service at three different restaurants in one outing is a true night to remember.” While Finger Licking Foodie Tours initially began in 2020 as a way to give people the option of still going on a food tour during the pandemic without sitting at a table with a large group of people they didn’t know, Contursi noted that about 65 percent of the company’s business now comes from Las Vegas locals. “Locals love our self-guided tours because it allows them a relaxed way to discover new establishments that may turn into new favorites that they end up frequenting regularly,” Contursi stated. “Both Tivoli Village and Green Valley Ranch are just minutes from the Strip but feel a world away. Both boast fantastic restaurants, too. These tours are perfect for date night, special celebrations, or just a laidback TGIF outing to explore new neighborhood restaurants with ease.”

Many factors go into curating Finger Licking Foodie Tours’ list of participating restaurants, including making sure that the staff at each location is attentive, professional, and welcoming, so diners get the full VIP treatment. Of course, the food must be phenomenal as well. Each restaurant typically showcases three dishes known for satisfying customers and critics alike, such as Borracha’s flavorful Chili Relleno and Echo & Rig’s palate-pleasing Portobello Fries served with herb aioli. Guests can also add a pre-selected signature cocktail at each stop for an additional $50 per person. While the tasting menus at each eatery are designed for guests to share, the portions are still pretty generous. Guests are encouraged to come hungry and may even want to ask for some doggy bags along the way so they can save some room for the final stop on their tour. Finger Licking Foodie Tours’ 2-and-a-halfhour Green Valley Ranch Resort tour is offered Wednesday through Monday at 4:30 p.m. and costs just $125 per person; its 2-hour Tivoli Village tour is available daily at 4:30 p.m., 5:00 p.m., and 5:30 p.m. and priced at $99 per person. Self-guided tours of downtown Las Vegas, the Arts District, Chinatown, and Virgin Hotels Las Vegas are also offered. Whatever tour locals decide on, they’re in for an unforgettable experience that’s well worth every penny. “It would be near-impossible for someone to organize an experience like this on their own,” Contursi concluded. “With our tours, you enjoy a variety of signature dishes curated specially for you. Gratuities are also included in the ticket price, so there’s no fumbling with a tab or gratuities at the end. All you have to do is relax and enjoy. It’s as easy as that.”

The Gomes family has a long history of opening outstanding restaurants and nightclubs across the country. In 1978, Luis Gomes opened Via Brasil in the heart of Little Brazil Street in New York City. The Gomes family and partners later opened the Plataforma Brazilian Steakhouse in New York City in 1996, which has become the top-rated Brazilian steakhouse in the country. Adam and Luis Gomes opened Via Brasil Steakhouse in Summerlin on October 23, 2008, and there still is no other place in the city like it. This year the restaurant will recognize its 14th anniversary with a three-day long celebration.

The event will start on October 21 and run through October 23, 2022. In order to give back to the community Via Brasil Las Vegas calls home, each evening of the anniversary celebration, the restaurant will donate $6 from each rodizio dinner to a different charity. On the first night, the selected charity is Angels of Las Vegas. On the second night, the anniversary party will support Miracle Flights. And on the final night of the celebration, Via Brasil will support St. Jude Children's Research Hospital. During the anniversary party and throughout the year, guests enjoy Via Brasil’s all-you-can-eat rodizio dinner experience that includes 19 different succulent cuts of meat, including shrimp and salmon — which no other Brazilian steakhouse in Las Vegas offers. Dinner also includes unlimited trips to the salad bar full of freshly made hot and cold dishes, salads, and appetizers. "I want to pave the way and give tools to future generations on how to live and eat healthier," said Heather Heath, owner and visionary for Vegas Vegan Culinary School and Eatery. Heath has been a fervent supporter of plant-based alternatives and the development of novel methods for assisting people in making the switch to a Vegan diet for more than seven years. Since 2007, her non-profit Willow's Wish Foundation has worked to improve animal welfare worldwide through various initiatives, including animal spay/neuter campaigns and public awareness campaigns. She has also worked with prominent foundations to promote long-term population control initiatives and long-term solutions for many years as an animal welfare consultant and volunteer in communities all over Asia and South Korea. It started with her Willow's Wish Foundation, where she traveled to South Korea to help end the dog meat trade. She traveled to South Korea many times a year but realized she was just an

