LIFESTYLE LETTER
Leaping into this Leap Year January is always home to our health and wellness issue, and it’s so nice to focus on these things after the stress the holidays sometimes bring. January can be a tough month, too — it’s cold and dark and seems so much longer than 31 days! But with the right mindset, we can choose to reflect on the past year and look forward to the year ahead of us, setting ourselves up for the trajectory we want to take with 366 days ahead of us (because 2024 is a leap year!). This month, we’ve got lots of amazing ways to set yourself up to care for your own well-being in 2024 — with stories of small businesses doing really cool things right here in the Northland. If you’re looking to bring more natural products to your home, The Greener Home in Parkville is a soap refillery that does so much research into the products in their store. They aim to be low-waste and more natural, so you can feel confident that whatever you get there is good for your body and the environment. Another small business, Green Grass Cattle Company in Weston, is looking to honor every part of the cattle they raise on their farm, and is branching into tallow, which is used both as a moisturizing skin product and as an alternative to seed oils in cooking. Speaking of cooking, MyCo Planet is an urban mushroom farm in North Kansas City and honestly, it’ll change how you feel about the mushrooms you might be used to from the grocery store. They’re doing very cool things with fungi, from coffee alternatives to health tinctures — plus, you can try to grow your own, which might provide some much-needed entertainment during these cold months! Lastly, every year we work with Northland CAPS, a program with high school students from Northland schools to produce a story package for the magazine. This month, Ellie Knepper and Cash Hibler worked on a story for us about Lucky Elixir’s kombucha and all its health benefits. It’s always so exciting seeing the talent of the youth in Kansas City when we work with them, and this year is no exception! I hope this month’s magazine helps set your 2024 off right, Northlanders! Thanks, as always, for flipping through our pages. Until next month, K AT I E C U R R I D , E D I T O R @NORTHLANDCITYLIFESTYLE

When you think of mushrooms, you might think of those slimy, store-bought creminis or fried portobellos you turned your nose up to as a kid. Mushroom growers like MyCo Planet, however, aim to introduce new varieties of mushrooms to your palate and make eating more mushrooms part of a healthier lifestyle! Robin Moore, the founder of MyCo Planet, is a biologist by training and was drawn to growing mushrooms by her interest in nature. “I’ve always had a love for nature and the amazing diversity and self-sustaining ecosystems that exist in this planet,” says Robin. “I decided to start growing mushrooms as a way of creating food, providing education for the children, and be closer to nature at a time when we were all spending too much online.” MyCo Planet grows everything locally at their urban farm in North Kansas City’s Burlington corridor and offers nine different gourmet mushrooms, from lion’s mane to an assortment of oyster mushrooms. “I have always enjoyed cooking with mushrooms but could not find the varieties I wanted to try at our local stores,” says Robin. “So I decided to grow my own. My background as a biologist made this endeavor an easy transition from the lab to the farm.”
“MUSHROOMS, INCLUDING LION'S MANE, OFFER NUMEROUS HEALTH BENEFITS,” SAYS ROBIN. “THEY ARE RICH IN antioxidants AND CAN BOOST THE IMMUNE SYSTEM, IMPROVE COGNITIVE FUNCTION, AND MAY HELP reduce inflammation AND SUPPORT HEART HEALTH.” CONTINUED >

