of chili or batch of cookies now that I can stand to use the stove again. Food is our focus in this issue and it's one that I never tire of talking about. As one of the chefs in our "Where Chefs Eat" feature says, food is about relationships. The act of preparing food for someone can be the ultimate expression of love. It can also provide an opportunity for conversation and laughter. Heck, even my cooking fails have resulted in great memories for me over the years. I remember making (or more acurately, assisting in making) a paella for my best friend's birthday. Her mother, who grew up in Spain, was there and she primarily took the reins. I had grand plans of eating outside with our group of 17 (plus kids!) as we would all pass around dishes heaped with tasty favorites to celebrate the birthday girl. Instead, it started to rain and instead of cooking a magnificent paella, I had to try and shove 17 people (plus kids) into my crumbling sunroom. We ate in shifts and I cried in the bathroom at the failure of it all. This sort of thing NEVER happened to Martha Stewart. And you know what? My friend loved it. Was it the best paella in the world? No. Not even close. Was it a perfect tablescape, coiffed and bedecked with Iberian touches? Absolutely not. But it was a gathering of people that she loved and food that nourished

us. I made the same dish again (by myself!) and it turned out much better with a smaller group seated in my dining room. The table was still messy but the intention and result was the same--gathering friends to enjoy a meal together. We have lots of good stuff in this issue from favorite eateries for Northland chefs to a culinary snapshot of Cuba told through the eyes of our writer, Peggy Parolin. I hope

NKCH WELCOMES NEW MEDICAL STAFF PRESIDENT Michael W. Farrar, MD, a cardiologist with Meritas Health Cardiology on staff at North Kansas City Hospital, is the hospital’s new medical staff president. Dr. Farrar earned his medical degree from the University of Missouri-Kansas City School of Medicine in 1979. He completed his internal medicine residency, for which he was a chief resident, and cardiology fellowship at the University of Cincinnati Medical Center. A specialist in cardiovascular disease, echocardiography and electrocardiography, he is a fellow of the American College of Cardiology and the American Society of Echocardiography.

PARK UNIVERSITY TO HOST WORKSHOP FOR NONFICTION WRITERS Park University’s Dorothy Harper Watson Literacy Center, in conjunction with the University’s Office of Continuing Education and Overland Park, Kan., based The Little Fig, is taking applications for its Nonfiction Writers Intensive workshop series to be held during the Spring 2019 semester. The purpose of the NWI is to build a collection of career pathway success stories that showcase subjects of cultural, linguistic, ethnic and gender diversity. The workshop, which is conducted entirely online, is open to authors worldwide, published or not, and will focus on creating inspirational picture book biographies that depict diverse stories of entrepreneurship. Curt and Kristy Alldredge fall firmly in the second camp. As owners of Alldredge Orchards in Platte City, they have decades of experience cultivating a crop that many of us take for granted. Curt Alldredge comes by his love of orchard managment naturally--his family owned an orchard in St. Joeseph, Mo. for many years. When his father passed away and they sold their orchards, he moved slightly south and established Alldredge Orchards--35 years ago. While he has time on his side when it comes to cultivating a mature orchard (and experience as his first degree was in Pomology or the science of growing fruit), business has really ramped up in recent years since social media exposure has given families the idea of apple picking as a great bonding experience. And it is--Alldredge Orchards offers U-Pick every weekend in September and October with an additional pumpkin patch in October. This summer's drought means that most of the pumpkins will be trucked in but parents will still

Alldredge says that they are just as much an entertainment farm as they are a working orchard. They maintain a flock of very friendly chickens, a few ruffled geese, a peacock and a new flock of baby goats. They even have a miniature horse. They offer educational school tours during the week by appointment. They also have a children's playground area complete with slides and play equipment disguised as farm houses. For adults, they offer event space that often hosts weddings, with options for outdoor ceremonies and indoor receptions in their versatile barn.

Don’t climb--all of the apple trees at Alldredge Orchards are grown on dwarf root stock so that the fruit will be easy to reach. While trees are sturdy enough to hold a full harvest of apples, they may not support the weight of an adult.

Only pick what you intend to buy--once an apple hits the ground, either because of gravity or because of people shaking the trees unnecessarily, that apple can’t be sold by law so only pick what you intend to take home.

