Editor's Letter It’s February and “Love is in the Air.” Sometimes this month can seem a little dreary but the excitement of a day dedicated to love always seems to lift the spirit. In this “Love” issue, there are several stories that will get you prepared to say those special words to your loved one on Valentine’s Day this year. Hopefully you are saying those words to someone everyday, but on this one special day it’s nice to say it sometimes in different ways. One of our features this month is all about a date night out. Whether it just be a night for you and your spouse or if you decide to bring the kids along, this article will give you several ideas of how to spend the special evening. Ideas ranging from fun cooking classes, romantic massages fun restaurants to eat at, and more will help you make this a Valentine’s Day to remember. Maybe before that romantic night on the town, you and your family can curl up on the couch to cheer on team U.S.A. in this year’s 2014 Winter Olympics held in Sochi, Russia. All of these exciting events can make spending time with your loved ones a special memory. These athletes have worked hard to prepare for this dream of getting the gold medal. Who will come out on top? Read about the Girl Scout Cookie Dessert Challenge. Twelve chefs are putting their love and hearts on the line as they create delectable desserts inspired by the different flavors of Girl Scout cookies. The winner will be decided based on the amount of sales of the dessert. They will also be judged on taste, creativity and appearance. A portion of the proceeds will be given to Girl Scouts. Sounds like a delicious charity event to me!

In an exhilarating demonstration of their support for Special Olympics Arizona (SOAZ), 100 Arizonans went “Over the Edge” on December 14, rappelling 27 stories down one of the tallest buildings in Phoenix. CityScape Phoenix and RED Development sponsored this adrenaline-rushing event at its office tower where each participant took their support to new heights, raising a minimum of $1,000 in donations to support SOAZ athletes. Participation in “Over the Edge” required creating a personal fundraising page to attain contributions from family, friends and coworkers. Each person who rappelled raised a minimum of $1,000 in donations, which is the amount needed to support at least two athletes in 2014. Participants had to be at least 18 years old on the event date and not weigh more than 350 pounds. “It was an exciting afternoon at CityScape to watch thrill-seekers rappel down our office tower, all for the sake of a great cause,” says Jeff Moloznik, vice president of development at RED.

McLaren Scottsdale is now open for business, and people are invited to visit the new 10,000-square-foot facility and browse the inventory of new and pre-owned exotic cars currently in stock. It’s been 22 years since McLaren was last in Arizona. The team arrived in Phoenix with untested and unassembled pieces of a new Formula One racer, the MP4/6. The car was completed just hours before the first session of the 1991 Formula One season, but the new McLaren would prove unstoppable in the hands of racing legend Ayrton Senna who promptly left the competition behind. McLaren cars are characterized by innovative F1-inspired technology like brake steering, electronically controlled suspension damping and carbon fiber chassis construction. Thanks to these advancements, the McLaren Mp4-12C Coupe and 12C Spider are some of the fastest and most capable vehicles on the road. The newest model, the McLaren P1 ™, produces 903 horsepower and has a starting price of around $1.15 million.


‘THE CHIPOTLE OF PIZZA MAKING’ NOW OPEN Fired Pie, a locally owned and operated restaurant, recently opened their newest location at 14740 N. Northsight Blvd., in Scottsdale. The fast casual pizza concept exploded on the scene last year. Described by some as “The Chipotle of pizza making,” Fired Pie lets diners take on the role of chef by picking and choosing their own type of dough, sauce and over 30 toppings. After less than four minutes in the oven, the pizza is done. The sophisticated-yet-affordable pizzeria also offers build-your-own salads. B

orn and raised for many years in North Scottsdale, Max Aaron knows that the desert doesn’t necessarily lend a hand to his passion for ice. Now living and training in Colorado Springs, Max is working and training diligently to earn the gold medal he has always dreamed of. Now age 21, Max started playing hockey at the age of 3. At 9, he started figure skating simply to help with his hockey skills and agility on the ice. Over time his passion for figure skating continued to develop. Max skated at the Ice Den. “It was right down the street from my house and I could get a lot of ice time whenever I wanted,” he says. Max went to Chaparral High School. He studied there for three years and for his senior year, Max moved to Colorado Springs to take his training more seriously. There is no question that when a child/teenager decides to follow a passion, there are going to be sacrifices made. Max has always looked at the sacrifices a little differently though. “I have never really looked at it as sacrifices,” says Max. “This is just the decision in my life that I decided to make when I was young.” Max never had a lot of extra time to hang out with friends or go to parties. He was always at the rink trying to become the best he could be, which is what he wanted. “I was always trying to see how I could evolve as a figure skater and even as a hockey player,” he says. To him, the endless hours on the ice were, and still are, exactly where he wants to be. To Max, making sacrifices to do something that you love makes all the difference. Through the years Max has learned the true definition of dedication. Even through his training as an adult in Colorado Springs, the hours put into skating for Max sometimes seem unending. “My whole world revolves around skating,” says Max, “I know this time in my life will not go on forever so until my time as an athlete is over, I will put in what’s needed to be the best that I can be.” Max is sometimes still in workouts at eight and nine o’clock at night several days a week. “That is just what it takes.” It will all pay off if he gets to compete in the 2014 Sochi Winter Olympics. 12 North Scottsdale Lifestyle | February 2014

