When my father remarried, Mums must’ve known that the best gift she could give her children was to encourage a relationship with our stepmother and a continued one with our father. And my stepmother, having no children of her own, took a huge leap of faith in joining a very tight-knit family. That willingness was a testament to my stepmother’s ability to find the best in every situation.

Around Town lives of those who have battled cancer, to inspire hope by sharing recent accomplishments and progress, and to remind everyone that fighting cancer is a year-round priority. The evening also includes the Survivors Lap, the Caregivers Lap, the Luminaria Ceremony and the Closing Ceremony.

Leading the charge for Team Bailey is 10-year-old Southlake resident Bailey Koewing, a leukemia survivor herself who is determined to raise money for cancer research with her belief that “everyone deserves to be a survivor.” Bailey was diagnosed with Acute Lymphocytic Leukemia (ALL) when she was 4. Two years, two months and two days later, she finished her treatment. Her cancer is now gone, but it has given Bailey a drive to help support any research that helps the people with cancer.

Last year, Team Bailey raised just over $4,000 and is shooting for $5,000 this year. The team’s fundraiser is a green, black and purple rainbow loom bracelet that sells for $5. Find Team Bailey on Facebook under: Team Bailey Southlake Relay for Life.

BICYCLE RACKS AROUND TOWN The good folks over at Mad Duck Cyclery teamed up with the City of Grapevine and Baylor Medical Center to provide and install bicycle racks around the city. Various establishments, including Esparza’s city buildings, BreadHaus bakery, Baylor Medical Center, and many more spots around town are bicycle friendly. The specialized racks accommodate all

types of bicycles, so whether you’re on your cruiser, a road bike or a mountain bike you’ll be able to pedal up and use the handy racks scattered around the city.

A Cut Above Cozy Elegance in Fine Dining at Kirby’s Steakhouse

I

love everything about fine dining. From the orchestrated etiquette to the meticulous presentation of food, there’s a glamorous and alluring exclusivity associated with upscale dining.

But I also enjoy the laid-back nature of casual bars and restaurants, places filled with colorful chatter where the staff knows you by name.

Kirby’s in Southlake happens to blend the best of both worlds: the atmospheric elegance and cuisine of upscale dining paired with the relaxed comfort of a casual establishment. All the fancy without the fuss.

Local residents will immediately recognize the name, as Kirby’s has invested over a decade’s worth of time in amassing a respectable following.

Dimly lit, its bar and dining room are filled with an aura of serene coziness that could potentially keep you there for hours. For a lot of customers, it seems to be a second home.

The menu, while brief, makes an impact with its refined list of appetizers, soups, steaks, chops, and seafood, and that’s half of what keeps people coming back.

The Maryland-style crab cake features oven-baked jumbo lump crab served on top a thin, slightly tangy and buttery beurre blanc sauce. The meat is pillowy soft, a delectable indicator of things to come.

Another appetizer, the grilled lamb chops, have peppercorns clinging to one side while each chop rests lightly on a creamy mushroom sauce.

Browse the specials while you’re there, which change from time to time. The jalapeño and bacon mac and cheese has become a recurring staple, however. Made with three cheeses – Parmesan

and two types of cheddar – it’s a savory dish with the subtle flavor of jalapeño and a spiciness that tickles the throat for a second and lingers there for a few more.

Without question and as expected, the steaks are the best of what Kirby’s has to offer. Tender, juicy, and perfectly seasoned, their filets are meaty perfection with finely charred edges.

Several of the steaks include one of three signature sauces: a slightly sweet and peppery Cognac pepper sauce, a béarnaise sauce, and my favorite, a Roquefort sauce that is cheesy decadence A la carte options include sauteed mushrooms, grilled rosemary zucchini, mashed potatoes, and creamed spinach that feels like a home-cooked side dish.

The staff is the other half of what has made Kirby’s such a local favorite. It’s clear from online reviews that many customers know the staff by name and vice versa. Customers return every week to

experience that rare fusion of elegance and comfort I was referring to earlier.

Just ask Max or Teddy, two of Kirby’s bartenders who seem to be in tune with each customer’s personal preferences. That’s the epitome of class.

I could go on and on about this place. I could keep telling you about the food; I could keep raving about the restaurant’s inviting nature; or I could just keep talking about the attentive staff over and over.