Enjoy yourself--apple picking is fun! You’ll never look at store-bought apples the same way again. While these apples may have names you don’t recognize and lack the waxy shine that you see in the produce department, they taste like apples should taste. Alldredge recommends keeping them in the fridge to help maintain their crunch and freshness. 22

WHAT IS YOUR NORTHLAND CONNECTION? I’ve lived in Liberty for seven years and owned Morning Day for a little over four years. WHAT IS YOUR FAVORITE RESTAURANT/ MEAL IN THE NORTHLAND? One of my favorite restaurants in Liberty is Seva Indian Cuisine. I am in love with their chicken tikka masala and the Seva Squash. I usually end up there on my rare day off for the lunch buffet. I generally make a meal of the vegetable pakoras, squash, and basmati rice and then cover it all in tikka masala chicken with even more masala sauce. I could do the backstroke in this stuff- I dream about it- I’ve attempted to regularly recreate it and if I go too long without it I go through withdrawals. It is my ultimate comfort food. The naan is fresh and delicious but for me it’s merely a vessel to transport more masala sauce to my mug. The service is gracious and the perfect complement to the complex yet simple and fresh flavors the kitchen keeps pumping out during each busy service. I take everyone I can to brunch at Seva when I’m not making brunch for my friends at Morning Day. WHAT IS YOUR PERSONAL PHILOSOPHY TOWARD FOOD FOR YOUR OWN RESTAURANT?

I feel that food, no matter how it’s assembled, needs to start with fresh, local and organic ingredients. I want to feed my community from my community so I try to stay as locally sourced as possible. I utilize fresh, local and ethically sourced ingredients in my kitchen as well my coffee and cocktail bar. My menu has simple flavors that are creatively constructed to be unique and interesting yet alluring enough that, like the masala sauce from my fave lunch at Seva, keeps customers coming back again and again. I was born and raised in the northland (Platte City). My first restaurant job was off I-29 and 64th street at the Yia Yias. WHAT IS YOUR FAVORITE RESTAURANT/MEAL IN THE NORTHLAND? I have a special spot for the sausage and onion pizza at Leo’s Pizza. It’s partly a love from childhood and partly my obsession with provel cheese and thin crust. The sausage is cooked on the pie and the onions are super sweet. The house salad is a must also. It has cold provel (totally different from the melty molten cheese on the pie) and the sweet onion vinaigrette. Everything about Leo’s is pure Northland— warm, comforting and wouldn’t work anywhere else. My dad was a UPS driver forever and he loved finding those hole in the wall spots—­­Leo’s, Wally’s Pastry, Hay’s Hamburgers and Le Monde Bakery (RIP). WHAT IS YOUR PERSONAL PHILOSOPHY TOWARD FOOD FOR YOUR OWN RESTAURANT? My personal philosophy at Krokstrom and Vildhäst is to respect the culture and traditions of Scandinavian cuisine. Krokstrom focuses on the comfort food of Scandinavia, the dishes my family passed down. Vildhäst is all about the street food of Scandinavia-think unique Korv (sausages) with exciting flavorful toppings and pickled Danish fries. At the end of the day I want to make food that I crave and I want to represent a culture that has been neglected far too long. We all want an escape when we go out. Whether that’s a trip up north out of the city center or visiting a restaurant with food you never knew about, it gets you out of your day to day routine. That is fun for me. 26

WHAT’S ON YOUR BUCKET LIST?

EVERYONE HAS A “BUCKET LIST.” I carry mine with me wherever I go, perhaps fearful of missing an unexpected opportunity. So it was with my impromptu visit to Cuba, the once forbidden isle. I was weighing a typical Wednesday decision, trying to rationalize a search and seizure shopping trip to my favorite big box store. As I dismounted the sofa and stack of writing assignments awaiting my consideration, a familiar ping from my cellphone echoed more loudly than usual. This ping-ponged with a slight salsa beat. “Can you believe the price on this trip to Cuba? It’s a last-minute cruise. They’re practically giving these rooms away. You have to go.” I am always fond of how my friends find adventures for me to enjoy. “But what about you?” I inquired. “Why don’t you go?” The answer of most is always the same. “It’s on my bucket list.” “ I will someday.” “The timing’s not right.” “But, is it safe?” “I don’t even know if I have a passport.” The snippets of “somedays” ran through my cluttered mind. Suddenly, I was faced with a decision. Should I go to Target or Cuba?