U.S. trials for the Sochi Olympics were held in Boston, Mass., in January. Though it’s been a long road, Max is always grateful for the opportunities that are presented to him. A few years ago, he had his doubts about even making it to the Olympic trials. Now he made it and is hoping to fulfill his dream of becoming an Olympian on the ice in Sochi. As far as goals for the Sochi Olympics, Max would of course love to take home a medal. “I think I have the abilities to become an Olympic medalist this season,” says Max. He has the technical assets and he has worked hard to build up the performance side of his program. Max is known for his speed and power across the ice. He attributes this to his early start as a hockey player. He is also known for his quadruple jumps. Last year, Max was the second man ever to have successfully landed two quadruple jumps in a long program. And he is still doing that this season. Now that would definitely be something to see. Through all the years of skating, Max and his two sisters who also skate have had the full support of family. One sister is retired and going to school at Arizona State University and the other sister trains with Max in Colorado Springs. His family has always been extremely supportive of his figure skating career and they have always encouraged him to do his best. Max’s future dreams include moving back to Scottsdale and possibly getting into stocks and real estate. “My favorite thing about figure skating is being able to express myself on the ice. I love to show my friends and family the result of all the hard work that I put in. I know I won’t be able to skate like this forever so I am going to enjoy it while it last,” says Max. B

e it the big city, the remote deserts, the golf, the Grand Canyon, or a variety of other things our state has to offer, Arizona is known as a destination that presents a little something for everybody. Not until recently, however, has the state’s little-known wine industry begun to stake its claim as one of the hottest markets across the country. A little known fact is that Arizona is one of the oldest wine-producing states in the U.S., beginning with the arrival of Spanish Jesuit Priests in the 16th century. The characteristics of the high desert regions of the state (between 4,200 and 5,200 feet in elevation) coupled with the hot days and cool nights make Arizona’s growing climate comparable to some of the world’s most renown wine-producing areas in Argentina. Three distinct regions make up the majority of vineyards in Arizona: The Sonoita/Elgin in Southern Arizona, the Wilcox in Southeastern Arizona, and the Verde Valley in Northern Arizona. Sonoita/Elgin Region

Having once been named one of the country’s “10 great places for local wines” by USA Today, the Sonoita/Elgin region in Southern Arizona may lay claim to the most critical success in the state. Wines from this region have also been recognized by industry leaders such as Wine Spectator and Food & Wine, and have accompanied meals served to dignitaries at the White House.

Wilcox Region

The Wilcox Region in Southeastern Arizona is the most prolific grape producer in Arizona. Though this region was once little more than a supplier of the fruit to wineries across the state, the last few years have seen a boom of tasting rooms and national recognition. Verde Valley Region

Though either of the other two regions would be a great destination for any would-be sommelier, it is the Verde Valley Region in Northern Arizona that boasts the largest concentration of tasting rooms, including wines that have been labeled as “rising stars” by Wine Spectator and others that have been recognized by the Wall Street Journal.


Interest in the region took off in 2010 with the release of Blood into Wine, a documentary chronicling Maynard James Keenan. The front man of the rock band Tool, Keenan left his life in Los Angeles and bought a chunk of land in the Verde Valley in the mid-1990’s. The film tells the story of how he and his partners fought the elements and misconceptions of the industry potential in Arizona, as they created the successful Caduceus Cellars. Designed in partnership with Yavapai College, which teaches courses in viticulture (the study of grapes), the Verde Valley trail hosts four wineries and six tasting rooms eager to share their wines with visitors. Each winery is tucked into the red rocks along Oak Creek and the Verde River surrounding the towns of Cottonwood, Jerome, Sedona, Clarkdale, Cornville. Informal tours are

