LIFESTYLE LETTER
February — Local Love Love abounds in North Peoria! We love our community—our restaurants, beautiful parks and trails, medical providers, schools, and shops. We have so much about our community that is locally prepared, curated, and delivered—which is why we chose “Local Love” for this issue's theme. Speaking of love, food itself is love to so many of us. So many of our local restauranteurs show us love each day with the food they prepare for us. I am so grateful for them! Here’s my little secret—until recently, I never really understood the “love language” of food. I was so busy raising my kids, shuttling them to sports, and managing my own business that when they got to high school, something had to give. For me, that was food. I still put food on the dinner table for them, but I gave myself permission to shop for food I could “assemble” more than “prepare.” What my house lacked in smells and flavors of home-cooked meals, it gained in nutritious easy meals to fuel our busy lives and keep them running at a lightning-fast clip. Nowadays, I’m pitiful! I have the time and creative energy to spoil them rotten with caloric love bombs, and I’m enjoying every second of it. Trust me, so are they. I realize now what our local restauranteurs do every day – lead from the heart with food. Food most definitely IS a way to show love, express love, and share love. So if you haven’t discovered the love language of food, find some inspiration inside these pages. There are so many fun ideas for trying something new. Fall in love with our community. Love local means going out and enjoying our local shops and restaurants. You won’t be disappointed! Fall in love with your community, and it will love you back. And may it always, in everything you do. J U L I E L AC R O I X , P U B L I S H E R @NORTHPEORIALIFESTYLE

FAMILY CATERING BUSINESS FAT FREDDY'S FOCUSES ON PUTTING BEST FOOD FORWARD
A FAMILY AFFAIR 10
C HE F ’S SE LE CT ION | FOOD + BE VE RAGE
Not everyone has the inclination, know-how, or time to cook a big feast for a party or event. That’s where caters come in. There are plenty of catering options in the Valley, but not all can tout being family-owned and operated. Freddy and Eric Renstrom are the proud team behind Fat Freddy’s Catering.
“My theory was that I can make more money serving 400 people in one hour versus four people in one hour at a restaurant,” says Eric. “I suggested the catering business to my dad, and we’ve been moving with that plan ever since.” Freddy was on board but wasn’t sure how long this venture would last.
“WE RELY ON REFERRALS. NO SOCIAL MEDIA. WE ARE BUILT ON REPUTATION.” The father-and-son duo provides catering services for various events, such as corporate parties, holiday parties, weddings, and private parties. They are focused on delivering the best catered foods and service in the Valley. According to Eric, Fast Freddy's focuses on what they know. “We focus strictly on catering good food for good people. It’s what we know. It’s who we are.”
A CATERING BUSINESS IS BORN
For Freddy, restaurants and food service have always been in his blood. “I worked at a couple of restaurants before starting the catering business. It was really Eric’s idea to get this started, however, knowing that I was tired of all the long restaurant hours, but I always had a head for business.” After attending Northern Arizona University and earning a Hotel and Restaurant Management degree, Eric worked for resorts in the Valley for several years. However, much like his dad, there was always something more he wanted to do.
“I’m not a guy that’s done things long term. Before the catering business, the longest I’d had a business was about six years, and my family has watched me go through many different types of businesses,” says Freddy. “I enjoy being self-employed. I don’t like putting up with other people’s crap, and it is the best way for me.”
CHALLENGES TO THE CATERING BUSINESS
One of the biggest challenges the team at Fat Freddy’s has faced over the years was surviving COVID. “Of all the food businesses, catering was hit the worst,” shares Freddy. “When there were no more social gatherings, there were no more events. We lost hundreds of thousands of dollars in business in one day.” Eric added that it took some time to figure out what to do. “Thankfully, none of our clients asked for their deposits back, but we still had to look at how to move forward.” CONTINUED >

The team brainstormed and focused on what they could do. They looked at the fact that people were home, so they created pre-packaged home meals. “Think fancy TV dinners made from scratch,” says Eric. The offering took off, and people were thankful to continue enjoying Freddy’s great cooking. Fat Freddy’s Catering also offered Freddy’s Back Door Barbecue, so people could pick up trays of barbecued meats. Fat Freddy's uses a Southern Pride smoker with pecan wood to smoke brisket, pork, and chicken, making this a favorite offering during COVID and beyond. “None of these ideas got us rich, but it kept us afloat,” shares Freddy.

“WE'RE ONLY AS GOOD AS OUR LAST EVENT.”
They also kept their staff busy and employed by renovating their kitchen, turning the employees into remodelers. This was a great way to keep people busy with cooking and kitchen updates. Even today, businesses appreciate Fat Freddy's pre-packaged meals because they are no-mess ways to feed employees. There's no buffet to set up, keeping this a popular option.

