WILLOW CREEK PASTURES PRODUCES GRASS-FED BEEF AND LAMB WITH COMMITMENT TO SUSTAINABLE RANCHING

IT’S A BRIGHT, MILD MORNING IN SOUTH PARKER A FEW WEEKS BEFORE THE FIRST OFFICIAL DAY OF SPRING, AND 21-YEAR-OLD RANCHER LINUS LEPPINK LEANS ON A SHEEP PEN, CHECKING OUT ALL THE SEASONAL ARRIVALS. There’s one—a tiny, black furry thing—curled up in the dirt. Over there, several little white ones. All of them, he says, must have been born the night before. Linus is taking a break from an already busy morning—he’s been checking some ewes weaning their lambs on another pasture—to meet with his business partners, Konnor Dehmlow, 21, and Nick Trainor, 36. Together, they operate Willow Creek Pastures, their twoyear-old venture that produces grass-fed beef, grass-fed lamb and pork, all raised, processed and sold within a 50-mile radius. “You can drive by this place any time of the day and see what you’re going to eat, what you’re going to put on your table,” Nick says. “We like that face-to-face interaction with our customers.” It’s that local and sustainability movement they hope will get customers interested, and the personal customer service and high-quality meat they hope will keep people coming back. In addition to its 100 percent grass-fed offerings, Willow Creek now produces some grass-fed/grain-finished meat for their customers who prefer the traditional taste. They’ve partnered with Prost Brewing Co. in Denver, and each week pick up about 12,000 pounds of spent barley and wheat from the beer making, which would have otherwise gone to the landfill, to use in the grain finishing.

Nick jumped at the chance to mentor young, inexperienced city kids. Cathy Schulze and Maggie Layton are pioneers in the formation of the Downtown Business Alliance's Creative Committee. The long-term goal is for Parker to be designated as an Art District. Both of their shops offer art in various forms, and they intentionally source a variety of items that are good for the environment. Cathy just celebrated Meadowlark's one-year anniversary on April 1. Maggie opened Honeywood Home in December. Cathy sets a standard for quality and uniqueness in all of her items. She focuses on handmade products, and they all speak to her, whether they are recycled, earth-friendly or the company making the item gives back. "Everything has a story," she says. "When people pick something up and say 'I have never seen anything like this,' I have a win." Inside the Meadowlark, Dolan Geiman's Box Prints not only feature reclaimed wood, salvaged metal and vintage papers, but the prints themselves have images of found items, creating a collage effect within the main image of a fox, a moose or a bird in its nest, for example. Ecowool and eco-cotton throws are made from remnant cotton and wool, and 100 percent natural soy wax from U.S soybeans is used in clean burning candles. Other popular items are lights and high-powered smart charging products for homes from Conway Electric. Product sales create jobs for American workers and give back by helping low-income families pay electric bills.

IT IS ABOUT THIS TIME EACH YEAR THAT I REALLY START ITCHING TO GARDEN. The days are getting longer, the sun is warming the ground, and I want to get outside and start digging. However, we all know that spring in Colorado is finicky and the rule of thumb is to wait to plant outdoors until after Mother’s Day. So, this year, I decided to go with the next best thing: houseplants!

CHOOSING THE RIGHT VARIETY I have a young daughter and two cats, so it was important to find the right plants to keep my family safe. I also have large windows, but surprisingly, not a ton of direct light. Finally, we live in Colorado, where it is quite dry, so low water varieties were a must. These are the three big things to take into consideration when choosing your plants: safety (for children and pets), light and watering needs. Once you have decided on each of these, you are ready to shop! MY CURRENT FAVORITES Not only do houseplants meet my winter/early spring gardening craving, but they also provide an array of other benefits. Houseplants help to clean and filter the air, which is especially helpful in the cold and flu season. They even can remove chemicals and other airborne pollutants found in cleaning supplies and beauty products. Spider plants are great for cleaning the air and are easy to grow. They require indirect light and need water once the soil is dry again. They also grow quickly, and you can propagate more plants once they sprout baby spider plants! My other current favorite is the snake plant, also known as mother-in-law's tongue. This awesome plant requires low light and low water, making it difficult to kill, which is always a bonus!