designed to show off the varietals of Arizona’s high desert, as well as create a convenient way to promote the idea of “buying local.” Though touring can be a self-guided adventure, Sedona Adventure Tours offers a series of packages for those looking for something a bit more adventurous. Among them are floating trips down the Verde River in a Ducky Kayak, ending at a scenic Tuscan farmhouse at the Alcantara Vineyards where sommeliers guide folks through an award-winning line-up of wines. Also available is a ride on the Verde Canyon Railroad, which offers a series of “Grape Train Escapes” on select Saturday evenings from May through September. Each ride pairs wines with a series of appetizers that have been hand-selected to show of the profiles and flexibility of the wines of the Verde Valley Also noticeable along the trail are a series of 40 elaborately panted wine barrels which are the products of local artisans. Sponsored by the Cottonwood Chamber of Commerce, these barrels are the second generation of a project established in 2009. The first round were auctioned off in May of 2012 and raised over $8,000 to the viticulture program at Yavapai College, and hopes are that bids on this next round of barrels should exceed well beyond that mark. M

ost of us in America are well familiar with the famous See’s Candies. This candy shop often times comes to mind around Valentine’s Day when thousands of heart shaped boxes full of chocolate are bought and given to loved ones. It’s quite amazing how this once-little shop became so well known in America today. Charles See, founder of the first See’s Candies shop, arrived to the United States in 1921 from Canada along with his wife, Florence, and his mother Mary See. After trying his hand in the confection business, Charles See decided that the business would be best represented by the image of his own mother. Later that year in November, the first See’s Candies shop was opened on Western Avenue in Los Angeles. The dazzling black and white shop was created to resemble Mary See’s home kitchen. Just one year later the Sees sold the company to Berkshire Hathaway Inc. Chairman Warren Buffett presided over it along with Vice Chairman Charles Munger. Over the years, there have been several “favorites” when it comes to the deliciously rich and creamy chocolates. Currently the five most popular ones include California Brittle (a buttery brittle with almonds covered in smooth milk chocolate), Bordeaux (dark or milk chocolate with a soft brown sugar center decorated with chocolate rice), Almond Buds (roasted almonds with buttery caramel covered with smooth milk chocolate), Scotchmallow (caramel and honey marshmallow layered then coated in rich, dark chocolate), and Pecan Buds (pecan halves with caramel covered with smooth milk chocolate). How does one ever choose what to get? If it were up to me, I would probably have to try one of each!

M

ai and I started out as friends. Two single parents, raising a son each, in single parent homes: Brad (now our eldest) and Matt (now our youngest.) Mai and I were introduced by a local roofer Jack Ruffino, whose business we both had called once, after a storm (“Jack the Roofer.”) Although lightening had struck, what we didn’t know then, was … that lightening really had struck, … as a “bolt of light” from above. And, the storm that had come and gone, in both of our single lives and out in the World, was really a deliverance from above, as our lives - and those of our boys - were forever changed. Therein began the start of a romance that led to our engagement, our marriage, and our family of four. And, we couldn’t be happier! We officially consider our first date, one in which I asked Mai out on a “date.” It was to be a no big deal thing, just dinner at the Yard House in Desert Ridge. And, I was so embarrassed. Following a busy day at work, I had to push the time we were meeting back an hour. Mai arrived on time. I was another 20 minutes late. As I am joyfully reminded by the love of my life today, she never waited for any guy who was that late. But, somehow, she waited for me. And, that’s when the romance began.

A couple years later, I invited Mai out for a Valentine’s Dinner at Tomaso’s Italian restaurant. This time, I was on time! As I picked her up at her house, I held in my hands a bouquet of red roses; and in my pocket, a 1-Kt Diamond Engagement Ring. I got the ring from Scottsdale jeweler Cornelis Hollander. I called a month ahead, and arranged for a Valentine’s table in the corner. When Mai and I showed up, red rose petals were spread across the candlelit table. And, after dinner, the Happy Valentine’s Day kiss turned into something more when the hostess, I had pre-arranged, came over to us and said, “Mr. Garr, you have a special delivery.” And, as she handed me the little black box, the gig was up. Mai then knew I had something to ask her. It was those magic words: “Will you marry me?” She said, “Yes!” The restaurant erupted in applause. A new phase of our life began.