But I have a better idea: Go to Kirby’s and experience all of that for yourself.

When it comes to dining, no one likes to eat out more than Joseph Daniel. Formerly, he covered the DFW dining scene for the Star-Telegram as a freelance restaurant critic and food photographer. Having lived in Mexico for a decade, he has an affinity for Latin American cuisine. His latest obsession is the food of Japan, especially sushi.

tep into the Grapevine Olive Oil Company on Main Street and you’ll wonder if you’ve stumbled into an artisan’s shop tucked away on a side street in Tuscany. A quaint little shop that evokes the earthy scents and feelings of a countryside Italian cucina, the Grapevine Olive Oil Company is a culinary ‘must’ in the area. With stainless steel vats that house the oils, a rustic décor, olive wood bowls and cutting boards, French dishtowels and handmade Italian pottery, the store is filled with Old World charm.

“I just knew Grapevine needed an olive oil shop,” says Owner Rebecca Knop, who opened the store in 2010 after seeing a similar establishment while traveling. “With the focus we have on wine here in town, having the addition of an olive oil store just seemed like a good pairing.”

The shop features an international selection of more than 60 premium olive oils, from South Africa to Australia and Europe as well as California and Texas. Since olives are harvested at varying times around the world, Grapevine Olive Oil Company usually receives the oils within six months of pressing.

The selection of flavor infusions doesn’t change so you’ll be able to return for your favorites again and again, it’s the base oils that change often so you’re going to always get the freshest oils.

Knop sources from local growers here in Texas, as well as small producers in California and Europe.

shelf,” she says. Some of the products she carries through the Go Texan program include gourmet pasta, spices, salts, spreads and jams. She says that it’s always fun to see the out-of-towners and tourists come in the shop and take home a taste of Texas.

And the local customers who come in the store aren’t always familiar with olive oils and the many ways you can use them in cooking or as dipping oils.

“We see a lot of people come in who aren’t really olive oil people when they come in,” she says. “But it’s neat to watch them enjoy and experience the flavors.”

For the regular customers who consider themselves olive oil connoisseurs, they’ve curated their favorite flavors but Knop says they love trying out new ones as they come in.

“I love seeing people get as excited about olive oils as much as I do,” she says. “It’s great to have them walk out of the door with some of their favorite flavors and also some new ones, knowing that they’re going to home and cook with it, whether they’re grilling, sautéing, or just using it as dipping oils with balsamic vinegars.”

Knop, a single mother of two kids ages 5 and 8, says her children are picky eaters but not when it comes to the olive oils and they have really refined their olive oil tastes after trying out many of the flavors she brings home. “It’s fun to see how many other kids who might be reluctant to trying new foods really like the olive oils—especially the strawberry or fruit-infused flavors.”

The store carries all extra virgin olive oils with the exception of the walnut oil, as well as two varieties of black and white truffle oils and those also have an extra virgin base. In addition, you can find a selection of light and dark balsamic oils to pair with the olive oils.

When choosing a bottle at the Grapevine Olive Oil Company, you first select your flavor. The store has breads on hand for you to do your own taste test. Once you choose the flavor—or multiple flavors—you choose the type of bottle you’d like from a variety of sizes and shapes.

The store can put together gift baskets and also hosts private tastings store events that lets customers new and old try out the various flavors and learn ways to cook with them at home. Their website features new recipes each week.

MARTINI TIME

Making the perfect dirty martini just got easier

E

ver tried to make the ‘perfect’ dirty martini? Not so easy, right? But when it’s mixed well … it’s oh so delicious.

1888 Dirtiest Martini Mix is here to help you get the perfect dirty martini every single time.

Using whole Spanish olives and pressing them to extract the juice, 1888 is the only martini mixer that uses pure olive juice.

“That’s it, no additives, no fillers—just pure olive juice with no salty aftertaste,” explains owner Kenneth Hamburger, a 1997 graduate of Grapevine High School.

“When I drink a dirty martini, I want olives in it, not saltwater.”

1888 imports olives from Seville, Spain, grown on trees that are nearly 250 years old. Using a one-ton press to extract the juice, it is then bottled in his 88,000-square-foot production facility in Dallas. Large refrigerators keep a fresh stock of olives on hand in order to satisfy the large orders and re-orders as they come in. The first production run yielded 600 bottles; due to the popularity and demand for the product, a production run these days means turning out anywhere from 7,500 to 9,000 bottles.

