When we sat down with Gregory, we had lots of questions including “what has been done with 'Relic on State' to help ensure its longevity on the corner of State and Center Ave?” Gregory was quick to answer. “The space simply suffered from an identity crisis. When dealing with an historic building, there are limitations to what can be changed structurally, but if designed properly, there are many things that can be done to create a cohesive, intimate experience. When I walked into the building for the first time, my mind was like a projector reel. I had a very clear vision of how to make the space flow!”

We were immediately in awe of the original stone walls and fireplace, the wrought iron staircase and solid barn doors. The modern light fixtures and classic nail-head trimmed leather chairs were sharp additions. The space now boasts a handsome dining room and a sexy bar on each floor making every seat in the house “the place to be.” Patrons need only concern themselves with enjoying Relic’s fine cuisine and/or sipping a specialty craft cocktail. It is safe to say that “Relic on State” has given The Thornton House a clear and exciting identity which is that of a classic New York City style steakhouse!

Conlan, who celebrates 35 years in the restaurant industry, began his career working at a small mom and pop café. This gave him the opportunity to have his hand in nearly everything including learning how to properly purchase and butcher meats. Later, his years as a bartender taught him how to interact with patrons and the importance of building relationships. However, the real “meat and potatoes”

WINE TASTINGS ARE WONDERFUL WAYS TO LEARN MORE ABOUT WINE AND TO SOCIALIZE WITH FRIENDS OR FRIENDSTO-BE. I’ve done many, and have always come away with new knowledge, new ideas, and new excitement. Of course, having a plan about how to best organize a wine tasting lends greatly to its fun and success.

Begin with a theme. A theme instantly creates a fun, learning atmosphere. Common themes include verticals and horizontals. A vertical tasting compares the same wine, produced by the same winery, but from different years. This illustrates the

Using a slow cooker to simmer vegetables, beans and grains combined with flavorful spices makes the house smell divine and eases dinnertime craziness, perfect for today’s busy schedules when families sometimes cannot all eat together. This recipe is vegetarian, but feel free to add cooked diced bacon or sausage for the meat lovers in your household.

WHITE BEAN, BARLEY A N D V E G E TA B L E S O U P

1. Heat olive oil in a frying pan set over medium high heat. Add garlic, onion, carrots and celery. Sauté for a couple of minutes, then add the thyme, salt, pepper and paprika, allowing the spices the fully coat the vegetables. Cook for about 3 more minutes until soft, then remove from the heat.

2. Transfer the vegetables to a slow cooker and add broth, juice, + tablespoon olive oil + 2 cloves crushed garlic + 2/3 cup diced onion

A fricassee is a kind of stew featuring chicken, veal, lamb, or fish that is first sautéed or fried, then smothered in a thickened white or brown stock. This cooking method was very popular in the 19th century, often as a way to tenderize tougher cuts of meat. However, this recipe calls for lobster, a dinner-party fixture on the tables of the uberwealthy and influential during the Victorian era. Feel free to substitute shrimp or clams for the lobster if you wish.

LOBSTER FRICASSEE

1. Add ½ teaspoon salt to a large pot of water. Bring to a boil and add the lobster tails. Boil for 2-3 minutes, then remove from heat.

(You want to just parboil the tails since they will continue to cook when fricasseed).

2. Carefully remove the tails to a large cutting board with a pair of tongs. Drain water from pot, reserving one cup for later. Set aside.

3. Wipe out the pot and fill with water for pasta. While waiting for the water to boil, extract the lobster meat from the shells, chopping it into small pieces. Place the lobster meat in a medium bowl and

4. Transfer meat to a large saucepan set over medium heat and slowly add the cream and ½ cup of reserved lobster stock strained through a fine sieve. Cook for about five minutes, stirring occasionally. Do not allow to boil. Stir in the beaten egg yolk and cook for + 2 large lobster tails + ½ teaspoon cayenne pepper + ½ teaspoon ground nutmeg + 1 teaspoon salt, divided + 1 cup heavy cream + 1 egg yolk, beate + ½ box dry pasta

MAKES ABOUT 5 DOZEN COOKIES

Spice cookies are a tasty fall treat - delicious paired with hot or cold cider. A cookie jar staple throughout America dating back to colonial times, they can be seasoned with a variety of different spices, including nutmeg, allspice, ginger, cloves and cinnamon. This recipe was taught by Philadelphia cooking instructor Elizabeth Goodfellow at her cooking school in the early 19th century. The name comes from the fact that they are roughly the size of a large walnut, not that they contain nuts as an ingredient.

SPICE ‘NUTS’

1. Preheat the oven to 350°F. Place the molasses and butter in a large saucepan over low heat. When the butter is melted, add sugar, spices, baking soda and candied ginger.

2. Stir until well mixed and then add the flour one cup at a time, stirring after each addition until a soft dough is formed.

3. Taking a softball-sized lump at a time, roll out onto a floured surface into a 1-inch-wide rope shape. If the dough is sticky, add flour a little at a time to make it easier to work with.

This eventually took him to Nashville where they began making records and pursuing their musical dreams.

Yet, in the midst of all of this, Dennis was not taking care of himself — eating take out, dollar menus, etc, had become a way of life. A friend had a “come to Jesus” moment with him and stressed that he needed to start taking care of himself. Having no idea exactly what that meant or how to do so, the advice was simple: “You need to start eating better.”

The St a r t “Go to the library and borrow some cookbooks,” his friend suggested.

Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time.

Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment.

“I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment.

What eventually followed were 13 episodes over nine months where the Restaurants on the Edge team traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland.

So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.”

Dennis also highly recommends Costa Rica, Hawaii and Finland.

“Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.”

Restaurants on the Edge is important and meaningful to Chef Prescott because it tells stories of hope and joy and redemption around the kitchen. Oftentimes the food space can be very stressful, but he believes that at the end of the day, people just want to spend time with other people that they love.

One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’

Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there.

“Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”