That was last February 14th. Mai always wanted to be a June Bride. So, with the help from the folks at the Troon Country Club, we put together exactly that: a June wedding. And, once again, the hand from above was in this, because the most popular day of the year to get married ( June 15th ) was, unbelievably, available! So, with four months of planning, we put together a Polynesian-style wedding, with the beautiful Pinnacle Peak as the backdrop. We had 5,000 Plumeria flowers flown in fresh from Hawaii, close friends strung them into 100 leis and we dawned traditional Polynesian wedding attire: Barong Tagalogs and a Philippiniana dresses. It was a beautiful day! Then we honeymooned in California as a Family. Yup … we took our boys. And we all had a great time. Both having gone to USC, and with Brad receiving a Navy ROTC scholarship to USC, a highlight was going back to our Alma Mater. We have so many wonderful memories of all the other things we did as well. Some of our favorite Valentine’s Day traditions include re-living our engagement, which we have done both as a cou-

ple -- and as a family, not only at Tomaso’s, but also by driving to Sedona, watching Sunsets, and giving thanks to the Lord for our Family’s togetherness. Two “only children” became brothers, and a lonely man and woman became husband and wife, all with an undeniable chemistry. We celebrate the meaning of life. We even pray together as a Family. It’s a nightly ritual that we enjoy. We are always having fun together. Matthew is our Family Chef. At 12, and a 7th grader at Copper Ridge Junior High. He makes the Family meals. You heard it: a 12-year-old! And, now his Boy Scout Troop is coming to rely on him as their Chef on campouts, etc. Brad is an Eagle Scout and a Senior at Chaparral High School and escorts the brothers grocery shopping. The boys do it all. Mai and I feel like we have fully catered meals each night. And, we give “the boyz” that love back, by the hugs and kisses that characterize our Family. Fact is, Mai is surrounded by boyz: including our two Yellow Labs, “Mr. Big” and “Willie.” They were at our wedding too. We show each other love and respect. And, we appreciate the value of “Family.”

A

s Cupid finishes up tuning his bow and filling his quill with freshly pointed heart-shaped arrows, one cannot help but wonder just how this pint-sized cherub was able to empower himself so thoroughly on a random day in the middle of February. Love it or loathe it, Valentine’s Day has become one of the biggest holidays of the year. And while just its mere mention can cause high levels of anxiety amongst boyfriends, fiancés, and husbands alike, the roots of this holiday has got to have more to it than just a dozen roses and a box of chocolates, right? An investigation into the origins of Valentine’s Day leads back to the early days of Christianity in the heart of the Roman Empire. At least three different individuals referred to as Saint Valentine (or Valentinus) are recognized by the Catholic Church, and many of the details surrounding all of them are debatable. Consensus does prevail, however, when it comes the fact that all of them were killed as martyrs. One of the most accepted stories start with Emperor Claudius II. In the third century, he declared that the best men for his army were those void of the preoccupations of children or wives, which eventually led to him outlawing marriage for all young men across the Empire. This decree did not sit well with a rebellious Valentine, who made the fatal decision continue to perform marriages for the young. Though these marriages were performed in secret, word eventually got out about the ceremonies, and Valentine was sentenced to death. The date of execution: February 14th. Prior to his death, evidence suggests that Valentine may have sent out the holiday’s first “valentine.” While in jail he had fallen in love, most likely with the daughter of one of the jailors holding him captive, who visited him while a prisoner. Before his sentence was carried out, he had sent her a final note, signed, “From your Valentine,” the same 22 North Scottsdale Lifestyle | February 2014

signature used today. Nearly two centuries later, February 14th was declared St. Valentine’s Day by Pope Gelasius. This date was also regarded as the beginning of the bird mating season across Medieval Western Europe, which inspired Geoffrey Chaucer to observe in 1382, “For this was on Saint Valentine’s Day, when every bird cometh there to choose his mate.” Though some of the earliest ever written, Chaucer’s verses were certainly not the last to be inspired by the emotion evoked on Valentine’s Day. But it was not until the early nineteenth century that the rituals most associated with today started to take hold. Starting in Great Britain –arguably the world’s largest cultural influence at the time- the idea of exchanging small tokens of affection and handwritten letters between friends and lovers started to take hold, and eventually spread across the Atlantic to the U.S, Canada, and Mexico. Advancements in the printing industry in the early twentieth century brought the emergence of preprinted valentines, which combined with low postage rates, became a huge hit and holiday staple. With an estimated 1 billion valentines sent each year, Valentine’s Day remains the second largest card-sending holiday of the year, trailing only Christmas. And last year the National Retail Federation estimated that Americans would spend about $18.6 billion on the holiday. So reenter Cupid to the scene- the ancient Roman god of Love, and son of Venus, who has a pretty lustful reputation all herself. Floating around shooting unsuspecting bystanders with arrows that fill their targets full of uncontrollable desire, his “Love Conquers All” mentality makes him the perfect symbol for a day to celebrate love and romance. But do not forget to make your dinner reservations early, because even Cupid cannot get in a nice restaurant on Valentine’s Day if he does not plan ahead.