THE FUTURE OF CATERING
Looking ahead, Eric says they are just concentrating on what they do best. “Catering is a tough business; it’s fastpaced and expensive, but we are committed to being the very best at what we do. We want to prove the value of what we provide, making it worthwhile to our customers.”

CHAR Pizzeria Napoletana 25101 N Lake Pleasant Pkwy #1325, Peoria Check out CHAR Pizzeria Napoletana (CharPizzeria. com) for a quick service spot offering some of the best pizzas in the Northwest Valley. Owner Tommasina Mamola opened CHAR to offer something local from Naples, where she grew up. Although she has owned multiple restaurants across the Valley, she is most proud of CHAR because of the Neapolitan-style pizza that reflects her heritage. In fact, CHAR is certified by the Associazione Verace Pizza Napoletana (VPN), which governs restaurants specializing in Neapolitan-style traditional pizza. That means the pizza dough is hand-mixed or mixed slowly and then hand-rolled to make 11-inch pizza pies. CHAR must use specific yeast, vegetables, and cheeses for each pizza to maintain certification. CHAR’s custom wood-fire oven burns only oak and pecan branches, and the pizzas are cooked on a stone hearth adjacent to the fire. Mamola aims to make the most authentic Neapolitan-style pizza around. The menu has plenty of options, including Garlic Lobster, Farmer’s Market, and a Build-YourOwn style, where you can pick your base sauce and add topping options. CHAR serves bruschetta and salads, giving everyone tasty options. The restaurant offers happy hour daily in the bar from 3 to 6 p.m. CONTINUED >

Urban Agave 6685 W. Beardsley
Rd #180, Arrowhead Sky Restaurant Concepts bought Urban Margarita in mid-2023 and changed the name to Urban Agave (Urban-Agave.com). The Mexican–American restaurant serves freshly made dishes in its scratch kitchen. The chef and staff at Urban Agave are focused on elevating all aspects of the restaurant experience. Their best and most popular menu items include puffy tacos, stacked enchiladas, stuffed poblano peppers, and Casa Birria tacos. The food isn’t the only reason to stop in Urban Agave. Check out their superior cocktail menu, curated by their sister bar, Highball Cocktail Bar in Phoenix. Urban Agave offers one of the best house margaritas in the Valley. The restaurant has several specials during the week, including Margarita Monday, Taco Tuesday, Wine Down Wednesday, Live Music Thursday, and daily Happy Hour specials from 3 to 6 p.m. Enjoy a weekend brunch on Saturday and Sunday from 9:30 a.m. to 1:00 p.m. Don’t forget the event room that seats 30 to 40 people!

Squid Ink Sushi Bar 9947 W Happy Valley Pkwy #109, Peoria Sky Restaurant Concepts is also behind another must-eat spot—Squid Ink Sushi Bar (SquidInkSushi. com). The team behind the restaurant describes the unique menu as one that cannot be put into a specific category. The food options have influences from Japan, Thailand, Korea, America, and more. Squid Ink, which opened in 2010, offers sushi on its menu but isn’t a typical sushi restaurant. There are traditional rolls to choose from, but there are also house-made rolls unique to Squid Ink. However, if sushi isn’t your style, no worries. Plenty of other options include chicken wings, buffalo chicken roll, a wagyu burger, and Thai Chicken fried rice. If you are looking for an alcoholic drink to indulge in, there are plenty of options on that end as well. A variety of specialty cocktails and beer, wine, and saki are available on the menu. There are also plenty of non-alcoholic options. The casual spot is great for grabbing a quick lunch or enjoying happy hour with friends and family. The restaurant offers happy hour daily from 3 to 7 p.m., Poke Taco Tuesdays, Wine Down Wednesdays, and live music on Thursdays. So, no matter when you are looking to come in for a bite, all diners have several options.

Chocolate Goodness
SHOW SOME LOVE WITH THESE GLUTEN-FREE CHOCOLATE LAVA CAKES
ARTICLE AND PHOTOGRAPHY BY REBECCA TAIG There is something decadent about molten chocolate lava cakes—that dark chocolate cake on the outside with warm, gooey chocolate ganache inside. Restaurateur JeanGeorges Vongerichten created the first chocolate lava cakes. Even today, decades after the introduction of the delightful little cakes, they almost seem magical when we cut into the warm cake and watch that chocolatey goodness ooze out. Ideal for a special occasion, these aren't difficult to make. North Peoria resident Rebecca Taig offers this gluten-free version of the chocolate favorite. Head to RebeccaTaig.com for more gluten-free recipes, hosting inspiration, and seasonal decor.

