How are we entering July?  I feel like it was just yesterday that we were preparing our launch issue for May. Time is flying by. Our little one, Riley, is developing a whole new personality! She's babbling away on her own and every day we're seeing something new, it's amazing watching her grow like this.

We hope everyone's Summer is going well so far and you're getting to enjoy some time off, family vacations, and the beach. Which speaking of, be sure to read our "On The Water" article to find some other alternatives if you aren't a beach person, but to still get you out in the sun!  Last month we focused more on a Gentlemen's Issue for Father's Day. Hopefully, someone got an awesome new garage renovation from Garage Exotica, or checked out the Cars & Coffee event! (Also, please note that they have grown so fast, they actually outgrew their previous location already! Now you can find these events at the St. Lucie Fairgrounds).

Through this issue, we tried focusing on some "Summer Fun" ideas, so keep reading to learn how to make your own charcuterie board for these Summer parties, tips to improve your outdoor entertaining space, and ways to take care of your skin from the strong UV rays the Florida sun gives us.

We've had a decent amount of people reach out to us with some great ideas and things they would like to read about in these monthly issues. We're trying to incorporate them to keep you engaged and know that we hear you - and we're listening to you! We love the involvement we've seen already in just two issues and hope it continues.

Greyhounds in Motion is a nonprofit organization with a focus on transporting and rehoming sighthounds in need from the US and abroad, successfully transporting and placing 250 rescued Galgos and Podencos from Spain. We are excited to announce we’re launching a new partnership with The Haven Rescue in Ireland and welcomed 12 new greyhounds to Florida in June. Building the Board

Charcuterie boards are one of the new, trendy things at a party. Whether it’s a small circle of friends or a large event, a beautifully arranged charcuterie board is the perfect addition to any table. It’s not only delicious, but it also makes a gorgeous centerpiece!  I had the pleasure of speaking to local expert Brenda Garcia who was generous enough to give me some tips to share with you on how to make the best charcuterie board. Read these tips to make your own board, and have some fun with it!

SUMMER FUN WITH CHARCUTERIE BOARDS & TIPS ON MAKING THE BEST ONE

Tip 1 - Know Your Cheeses & Meats

What does your palette like? Something sweet and creamy, or a stronger, denser taste? Brenda suggests cheddar, as you can never go wrong with the many varieties available. There are all types of cheddar from truffle to blueberry to mild white if you want that sweet flavor. Be sure to add some color by mixing in something like a spicy pepper jack or gouda for aesthetics. In addition, mix up the meats you choose to put on your board. Grab a variety pack from the different options available at Aldi or Walmart, maybe one that offers something spicy along with a standard salami and prosciutto to satisfy everyone’s taste buds.

Tip 2 - Spread and Fill

One of the hardest parts of creating a board is aesthetics. How do we fill it without breaking the bank or having it look empty? Finding variety packs will be a lifesaver for your pocket.  Then, it’s all about placement.  Scrunch up prosciutto and spread it around. Take salami and make it into fluffy roses by placing it piece by piece over the rim of a glass in a circular motion. Cut your cheeses into a variety of shapes; cubes for piling, rectangular to layer and fan for larger spaces, and slice thicker cheeses like gouda or brie into triangles. Fresh, in-season fruits are a great addition for both color & space. Add strawberries and grapes or get creative with pineapples or watermelon for the hotter days.

Tip 3 - Pairings

In addition to aesthetics, it’s important to know what to pair together! First and foremost, let’s note that there isn’t a wrong pairing. Let your taste buds go wild and find your creative side when picking out what you want! BUT…. we can make some suggestions for the best match.

One of Brenda’s personal recommendations is pairing brie cheese with granny smith apples. A strong cheese like a sharp cheddar or parmesan could use raisins, strawberries, or grapes to help the palette minimize the strength. Fruit preserves pair well with any kind of cheese, but the basic rule is “the sharper the cheese, the sweeter the jam.”  You may also try a combination like brie and honey or fig jam with goat cheese.

Tip 4 - The End Result

Now we know some tips and recommendations on types of cheese, how to cut them, and what to pair them with, but what if we go through this and still feel something is missing? Well, that’s when the fun part begins… let’s finish it off!  Topping off your board can be the difference between mediocre and exquisite. We can add some garnishes such as celery stalks, fresh basil, or rosemary sprigs for that fancy last touch. Put that crunch on your board by adding some almonds or crackers, and fill in that gap with a ramekin filled with mixed olives or hummus.  The beauty of these boards is you can really add anything you please.  Sliced baguettes, carrots, chocolates, edible flowers, take your pick!  Not only will your end result be a masterpiece you can be proud of, but a delicious snack to hold you over until dinner is served! (Unless you’re like me, and you just can’t help but fill up on cheese.)  You can make your charcuterie on wooden trays, in small boxes for gifts, or laid out on brown kraft paper for larger spreads across your table. All in all, just get creative and have fun with it.