Go Team U.S.A.! Sochi hosts the XXII Winter Olympics

I

t is so exciting that every four years the Olympic games return. We spectators love to marvel at the talents and abilities of the world’s greatest athletes. With more than 200 countries participating, these athletes are sure to bring their A game with only one goal in mind: Getting the gold medal. This year the winter Olympics will be hosted in Sochi, Russia. From February 7-23, it’s time to once again shout, “Go Team U.S.A.!” The Olympic games have quite a history. The creation of the games was inspired by the old, ancient games that were held in Olympia, Greece, from the eighth century B.C. to the fourth century A.D. The International Olympic Committee (IOC) was established and founded in 1894 by Baron Pierre de Coubertin. The IOC could be described as the government for the Olympic games. They decide on the host city, the rules and the guidelines to keep the games running fair and smooth. Sochi itself is home to around 400,000 people, making it Russia’s largest resort city. It is located in Krasnodar, the third largest region in Russia, and spreads along 90 miles of the Black Sea coast shoreline. Sochi is one of few cities in Russia that has warm to hot summers and mild winters in its subtropical climate category. The Sochi games will be divided into two groups, otherwise known as clusters. One group will be called the coastal cluster, which is where the ice events will happen. The other group will be

the mountain cluster, which will be where the skiing and sliding sports will all take place. With only about 30 minutes travel time between the clusters, these games take on a compact concept. The winter games in Sochi will hold events in 15 disciplines of 7 different winter sports, including biathlon, bobsleigh, skeleton,


curling, ice hockey, luge, figure skating, short track speed skating,

gets up on that podium for the gold medal. I think, for me at least, there is this sense of American pride that hits me. It has to be what the athletes feel as well. The national anthem plays, the flag is raised, and often times tears begin to flow down their cheeks as their smile beams from ear to ear. It is such a great way for America to be represented. February can typically be a dreary month around the country. Winter is often times rearing its ugly head and the chilly temperatures keep a lot of people locked inside until the warmer weather arrives. Therefore, the Sochi Winter Olympics couldn’t come at a better time. It is a great way to bond with family members and friends over an Olympic party or even just a simple get together. After watching the Olympics together, you might all decide to try out your own talents on the slopes and schedule a family ski trip. Whether your favorite sport be the luge, skiing, snowboarding or ice skating, athletes from around the world will show off their stuff to compete for the gold. Be sure to gather around to cheer on your favorite athletes.

speed skating, alpine skiing, cross country skiing, Nordic combined skiing, ski jumping, freestyle skiing and snowboarding. All of these sports are exciting to watch as the athletes show off lifetime achievements. One of my personal favorite winter sports to watch during the games is figure skating. As I child, figure skating was a huge part of my life. I went to competitions almost every weekend. I would wake up at four in the morning to get to the rink before school started, and I came to understand the kind of commitment a sport like this takes to master. Around the age of ten I decided that it wasn’t the sport for me anymore. Looking back on my time as a figure skater, it taught me a lot of valuable things that I still reflect on today. I can only slightly appreciate the amount of time and commitment that all of these athletes put into their sports. Another one of my favorite sports to watch is the ski jumping. Those skiers just fly! It is hard for me to comprehend even trying that for the first time. I am sure there was a little bit of fear involved for these athletes when they were first getting started. During the games though it just looks like they are having the time of their lives. I love to watch the individual sports of course, but I think my favorite part of the Olympics is when someone from Team U.S.A. February 2014 | North Scottsdale Lifestyle 27

alentine’s Day is the perfect time to spoil your sweetie with a sweet dessert. Nothing says “Love” like a delicious homemade treat. These recipes taste decadent and difficult, but they are incredibly easy, so even non-cooks can quickly bake them to impress a special love. The cupcakes start with the ease of a mix, but the oil, butter and eggs are replaced with yogurt, egg whites and wine, to keep fat low and flavor high. The truffles are vegan and gluten-free. Plus, they are no-bake and easy to roll, making them fun for kids to help create.