These varieties of mushrooms have a superior flavor profile and texture than more commonly cultivated mushroom varieties. They are also very versatile. Add them to stir-fries and ramen, to pasta and noodle dishes, or even make mushroom barbecue sandwiches! If you’re looking for innovative mushroom recipes, you might try the Edgy Veg’s vegan mushroom shawarma recipe, which is intended to be made with oyster mushrooms. MyCo Planet also has a rigatoni with mushroom sauce recipe on their website that is a must-try. If you don’t like mushrooms, there’s a good chance these dishes will change your mind. Adding more mushrooms to your diet can be a great way to start diversifying the types of foods you eat, while also gaining the powerful nutritional benefits of fungi. “Mushrooms, including lion’s mane, offer numerous health benefits,” says Robin. “They are rich in antioxidants and can boost the immune system, improve cognitive function, and may help reduce inflammation and support heart health. Lion’s mane, in particular, is known for its potential to enhance nerve growth and cognitive function. The compounds in lion’s mane are being studied for focus, memory and dementia. We make lion’s mane tincture and lion’s mane coffee to help people who want to incorporate more into their diet.” MyCo Planet offers a variety of mushroom-based products for health, including powdered lion’s mane, mushroom-based coffees, and the previously mentioned tinctures that, according to their website, “contain a higher concentration of its bioactive compounds compared to consuming the mushroom in its whole form.” Beyond just selling mushrooms for the kitchen, MyCo Planet also offers grow kits so you can learn to grow mushrooms
at home! These self-contained kits are a great way to dip your toe in mushroom cultivation or as an edible science project to do with kids at home or even in a classroom. Growing mushrooms at home with these kits is simple. They come in a ready-made block of substrate that is easy to care for. At 10 lbs per block, MyCo Planet’s grow kits are also larger and more affordable than most grow kits available for order online. The benefits don’t stop at harvesting mushrooms either. The spent mycelium block can be broken down and added to your garden to enrich your soil. If you want to purchase fresh mushrooms, you can visit their in-person location at 1534 Burlington Street in North Kansas City, which is open

Kristen Edwards started researching more natural products to bring into her home during her first pregnancy in 2008. Back then, it took a lot of time and effort to figure out which products were actually cleaner and greener, and which ones just had claims that they were. She wanted items in her home to be safer for her baby and BPA-free, and it took her a long time to find the right fit for her household. “I wanted to make sure I was gonna give them the best start I possibly could because it’s a foundation that you’ve to set early,” says Kristen. Fast forward to 2021, and Kristen’s passion for naturally-based and more sustainable items in her home had only grown. With the help of that year’s pandemic-related Economic Impact Payments, Kristen launched a business out of her garage,
selling beauty products and soaps that she had diligently researched. She found such success with her home-based business that she opened a storefront in Parkville not long after — The Greener Home. Shortly after opening the storefront, Kristen found out she was pregnant with her third child after years of fertility struggles and being told her only option to conceive was IVF. Kristen can’t help but attribute the cleaner products in her home to her successful pregnancy. “I’d like to think that maybe that kind of gave us a little boost to make it possible,” says
Kristen of her daughter born September 2022. “She’s a little bit over a year old now and she’s kind of our little unofficial shop mascot.” As a mom of three with a full-time job on top of her Greener Home business, Kristen knows it’s not easy to adopt sustainable and cleaner practices in one’s home. Reading labels and finding more natural products that you also like using can be overwhelming. “I just wanted to make it more accessible and easy for anybody that wanted to get a product that was green,” says Kristen. “There’s so much greenwashing out there — there are so many corporate products out there that look clean and healthy, but they really aren’t. They’re either doing something that’s harming the environment to produce their product, or there’s ingredients that are in there that aren’t really good for you.” CONTINUED >

That’s why Kristen prides herself on doing all that research upfront, so customers can walk through the doors at her Parkville shop and feel confident that what they’re buying is clean and natural. “In this current society, everybody’s so busy,” says Kristen. “We’re just trying to grab what we know and move forward so we can get on to something that’s more enjoyable. We just want to make this accessible and easy for as many people as possible. Kristen looks for vendors that make products free of palm oil, phthalates and parabens, don’t use synthetic fragrances, work in small batches and sustainably source. Kristen also looks for vendors that have low-waste packaging or use a closed-loop system for their packaging, meaning all the bottles go back to the company to be refilled and reused.