At last year’s Los Angeles International Spirits Competition, 1888 Dirtiest Martini Mix took home three Gold Medals—the first martini mix to be awarded such a distinction—including one for Flavor with a 92 rating.

One of the great things about the mix is that it can also be used for cooking. The antioxidants contained in olives are good for you, so you might even consider your dirty martini healthful. Customers are also using 1888 beyond the bar glasses and cooking with the olive juice because it is so fresh.

“Marlene, “I really feel like God is bugging

me,” she replies.

“Well, then do something.”

This, if you are Southlake’s Kyle Eldred, is how the conversation goes on your 10th wedding anniversary while you’re lounging on a remote island and you are married to a fiercely devout, ambitious go-getter of a woman who is compelled to find ways in which she can give back to the world around her.

“You know, I think I just might,” his wife Marlene says, looking out over the crystal clear Caribbean waters before her, the palm trees swaying behind her, almost as if they’re encouraging her thoughts to continue. Running through her mind is this: to whom much is given, much is expected. She knew in her heart that God was telling her that since she saw a need, she needed to find a way to help.

In 2007, a few weeks before the Eldreds found themselves tucked away on a sandy beach to mark a decade of marriage, Marlene spent a few days volunteering in their children’s elementary school. A mother of four to Blaise (16), Ali (15), Brodie (13) and Ava (11), but not exactly the ‘craftsy’ type, she was helping out in the lunch room when she noticed, in some bit of astonishment, how much healthy, unopened and uneaten food was literally being thrown away off of the students’ lunch trays. Apples. Cheese sticks. Milk. By the end of the lunch, Marlene was basically dumpster diving, pulling out perfectly good food from the trash bins.

“I didn’t know what I was exactly going to do with these armloads of food I was holding,” she explains. “But I knew I was going to find a way to give it to kids who were hungry and needed that food.”

And that’s how the conversation on the beach got started and how Marlene’s mission got underway.

The solution seemed quite simple to Marlene: intercept the food the kids didn’t want before it went into the trash. Take all of that food and donate it to local homeless shelters that needed it.

Simple enough, right? No. Marlene initially met with some resistance because the idea of donating food was raising some red flags in terms of liability food planning needs and highlighting the fact that students were discarding so 20 OneFourteen Lifestyle | May 2014

much of their nutritionally balanced school lunches. When the milk program started, children were required to take milk with lunch options they ordered. If they preferred water or juice, they needed to purchase those items a la carte. Some children chose not to consume that milk and simply would throw it away, along with other perfectly “donate-able” items. The school districts were leery of liability issues that might arise.

When a student purchases a ‘hot meal’ from the lunch line, they must physically take a certain pre-determined number of items that provides them a balanced lunch, according to requirements set by the district and the state. A program like Marlene was proposing was somewhat pointing out the holes in the system. Some legal issues were also being raised in terms of liability.

Don’t think any of those roadblocks deterred Marlene. Not one bit.

Pulling all the knowledge she had in her hip pocket from years spent in the corporate world, she realized she needed to present this program as almost a business proposal. Out came a Powerpoint presentation and a meeting with a lawyer friend who helped her leap over the liability legal hurdles. In 1996, Bill Clinton signed the Good Samaritan Food Donation Act that allowed restaurants and corporations to donate food in good faith to people in need. Her lawyer friend helped clarify the path of ownership, if you will, of the food. In the end, when a student purchases (takes) the item, the transfer of money has taken place and the child now “owns” the milk, it becomes theirs and therefore they are donating their item, not the school’s.

Problem solved.

The response from organizations in need was great, and soon Marlene had essentially organized a supply chain that included 18-wheelers from the North Texas Food Pantry pulling up to the loading docks of area schools and picking up the milk. Before long, the program had grown large enough—but not yet huge enough—that the nonprofits Marlene was working with told her that the pickups were taking too much time when the quantities were not in much greater bulk. Was there any way, they wondered, that Marlene could figure out how to

collect and deliver the milk and other items herself? In true Marlene fashion, she said absolutely. She just didn’t totally know how to make that happen—since transporting perishable food also had a certain set of requirements, mainly in the form of needing a refrigerated truck. In short, the lunch lady now needed a milk truck.

