ood is fuel. Food is comfort and family. Food is romance and love. I learned that food is also an adventure when I lived in St. Thomas and worked marketing an elite fleet of yachts for charter in the Caribbean and Mediterranean. The chefs aboard these sail and power boats were experienced graduates of Le Cordon Bleu and other esteemed culinary arts programs worldwide and could create four-course gourmet meals from a galley the size of your shoe closet. Chef Karin, a tall drink of water from South Africa and her partner, Captain Trevor, a blond Tom Selleck, ran a 72’ custom steel-hulled beauty out of Tortola and invited us out one weekend for an overnight. We sailed around a warm rainstorm, watched the Indy 500 in the air-conditioned main salon, and skin dived down so deep my cheeks nearly burst as I exploded up to the surface of that perfect water. More memorable yet was the lemon meringue pie Karin made that night. We passed around a chilled bowl full of egg whites, taking turns with the wire whisk until soft peaks formed. Magic. Another chef from England, Christine, would promise her guests a New York style cheesecake during charters. Imagine spending the day sailing and SCUBA diving, returning to the aft deck festooned with tropical flowers, just the right sauvignon blanc and the promise of homemade cheesecake after your meal of grilled Caribbean spiny lobster and a filet. Cream the cheese and sugar with a beater until fluffy. Add eggs and yolks one at a time until mixed well. Add remaining ingredients, beating on low and scraping bowl until smooth. Pour into cooled crust. Here’s the tricky part: Bake for 15 minutes at 450 then turn the oven down to 225 and bake for another 1 hour and 15 minutes. Turn the oven off and let the cake sit with the door open. Best made while at anchor, not under sail. Cool and refrigerate (though we have been known not to wait, enjoying a piece about 3 hours later while it’s still custardy and warm). Remove from pan and enjoy.

Information printed on packages is helpful but it’s often confusing and even a bit misleading. While lists of ingredients and the Nutrition Facts panel are there to help shoppers choose foods to fit their nutritional needs, it’s not always easy to interpret. Learning how to decode the jumble of numbers and percentages is the first step in shopping for healthier foods. “The best guide for making decisions affecting your diet is the nutrition facts panel, which is regulated by the FDA and for meats and poultry by the USDA,” said Carolyn O’Neil,

• Be aware of unhealthy contents: If looking to limit fat, sodium and sugar, pay close attention to these call outs on the label. Some foods might deliver more than your daily limit for sodium! Remember that trans fat should be avoided completely. • Look for the good stuff: A healthy diet consists of vitamins and nutrients which nutrition labels also spell out. Go for foods that are good sources of the good guys - dietary fiber, vitamins A and C, calcium, iron and potassium. • Don’t be fooled by healthy looks: While package design may illustrate people engaging in healthful activities, pretty farm scenes and adorned with “healthy” words, note that the FDA does not regulate the use of creative brand names. As always, it is the nutrition facts label where a consumer can see what’s really inside. • Trust health claims: The FDA closely monitors the use of health claims on food packaging. So, if you see wording such as “heart healthy,” you can be confident the company had to meet nutrition criteria set by the FDA. J

ohn Drambel is watching Ice Age when his friend Caroline Grebe spins into his Buckhead living room. She quickly states that she is not a guest here while giving him a big hug. “I’ve been missing him too much!” she exclaims. After the initial excitement is exchanged between the two, we sit down and I ask Caroline to tell me about her and John’s friendship, to which she responds, “We have a really BIG friendship.” The two first met due to Caroline being moved from an overcrowded classroom to John’s class in first grade, a frightening situation for any seven-year-old. “I was scared but John told me with his computer ‘I’ll be nice to you. It’s ok and don’t be scared. I’ll help you this year.’ I 14 PerimeterNorthLifestyle.com | February 2014

knew then that John was a nice guy and a nice friend,” Caroline says. The friendship was cemented by playing airplane games on the playground. Caroline then chose to be John’s helper by pushing him wherever he needed to go, assisting him with his lunch and helping the school nurse with his medicine. John and Caroline’s parents are quick to point out that the friendship is a genuine, mutual friendship, not one of pity or charity. Some of their other classmates are kind, soft or mothering, but Caroline treats John as her equal and she makes sure people understand that he can’t move. John has cerebral palsy, a disorder that affects over 800,000 adults and children in the US, and has used a wheelchair since he was an infant.