The Greener Home’s first mission was to be a soap refillery. Kristen saw a need for one in the Northland, as she was driving to the nearest one in Waldo. She loves the concept of a soap refillery, because you can get as little or as much of a product as you’d like — whether you’d like to bulk buy or just try something new. You can bring in your own bottle to fill up, or Kristen sells bottles that you can fill and reuse. The Greener Home sells a lot of refill options, such as laundry detergents, shampoos and conditioners (both human and pet), lotions, household cleaners and various soaps. Kristen also sells plenty of takeaway products, like shampoo bars and lip balms. One of her favorite and most popular products is something called a Swedish dishcloth, which is a sponge-like cloth that can be washed and reused, replacing the need for paper towels. While greener products can feel like a luxury, Kristen wants to make the things in her shop both approachable and affordable. “I think when somebody hears sustainability or green products, they’re gonna think it’s much more expensive,” says Kristen. “And while some certain items are a little bit more pricey, they are cleaner and you are getting more bang for your buck because you don’t need to use nearly as much product.” Kristen also knows firsthand how overwhelming it can be to adopt greener practices in the home, and advises anyone looking to start to start small. Kristen believes that no one can be perfect at living sustainably, but wants to help everyone choose better where they’re able.

“A lot of people, I think they find this really impossible to achieve because they think they have to do everything perfectly, and that’s not practical,” says Kristen. “Just changing one or two things at a time over a period of time — that does add up, it does snowball into a greater effect on what’s going on in our community and in our environment.” The Greener Home 16 Main Street Parkville, MO (816) 328-5922 Greenerhomekc.com

Exploring THE FIZZ A NORTHLAND COUPLE’S ADVENTURE INTO THE REFRESHING WORLD OF KOMBUCHA
Kombucha, the newest health craze; but Lucky Elixir is here to stay. This fermented drink has hit pop culture running. In the large market of health drinks, Lucky Elixir has definitely made a name for themselves here in the Kansas City Northland. While the product is nothing short of phenomenal, the story of Amy Goldman and Shawn Galloway also shines. Growing up on a farm, Amy watched her parents make a lot out of little. Her parents' grit and hard work lit the fire for her to become her own entrepreneur. After being a paralegal for almost 25 years, she felt like that job had fulfilled its purpose. She knew she could make a lasting impact on the Kansas City community in a different way. She had always been interested in nutrition and food wellness. So, Amy took up a new hobby of making sourdough bread while her husband, Shawn started home-brewing beer. These processes turned out to be very similar and easy for them to produce. This sparked Lucky Elixir in its first form: a brewery and bakery. Amy needed to prove her business could be successful, so she started a booth at the local farmers market. She soon found out that she couldn't sell beer there and would need to find a new drink to pair with her sourdough bread. That's when kombucha came into the picture. She pioneered this fermented tea from something mostly found on the West Coast to a Kansas City favorite. After a summer at the farmers market and drinking kombucha on the daily, Amy and Shawn were reaping the health benefits of their beverage. She had decided that this was something she

wanted to share with her whole community. Nine months after making the switch from beer to kombucha, Lucky Elixir hit the shelves at their first grocery store in 2015. Now, eight years later, Lucky Elixir was named The Best Locally Made Kombucha in the Kansas City Area by Pitch Magazine 2022. “Kombucha is a fermented tea,” says Amy. “Tea is actually one of the healthiest drinks in the world that you can drink because it's loaded with polyphenols, which gives you lots of antioxidants that help fight viruses and sickness. Once the tea is fermented, the antioxidants are increased by 200%. Those are the kinds of things that help boost our immune system and gut health.” While Lucky Elixir is still in the process of expanding, Amy’s mission is to make kombucha accessible to the community as a healthy alternative for sugary energy drinks and soda. Opting for kombucha over energy drinks is a holistic choice that not only energizes the body but also nurtures overall well-being. The natural fermentation process of kombucha not only provides a refreshing burst of energy but also delivers a load of health benefits, from improved digestion to strengthening immune system function. Unlike the effects of jittery energy drinks, kombucha offers a balanced boost, promoting mental clarity and energy without the crash. By choosing kombucha, you're not just selecting a beverage; you're embracing a healthier lifestyle that harmonizes with your wellness goals. Cheers to a mindful choice that bubbles with both flavor and vibrance.