Enter her husband Kyle. “Marlene, go buy a milk truck.” This Kyle, he’s a smart man. He knows when to jump on Marlene’s train of determination. And so now, a large, white, refrigerated milk truck sits in front of their house in their cozy Southlake cul-de-sac.

Marlene’s determination didn’t stop there. As Thanksgiving approached one year, she knew the homeless shelters that benefited from the milk donations were in great need of turkeys for the holiday.

Well, she figured, there had to be an easy solution, despite Thanksgiving being only a few days away.

“I have a great network of girlfriends here in town,” she recalls. She set out a large cooler on her front porch and put the request out to her friends that when they were buying their own turkeys for their family dinner, to pick up one for donation. “The next morning, there were 40 turkeys in that cooler on my front porch.”

It’s the same sisterhood that later helped Marlene transport dozens of down comforters when the Gaylord Texan jumped on board with the Holy Sheets program. The only difference was that it did much the same thing with excess and gently used hotel items such as bedding and small appliances, instead of food.

“Right before a cold snap was to hit, the folks at the Gaylord called and said they had all of these down comforters that they would give

us, ” Marlene recalls. “But because the cold was coming, we needed to get them picked up and distributed quickly. So I called my girlfriends again for help.” And before carpool pickup that day, Marlene had a team of Southlake moms making multiple trips to and from the Gaylord to her house, filling their Suburbans and Escalades full of billowy white blankets. Within 12 hours, and before the wintry weather made it to town, the blankets had been distributed to those in need throughout Tarrant County.

Through the Holy Sheets program, Marlene works with the Southlake Hilton, the Hyatt DFW, Grand Hyatt DFW, Renaissance Marriott Ft. Worth and the Gaylord Texan to collect and distribute items often in like-new condition but no longer ‘hotel worthy.’ With the help of a driver, Marlene organizes those items to be given out to domestic abuse shelters and homeless facilities throughout the area.

And, more often than not, her driver will venture down the streets of specific areas and literally hand out the items to people who need them most. The need, Marlene says, is never ending.

“My mother always says, ‘you can’t out give God,’” Marlene explains. “but I know there are many more hotels out there that can participate in programs like ours. There’s a lot more giving that can be done.”

The way Marlene trails off as she says that makes you believe the journey that took shape on a beach and launched in Southlake has really only just begun.

Just as this article was going to print, Holy Sheets announced its expansion into the Detroit metro area.

S

tanding a couple inches above six feet tall, fashionably dressed with long luxurious hair, Karen Young looks more like a fashion model than anything. At first glance, you wouldn’t know that this striking figure is a Southlake working mom of two, local real estate agent, former collegiate athlete and youth sports coach.

But beyond her looks, there’s something you instantly notice once she starts to talk: her kindness. On a recent morning, Young took some time out of her very busy schedule for a cup of coffee to chat about the inspiration she got from her parents and how she’s paying it forward through her children and sports.

“My mission in life is to teach my kids how to do right in life,” she says. “The most important thing my parents taught me was to help others.” She remarks that while that idea seems pretty basic, it’s something that she takes to heart. “I’ve always got a little bit more to give.”

Young comes from an athletic family whose roster included parents and four brothers that were all college athletes, including dad who played quarterback at SMU and a brother who made the leap to the National Football League. Growing up, she says, it was all about sports but the goal for their family was to not always have to be “number one,” but to work hard in order to enjoy life to the fullest.

“There’s so much to develop at a young age,” she says. “Sports is a great way to build character and let kids see that it’s not about being the best at something, that it’s more about helping everyone around you succeed with you.” A 1997 graduate of Carroll High School, Young went on to play basketball at Texas Christian University.

She and her husband, Corey, a former college basketball player at Texas Wesleyan who now works in finance, stay busy with daughters Kaylee (8) and Kinsley (5). They both coach the girls’

various athletic teams, including soccer, basketball and volleyball.

There was even a stint as a cheerleading coach in there too—for Karen, not Corey.

She says they decided to do whatever it takes to help their kids take part in sports in a good, positive environment. After seeing how her own parents took part in coaching youth sports, she knew that meant she and Corey needed to step up and participate as parents and demonstrate to their own children that they are willing to help others succeed as well.

