Born and raised in Orange, I cherish our weekly farmer’s market at Chapman University every Saturday. From crafts to yoga, fresh produce to live music, it offers a delightful mix. Strolling through the farmer’s market, listening to the live music and connecting with friends is by far the best hidden gem in town!

My favorite thing about Orange is the people! This community is filled with locals who are down to earth, and focused on building relationships and connections. My favorite hidden gem is Country Roads Antiques. I love to go shopping and see bits of history and find a special treasure for my home that has been loved by others too.

Orange is filled with a loving and supporting community with tons of opportunities to get involved. Everything from the Orange Chamber - great for business professionals and entrepreneurs, to the Orange Rotary - where one can give back to the community. There’s a club for anyone that wants to be involved.

A local Jazz singer who used to busk in Central Park and the High Line by day and sing in Manhattan jazz clubs by night, Jill loves creating an element of fantasy, escapism, and musical time-travel when she writes new tunes and performs classics. Despite a shy upbringing, Jill’s transformative journey across the stage unveiled her potential for marvel and bravery. Guided by a devotion to show tunes, she refined her craft at the esteemed Musical Theatre Academy of Orange County. There, she acquired skills spanning singing, acting, dancing, and stage presence, all of which remain integral to her performances today. Following her enriching experiences in New York, Jill embraced jazz, painting scintillating melodies and standards from the Great American Songbook. The timeless influences of Judy Garland and Ella Fitzgerald infuse her performances with nostalgic allure, while the vibrant rhythms of New Orleans jazz inspire a dynamic energy. Gina’s art shines as she weaves a journey of passion and dedication through her paintings. From a young age, she was drawn to portraits, each brushstroke carrying a piece of her soul. Despite her academic path taking a different route, her love for portraying people remained strong. In the ups and downs of life, Gina found comfort in watercolors, a medium that holds charm and mystery. Her canvas speaks with a style that reflects her spirit. Everyday scenes come alive in her portraits, inspired by what she sees around her. With a focus on strong compositions, lighting, and depth, her colors tell stories and capture feelings. From an early age, Kim loved music and has played piano since the age of 4. Her journey into music took off when she met her mentor, Vivian Sigbornsen, in high school. “Being part of the band and choir gave me a sense of belonging during these years,” said Kim. Competing as a solo pianist, she learned a lot from feedback and bonded with her peers, aiming for excellence. Kim’s music style is diverse. She’s trained in classical music but also plays for local gigs and works as a freelance musician. She’s flexible and can play anything from classical to rap and more. As a lounge pianist at The Anaheim Hotel, she even accommodated unusual requests with skill. During the pandemic, Kim explored country music as her dreams of playing songs from different cultures and genres started to come to fruition, connecting with a wide range of people. She is the owner of Pacific Conservatory, a music school here in the city of Orange. She uses music and activities to help young people build their self-esteem and avoid negative paths. Music education, to her, has the power to prevent problems and create positivity. “Failure is a big deal to way too many people. THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cureall, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.

CULINARY CREATIONS | FOOD + BEVERAGE 24

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS: INSTRUCTIONS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling:

Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE

This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.

INGREDIENTS: INSTRUCTIONS:

• 1/4 red onion, sliced

• 2 tablespoons brown sugar

• 1 tablespoon olive oil

• Sliced sourdough bread

• 1-2 tablespoons butter

• 4 ounces Brie, sliced

• Fig jam, or preferred choice of jam

• 1 Granny smith apple, sliced

• Arugula

• Thinly sliced ham, optional

Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

APPLE CHUTNEY

This Indian-inspired dish is the perfect fall topping for pork chops and also pairs nicely with ham. This is so easy to make and will fill your kitchen with the aroma of fall.

