Welcome, Fall

With the changing seasons comes a change in what we're craving, and with fall that often means comfort food. October is our most delectable issue of the year.

The smells of fall bring memories to my mind of sitting in my grandmother’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table. See page 14 for healthy fall recipes shared by McCaffrey's Food Market, so you can make some new food-related memories in your own kitchen.

There's definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting.

Food brings us all together, and whether we're sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. First 'Paper Source' Store In Bucks County Launched In Newtown

Managers of stationery and paper store, the Paper Source, opened recently at the Village at Newtown Shopping Center. The company's headquarters are in Chicago, Illinois; this store is the chain’s first one in Bucks County. The new store offers gifts, paper goods, custom invitations, announcements, gift wrapping, calendars, appointment books, party supplies, envelopes, greeting cards, paper craft kits, party supplies, personalized stationery and stamps. The company's stated mission: “Do Something Creative Every Day.”

New Real Estate Team Opens Newtown Office

A family-operated, boutique real estate office, Mish Realty, recently opened in Newtown at 123 N. DIABETIC/GLUTEN-FREE/HEART-HEALTHY OPTIONS: TOMATO BEAN CHILI, APPLE CHIPS, PUMPKIN SMOOTHIE

TOMATO BEAN CHILI

Grab spoons and prepare your taste buds for a hearty and delicious vegetarian chili recipe. Topped with creamy Greek yogurt and shredded cheddar cheese, this recipe is a game changer for healthy comfort food.

Ingredients:

• 1 tablespoon canola oil

• 1/2 medium yellow onion

• 2 garlic cloves, minced

• 1 tablespoon tomato paste

• 1 can (14.5 ounces) no salt added diced tomatoes

• 2 teaspoons chili powder

• 2 teaspoons ground cumin

• 1 teaspoon oregano

• 1 can (15.5 ounces) no salt added red kidney beans, drained and rinsed

• Nonfat plain Greek yogurt, for serving if desired

• McCaffrey's shredded reduced-fat cheddar cheese, for serving if desired

• Diced green onions tops, for serving if desired

Preparation:

Heat oil in a large pan over medium heat. Add onion and cook until softened, 3-4 minutes. Add garlic and stir until fragrant, 1 minute more.

Stir in tomato paste and cook until darkened and fragrant, then add diced tomatoes, chili powder, cumin, oregano, and ½ cup water. Bring to a boil, reduce the heat, and simmer until a thick sauce, 10 minutes.

Stir in beans and heat through, then remove from heat. Spoon into bowls and serve with Greek yogurt and cheddar cheese if preferred. Additionally, top with green onions, if desired.

Serving size: 1 cup; serves three

APPLE CHIPS

Everyone who gets to snack on these are likely to ask for more, more, more.

Ingredients:

• 4 large Cortland apples, seeded and thinly sliced

• 4 teaspoons cinnamon

Preparation:

Preheat oven to 200 degrees. Line four baking sheets with parchment paper.

Using a sharp knife or mandoline slicer, cut apples into thin slices (if using a mandoline, cut the apple in half first, then start with the sliced part facedown on the mandoline). With a knife, remove the seeds. Arrange apple slices in a single layer on the baking sheets. Sprinkle 2 teaspoons of cinnamon over apples. Bake the apples for 1 hour. Flip the apple slices and sprinkle with the remaining 2 teaspoons cinnamon. Bake for 2 hours, or until crisp. Store in airtight container.

PUMPKIN SMOOTHIE

Switch out high-fat pumpkin lattes for this healthy smoothie version. At about 50 calories per serving, this creamy smoothie is full of fabulous fall flavors and just 1 gram of fat.

Ingredients:

• 1 can (15 ounces) pumpkin purée

• 3 cups McCaffrey's unsweetened almond milk

• 1/2 cup vanilla yogurt

• 1 tablespoon maple syrup

• 1/4 teaspoon ground cinnamon, plus additional for garnish

• 2 crumbled graham crackers, for garnish

Preparation:

In a freezer-safe container, freeze pumpkin puree for up to 4 hours or overnight. In a blender, combine the milk, yogurt, frozen pumpkin puree, maple syrup and cinnamon and blend until smooth. Serve immediately topped with additional cinnamon and graham crackers, if desired.

