Anthony Bourdain With the changing seasons comes a change in what we are craving. With fall, that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages available in northwest Bergen. This month, we had the pleasure of sitting down with the chefs and owners at Cafe Panache, Prime No. 7, and Harmony Mediterranean Grill. We learned about their history, and what their menus will be boasting and roasting this fall, so get your tastebuds ready--you are in for a real treat.

There is an art to creating a flavorful dish that satisfies our taste buds while evoking memories. The aroma of certain spices and foods can bring us back to our childhood kitchen table, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

Whether you are of Korean heritage, longing for the traditional flavors of your homeland, or are new to Korean cuisine, Prime No. 7 Korean BBQ & Tofu offers a high-quality Korean dining experience.

“We are the first restaurant in Mahwah that exclusively offers authentic Korean cuisine,” says manager Rachel Kim. “We work hard to offer flavorful, one-of-a-kind Korean dishes and barbecue using an induction grill. We use the highest quality ingredients in our recipes which were passed down through the generations to bring the authentic flavor home.”

Prime No. 7 specializes in oodae galbi, the seventh rib of the cow. Known as the most delicious part of the rack, the meat comes out seared from their open flame charcoal grill, cut off the bone, and sliced in front of the customer. “This is one of the dishes that sets us apart,” says Rachel. “Many Korean restaurants don’t carry this cut of meat.”

The restaurant also is gaining a reputation for its delicious rib eye, hanger steak, pork, shrimp, soups, and octopus dishes. Another crowd favorite is bibimbap, a traditional Korean rice dish.

“Korean food is deliciously seasoned. Soy sauce and sesame oil make it very flavorful,” says Rachel. “Some foods can be spicy, but most things can be customized to a customer’s preferences.”

The establishment is seeing many new faces and groups each week. Several local mom’s groups have been visiting to relax with the kids and introduce themselves and the kids to something different. “Korean food can be catered to meet the needs of any age group,” notes Rachel. “Kids tend to like the appetizers and the fried fare.” Prime No. 7 has become a common stop for golfers after a round at Darlington, too. The expansive space can seat around 200 people, so there is plenty of room to spread out. Prime No. 7 is a BYOB, and customers are welcome to bring a bottle of wine to enjoy with their meal.

Lunch boxes (similar to bento boxes) are a popular item to take “to go” or to enjoy on the premises. They are a perfect option for ordering a box lunch for groups, but it is recommended that you call ahead to order. Prime No. 7 is also able to cater for your next event.

“Thank you.” “Everything was excellent.” “Delicious.”

These are the parting words of guests as they finish their meals and head for home, happily satisfied from Harmony Mediterranean Grill in Franklin Lakes. This restaurant has it right—they are filling tables with customers on a beautiful Saturday afternoon in the late summer (when this article was written) when other eateries are clamoring for clientele. The cozy atmosphere, comfortable seating, and attentive staff ensure an experience as warm as the Mediterranean sun.

Owner Yilmaz Sert has been making sure his customers have been happy for years, beginning in his native homeland, Turkey.

“I’ve worked in the restaurant business since 1989,” says Yilmaz. “I’ve been a busboy, baker, and butcher, and I’ve worked in kitchens as well. When I came to the U.S. in 2000, I stayed with my uncle and began working as a busboy at an Italian restaurant where he was employed as a chef. I had a great experience working both the front and the back of the house.”

Yilmaz went on to work in numerous restaurants throughout New York City and eventually opened the original Harmony Mediterranean Grill in Manhattan.

During Covid, he moved his operation to Franklin Lakes and opened in February of 2022. “I became familiar with Franklin Lakes because I had some friends who had worked at the High Mountain Golf Club,” he says. “It’s such a nice town. It’s quiet and the people are friendly.”

It was the perfect spot for Yilmaz to relocate his restaurant since authentic Mediterranean cuisine is rare in this area.

Whether or not you are familiar with traditional Turkish or Mediterranean cuisine, you will find a wide array of delicious dishes to enjoy. The homemade Turkish flatbread (served warm) with an order of hummus or baba ghanoush is a great way to begin, followed by an entree of chicken shish kebab, which is moist and flavorful with crisp cole slaw and tender rice on the side. There are also plenty of lamb, fish, and beef dishes, as well as fresh salads.

