I’ve worked as a photojournalist for a decade and often shoot for national newspapers and local restaurants. I also own a crazy little Italian bartending truck called Fizzolino that was actually on the cover of this magazine back in November of 2018. I swear it’s not a requirement for working here!

My passion has always been community journalism. I spent years away from the Kansas City area doing internships or working at newspapers or with my husband on military assignments, but this is our chosen home, and I care deeply about telling the stories of and for the people who live here.

NORTH KANSAS CITY HAS A WHOLE LOT OF BREWERIES FOR A TOWN SO SMALL

ACCORDING TO FOOD & WINE MAGAZINE IN 2019, THE CITY WITH THE

PER CAPITA IS PORTLAND, MAINE, WITH 18 BREWERIES PER 50,000 PEOPLE. But it looks like they may have overlooked North Kansas City in their research.

With a population of less than 5,000 (North Kansas City is not Kansas City, MO, as basically any resident with the proper amount of hometown pride will tell you), it has five breweries, so one brewery per 895 people. I’m not a mathematician, but that data says NKC has them beat. So take that, Portland Maine. You still have us beat in lobster rolls, and probably always will.

BIG RIP BREWING COMPANY

Named after the hypothetical phenomenon about

the ultimate end of the universe (essentially, the opposite of the big bang), Big Rip Brewing Company is all about all things sci-fi. All their beers are named after references to horror films and science fiction.

The brewery is tucked away in the industrial area of North Kansas City, next to the railroad tracks, and is neighbors with Hawg Jaw Que and Brew. Their bright red building features a large parking lot and concrete patio, but inside is something new. While their bar was closed during the pandemic, the owners built a log cabin, complete with a porch — inside! Local artist Joanna Comstock (@artofthejoannasaurus) painted a woodland mural with sci-fi references throughout the room, and the backroom now looks like the outside, but in. It will be perfect for those hot summer days where you just want to sit on the porch, but don’t want to suffer in the humidity or mosquitoes. Big Rip will be our refuge then, and thankfully, they’ve got plenty of cold beer.

Owners Amy Goldman and Sean Galloway opened their storefront three years ago on Swift Street. After getting their start selling their kombucha, Lucky Elixir, in mason jars at their neighborhood farmer’s

market six years ago, the couple now has five different flavors of their brightly-colored kombucha cans in grocery stores in the Kansas City area and nationwide. Their store features 11 kombucha flavors on tap, rotating in seasonal specialties like pineapple jalapeno and tamarind line, and even featuring kombucha-based cocktails, like their “komosa,” a mixture of kombucha and Prosecco.

Their kombucha brand, Lucky Elixir, now has hard alcoholic kombucha in four different flavors, like tart raspberry and peach blossom, so you can swap those out for your standard hard seltzer and get a little buzz while also helping your gut. You can find them in local retail stores in the Kansas City area, or in the Brewkery store.

Callsign Brewing got its start when owner, Steve Sirois, received a home brewing kit as a gift. He liked brewing beer so much that, after a $25,000 Kickstarter campaign, he moved his garage operation to a brewery open to the public in an old tire patch manufacturing plant — one that reminded him of an aircraft hangar. The likeness was perfect, because Steve, an Air Force veteran, names his beers after the callsigns of lost military aircrafts.

110 E 18th Avenue Cinder Block is probably North Kansas City’s most well-known brewery. With their urban-industrial vibes, large patio, big screens and frequent rotation of food trucks, it’s a great place to spend an afternoon watching the game and grabbing some beers with friends.

They’re the only brewery in Kansas City that brews their own seasonal ciders, so if you’re not huge on beer but your buddies are, there’s something there for everyone. Last year, their cans of cherry limeade cider sold out in less than 3 minutes online. If you missed your chance then, don’t miss out this year when it’s back — in the can or on tap, now that they’re open again. It’s the perfect companion to a breezy summer day.

IT’S HERE, FOLKS: GRILL SEASON. It’s time for potato salad, cold beers, and, of course, steaks. But here in the Midwest, we can’t be guaranteed grilling weather every day from now until winter again, though I wouldn’t be surprised if there was someone out there who had tried to finish off a steak during a tornado warning.

Pat Montgomery, owner of Waygu cattle ranch Kansas City Cattle Company, sat down with us to give tips on how to properly cook a steak, whether you’re indoors or out. As a man who slings steaks for a living, he’s got a few tricks up his sleeve.

If you didn’t get your dad a sous vide for Father’s Day, there’s still time.

1. Pull steak from fridge and cover in kosher salt (if you don’t like salt, you can always wash it off before searing. The salt tenderizes the steak).

2. Place steak inside a plastic storage bag or BPAfree reusable silicone bag, along with one tablespoon of butter per steak. Fill up a large pot with water and place the bag in the water, clipping the bag to the side of the pot. Place sous vide inside pot.

3. Set sous vide for time and temperature for desired doneness.

4. Once the sous vide has finished, finish off the steak on a hot cast iron skillet or grill, 45-seconds to a minute per side. The goal is not to cook the steak for long, but to sear it. Let rest 5-10 minutes before cutting.

PROS: Easiest to get desired temperature correct. You can also set it and forget it while you prepare the rest of dinner without worrying about overcooking.

CONS: Takes the longest, is the least amount of fun, needs special equipment.

Cast iron 1. Remove steak from the refrigerator and allow it to reach room temperature. Season both sides generously with kosher salt, and let sit for 30 minutes. Turn the oven to 325 degrees F. 2. Heat the cast iron skillet on top of the burner on high heat. Skillet will most likely begin to smoke.

Add one tablespoon of butter per steak.

3. Add steak and cook for 2-5 minutes per side, looking for a good crust on each side.

4. Check internal temperature, and if steak is not finished, place it in the oven until you’ve reached desired doneness. Use a meat thermometer if you’re unsure.

PROS: Most fun, and you can experiment with different ingredients in your butter CONS: Tough to get desired doneness, and if you don’t have good ventilation, you’re going to set off the smoke alarm 32

3. Move steak to direct, hot heat for 1 minute per side (expert level: get the nice grill marks).

WHAT WOULD YOU SAY FROM YOUR SOAPBOX? There are too many people talking from their soapboxes nowadays. If I found myself with a soapbox, I would just use it to have a better view at the next KC Chiefs Super Bowl parade.

WHAT’S YOUR FAVORITE SMALL BUSINESS IN THE NORTHLAND? I was lucky to be able to work for KC Cattle Company last year. They were there for me during my rigorous transition from the military to the civilian sector and I consider all their employees as good friends.

It has been a labor of love and we have watched it grow like our children.

WHAT IS YOUR FAVORITE HOBBY? Anything sports related. Photography. Sometimes together.

WHAT IS YOUR PROUDEST ACCOMPLISHMENT? Recently, I would have to say Operation Safe, which was a beautiful public/private coalition of hospitals, cities, Clay County and private companies who came together to vaccinate Missourians. We had 4 days to stand up a high throughput vaccination center. The joy of everyone volunteering and patients coming through to be vaccinated was palpable and inspiring.

WHAT’S THE MOST IMPORTANT THING YOU HOPE YOUR CHILDREN TAKE WITH THEM OUT INTO THE WORLD? Kindness. I hope that they understand and exhibit kindness to others in all that they do.

My mother, Marcy Grayson, who I lost nearly five years ago, and my sister Tonya, who passed away from sickle cell anemia at the age of 16 when I was 9. Their lives and passion for people was embedded in me, and I have made it my life mission to carry their torch since they can no longer carry it for themselves.