THE AUTHOR'S LAUNCH: RECIPES AND STORIES FROM AMERICA’S GOLDEN ERA UPDATED FOR MODERN TASTES

The Gilded Age era brings to mind visions of lavish banquet tables, fancy debutante balls, elegant tea parties and exclusive dinner parties. But it also was a time of invention and innovation, particularly in terms of food and cooking. Culinary roles for women and minorities became more significant, and revolutionary technologies, such as kitchen appliances and canned goods, were game changers.

When I began researching and writing about food more than 10 years ago, this “evolution in the kitchen” piqued my interest. I spent a great deal of time combing through historic cookbooks and updating recipes to fit modern ingredients and methods. The mid-to late-nineteenth century was especially fascinating, as I could see recipes changing in tandem with ingredients and technologies.

I quickly realized reconstructing historic recipes required tweaking ingredients and measurements, as many are different today. For example, eggs used to be smaller in size (so more were used per recipe), and rising agents, such as baking powder, didn’t fully come on the scene until the mid-1800s (thus recipes often required whipping eggs to a foam to make cakes rise). In addition, recipe instructions and measurements weren't precise (wineglass or dessertspoonful, anyone?). To “modernize” a recipe, I needed to start with a historical version and trace its evolution over time. Sometimes a dish changed a lot, sometimes not much at all. The final result was not always what was expected, and that’s OK.

Eventually, I accumulated so many of these revised recipes that I thought, why not put them into a cookbook? And, seeing the popularity of television shows, such as  Downton Abbey and HBO’s  The Gilded Age, it became clear that history is as fresh and appealing as any other part of our pop culture.

Blending historic details with recipes updated for contemporary kitchens,  The Gilded Age Cookbook allows modern cooks to duplicate meals and gatherings from the past while celebrating today. This includes events that were gilded age mainstays, such as strawberry fetes, afternoon tea parties and Twelfth Night festivities, as well as those that have become fully ingrained in our culture, including Fourth of July picnics and Thanksgiving and Christmas dinners.

Thanksgiving and Christmas were typically the most carefully planned meals of the year for many gilded age households. Much of the cooking was done in advance to free up time on the holiday. Items like puddings and mincemeat were made at least a week or two ahead, which also allowed the flavors to blend.

The goal of the cookbook was to strike a balance between old and new traditions, much as many people like to do today. However, unlike many of present-day celebrations, Christmas dinner often featured an elaborate multicourse menu ranging from oysters on the half shell and turkey with all the trimmings to sugar plums and plum pudding. Another difference was that the festivities typically extended into New Year’s Day and Twelfth Night (Jan. 6), a time for parties, games and feasting on rich Twelfth Night Cake.

It is my hope that  The Gilded Age Cookbook provides the inspiration for others to host their own historically themed meals. As I mention in the book, don’t worry if you don’t have authentic gilded age dishes, glassware and serving pieces. Mix and match family heirlooms and vintage items from yard sales and thrift stores, or simply use whatever you have and make it your own. Enjoy traveling back in time to the Gilded Age!

Bucks County's first-ever "Eat, Drink and Be Merry Month" was held Aug. 15 through Sept. 15 to benefit the Kin Wellness & Support Center that aids patients with all types of cancer. Additionally, another chance to donate funds through food events is coming during October when the annual "Main St." event (formerly Pine2Pink) is dedicated to raising funds to support breast cancer patients in treatment and recovery.

This breast cancer support event essentially is a community block party with food-related, monthlong fundraising elements during October.

• State Street, between Washington and Centre Avenues, in Newtown is the location for the massive block party, “Light The Night Pink," to be thrown by local businesses from 6-10 p.m. on Oct. 12. Sponsored by Newtown business owners, organizers indicate raffles, vendor tables and music is planned.  Newtown City Lifestyle also supported the 2022 Pine2Pink event.

• New Hope businesses in 2022 that participated in this fundraiser via special offers were Pierre's Chocolates, Greenhouse, UP Made, Scrambled, 4 The Love of Thingz,  Bangz, J&P, Nozomu Restaurant & Sushi Bar, Karla's The Dubliner and Nektar (at press time, 2023 business confirmations were underway).

