Spooky costumes, glowing pumpkins, and a plethora of candy could only mean one thing -- Halloween is amongst us! Meet Bethany Trainer; she and her husband, Derek Trainer, are the Dynamic Duo who run The Trainer Group at simpliHŌM. Bethany and her family strive to provide healthy eating options for their family, including Halloween treats.

When asked why it is essential to maintain healthy, balanced food options for her family, she told us,

"Cooking healthy meals and using healthier alternatives to cooking is important to our family. It is a lifestyle we want to instill in our children. I have also learned that cooking with your children helps teach them how to eat healthily and make informed choices about their food."

“Healthier” Monster Rice Krispies INGREDIENTS • 3 tbsp of Earth Balance Butter • 1 bag Jett puffed Marshmallows • 6 cups of Cascadian Farm Rice Cereal • 1 bag of pink Candy Melts • 1 bag of yellow Candy Melts • 1 bag of green Candy Melts • 1 bag of blue Candy Melts • 1 container of small edible eyeballs • 1 container of large edible eyeballs • 1 Avocado cooking spray • Wax paper DIRECTIONS 1.

In a large saucepan, melt 3 tbsp butter over low heat. I used Earth Balance Soy Free.

2.

Add a bag of Jet-Puffed Marshmallows. Stir until completely melted and remove from heat.

3.

Add 6 cups of Rice Cereal. I used Cascadian Farm Organic. Stir until well-coated.

4.

Using a buttered spatula or wax paper, evenly press the mixture into a 13x9x2 inch pan coated with avocado cooking spray.

5.

After Rice Krispies have cooled, decorate using different colors of candy melts heated in individual dishes. Coat just the top part of the Rice Krispy, and add edible eyeballs for a cute and fun monster look!

Ghost Strawberries INGREDIENTS • Strawberries • 1 bark of Simply Truth Organic White Chocolate • 1 bag of the Enjoy Life Mini Chocolate Chips • Wax paper DIRECTIONS 1.

Heat organic white chocolate in a dish. After washing the strawberries, dry the strawberries off, so the white chocolate will stick.

Once strawberries are dry, dip strawberries in the organic white chocolate. Set the strawberries on a cooking sheet or wax paper.

Add organic mini chocolate chips to create a ghostly figure on the strawberries for a fun, healthy Halloween snack!

Buffalo Chicken Sliders This sandwich is a great combination of spicy and savory buffalo chicken with sweet and buttery Hawaiian rolls. This dish will be a winner on game day!

I N G R E D I E NTS: • 2 to 2 ½ cups of cooked chicken • 1 pkg. of 12 count Package of Kings Hawaiian Rolls • 1 cup ranch dressing • ¼ cup hot sauce • 4 Tbsp butter • 1 tsp poppyseeds • 2 cups shredded cheddar cheese D I REC TION S: 1. Place Kings Hawaiian Rolls in a 9x13 Baking Dish.

2. In a bowl, mix shredded chicken, ranch, and hot sauce.

3. Spread chicken mixture on bottom half of rolls.

4. Top with shredded cheese and remaining half of rolls.

5. Melt butter and mix the poppy seeds into the butter. Drizzle over tops the of rolls.

6. Bake at 350 degrees for 20 minutes.

Spinach and Artichoke Dip While most spinach and artichoke dips can have excess calories, this recipe substitutes those things with healthier options that have just as much flavor, and are a fan favorite!

I N G R E D I E NTS: • 1 cup frozen spinach, thawed and chopped • 1½ cup frozen artichoke hearts, thawed and chopped • 6 ounces reduced-fat cream cheese • ½ cup non-fat Greek yogurt • 1/3 cup grated Parmesan cheese • ½ teaspoon red pepper flakes • ¼ teaspoon garlic powder • 1/8 teaspoon salt D I R EC TI O N S: 1. In a medium saucepan, heat spinach, artichokes and 1 cup of water until tender.

2. Drain liquid from spinach and artichokes, removing excess moisture with paper towels.

3. Microwave cream cheese for one minute in a small, microwave-safe bowl.

4. In a large bowl, mix all ingredients together. Serve warm with choice of raw vegetables (e.g., carrots, broccoli, celery, radishes, jicama, kohlrabi or zucchini).