THE OFTEN-DISCARDED BEEF TALLOW IS BENEFICIAL IN MANY WAYS ARTICLE AND PHOTOGRAPHY BY KATIE CURRID

S ELF CA R E | H E A LT H + W EL L NESS
“These cattle continue to give back.” We often use the phrase “using every part of the buffalo” in a tongue-in-cheek way, but Mary Haer at Green Grass Cattle Company is taking it literally. She runs Green Grass Cattle Company in Weston with her husband, Gary Haer, and her children. They launched their cattle business in 2018 and as they’ve grown their farm and figured out what customers are looking for in their beef, they’ve learned a lot about the cows they raise. As Green Grass has continued to tailor their beef cuts to their clientele, Mary has learned so much about beef byproducts and how they’re used in many different industries. Many beef byproducts are sold off to different industries, such as their leather hides and organs, but Mary started to get especially interested in one byproduct that they hadn’t been using: tallow. “We try to do this with the public, to educate people about the cattle industry,”
says Mary. “And people don’t really understand and believe how many byproducts come out of a cow. It’s an amazing thing.” Tallow is known by many different names and is fat from a cow. It is also known as lard or suet, but the tallow used in beauty products specifically comes from the fat around a cow’s kidney. Tallow as a beauty product has seen a resurgence in the past year as people look for more natural forms of beauty products without harmful chemicals. Mary started asking around to see if they could sell tallow in their store and talked to Joe Bichelmeyer, who runs Bichelmeyer Meats in Kansas City, Kansas. Joe is an old family friend of the Haers who also processes their beef and told Mary that because Green Grass cows were fed such a healthy diet, they’d produce great tallow. “His comment to me was, ‘The way that you pasture your animals and feed your animals, CONTINUED > JANUARY 2 0 2 4 | C I TYL I FE STYL E . your kidney fat will be pure white. It would be perfect for this product,’” says Mary. The diet the Green Grass cows are fed is one of the main staples of their farm, which contributes to the quality of their meat — and now, the tallow. “One of the reasons why we’re named the Green Grass Cattle Company is because we’re not a feedlot,” says Mary. “And we believe that it’s very important for animals to live in a habitat that is natural to them.” Tallow can be used as a moisturizer and Green Grass sells it in two forms — as a balm and also as a whipped cream. It can be used as a skin moisturizer and lip balm, and can also help with diaper rashes or eczema patches. It is naturally full of vitamins and collagen. It can also be used in soaps and candles. Not only is tallow good for your skin, but it, of course, can be eaten, too. While many people are removing seed oils from their diets, tallow makes a great alternative. It has a similar consistency to coconut oil and can be kept refrigerated, where it will last 12 months, or at room temperature, where it has a 6-month shelf life. It is filled with vitamins A, D, E, K and B12, and also contains linoleic acid, which is helpful for gut bacteria. “The documentation will state the health benefits, and how much healthier it is to use the tallow over seed oils,” says Mary. “You know, we like to do things ourselves to find it out. And that’s when
we started having the processors save that kidney fat, and started going through each step of the process ourselves, to see the product and how it was going to end up. And we were amazed.” Mary started experimenting with the first batches of tallow herself and the family tried it on all sorts of things, like rough, chapped hands, skin rashes and even her grandson’s eczema patches. And while she was making the tallow — melting it, straining it, and whipping it up — she had a moment of gratefulness for her cows. “After I started whipping that up, it was like coming full circle with these animals,” says Mary. “It was like, yes, now, it’s not just food, it is something that is very beneficial to a human being. But the fact that we can raise these animals the best way that we could possibly raise them, and they will continue to benefit us — that was really meaningful to me. It’s like, wow, it’s not just meat.” Mary has been in awe of all that their cows provide. “These cattle continue to give back,” she says. You can find tallow in a whipped and balm form and for use on skin and in cooking at Green Grass Cattle Company in Weston. Start your day with a nutritious and vitamin-packed breakfast. Smoothie bowls are a great way to add a variety of fruits and vegetables. Top with chia or flax seeds for an extra omega-3 boost, nuts or seeds for added protein, or sliced fruit for additional vitamins and fiber. Including a hint of turmeric or ginger can aid in digestion and has anti-inflammatory properties. Eating a variety of fruits and vegetables can aid in cellular repair and gut health, and smoothie bowls are a delicious way to incorporate more into your day. Try some of these simple recipes, or create your own combinations to give your health a boost.