“The chicken dishes are very popular, along with our seafood—especially the branzino,” says Yilmaz.

If you love sampling small plates, try their hot or cold appetizer combos and choose your own selection of five appetizers. Traditional hummus is made from mashed chickpeas seasoned with tahini, garlic, herbs, olive oil, and lemon dressing; baba ghanoush is a popular eggplant dip with tahini olive oil, lemon, garlic, and salt. Lebni (strained yogurt spread with olive oil, garlic, and dill) is popular, along with stuffed grape leaves, calamari, falafel (ground chickpeas with fresh onions and parsley), and manti (Turkish dumpling with yogurt sauce and seasoning). Harmony also offers combo dinners for 2 or 4 people and weekday lunch specials which include

homemade soup, fresh salad, a cold appetizer, and a selected lunch entrée for $19.99. Feel free to bring a bottle of wine along to enjoy with your meal.

The healthy benefits of a Mediterranean diet are one of the reasons why the establishment enjoys such popularity, and there are plenty of options for vegan, vegetarian, dairy-free, and gluten-free dining.

Café Panache CARRYING ON THE LEGACY

ARTICLE BY KRIS PEPPER | PHOTOGRAPHY BY SARAH FLANNERY Café Panache, an award-winning bistro serving eclectic New American cuisine for over 35 years, has long been an institution in Ramsey's downtown.

However, in January of 2021, chef/owner Kevin Kohler suddenly passed away at the age of 63. "He was healthy and athletic," says his daughter Kristie Messano (née Kohler). "He hiked and went to the gym regularly--my siblings and I were all left in a state of shock.”

The Kohler family has since taken on the responsibility of managing the restaurant to continue their father's legacy. We spoke with Kristie to learn more about a family that stopped in their tracks, picked up the pieces, and kept the business running.

WHAT WAS IT LIKE TO DEAL WITH THIS UNEXPECTED LOSS WHILE MANAGING THE RESPONSIBILITIES OF A RENOWNED LOCAL RESTAURANT? Losing our father was an unimaginable pain-one we could have never imagined. My dad was a vibrant soul with an outstanding ability to care for everyone in his life. His culinary prowess was second to none, so deciding to reopen the doors of Café Panache was very difficult. The idea that the institution he built would never again open its doors was a painful concept because he had poured all his energy and time into creating it. We had many employees that had been with us for decades, and the thought of leaving them unemployed in the blink of an eye did not feel right. My brother Jason

works full time, my sister Lindsay (Masi) is a stayat-home mom, and my youngest brother, Max, is in college. I was the one that had to step into the day-to-day operations. We felt pressured and were wondering if we could do this.

UNDERSTANDABLY, YOU AND YOUR SIBLINGS HAD BIG SHOES TO FILL. My dad was a great chef. He was a student of his craft and had hundreds of cookbooks filled with notations. He cared so much about the art of cooking and was constantly learning. He was also an amazing businessman, which led to his success as a restauranteur. It was rewarding to keep our loyal staff employed and get such support from our

wonderful customers. This is a passion project—that's what's driving us.

This place was the center point of our lives and the lives of so many others. We held many family celebrations within these walls and are doing our best to honor his memory.

HOW DO YOU DIVIDE UP ALL THE DUTIES INVOLVED IN MANAGING CAFÉ PANACHE? My dad always encouraged us to learn a work ethic within the business, so we took on various responsibilities akin to our strengths.

Upon hearing of my dad's passing, Michael Matonti, one of my father's past employees and proteges, reached out in sympathy. He had worked for my dad years ago, eventually moving on to attend the French Culinary Institute. We were lucky to be able to hire him back as our head chef. He is a great spirit in the kitchen, with the ability to innovate new dishes while successfully recreating the old favorites.

WHAT WAS YOUR DAD'S VISION FOR THE RESTAURANT, AND ARE YOU TAKING IT IN THE SAME DIRECTION? Our father's vision for the restaurant was simple; Use the freshest ingredients handpicked from local resources and purveyors and avoid being distracted by culinary trends—food is simply food, and you want it to be delicious.