Ingredients: 1 box (18.25 ounces) Red Velvet Cake Mix (any brand, such as Duncan Hines) 4 egg whites 1 tub (5.3 ounces) Fat-Free Greek Vanilla Yogurt (such as Chobani) ½ cup water ½ cup red wine (such as Merlot or, use water as replacement) 2 teaspoons vanilla extract ½ cup white chocolate chips (optional)

Skinny Cream Cheese Frosting: 1 block (8 ounces) reduced-fat cream cheese (Neufchatel), room temperature 1¼ cups powdered sugar 1 teaspoon vanilla extract

These beautiful red cupcakes are visually stunning and delicious. Originally created by the Waldorf-Astoria Hotel in New York in the 1940’s, red velvet has become a favorite flavor in the US and Europe. This cake looks like you worked all day in the kitchen, but it starts with the ease of a mix. Yogurt adds a creamy moistness, the egg whites pump up fluffiness, and red wine adds a romantic burst of flavor. The smooth cream cheese frosting is deceptively guilt-free, using reduced-fat cream cheese to cut calories. The dense batter bakes up best as a mini-cupcake or cupcake, but beware to not overbake to maintain moistness. To avoid having the chocolate chips fall to the bottom, dust chips in flour and gently press them into batter after cupcakes bake about five minutes. Use a heart-shaped cake mold for an added Valentine touch. Impressive, easy and very romantic.

Instructions: Preheat oven to 350°F. Line two mini-muffin pans with cupcake liners; set aside. (Note: Disregard the instructions on the cake mix box, just use the ingredients listed here). Place dry cake mix in large mixing bowl; add egg whites, yogurt, water, wine. Mix with mixer until well-combined and smooth, about 2-3 minutes. Use tablespoon to gently fill cupcake liners with batter. If using white chocolate chips, bake cupcakes about 5 minutes, then remove from oven and gently press a couple chips into each cupcake until covered with batter. Bake until toothpick inserted in center of cupcake comes out nearly clean (do not overbake), about 13-17 minutes.


Frosting Instructions: In a large mixing bowl, stir together cream cheese and powdered sugar. Beat with electric mixer on medium, until frosting becomes smooth and thick. Stir in vanilla. Spread frosting on cooled cupcakes. Refrigerate any leftover cupcakes and frosting. Yield: 48 mini cupcakes. Calories (per cupcake): 48; Fat: 1.9g; Protein: .9g Cost Per Serving: $.11. Vegan Valentine Truffles (gluten-free)

Chocolate says “romance,” and these decadent chocolate truffles are deliciously guilt-free. Totally vegan and gluten-free, these nobake treats are also free of any refined sugar and are fun for kids to help form into balls. The coconut oil in the dough makes them easy to roll. You can easily make these tasty truffles non-alcoholic by replacing the rum with orange juice.

Ingredients: 1 cup almond flour ¼ cup dark rum 3 tablespoons cocoa powder 6 tablespoons coconut oil 2 tablespoons sugar-free maple syrup ½ cup golden raisins ½ cup dried shredded coconut Zest of two oranges For décor: cocoa powder & shredded coconut Instructions: Place all ingredients in food processor, in order listed above. Process into a thick, dense mixture. Dough should be sticking together, moving away from sides. Roll into small balls. Gently roll finished balls into cocoa powder and/or dried coconut. Instructions: Melt chocolate in a metal bowl set over a pot of simmering water. Stir frequently until completely melted, then remove from the heat.


Line a baking sheet with waxed paper. Stir berries into the melted chocolate. Spoon small clumps of berries onto the baking sheet. Refrigerate until firm, about 15 minutes. Store in an airtight container in a cool place for up to 3 days. Chocolate Chip Cookies

Ingredients 4 large Medjool dates, pitted 2 cups walnuts 2 teaspoons vanilla extract 1 teaspoon baking soda 1/8 teaspoon fine sea salt 2 tablespoons butter (warmed so that it’s in liquid form) 1 organic egg 1 teaspoon cinnamon To taste stevia (about 10 mini scoops powdered) 1/4 cup unsweetened shredded coconut 1 88% dark chocolate bar, chopped 1 tablespoon butter (for cookie sheet) Instructions: Preheat oven to 350 degrees. Blend dates, nuts & vanilla in a food processor until a paste forms. Add baking soda, salt, butter, egg, cinnamon & stevia. Mix thoroughly. Scrape the batter into a bowl & stir in coconut & chocolate. Form 12 portions of the dough onto a buttered cookie sheet, then gently flatten each one with your fingers. Bake until nicely browned, about 15 minutes. Store in an airtight container in a cool place for up to 5 days.