I thought this could be a great addition to talk about during these summer months while there are parties, gatherings, and holidays to be celebrated.  Sick of making that signature pasta salad you always make? Or swinging by Publix and grabbing some dips? We hope that you’ll try making your own board and bringing it to your next get together.  There’s such an art to creating charcuterie boards, so take these tips from a local expert and work on mastering your own.  Be sure to tag us in your photos of your boards! Boards by Brenda was started 2020 after having her first baby and leaving her job due to COVID.  Brenda has been a hard worker since she was 16 years old, so after a few months being home, she started getting that itch to get back to work. Now, I’d like to share some tips to keep your skin looking its best while we enter the hottest part of the year with the strongest sun rays.

The hot and humid weather of South Florida can wreak havoc on your skin, but by following my tips you can keep it looking fresh, hydrated, and glowing. Here are some ways to help maintain healthy, beautiful skin.

First and foremost, hydration is key! Drinking plenty of water is crucial, but you can also hydrate your skin with sheet masks and serums. Our spa offers various options to give your skin the extra hydration it needs. If you’re looking for a mask to do at home, look for something with ingredients such as azulene or lavender extract for top results. Also, you can store your sheet mask in the fridge to cool - it will feel amazing and soothe your skin.

Second, protection is essential. Sunscreen is a must, but you can also protect your skin by wearing a hat or staying in the shade. Neglecting sun protection can lead to the risk of skin cancer, darkening dark spots, dehydrated skin, and sunburn. Protect your beautiful skin with at least SPF 30 daily and remember to reapply every 2 hours when in direct sunlight. Choose a sunscreen that best works for you, as there are multiple options like powder, spray, gel, or traditional cream. We also carry a variety of options - all white-cast free and ideal for any skin type!

Third, reducing the use of aggressive exfoliation during summer is recommended, as it can strip your skin of its natural oils and increase the risk of sunburn.

We recommend no more than 1-2 times a week. When looking for a summer exfoliant to do at home, we recommend finding one with ingredients such as enzyme masks, crushed diamond exfoliant gel, or spicules!  Each one resurfaces the skin on a cellular level without damaging the top layer, causing irritation or drying out the skin. Other ingredients to choose from are pha, lactic acid,

papain, or papaya. These are gentle on the skin and the best for summer sun and heat. Whether it be romantic string lights, decorative sconces, or solar powered accent lighting, these can add drama to spaces and walkways. I highly recommend adding a dimmer to your lighting outside to help create the perfect atmosphere for any occasion.

COMFORTABLE FURNITURE - You want to create a space where people WANT to linger and connect with one another. My favorite is through the use of comfortable, yet durable furniture. Find something easy to maintain, but comfortable where people will want to stay awhile! Throw pillows and rugs help define the area and give that outdoor space, an indoor vibe. This will help create a more cozy and inviting feeling.

HOME TECHNOLOGY - Outdoor speakers and a TV to watch your favorite sports team can really make a difference in making your space more inviting. Most speakers are now available with bluetooth or Wi-Fi settings, making it easier than ever to bring them from room to room to keep the party going!

OUTDOOR KITCHEN

OUTDOOR KITCHEN - This doesn’t have to be over the top, but a countertop next to your grill with a beverage center, or small appliance to hold snacks, can make the space more desirable for entertaining. If a full remodel is not in the cards, not to worry! There are plenty of modular pieces that can work as furniture to achieve the same function for prepping and serving appetizers and drinks for friends and family.

Owner of Rooftop Cocktails, Angelique Henry, provided one of her unique cocktail recipes to prepare us for our Summer parties! Angelique is a US Air Force Veteran who had a lifelong dream of opening something of her own where she could express her creative side.  She is a big time traveler, always looking for the most unique rooftop bars to test out

INGREDIENTS:

• 12oz. Silver Tequila

• 8oz. Coconut Rum

• 2oz.  Sweetened Lime Juice

• 13.5oz. (1 can) Coconut Milk

• 25oz. Pineapple Juice

DIRECTIONS:

01. Mix ingredients and pour over ice. 02. To best complete this cocktail, garnish with lime and Tajin seasoning by rubbing a lime wedge on half of the glass rim and coating it with Tajin.

The Pineapple Coconut Margarita is a refreshing, easy to make cocktail, perfect for summer parties by the pool. The sweetened lime juice and coconut rum really takes this margarita to the next level, so don’t skip those key ingredients! @roof_top_cocktails

NOTE: Rimming half of the glass with tajin gives your guest the option of enjoying the cocktail with or without the extra flavor. Be sure to rim the glass prior to pouring your cocktail! This large batch recipe serves 10-12 people.