American trying to reach an ancient culture to make a change. "You just can't preach to people," she exclaimed. Instead of trying to combat generational beliefs and economic systems, she developed a friendlier approach by rescuing a brown miniature poodle from a dog farm. Her empathic outlook dissolved barriers, and things took off when Willow became the face of her organization. "I introduced a plantbased alternative in some restaurants where they have been sourcing and serving dog meat. They were open to trying a different source." Returning stateside, and with that momentum, she focused on spreading her passion into a professional kitchen and eatery, creating the Vegas Vegan Culinary School & Eatery. They are located right in the middle of Las Vegas' downtown hotspots and within walking distance from their location in the Downtown Arts District. The school strives to show visitors how to create flavorful plant-based meals while giving them culinary knowledge on properly cooking plant-based foods. Vegan chefs teach hands-on classes for children as young as five, adult beginners, and even courses for advanced cooks. Formatted lessons allow the average person to learn how to cook, eat, and live healthier. For the youngest aspiring chefs, it is about gaining "life skills." "When was the last time you heard of a child learning about nutrition in school regularly," inquired Heath. “We hope to equip children and families with skills that will benefit them through grade school into years beyond when they must cook and eat independently. Dive into a juicy Philly Cheesesteak Sub – a savory and delicious Cheesesteak sandwich made with thin-sliced seitan and marinated in an in-house marinade, the trio of sauteed bell peppers, onions, and mushrooms topped with a plantbased cheese sauce served on a hoagie roll. The Mean Green Burrito is made on a double-layered spinach tortilla with cheese in between and stuffed with fresh spinach, hash browns, homemade sausage, sautéed green bell peppers, onions, garlic and jalapeños, and a cilantro-lime cream sauce to top it off. On the Menu, At Home CURATING AN ELEVATED DINING EXPERIENCE AT HOME

ARTICLE BY MELISSA GREENFIELD The art of hospitality is alive and well, not just in Las Vegas' ever-popular restaurants, but in the homes of valley residents, where lately, homeowners are enjoying entertaining in the comfort of their own homes. Indeed, according to local designers, curating a welcoming and inviting space in which to enjoy and prepare meals that feels both elevated and practical is what’s on the menu these days. “A space does much more than merely exist,” says Liz Werner, owner of Mercato Interiors, a renowned local high-end furniture store. “It influences, ignites memories, and ultimately brings joy.” The nostalgic influence of food and its preparation is undeniable, but often, there are memories just as strongly associated with the act of

preparing and enjoying it. Undoubtedly, decades later, many can still conjure up memories of sitting around their grandmother’s kitchen table, finishing that last slice of pie, and what type of chair they were seated in. While the design styles may look different, designers today are elevating those kitchens of yesteryear, utilizing more flexible space, and offering new ways to integrate the cooking process into the at-home dining experience while creating plenty of memories along the way. With the popularity of open-concept floorplans still on the rise, the labor of preparing and cooking food is no longer relegated to behind closed doors but rather incorporated into the process. Memories are often made throughout the process

of preparing a meal together or while simply keeping the cook company as they get everything ready. “Larger islands are even more popular as they are a bigger workspace and a great place to be able to sit and eat a meal or have a glass of wine while chatting with the cook,” said Werner. While Werner echoes that clean lines and functional stone countertops are still popular among home interiors, keeping those spaces, which are perhaps being used more than ever before, looking their best is also a priority in curating a well-appointed space at home. By trading the large, clunky barstools so often found in the early 2000s with sleeker counterparts that easily tuck under the lip of the bar, homeowners can also create the illusion of a larger room. But one of the easiest and most transformative ways to elevate a space is by changing up the lighting fixtures. Incorporating different shapes, materials, and levels of lighting can completely alter the look and feel of a space, particularly in the kitchen, where basic functional lighting often comes standard. “Kitchen lighting is a great way to add an organic feel to the kitchen,” said Werner. Swapping out the lighting to an elegant fixture or something that creates a warmer feel can make a room feel more finished and welcoming. Adding lights at different heights by placing table lamps on other furniture elements, including buffets and sideboards, can also provide depth and dimension within a space.