During a recent hospital visit, John’s brother and sister were apprehensive about hugging him but Caroline climbed right into his bed and told him “you’re braver than any boy I ever met, that’s for sure.” She also brought him a Green Lantern toy, “because he’s my superhero.” She explains that John has cerebral palsy, “but I call it ‘terrible palsy.’ I feel really bad for my friend. Some days I get so sad

when I’m swinging and he’s just sitting in his chair. So one day I was thinking about how I could help John and I thought about how I could raise some money.” She first sold some of her old toys to raise funds but decided she would need to figure out a way to get the ‘grownups’ money.’ “I thought ‘what will parents spend money on?’ and then it hit me: ‘Wine!’ I sat down with my mom and dad and told them my plan.” Caroline’s family planned a wine party at their home where guests made a donation to attend while she circulated serving plates of food.

One guest even wrote a check for $500. In a single evening, Caroline raised more than $3,000 for John’s foundation, Let’s Cure CP! The pair has a secret ‘nose’ shake as well as communicating with ‘yes’ or ‘no’ high fives and hand slaps. Caroline comes to all of John’s physical therapy appointments and has recently spoken at an area book club event about John. They both love mac & cheese, science class (because they get to work with a partner) and swimming at John’s house.

I

’ll admit it! I have a serious sweet tooth, a love for craft cocktails, and the ability to turn things up during the weekend. Seriously. I would be lying if I said I didn’t enjoy having the spice in my life. A self-proclaimed wine enthusiast and foodie, I don’t mind paying the premium for a good time out. Truth is, I consider myself to be like other fellow Atlantans seeking to strike that balance between moderation, fun and healthy living. Besides practicing hot yoga and eating mostly paleo during the week, I by no means practice or advocate living life in the ‘restrictive lane.’ However, as someone who considers themselves to be a conscious consumer, what I will say is this: I pay serious attention to what’s on the menu when dining out. Everything from food source, means of production and final presentation. My loyalty and support for those restaurants utilizing regional and statewide farms and growers for produce is ten-fold. Why? While I enjoy supporting local economy, I also find great value in contributing to the growth of restaurants who are just as concerned about what’s going in my body as I am. The restaurant’s rustic decor is craftily infused with environmentally sustainable elements including repurposed wood; their hand crafted bevvies, and locally sourced menu items add to the experience, making for a one-of-a-kind Southern dining experience. Co-owner and Executive Chef Drew Van Leuvan successfully does the food enthusiast’s palate justice with robust and seasonal menu items, but knows how to delight the palate of paleo and gluten-free enthusiasts looking for a sensational weekend experience. If you’re looking for a clean eat, try the Crisp Duck Confit which includes spaghetti squash caponata and toasted almonds. Seven Lamps is located at 3400 Around Lenox Rd. RECOMMENDED PALEO EATS: Love em’ or leave em’, but Seven Lamps is currently serving up some delicious oysters on the half shell that are absolutely perfect as a starter to any entree. n the 30 years since Melissa Bryson and Denise Raymond met in their eighth grade homeroom at Ridgeview Middle School in Sandy Springs, they have bonded over many things, including their love of cooking and entertaining for their families and friends. Melissa and her siblings were ‘sous chefs extraordinaire’ helping their mother in the kitchen throughout childhood. Denise credits her sister with cultivating her love of cooking, beginning with her gifts of a Bon Appetit subscription and a three ring binder of recipes, followed by multiple informal cooking lessons. After years of watching others and experimenting, Melissa (now in Brookhaven) and Denise (in Smyrna) are now both just as comfortable making meals for two as they are making meals for 50 and

they want to share their knowledge. Together they have created McNack’s Kitchen, a cooking and entertaining website featuring tons of amazing recipes and fabulous party tips. The website also focuses on entertaining. Melissa and Denise want to teach people to throw their own parties by offering party coaching services. They can help you decide on the space and style of your party as well as take into account your comfort level of cooking to help you plan a menu, determine your party guests, and provide you with lists of everything you need right down to any last minute steps. But these women don’t stop there! They also offer cooking classes, and will soon be launching an upcoming monthly menu subscription service. In addition to their love of cooking, their love of football has led the women to collaborate on another website adventure called Flip the Field. Growing up, the two played football with their siblings and neighborhood kids as well