INGREDIENTS:

• 4 tablespoons butter

• 2 cups Granny Smith apple, chopped

• ¼ cup pecans or walnuts

• 1/3 cup apple juice

• 3 tablespoons brown sugar

• 3 tablespoons dried cranberries

• 1 teaspoon lemon juice

• ¾ teaspoon cinnamon

• ½ teaspoon nutmeg

INSTRUCTIONS:

Heat butter in saucepan, then add remaining ingredients. Cook over medium heat until the sauce has cooked down and the apples are tender. Serve over pork chops. Enjoy!

• ¾ cup dark brown sugar

• 1 teaspoon cinnamon

• ½ cup cold butter cubed

• 1 cup oats

• ¼ cup pecans, chopped

INSTRUCTIONS:

Preheat oven to 375 degrees. Lightly grease pie plate or baking dish. Mix all filling ingredients together and place in baking dish. Prepare topping by combining the flour, brown sugar and cinnamon in a bowl. Cut in butter using a fork or pastry cutter. Stir in oats and pecans and sprinkle over filling until covered. Bake for 45 minutes and serve with caramel drizzle and vanilla ice cream.

APPLE CIDER BOURBON

This easy fall cocktail is festive and delicious. Served hot or cold, it is a crowd pleaser.

INGREDIENTS: INSTRUCTIONS:

• Apple cider (hot or cold)

• 1 ½ ounce bourbon or whiskey

• ½ ounce honey

• ½ ounce lemon juice

• Cinnamon

• Apple slice

Add all ingredients in a cocktail shaker and shake. Serve over ice and garnish with cinnamon stick and apple slice. Enjoy!

BAKED APPLES

Baked apples is a great fall side dish or can also be the perfect appetizer to share with others. This dish is surprisingly savory, is simple to make and looks impressive.

INGREDIENTS: INSTRUCTIONS:

• 3 apples, your choice of variety, halved and cored

• 3 tablespoons butter

• ¼ cup brown sugar

• ½ cup apple juice or apple cider

• Fresh rosemary, chopped

• Brie, sliced

• Chopped walnuts or pecans

Preheat oven to 400 degrees. Slice apples in half and remove the core. Set aside. Heat skillet and melt butter. Add brown sugar and lightly stir. Place apples face down in the skillet and add apple juice and a sprig of rosemary. Allow apples to cook on stovetop for 5-10 minutes. Flip apples over and top with Brie, chopped walnuts and chopped rosemary. Bake for 6-7 minutes or until the Brie is melted. This is best served warm and is easy to reheat. Enjoy!

Chef Dennis Prescott Talks Falling in Love with Feeding People and the Connection Food Creates

Whether you know him from the Netflix hit Restaurants on the Edge or from his absolutely mouth-watering food photos as @ dennistheprescott on the ‘gram, this former-musician turned internationally-renowned Chef is an amazingly talented, thoughtful, and globe-trotting force to be reckoned with. When it comes to inspiration for creating experiences around food and your community, as well as creating travel bucket lists to some of the world’s most unique and delicious destinations off the beaten path, Chef ‘Dennis The Prescott’ is a culinary change maker whose feed you’ll want to feast on

Originally an aspiring musician, Canadian-born Dennis Prescott’s journey began while in university with a single invitation from another solo musician who asked him to tour with them around the US. This eventually took him to Nashville where they began making records and pursuing their musical dreams.

Yet, in the midst of all of this, Dennis was not taking care of himself — eating take out, dollar menus, etc, had become a way of life. A friend had a “come to Jesus” moment with him and stressed that he needed to start taking care of himself. Having no idea exactly what that meant or how to do so, the advice was simple: “You need to start eating better.”

The Start

“Go to the library and borrow some cookbooks,” his friend suggested. Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time.

Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment.

“I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment.

What eventually followed were 13 episodes over nine months where the Restaurants on the Edge team traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland.

Travel Recommendations for Foodies

“Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.”

Dennis also highly recommends Costa Rica, Hawaii and Finland.

“Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.”

Restaurants on the Edge is important and meaningful to Chef Prescott because it tells stories of hope and joy and redemption around the kitchen. Oftentimes the food space can be very stressful, but he believes that at the end of the day, people just want to spend time with other people that they love.

One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’

Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there.