Kristina and Keith Fenimore operate The Pine2Pink Foundation as a private, family-operated nonprofit. Why change the event name to "Main St."? Kristina says at the heart center of every small town is a Main Street. "It's a community focal point for connection, support and celebration, and carries with it nostalgia, meaning and memories. The symbol supporting Main Street is a hug, which is an image and action that's universally known for exuding unbridled support, friendship, comfort and love."

"Main St." is now held in Newtown, New Hope, Peddler’s Village, Carversville, Doylestown, Perkasie and Shops at Valley Square in Warrington.

For Eat, Drink and Be Merry Month, patrons throughout the county ordered from among designated appetizers, entrées, drinks or desserts at participating restaurants and bar partners, and a percentage of their orders was donated to the Kin Center.

Kin founding member/executive director Keith Fenimore says creating awareness of local cancer-related needs was successful. "We believe we're already poised to grow year over year in awareness and donations. We're 100% donation-funded, so this is crucial."

"Our goal is to bring the community together and shine a light on local businesses through our fundraising efforts while creating compelling collaborations, events and programs that everyone can enjoy," explains Keith. "Our motivation is squarely focused on raising funds to help as many locals battling cancer as possible.”

Kin is an all-inclusive 5,000-square-foot holistic retreat, offering support, fitness, therapy and integrative services for cancer patients and their caregivers. The Center is free to all Bucks County residents handling cancer. The nonprofit center is designed to address the emotional, social and physical needs of cancer patients and caregivers through free programs in nutrition, yoga, fitness, one-on-one counseling, support groups, workshops, crafting, massage, reflexology, reiki, chiropractic, acupuncture, hypnotherapy and facials.

Mike Christou, whose family owns and operates Ardana Food and Drink in Newtown, says his entire staff was excited to participate in Eat, Drink and Be Merry Month. "Our chefs got to come up with a few seasonal menu items, and our servers got to tell the story of Kin while selling those new items. It's a great way to get everyone engaged in the fundraiser.”

It’s Pumpkin Bread Season

The Perfect Recipe For Some Autumn Comfort

Ingredients:

• 1 1/2 cups all-purpose flour

• 1 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1 1/2 teaspoon ground cinnamon

• 1 teaspoon nutmeg

• 1/2 teaspoon ginger

• 1 teaspoon salt

• 1 1/2 cups canned pumpkin

• 1 1/2 cups sugar

• 2 teaspoon vanilla extract

• 1/2 cup vegetable oil or canola oil

• 1/2 cup melted butter

• 2 eggs

Directions:

1. Preheat the oven to 350 degrees.

2. In a mixing bowl, add the flour, baking soda and baking powder, spices, and salt. Set aside.

3. Combine the oil, butter, and vanilla in a liquid measuring cup.

4. In a mixing bowl (with a paddle attachment), beat the pumpkin, sugar, and eggs until combined.

5. Turn the mixer to low and slowly add the liquid ingredients. Let this process take about 1 to 2 minutes so the mixture becomes light and fluffy.

6. Using a spatula, fold the dry ingredients into the wet and slowly fold until the ingredients are blended.

7. Prepare a 10 x 5 loaf pan by buttering it really well and then adding a strip of parchment paper to the bottom and up the sides for easy removal.

8. Bake in a preheated 350-degree oven for 1 hour. The bread will be fully risen in the center, like a loaf. Make sure it’s fully cooked and brown on the top otherwise it will fall in the middle once removed from the oven.

THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

INSTRUCTIONS:

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

Lavender Vanilla Sugar Scrub

This homemade sugar scrub is easy to make and leaves you with silky soft skin

INGREDIENTS:

• 1 cup of granulated sugar

• ½ cup of oil (almond oil or olive oil works best)

• ½ teaspoon vitamin E oil

• ½ teaspoon real vanilla extract

• 15 drops lavender essential oil

DIRECTIONS:

Sugar scrubs are amazing for getting rid of dead skin and exfoliating to reveal soft skin. To make this Lavender Vanilla Sugar Scrub, mix all ingredients together and store in an airtight jar.