T

ucked away in a neighborhood shopping strip is a quaint, Italian restaurant that has been quietly operating for the past 10 years. Casa Mia, which is owned by the Sodano family, has created a warm, casual atmosphere and a reputation built on consistently delivering authentic Italian meals. Originally from Sorrento, Italy, the Sodano family relocated to the Valley in 1993. Danilo, the father, has been passionate about cooking since childhood. With a few restaurants under his belt, including a couple pizzerias, Danilo and his wife, Rosa, daughter, Hera, and son, Nantas, opened up their restaurant as we would open up our homes for guests. “Casa Mia is like my home where I entertain guests–they are no longer customers, they become friends,” shares Danilo. This warm ambiance and the delicious meals keep bringing people back to this hidden treasure.

Simplicity

My first impression of the restaurant when I sat down was how nice it was to escape the city and retreat in small, quiet restaurant and enjoy a good meal. I was greeted by Nantas who was charming and knowledgeable. The dialog between him and his family was all in Italian, and that added to the ambiance. Then Danilo came over and we talked about the menu and style of cooking from different regions in Italy. He keeps one thing in his mind when creating his entrees. “Sophistication of the food can be simplistic in order for you to taste each ingredient,” he says. Using only healthy ingredients, gluten-free pasta, organic chicken, grass-fed beef, and supporting the local farmers, Danilo still preps and creates new recipes and the three Carreto brothers are busy preparing the meals in the kitchen. Great detail is taken to ensure each dish is prepared to their specifications. And, they serve only the best Italian wines and oil, which is imported directly from Tuscany, to make sure the flavors are exactly the way it would be in Italy. Not just a meal it’s a dining experience

I started my evening by sampling three fresh, homemade pastas–Fusilli alla Siciliana, made with eggplant, fresh tomato, garlic, basil and aged dry ricotta cheese; Caserecce allo Speck, speck,

asiago cheese, cabbage, garlic and sage; and Spaghetti alla Checca, made with fresh cherry tomatoes, basil, garlic and extra virgin olive oil. The Fusilli alla Sicilana was my favorite, the combination of those simply ingredients made me savor each bite. And the Caserecce allo Speck was also very flavorful. There are four chicken entrees to choose from, a homemade sausage plate with mushrooms, onions, and fresh tomatoes, three veal dishes and a fish of the day as well as specials that may include wild rabbit or wild boar. My favorite veal dish is Saltimbucca. The first time I tasted it was at a small Italian restaurant in Jack London square in Oakland, Calif. I had yet to find a veal dish that could compare to my wonderful memory of this tasty entree. When asked what my favorite Italian dish was, I answered without hesitation, but a little apprehension. Not only was the Saltimbocca delicious, each bite was very tender and flavorful with a hint of the white wine. Nantas brought me a glass of new red wine that they were considering to carry and it was a wonderful pairing with my meal. W

hat comes to mind when hearing the words Thin Mints? Do you think of a thin chocolate-peppermint cookie that’s coated in chocolate with just the right amount of crunch? The first four words that come to my mind are Girl Scout cookie season, and this year, the Girl Scouts have come up with a new way for cookie aficionados, like myself, to indulge. The gauntlet has been thrown down and twelve chefs from around the Valley are competing in the inaugural Girl Scout Cookie Dessert Challenge. In a blind choosing, the chefs drew their cookie and will design a dessert utilizing the tasty treat. The cookies chosen for the desserts include Tagalongs, Do-SiDos, Samoas, Trefoils, Savannah Smiles, and my personal favorite, Thin Mints. Then during the month of February, the dessert will be added to their restaurant’s menu and a portion of the proceeds will benefit the Girl Scouts. The winner of the competition will be based on several factors such as number of desserts sold. Several lucky Girl Scounts will judge the desserts in a taste test to determine the most creative and the most delicious. Chef Charles Osteen from CHoP Chandler was inspired to help with the fundraiser because he has two daughters who are members of the Girl Scouts and felt like it was a natural thing to do. He’s seen how the program has benefited his daughters. “My oldest daughter really connects with the girls in the group and enjoys the leadership aspect,” says Osteen. “Both of my girls were so excited about the competition and have lots of pride 38 North Scottsdale Lifestyle | February 2014