ingredients • 6 ounces dark chocolate, (60-70% cacao bars) finely chopped • ½ cup butter, plus extra to butter ramekins • 1 teaspoon espresso powder, optional • 2 large eggs • 2 large egg yolks • ¼ cup coconut sugar • ½ teaspoon vanilla extract • ¼ teaspoon salt • 2 tablespoons (14 grams) almond flour • 2 teaspoons unsweetened cocoa powder for dusting ramekins
G LU T E N - F R E E C H O C O L AT E L AVA C A K E S
directions 1. Preheat the oven to 450°F. Butter and lightly dust four (4 to 6 oz.) ramekins with unsweetened cocoa powder. Place the ramekins on a baking sheet. 2. In a microwavable bowl, add the chopped chocolate and butter. Microwave on high for 30-second intervals, stirring in between, until smooth. It should take about 60-90 sections. Once melted, stir in the espresso powder. Set the bowl aside. 3. In a large bowl at high speed, beat the eggs, egg yolks, coconut sugar, and vanilla extract until thickened and pale. This will take around 3 minutes. 4.Pour the melted chocolate mixture into the large bowl. Add the almond flour and salt. Fold in the ingredients, stirring until combined. 5. Using a large ice cream scoop, divide the batter evenly into the prepared ramekins. Bake for 7 to 9 minutes. The sides of the cakes should be set, but the centers should be soft. 6. Let the cakes cool in the ramekins for 1 minute. Run a clean knife around the edges to help loosen the cakes, then cover each ramekin with an inverted dessert plate. Carefully turn each one over, let it stand for 10 seconds, and then remove the ramekins. 7. Finish the cake with a dusting of powdered sugar and serve immediately with ice cream or whipped cream if desired!

Reservations For Two Dreamy destinations for couples looking to get away.
Finding a life partner just might be easier than finding someone you can travel with. Pace, patience and priorities all matter when organizing itineraries, straddling time zones and navigating new places. Do you like languid mornings with room service, wide sandy beaches and white-glove service? Or, do you prefer watching the sunrise in hiking boots, launching into eye-opening excursions and digging to find that hidden gem of a restaurant that serves local food to locals? When the stars align, both partners have an affinity for generally the same kind of vacation, or are willing to compromise. Enjoying travel with your mate is the icing on the (wedding) cake. Here are a few ideas for fabulously romantic getaways. Bon Voyage!
Traveling can be as stressful as it is sublime. Exhausting as it is inspiring. Traveling as a couple requires additional planning and communication with a healthy dose of patience. Much like marriage! But, waking up in a faraway place, exploring unknown terrain together, and leaving your routine and all its trappings behind can be therapeutic. You both can take on new roles and release tired habits.
1
Write new vows over lunch or take a random nap because you can.
2
Share planning and talk about your goals for the trip. Do you want to completely unplug or will one of you need excellent wifi to call into a few meetings?
3
If you’re parents, consider setting boundaries for texting and phone calls so you can put the phone away and immerse in one another. Let the kids know you will be checking your phone at a certain time each day (and stick to that). Let the grandparents or caregivers handle the day to day drama.
4
Take turns charting a course for the day. On day one, you check museum opening times, get the timed tickets and find a nearby spot for a healthy lunch. On day two, you sit back and let your partner call the Uber and source out the perfect shopping district, walking distance to a park. Enjoy the ride, either way.

“A year after my surgery I was still experiencing pain and numbness. Physical therapy had helped to a point, but I still wasn't able to resume my normal training without aggravating my back and being forced to limit my activity. Dr. Mitchell and his team immediately identified the problem areas and came up with a treatment plan. After the first visit, I had significant relief and have seen continuous improvement since then.”

DIY VALENTINES
ARTS
ARTICLE BY CHERYL PARTON
1. Arts Create heart ornaments to hang on a Valentine’s Day tree. The ornaments can be used as clue cards for a Valentine's Day scavenger hunt. Participants find their picture on the tree and hunt for a hidden treasure.
2. Sweets A home-based holiday is made complete with a dessert table. Whether made from scratch or store bought, a collection of decorated confections is as beautiful as the treats are delectable to eat.
3. Sentiments Poetry is a most personal way to express your heart. No need to be intimidated by haiku, a short form of Japanese poetry. While there are several variations of the form, a traditional place to begin is with a seasonal word that divides 17 syllables into three lines of five/ seven/five. Simple and sweet.

The first Valentines were handmade in the 18th century, long before printing presses and mass-produced options. Today, handmade signifies the ultimate in personal mots d’amour. Enjoy these sweet projects as a couple, a family, or with friends.