Tennessee’s Oldest Cafe Right Here in The Boro

February 10, 1900, City Cafe was established in Murfreesboro, TN, and remains in business 122 years later. City Cafe has belonged to fifteen different owners for over a century. The original owners were a family named the Cantrells, who also owned a creamery above the cafe. Through the years, City Cafe has moved locations three times without ever closing its doors, making it the oldest cafe in all of Tennessee.

In 2014, Teresa Kellogg and her high school best friend, Tammy Greer, bought City Cafe from Rusty and Cindy Perkins. Four years later, Tammy sold her share of the business to Teresa and her husband, Rollin and they have been running City Cafe as a team since 2018 with plans to pass it on to future generations. Teresa and Rollin maintain an old-school theme with home-cooked meals and a staff that treats everyone that walks through the door like family. There are still customers who have been regulars for over 50 years, witnessing City Cafe evolve over the years. Countless first dates, relationships, and friendships originated and were cultivated inside the walls of City Cafe. Teresa and Rollin spend most of their time in the kitchen making meals from scratch and testing out new recipes.

Teresa grew up surrounded by delicious cooking, fueling her desire to create the tastiest food for her customers. Teresa and Rollin consider City Cafe a labor of love and believe, “You come in as a stranger and leave as family.” During the Covid pandemic, City Cafe was

dangerously close to shutting its doors, but the community pulled through, offering endless support. Rollin admitted to never seeing so much love and support from a community before and is forever thankful.

Saturdays are pretty eventful days at City Cafe, with the sound of live music and the smell of sweet cinnamon rolls filling the air. Breakfast at this antique cafe is to die for.

From their vast pancakes to the gooey cinnamon rolls, your taste buds and stomach will be satisfied. Dine at City Cafe for breakfast or lunch for an experience you won’t regret in the state’s oldest cafe amongst the friendliest staff. “Our food should be our medicine and our medicine should be our food.” -Hippocrates One of history’s oldest physicians, Hippocrates firmly believed in the power of food as our main source of energy, fuel, and healing. Vibe Nutrition in the Boro utilizes this belief every day in its collection of plantbased teas, shakes, and meal replacement options. The owner of the shop, Mackenzie Condor is a living testimony of how life-changing the proper intake of nutrition can be. Between attending college at Belmont and working on Broadway, Makenzie was extremely busy and found herself not taking care of herself very well.

Gaining weight, acne, and a major loss of energy were symptoms affecting her every day. Her best friend and sister introduced her to Vibe Nutrition, impacting her in endless ways. Mackenzie lost over thirty pounds, bought the store, and ended up meeting her future husband there as well. She went from a customer to running Vibe Nutrition at only 21 years old. Mackenzie’s husband actually worked in a nutrition shop growing up and was able to add his knowledge and experience to the company as well. So many friendships have been built through Vibe Nutrition that Mackenzie refers to it as the “Vibe Tribe.” Mackenzie also orchestrates events with local estheticians and dietitians in order to educate consumers. Her goal for Vibe Nutrition is, “Change lives one shake at a time."

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside.

2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread.

Microwave on HIGH 1 minute 30 seconds. Stir.

Microwave 30 seconds to 1 minute 30 seconds or until boiling.

3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels.

Makes about 10-11 cups. Store tightly covered.

JOHN’S LOCAL REAL ESTATE MARKET UPDATE In August, Listings Added were down slightly year-over-year in Rutherford County, ending a three month run of YOY Inventory improvements. But with Contracts down -15.95% and Closings down -25.43% we saw the net effect of a +66.05% improvement in overall Average Daily Inventory. Why the sudden slowdown in buying activity? Well, skyrocketing Mortgage Interest Rates essentially paralyzed the marketplace as buyers waited to see what rates would do.

Month-to-month Inventory improvements do appear to be slowing, with Average Daily Inventory up less than 10% from the previous month, where we had seen a 24% or better improvement for three straight months. This all as we approach fall/winter when Inventory typically seasonally dips until Spring.

Home Values in Rutherford County had their second straight month of decline, now down to $218/Sq.Ft. (Median), a 3% dip from their June peak of $225/Sq.Ft., a trend we expect to continue for a few more months. But remember, as the last decade ended prices were hovering in the $140/Sq.Ft. range, then suddenly skyrocketed 60% since January 2020. So the softening housing prices are really aiding a much needed market correction, the exact effect the Federal Reserve intended as they attempt to hedge inflation.
