ingredients + 8 pounds (about 8 large) yellow onions + 1 baguette, toasted + 4 ounces unsalted butter + 6-12 slices Emmental cheese + Kosher salt to taste + 1 1/2 cups grated Gruyere + 2-3 bay leaves + 1 beef shank (roasted) + 12 peppercorns + 6 fresh thyme sprigs + 2 gallons beef broth + Freshly ground black pepper + Sherry wine vinegar

(LOVE A ND) THE WATERS IN BATH The World Heritage-listed city of Bath, in Somerset, is about one and a half hours on the Great Western Railway (founded in 1883) route. You’ll love it here if you like to walk old, timeless streets holding hands while visiting beautiful boutiques, ancient sights and traditional pubs with a lot of fabulous food on offer. Bath, dating back to the Romans, is as old-worldly as cities come, and the scenic rail journey to this splendid city of Georgian architecture will give romantics the chance to rehearse, in their heads, professions of undying love to be delivered upon arrival. I was in Bath Abbey myself not long ago, and when I asked the guide here if the former monastery (from the 7th century) had any old tales to share or any romantic spots within she could recommend, her face lit up. Everyone in the vicinity, in fact, got involved in my quest, but the guide took me by the hand and animatedly explained some local lore. “When it comes to love,” she said, “you must include the Abbey’s tower.” Here’s why. “That’s where it all happens in Bath!” she assured me. “Couples climb the 212 steps to the top of the tower where the views out over the Roman baths, the hills and fields, and the sounds of the buskers playing below all help to set the scene—and the question is popped.” 16

According to her, no one’s ever said no, and the venue has “a 100 percent success rate.” The team here will, as well, provide couples with Champagne for a toast (if arrangements are made beforehand). I asked if the Abbey could be booked for marriage vow renewals, and she said yes, it’s done all the time. So if you’re already happily married, head here too.

It houses Sir William’s Holburne’s personal collection—he had a lot—of mostly baroque and rococo painting and decorative art and artifacts. Holburne.org

(LOVE A ND) TEA AT HIGHCLERE CASTLE The second option, which could even be a day trip if you’re stretched for time, is Newbury, in Berkshire (pronounced, take note, bark-shur), where Highclere Castle (the “real” Downton Abbey) is located, about an hour by train, and is another fantastic place when it comes to wooing in England. According to their website: “Valentine’s Day is not just the Victorian romance of roses and chocolates, cards and Champagne; it is also a day to stop and think about the person you love, the person you married or the person to whom you would like to propose.” And why not do it here in these beautiful surroundings? Although it has to be said, you’ll need to book way in advance to get a ticket as the Earl and Countess of Carnarvon still live here and only open the premises to the public on select days, at select hours. You will, however, be given ample time, once you’re in, to tour the grounds and have high tea in the State Dining Room after the visit. You could, in fact, quickly stage your own love skit while here, the setting for so many happy scenes, weddings and engagements in Downton Abbey. Here’s a line to help you on your way: “I’m not a romantic… But even I concede that the heart does not exist solely for the purpose of pumping blood.” -Violet Crawley, S2E2.

FRENCH NATIONALS TAKE THEIR FOOD SERIOUSLY; THEY SPEND HOURS AT THE TABLE—SACROSANCT BREAKS IN THE TRAVAILS OF THE DAY—DRINKING AND DEBATING EVERYTHING FROM HOW GOOD THE LOCAL VINTAGE WILL BE THAT YEAR TO WHO’S DATING WHOM, WHO’S SLIGHTED WHOM AND EVERYTHING IN-BETWEEN. Much of the time, therefore, in cities like Paris, Lyon, Marseilles or Toulouse as examples, the local brasserie is where life happens: meals, deals, debates, business mergers, marriage proposals and just about everything else. And yes, as the epicenter of French life, there’s always some great food and drink served up ‘round the clock, usually late into the evening. For many, the menu du jour, the day’s proposed three-course selection, is their main meal of the day as they make the local brasserie their “regular” dining room of choice.Here in Naples, 20

when The French Brasserie Rustique opened its doors in 2017, it was cause for great celebration as, while there are other French restaurants in town, this is the only brasserie, a classification that represents a more casual and laid-back affair than a formal, French restaurant. Following tradition, the brasserie has no tablecloths, no fancy china and no Michelin stars, and yet the environment is casual, embracing, welcoming and fun. So when the urge for a soul-satisfying French onion soup, some buttery snails, a perfectly cooked steak frites and a glass of red wine (or something stronger) comes along, head straight here, where chef Vincenzo Betulia (yes, he’s Italian, but more on that later), in true French fashion, runs an operation where the service is spot-on, the food is delicious, and the French apple pie—the tarte tatin—will soon have you dreaming of, if not planning, your next French sojourn. Born in Sicily, Vincenzo and his family moved to Wisconsin when he was young, and while back then Wisconsin wasn’t a center of gastronomy, food was very important in his home. Vincenzo liked to eat but never dreamed of being a chef until the early ’90s when he took a job as a prep cook in the basement of Milwaukee’s premier Italian restaurant, Ristorante Bartolotta, eventually working his way up to sous chef and then chef. The French connection was Paul Bartolotta himself, who had worked with Paul Bocuse in France at one point in his career and had brought French food to Milwaukee to resounding success. Vincenzo absorbed everything he could about French cuisine alongside Bartolotta at Bartolotta’s Lake Park Bistro. “As a young cook, I was standing behind the grill station cooking for hours and hours, day after day, and I saw many similarities between French and Italian food.” So, with two successful Italian restaurants here in Naples under his belt—Osteria Tulia and Bar Tulia— Vincenzo felt it was time to branch out. And a brasserie made perfect sense, so he opened The French at this perfect location on Fifth Avenue, where beautifully prepared simple classics that appeal to everyone are on the menu. Ingredients also matter, and the restaurant sources the finest, local products from people Vincenzo calls friends. Oakes Farms supplies many of the raw ingredients; the beef is from a local butcher; and the fish comes from fishermen who call in advance to let him know what the daily catch has yielded. In France, the meal starts with bread being placed on the table. Here too, with the addition of some delicious garlic butter to dip into as you peruse the menu and the wine list, which offers carefully selected vintages to match your meal. Order and soak up the ambiance: the open kitchen is a hive of activity—just another day at the brasserie. February 2019 | Naples Lifestyle