Ultimately, space and comfort are paramount in curating a kitchen and dining space that feels elevated and inviting— a space where one truly wants to spend time cooking or dining. Being able to comfortably host a gathering of friends and family, large or small, to create memories together is the ultimate goal. While walls can’t always be moved to create larger rooms, incorporating furniture and design choices that flex, when needed, can help maximize the space. “As we all know, meals are an important part of family and friends, said Werner. “Tables that

accommodate any size group are always a plus. Many tables these days have self-storage leaves, so they are easy to use and do not take up any space.” After all, nothing feels elevated about getting sent to the dreaded “kid's table” or being forced to balance a plate filled with food while sitting on a couch. Cooking at home, surrounded by friends and family, much like beautifully designed and well-appointed spaces, is about spreading joy and creating lasting memories that can be treasured for generations.

It’s a sweet life at the Crafty Cake Shop. The local shop, which began just five years ago as an online business run out of owner Tanya Solares’ home, is a true baker’s dream — filled with walls of silicone molds, shelves filled with sparkling sprinkles in every color and shade of the rainbow, containers to hold nearly any type of sweet or candy, and all of the tools a baker of any level could need. Solares began her journey as a cake decorator at Smith’s after enrolling in the pastry arts program at the College of Southern Nevada in 2008. “I was able to learn a lot and immediately fell in love with cake decorating,” said Solares. “I started decorating cakes for my friends and family over the years, but I had a dilemma: it was extremely hard for me to find the cake supplies I needed.” Solares took matters into her own hands and started the Crafty Cake Shop, which quickly outgrew its original storefront before relocating to its current location on Rainbow near Charleston. “That’s how it all started. I knew I wasn’t the only one looking for specialty cake decorating supplies, so I started small and started the online platform. Shortly after, I moved into a brick and mortar,” she said. Today the Crafty Cake Shop carries unique and trendy cake, cookie, and chocolate supplies and

also offers classes for all skill levels as well as master classes with cake decorating influencers and renowned cake artists. The Crafty Cake Shop caters to anyone interested in the craft — from hobbyists and home bakers to professionals to those who are just looking to try something new and take a class with their friends or kids. “I love working in this industry because I am able to meet new people and see people grow,” said Solares. “I’ve seen people start at beginner level and work their way up to professional in such a short period of time.” The store itself has become quite an online influencer in its own right, garnering more than 20,000 followers on TikTok, where the store posts videos highlighting new products and trending projects. Solares uses her successes to promote others in the field by hosting pop-ups to help promote small baking businesses, “I’ve met some pretty amazing and extremely talented people this way.” While her rise from an online store run out of her home may seem swift to some, Solares urges aspiring bakers to be patient. “Patience is key,” she said. “If you love something enough, you will learn the ins and outs of it. It’s just like anything else in this world; nothing happens overnight.”

It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Classic Chili In Frito Bags Ingredients • 1 tablespoon olive oil • 1 medium yellow onion, diced • 1 pound ground beef • 2 1/2 tablespoons chili powder • 2 tablespoons ground cumin • 1 tablespoon granulated sugar • 2 tablespoons tomato paste • 1 tablespoon garlic powder • 1 1/2 teaspoons salt • 1/2 teaspoon ground black pepper • 1/4 teaspoon ground cayenne pepper, optional • 1 1/2 cups beef broth • 1 (15 oz.) can petite diced tomatoes • 1 (16 oz.) can cannellini beans beans of your choice, drained and rinsed • 1 (8 oz.) can tomato sauce • Individual Frito bags.

Instructions 1. Add the olive oil to a large soup pot and place it over medium-high heat for two minutes. Add the onion. Cook for 5 minutes, stirring occasionally. 2. Add the ground beef to the pot. Break it apart with a wooden spoon. Cook for 6-7 minutes, until the beef is browned, stirring occasionally. 3. Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and optional cayenne. Stir until well combined. 4. Add the broth, diced tomatoes (with their juice), drained beans, and tomato sauce. Stir well. 5. Bring the liquid to a low boil. Then, reduce the heat (low to medium-low) to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally. 6. Remove the pot from the heat. Let the chili rest for 5-10 minutes before ser ving. 7. Scoop the chili into Frito bags and ser ve. CONTINUED >

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
