he word gratitude comes up a lot these days, especially in yoga class. I’ll admit I used to hear the yoga instructor talk about gratitude as an “intention,” and I’d immediately think, “Oh yes, I need to be grateful today!” Cross-legged on my mat, I’d send a quick but sincere prayer of thanks out into the universe.

These days I don’t need reminders. These days I am grateful all day, every day. Ironically, some might think I’d have less to be grateful for today than one year ago. The past year has seen my husband battling Stage 4 prostate cancer, my oldest daughter leaving for college (11 hours away), my other two daughters moving further away from the nest, and just recently, a terminal diagnosis for our beloved pup Bella.

No matter where things go from here for our tight-knit little family, we all revel in the time we spend together. Ron’s not working these days, and I’m able to do more of my work from home. This gives us rare and precious moments for impromptu walks when he’s feeling up to it. Plus there’s a renewed focus on nutrition, home-cooked meals and family dinners. Each of these moments we spend together, with our family, including our beloved Bella, are more precious than gold. Through good days and bad, we both ask ourselves, “Who gets all this? How did we get so lucky?” Sometimes I wish it didn't take a "yin" to fully embrace the "yang," but for all of it, I am grateful. It's in this spirit of gratitude that we put together our November issue. We hope you enjoy this month's stories of giving back, holiday foods, snow sports and local artists. And, oh yes — be sure to support Parker's small businesses on Shop Local Day November 25!

That’s what Ken and Bambi Dixey did after their two youngest boys

tragically died from carbon monoxide poisoning while swimming off the deck of a houseboat in 2000. The boys, Logan and Dillon, were avid baseball players, so it was natural for the Dixeys to connect that passion to their boys’ legacy. “We had this money from people who had donated and were asking if there was a cause they should give to,” said Ken, a dentist who is now semi-retired. “We started talking about doing a little baseball field with the donations.” The Parker Water District provided them with 40 acres along the Reuter Hess Reservoir, enough for five fields, and a company designed the fields for them. In 2006, the Double Angel Baseball Stadium became a reality, with two fields: Dillon Field and Logan Field. The Dixeys have since opened the door for professional manage-

The program is relatively new. “We really want to get the word out,” says Karen Dunkel, manager of the Double Angel Foundation. “We’d like to give one to a student from each of the four high schools in Parker.” The next time you’re driving down Chambers Road and pass the Double Angel intersection, you might remember with gratitude a steadfast family who, through tragedy, triumphed to build a place for us all to come together, a place where young people can learn today and grow toward a strong future. Perhaps it’s no coincidence that this lyric from Katherine Lee Bates' “America the Beautiful” was penned in Colorado; here we are, 134 years later, and those amber waves have lent themselves to the local beer crafting, testing and connoisseur-ing that has become a legitimate Colorado past time. Our state ranks second as the state with the most breweries, and that makes local beer-tasting especially fun, if not convenient. Enter Jake’s Brew Bar on Main Street in Littleton, which keeps a constantly rotating selection of 36 Colorado craft beers and ciders on tap. On a recent autumn afternoon, our humble team of four taste-testers convenes at Jake’s. Opting to sit in the courtyard behind the bar and enjoy some of the fading warm fall weather, we sample four distinct craft beers and a cider that bar owner Vanessa Menke has chosen for our sampling session. h, the holidays. We’re in the throes of anticipating, strategizing, shopping,

cooking, photographing, posting, tagging, celebrating and more. Gotta love the delicious distraction of the holidays, but before the six-week red, green, and sparkle extravaganza of Christmas/New Year’s Days/Eves, there’s an understated yet meaningful little holiday called Thanksgiving to celebrate. Thanksgiving is different. At the heart of the holiday is gathering. It’s the pause and deep breaths amidst a whirlwind of glitter. While blessings are the reason, and food is the star, presentation sets the tone for this time-honored tradition. And there’s nothing that makes a delicious spread more inviting than a fabulous table. The details of such a table: the table itself, the linens, dinnerware, flatware, serveware, barware, accents, etc., are collectively called the tablescape. Successful tablescapes are balanced, harmonious, personal, captivating, appropriate for the meal, tailored for the guests, multi-dimensional, tactile, and of course beautiful. When a friend with a condominium in Grand Lake, Colo., invited

me out for a visit one winter, I jumped at the chance. I had never been to the Rockies. The closest I had been to mountains were the Smokies, mere cousins of what stretches across Colorado, Montana and points northward. As I drove up from Denver westward, the Rockies greeted me in the distance. Since I had flown into Denver International and was driving a rental, the altitude also greeted me, first with Denver’s famed mile of height, then more thousands as I headed up U.S. 40, across Berthoud Pass, through Winter Park, Fraser and Granby.

hen artist Julie Janney takes her brush to acrylic paint and works it on the canvas, she finally feels free. “I’m a perfectionist by nature,” Janney says. “I pressure myself to be perfect. But when I paint I can let it all go and just work with the acrylic and get in the zone.”

Although she has traveled the country as the wife of an Air Force pilot, her subjects are “true to my youth” in Colorado, she says, full

of poppies, wild flowers, and aspens, she describes her style as “impressionist meets abstract… “My acrylic color palette is bold, bright and demands attention. Color carries some of the emotion in my art, but the use of a palette knife really helps me release my thoughts, letting go.”

Besides the release from perfectionism, Janney’s personality infuses her alluring stills. “I really like pretty things; I like to wear make-up and I like to wear pretty colors, my house is vibrantly decorated,” she explains. “I am attracted to things that are happy and pretty.” Janney earned a fine arts degree with an emphasis in graphic design “so that I would be employable,” she says, “and I really like being around people. I didn’t think I had the personality to be in a studio by myself.” She had found some early success in the field when her first child was born, thus ending her graphic design career—but not her life as an artist, where the two intermingle. “When you look at my art you’ll see a lot of broken down elements, which comes from my graphic design training,” notes Janney. Her color pallet has changed over the past eight years with life’s evolutions. “When we were in Tuscan and my husband was being deployed to Afghanistan, there was more black in my pallet,” Janney recalls. “When we moved here, it was happier. We were done with the military and he was happy—I started to brighten up with more bright, bold colors,” she reflects. “I literally stop to smell the roses and take pictures when I’m walking my dog.” Janney’s career as an artist continues to blossom, with stateside showings and art on display internationally, so it would seem there will be many more flowers to smell for some time to come. HOMEMADE CHILI CHEDDAR CRACKERS

Ingredients •

8 oz. (1½ cups) unbleached, all-purpose flour

1 tsp granulated sugar

•

1 tsp salt

•

1 tsp coarsely ground black pepper

•

2 tsp ground ancho (or any flavor) powder

•

8 oz. grated sharp cheddar (approximately 3½ cups of cheese)

•

8 oz. (2 sticks or 1 cup) of butter, cut into cubes

•

2 tsp cold water

INSTRUCTIONS

Add the flour, sugar, salt, black pepper and chili powder to the bowl of a food processor fitted with the chopping blade. Pulse

Line two baking sheets with parchment paper.

Sprinkle some flour across a clean work surface. Remove dough from the refrigerator, unwrap and lay it on the work surface. Dust the top with additional flour. Roll the dough into a thin sheet, approximately ⅛ inch thick. (NOTE: You may have to let the dough soften on the counter for a few minutes so butter can soften before rolling out.)

Run a spatula underneath the dough from all sides to loosen any dough that's stuck to the work surface. Cut out the crackers with a small biscuit cutter or shot glass. Lay them on the baking sheets very close together, but not touching. (You can