It was that same dilemma Robert Frost faced when coming upon the road less traveled. I opted for Cuba. Cuba turned out to be everything I didn’t think it would be. Traveling solo, I felt completely safe. The people were kind and welcoming; the architecture was stunning. The demise of stately buildings taken over by the Communist government and left in ruins was disheartening. Rum and cigars were plentiful. And, of course, for most things, there was one price for locals and double the price for tourists. Wide open doors to whatever leaked music into the streets of the old neighborhoods I visited with my driver and tour guide in his 1958 Oldsmobile convertible. And then there was the food. My first authentic Cuban meal was in a huge rambling old home. The house was warm-- as in without air conditioning--but my interest in staving off starvation distracted me from thinking I might pass out. I ordered picadillo served with rice (not Minute Rice) and plantains (which I later learned were called maduros -sweet plantains fried only once-not twice). The picadillo was both sweet and savory. Combined with the plantains, bottled water (DON’T drink tap water in Cuba) and flavored rice, I became more confident than ever that choosing Cuba over Target was the right decision. The Hotel Nacional, Hemingway’s hangouts and stories of life in Cuba told in a way they’ll be with me forever are my souvenirs. I wanted more. The good thing is now that I’m home, I can visit Rachel Kennedy-Cuevas’ CubanInspired Plantain District in the North Kansas City Iron District whenever I want to be reminded of my spontaneous adventure. Rachel’s husband, who was born and raised in Cuba, immigrated to the U.S. with his brother and parents when he was 18. “I immediately fell in love with Cuban food,” says Rachel, "because it is so unpretentious! It’s just wholesome, simple ingredients that pack a ton of flavor and textures.” But, does it taste the same? CONTINUED >

Rachel is prepared to put her picadillo up against the best of Cuba. She creates a mojo (a marinade or topping for meats, rice and beans,) from a triad of garlic, citrus, and olive oil. Accompanied by citrus cilantro rice and maduros, it will be the next best thing to revisiting “la Tierra mas Hermosa.” Plantain District also offers another incredible dish I was able to try while in Cuba, chicken fricassee. Okay, so maybe the food was one of my favorite parts of the adventure! Rachel recently sold the original Plantain District food truck she’s owned and operated since 2014 but will reopen as a shipping container this fall in North Kansas City as a part of the Iron District, which will be a shipping container lot featuring food, retail, and even a bar! According to Feast Magazine, the new area at 16th and Iron in NKC will feature five food vendors in addition to the Plantain District, a full-service bar, a stage where local bands will play on Friday and Saturday nights, and eight to 16 spaces for local retail artisans to sell their products. Additionally, there will be outdoor seating and lighting to allow people to stay and eat and shop into the evening hours with bathrooms on-site. Maybe for those wanting to visit Cuba but aren’t quite ready to jump on a plane, Rachel’s Plantain District will be the beginning of their adventure. Would I go back to Cuba? Definitely. Besides, Cuba is on the way to Aruba and the Dominican Republic and Ecuador and the Galapagos. Wait a minute. Let me check my bucket list...

PUMPKIN BISQUE EN CAPPUCCINO CHEF JASPER MIRABILE LOVES THE BOUNTY OF FALL . . . ESPECIALLY KANSAS CITY’S OWN LOUISBURG APPLE CIDER, WHICH LENDS THIS PUMPKIN BISQUE A WONDERFUL SEASONAL TWIST.

JASPER’S PUMPKIN BISQUE en CAPPUCCINO Makes 6 servings

INGREDIENTS + 1/2 cup olive oil + 1 medium white onion chopped + 2 cups pumpkin purée + 2 tablespoons brown sugar + 2 cups vegetable stock + 1 cup Louisburg Apple Cider + 2 cups heavy cream + 3 tablespoons chopped fresh chives + 8 ounces crispy pancetta + Salt and freshly ground black pepper, to taste + Pumpkin pie spice to taste + Frothed milk, sour cream, or heavy cream, for serving

METHOD Heat the oil in a medium saucepan over medium-low heat. Add the onion and sauté for 5 minutes. Add the pumpkin and brown sugar and stir continuously for 5 to 6 minutes. Transfer the mixture to a food processor or blender and process until smooth then return the mixture to the saucepan. Stir in the stock and bring to a boil over medium heat. Add the cider. Reduce the heat to low and simmer for 5 minutes. Remove from heat and stir in the cream and chives. The soup can be stored, covered and refrigerated for up to 2 days. To serve, season the warm or chilled soup with salt and pepper and top with frothed milk, sour cream, or heavy cream. Sprinkle with crumbled pancetta and pumpkin pie spice. 42