After college, the Youngs were living in Austin and when their first child was born, Karen had a defining moment that made her realize that a stressful job that kept her away from home for long hours at a time just wasn’t how she wanted to raise a family.

“So we decided it was time to come home to Southlake,” she says.

Young’s parents, Karen and Art Clayton, have been involved with land development, home building and real estate in the area for more than 30 years, building the ‘curbs and streets’ in a considerable amount of the neighborhoods in Southlake. After making the move back, Karen decided to join the family business at Clayton & Clayton real estate. True to her nature, the quote on her business card is from Zig Ziglar: You can have anything you want in life if you help enough other people get what they want.

It’s easy to see that she’s pretty proud to work with her parents, believing in them for their strength of character and also their dedication to family. It’s something she believes she and her husband can pass down to their children, leading by example.

“We’re trying to show them that the lesson of hard work and being a good person really helps you lead a good life and will help them reach their goals,” she says.

t’s no surprise that Karen and her brothers would continue to be competitive with each other as adults. You can usually catch the siblings—Art, Chris, Carey, Robert, and Karen—along with Karen’s husband, Corey, having a good time challenging each other at Southlake’s CrossFit Impressions. The question of who remains the best athlete in the family? Gotta give it to the one and only sister on this one.

Financial Planning or Financial Advice How do they differ?

irst, I would like to wish every wonderful Mom out there a very Happy Mother’s Day. As I reflect upon my own Mother (who unfortunately passed awhile back), I am reminded of the numerous times I would sit with my mom and try to decode and explain the complex and sometimes mystifying language that exists in the investment and financial world to her. Quite simply it is just not “user friendly,” and I could understand her confusion. So Mom, this one is for you.

One area that many people outside the investment industry struggle with is the jargon and terminology. Part of putting a financial plan in place means knowing what’s right for you—how much or how little planning you need, and how active you want to be in the planning process.

While we can create a plan and provide guidance, you ultimately have to be in charge of the decisions that impact your life and your financial situation. Taking control of those things you can control is an important first step.

What’s the difference between planning and advice? There are advisers who are planners and planners who act as advisers. There are some who are only providing planning for a fee, and some who are doing only the advisory work – leaving the planning piece for the investor to navigate.

As you decide what’s right for you, there are a few things to understand about planning and advice.

1. “Planning” is often a separately paid fee that focuses on information gathering, understanding your goals and objectives, looking at the entire financial picture (not just investments, but insurance

and long-term care, among other components), and then creating a plan that is customized for your situation. I believe planning should go even deeper and include looking at who you are as a person, why you care about what you do, and incorporating goals that are sometimes non-financial in nature.

2. Financial advice is mostly focused on giving guidance and direction on which investments are best for your situation. There are two types of advice: Discretionary and non-discretionary. “Discretionary” means the adviser retains control, and while they may update the investor, they are making the final investment decisions. “Non-discretionary” means the adviser offers the advice but the investor makes the final buy-and-sell decisions for their own portfolio. The advice most often focuses on risk tolerance and portfolio allocation, and may not take into account other aspects of the investor’s situation.

When both planning and advice are combined, it is often called comprehensive wealth management, which is the model I favor.

This is where the planning focus and discipline is brought together with the investment acumen and expertise. Of course understanding the investor, and listening to your needs and concerns is a key element of the comprehensive approach.

So how do you decide which approach is right for you? Here are some questions you should ask yourself:

find this motherhood quote amusing, because isn’t it painfully obvious that even on a good day, 10 hands would still not be enough to schlep around the arsenal of items needed to survive an average day in the jungles of motherhood? As the mother of a fiveyear-old son and a 12-year-old daughter, I often find that I have my hands full…not just figuratively, but literally!

That is why on any given morning, I can be found barreling into my son’s preschool, barely walking upright; juggling a ringing cell phone in one hand, leaking sippy-cup, used Kleenex, and Lightning McQueen backpack in the other, and trying to coax my Will into the classroom. And let’s not forget to mention the assorted ladybugs that he has heroically rescued from the sidewalk while wimpering, “Mom, can you carry me? My legs are sleepy!”

That’s why when a friend of mine mentioned a blog called Hands Free Mama, I was instantly intrigued … skeptical, but intrigued all

the same. No need to twist my arm into the idea of letting go of all that I carry emotionally and physically as a mom. She had me at hands free.