knowing that our restaurant is representing the Girl Scouts.” While details of his dessert are still under wraps, I can share that Osteen is creating a mint ice cream sandwich. Sous Chef Kelli Sappington from the Olive & Ivy in Old Town Scottsdale is also competing. “It’s a great opportunity for girls and helps build them into strong women,” says Sappington. “Our restaurant’s new focus is on fresh, young and super fun, and this is a great way to tie in those ideas while supporting a great charity.” Sappington was never a Girl Scout, but remembers spending a lot of time in the kitchen, baking, as a kid. “When I’m in the kitchen, it gives me strength and confidence, and we all need something that gives us that feeling,” says Sappington. “The Girl Scouts help girls find what gives them confidence.” Sappington is creating a blueberry cheesecake gelato using the Trefoils as the crust of the cheesecake. Both the gelato and the blueberry jam is made in-house. “It’s nice to see the chefs really getting behind the girls and supporting this event,” says Susan de Queljoe, the senior associate of marketing and fund development for the AZ Cactus Pine Council, which govern the Girl Scouts in Central and Northern Arizona. De Queljoe says there are a couple of exciting changes on the horizon for the organization. First, the Scouts will be doing direct sales with their cookies, so no more waiting for them to be de-


livered. Secondly, they will be using funding from the Girl Scout Cookie Challenge and cookie sales to help renovate Camp Sombrero, located at the base of South Mountain. The camp has been around since the 1940’s, but in recent years it’s been used for staff development and as a day camp for the scouts. Cabins and air conditioning will be added, so that it can used as a year-round urban camp for kids. “Girl Scouts is the premiere leadership development organization for girls and we look forward to bringing the Girl Scouts to areas where girls might not have access to us,” says De Queljoe. “The world has changed quite a bit since I was a scout, they have so many more choices to deal with and we help teach them to make good decisions in their lives.” The funding from the cookie sales stays in the council to benefit the Girl Scouts, which is a nonprofit organization that depends heavily on their volunteers. “We call this a cookie program not a cookie sale, because the girls learn key skills like financial literacy,” says De Queljoe. “They also learn other real life skills such as goal setting, money management, people skills, business ethics and decision making. It’s so much more than cookie sales; these are the skills you need throughout life, whether you are a stay at home mom or a CEO of a Fortune 500 company.” When I think of Girl Scouts I think cookies, green sashes and badges. I think of motivated girls selling cookies at booths with their moms, who made time to be at their side. I think of girls learning to be entrepreneurs; taking a brave step into the business world. The Girl Scouts have changed since I was a scout. While they still do crafts and learn outdoor skills, today they are also learning to be confident leaders in a competitive world. A

udi’s flagship A8 has big shoes to fill because it is the embodiment of the company’s soul and a symbol of design, performance and technology. “It stands for everything we are capable of at Audi,” says Rupert Stadler, chairman of the Audi board of management. Today, the all-wheel-drive A8 remains the corporate benchmark. The A8 has an understated look but its personality is lively. It seems lighter and more agile than many of its competitors, and it doesn’t feel as large as it actually is. The aluminum body and space frame technology is roughly 40 percent lighter than a comparable steel body. Handling, performance and fuel economy all benefit from lighter weight. The standard wheelbase is 117.8 inches and the L is 122.9 inches. The 2013 A8 model line represents a dramatic expansion by offering four models instead of two. A supercharged 3.0-liter V-6, with 333 horsepower, takes the place of the V-8 engine in the standard model. Fuel economy is rated at 17 miles per gallon in the city and 28 on the highway. Prices start at $72,200 for the regular A8 and $78,500 for the A8L.

W

hat is the definition of love? Each year when February rolls around we dedicate a special day, and often times the entire month, to focus on one word… love. Love in the world today can be a loose term to describe how much you love a certain type of food or used to describe how much you like your pet. However, when it comes to loving your loved ones, love can only be described in one way. “Love is patient, love is kind. It does not envy, it does not boast, it is not proud. It does not dishonor others, it is not self-seeking, it is not easily angered, it keeps no record of wrongs. Love does not delight in evil but rejoices with the truth. It always protects, always trusts, always hopes, always perseveres.” – 1 Corinthians 13: 4-7 We must work hard to consistently love one another in this way. There are trials in this life that can make this difficult, but when we remember to love like this, good things will come our way. I know for my husband and I, this is what we strive for on a daily basis. We try to love one another in the most selfless way, to put the other before ourselves.

Not only should we strive to love our closest friends and families in this way, but we must learn to love even our enemies too. It is often times easy to express love to those who love us back but what about those who show us hatred? They are the ones who need to be shown love more than anyone. Now I am not saying that you have to be their best friend, or that you even have to agree with the things that they do, but showing simple acts of kindness with love at the center could have surprising results on their hardened hearts. So let us all open up our hearts a little more this year. Let us all learn to express true love and discover how our simple acts of loving kindness can bring blessing to all of those around us.