as watched the games on television, but found that some of their friends didn’t understand the game. Flip the Field is for women to learn about football in a fun and light-hearted way and hopefully allows them to enjoy more time with the men in their lives. They think most women can find something to embrace about the sport, too. • 1 to 2 long, oval-shaped seedless watermelons • Cutting board • Green dry erase marker • Kitchen and paring knives • Melon baller • Assorted cookie cutters (X, O and heart shapes), if desired • Wooden skewers • Toothpicks • Strawberries • Fruits to make fruit salad filling • Large bowl and spoon Wash watermelon under cool running water and pat dry. On cutting board, place watermelon on its side and cut off 1/4 to 1/2 inch from stem end being careful not to cut too deep into white part of rind to provide sturdy base. With marker, draw scalloped line around width of middle of watermelon. Use paring knife to cut along marker line, then separate the two halves. Use melon baller to scoop out watermelon for your base. Cut top half of watermelon in half and use dry erase marker to draw large set of lips on one half. Use paring knife to cut out lips. Once you have general shape, carefully carve away rind. Use paring knife to shape lips into more finished look. Cut remaining 1/4-inch-thick slices and cut hearts, X’s, O’s or other shapes, discarding rind. Attach lips to top of base using wooden skewers and toothpicks. Slice strawberries lengthwise into 1/4-inch slices, keeping strawberry tops on for decoration, if desired. Attach slice of strawberry with green top to center of each scallop using toothpick. Use rest of strawberry slices in fruit salad for fruit bowl. Place fruit bowl on serving platter, fill with fruit salad and garnish with slices of fruit cut into hearts, X’s and O’s, if desired. February 2014 | PerimeterNorthLifestyle.com 23

An Open Letter to the Romantics of Atlanta WORDS CHEF DAVID BERRY

I

’ve taken a poll and, while the data is informal, it is definitive. The data shows that most people equate Valentine’s Day with romance and candlelight. This is not a stop-the-presses news bulletin. However, while you may think that going out with your significant other for a candlelight dinner at a fancy restaurant makes for a successful Valentine’s Day, a chef might disagree. February is known for Valentine’s Day, the day for lovers, which can be a stressful scenario for some. Getting reservations at the right restaurant can sometimes be daunting. Dealing with the less-than-intimate setting at the restaurant with all the other couples crammed into the space near you isn’t, in my opinion, very romantic. Don’t get me wrong, restaurants are happy to have you in for Valentine’s Day. If you find yourself feeling this way, I suggest you follow these simple instructions. I propose that you stay in and prepare a meal yourself. I know I’m a chef and telling you to stay home. Am I crazy? No, I want you to have the romantic evening you have envisioned for yourself and sometimes the stress of going out can be more effort than it’s worth. That said, with a nominal amount of planning, you can enjoy a romantic meal for two in your home. You can devise, prepare and execute a very successful meal. Listen to your date and determine their food likes ahead of time. Do some research, but keep it simple. For example, a roasted butternut squash soup could be a very simple first course and could be made several days ahead and heated up that evening. Place a dollop of whipping cream with honey, cinnamon and a pinch of nutmeg on top of the soup and let it melt on the surface. A second course should be something that can be finished quickly on the stove or that can

be pulled from the oven. It’s cold outside, so grilling is probably not the best choice and try not to go too heavy. You don’t want your date to be stuffed. Tournedos of beef, a sauté of scallops, or shrimp, are great choices and can all be served with a compound butter that again can be made well ahead of time. Roasted root vegetables and tubers are an easy side for any of the above. Cauliflower, brussel sprouts, parsnips, fingerling potatoes, baby beets, turnips and rutabagas are great. They can all be peeled, tossed in good olive oil, kosher salt and fresh ground black pepper, and then roasted until tender. Sauté some fresh spinach and you have a great meal. For the final course, you can’t forget the chocolate. Chocolate pots de creme are fun and easy to make. Just remember to make some small crunchy cookies to go with them. Take your time planning the menu. Find good recipes and ask for advice. Once you have chosen the menu, choose wine for each course, but remember that champagne is always good! Take time to set the mood or tone for the table. Today is the day to break out your good linens, tableware, flatware and crystal. By all means, get flowers and some candles to make it special. If you have prepared in advance, you can take your time and enjoy your time together during dinner and between each course. At the end of dinner, turn off the oven, put the dishes in the sink for tomorrow and blow out the candles. It’s Valentine’s Day, so write your own ending.