As it turns out, this mom has developed a daily how-to guide for putting down the phone, burning the to-do list, and letting go of perfection in order to grasp what really matters. I will never forget the tears running down my face as I read her first blog post, not just for me, but for all the moms out there like me. Her words and message instantly resonated with me.

If I am being really honest, I, too, have been that mother: the one who has stared into Will’s big, green eager eyes as he desperately begged me to stop and notice a roly poly or a dandelion on the sidewalk, only to mutter back “in a minute …” or “when I am done with ….” If you are a mother, you know all too well how to finish that sentence.

Filling in the blanks, filling in the days, not with moments, but with the hundreds of mundane tasks that make up the work of

motherhood; tasks that I thought were the most important; tasks that helped me to feel productive. It made me feel important to be busy. But without even realizing it, my constant “busy-ness” often left me too busy for those who were most important to me: my children. Ironically, all of this filling left me feeling….utterly empty.

I knew that if this blog mom could have the courage to disconnect from the noise of the outside world in order to learn from, listen to, and love her children on a deeper level, then I could too.

So, I started with one word that I rarely ever said to my children: yes.

Yes, I can play Play-Doh with you (even though I should probably be stirring the pasta on the stove).

Yes, I would love to listen to your clarinet solo (even though the mounds of laundry are beginning to resemble a mountain).

Yes, you can hold my hand as we jump in the puddles while it rains (even though there are dishes in the sink).

I want to say ‘yes’ to all of these things and more, because I know that one of these days, so very soon, you won’t want to hold my hand at all. You’ll walk around the puddles because you won’t want to get wet. You will want to tell your friends about your day at school instead of me. One day, you will walk right past those little ladybugs in need of rescue on the sidewalk, and forget to notice all of the amazing things you are seeing now with fresh, new beautiful eyes. So for now, the e-mails and phone calls can wait until you are done showing me the millions of tiny miracles that pass me by when I get too busy filling in the blanks of our lives.

This Mother’s Day, I hope you will give yourself the gift of being more ‘present’ for the little moments. I also hope that you learn to say ‘no’ to your inbox, and ‘yes’ to thinking outside the box about what it means to be a mom, wife, friend, and human being.

More than a Meal Words Joseph Daniel

I

find that almost nothing is more enjoyable than dining out with friends. It’s stimulating, therapeutic, and there’s an obvious joy in idly chatting about even the most trivial of topics over a meal.

One doesn’t need research and confirmation to know that laughing with friends over dinner is healthy, or that commiserating in person over a brew is far better than over email or text.

But there’s more to it than that, so I thought I’d poll the very people I dine with to see what makes the act so appealing.

One replied with, “It’s all about sharing the experience.”

Comparing perceptions of sight, taste, and smell with others is what inspired me to become a food writer in the first place. I wanted to embolden people to venture out and try a new dish, a cocktail, or explore another restaurant all together with friends. And, sometimes the greatest reward is being able to reminisce about the experience afterward.

Another said, “You can’t replicate conversations had over meals.”

Dinner conversation is natural and free-flowing. And despite what table etiquette dictates, when you’re sharing a meal with friends, almost no topic is off limits. That promotes a social freedom and fearless exchange that is typically unavailable elsewhere, like in the workplace.

And another said, “It gets people on the same wavelength.”

While eating dinner, I’ve become acquainted with countless people sitting at tables beside me. The occurrence is organic, usually happening in between breaks in conversation and in between people who share a dominant commonality when dining: the love of food.

Some of those acquaintances have become long-time friends.

That’s why I put such a high value on such dining experiences as I grow older. Those experiences, I’ve come to see, are becoming defining moments in my life.

It’s that part of ‘dining out’ that means as much as the food itself: the friendships and relationships you have with the people you share a meal with; it’s the special moments in life you mark while celebrating over a meal….birthdays, anniversaries, to honor a memory, to mark holidays and celebrations.

Food often means comfort and home. It can inspire us to travel and to explore, to create. Food can bring nostalgia flooding back through a simple taste or a memorable dish. Dining out gives us the opportunity to break bread with those we are getting to know, those we share our lives with, and, of course, enjoy a meal with those we love.
