I hope this letter finds you laying by the pool or lake and soaking in some much-needed sunshine.
As the days grow longer and the weather gets warmer, I find myself so energized. There's just something about this season that brings about a sense of excitement and adventure!
Sure, fall has my favorite flavors and scents, winter has its cozy charms, and I can't deny the beauty of spring. But when the summer solstice rolls around, I’m more than ready for the long, languid days of floating in the water, working in my garden, or enjoying a great meal outdoors.
The pages in our Summer Fun issue will help you make the most of this season in and around Mount Clemens. And even if summer doesn't mean three months of summer vacation anymore (because we're, you know, adults) we can still look forward to an adventure by crossing things off our ultimate summer bucket list and curling up with a new favorite beach read. Tomato, Peach, and Burrata Salad
ingredients:
• A few big pinches of Kosher salt
• Freshly ground black pepper
• 1 teaspoon dried oregano or
• 2 teaspoons fresh oregano
• 1 tablespoon balsamic vinegar
• ¼ cup extra virgin olive oil
• 2 large heirloom tomatoes or large plum to toes, or cherry tomatoes (about 2 1/2 pounds total)
• Two peaches
• 8 ounces mozzarella pearls or small balls
• 4 ounces burrata cheese
• ¼ cup torn fresh basil leaves, plus additiona whole leaves for garnish
• Thinly sliced salami (optional)
directions:
1. Combine salt, pepper, oregano, balsamic vinegar, torn basil, and olive oil in a small bowl for dressing.
2. Place the burrata cheese in the center of a platter. Slice tomatoes and peaches. Arrange tomatoes, peaches, and mozzarella around the cheese. Fold slices of salami and add if desired.
3. Drizzle with dressing. Sprinkle with more salt and pepper to taste and garnish with whole basil.

Steak with Chimichurri Sauce
ingredients:
• 1 cup fresh Italian parsley, packed
• ½ cup olive oil
• 1/3 cup red wine vinegar
• 1/4 cup fresh cilantro, packed (optional)
• 2 garlic cloves, peeled
• ¾ teaspoon dried crushed red pepper
• ½ teaspoon ground cumin
• ½ teaspoon salt
• 1 ½-2 lbs flank steak
directions:
1. In food processor, combine all ingredients (except steak) and puree until smooth. Transfer sauce to bowl.
2. Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the center.
3. Thinly slice steak across the grain. Top with sauce and serve.

ingredients:
• 2 ears corn, grilled and cut from cobs
• 1 small shallot, thinly sliced in rings
• ¼ cup feta or goat cheese, crumbled
• 3 sprigs basil, stems removed and torn
• ¼ cup extra virgin olive oil
• 1 tablespoon red wine vinegar
• Black pepper (to taste)
• Sliced jalapeno (optional)
directions:
1. Place corn kernels in a bowl. Add remaining ingredients and mix to combine.
2. Taste and add additional salt, pepper, and vinegar as needed.
Pitcher Vodka Lemonade
ingredients:
• 48 ounces homemade lemonade (or store-bought)
• 12 ounces vodka
• Ice, for serving
• 1 lemon, sliced thinly
• Fresh mint for garnish
directions:
1. Make lemonade if desired. Pour homemade or storebought lemonade into a pitcher.
2. Add vodka and lemon slices.
3. To serve, pour over ice and garnish with fresh mint.
ADDITIONAL IDEAS TO ROUND OUT YOUR MEAL:
• Drizzle store-bought hummus with olive oil and fresh basil, crumbled feta, toasted pine nuts or capers and serve with warm pita.

Belle Santé Medical Spa Shares Their Journey and How to Make Summer Skin Glow
“I had no plans to open a spa, or even to hire any employees,” says Jessica Harpe, owner of Belle Santé Medical Spa and Licensed Esthetician and Massage Therapist. “I started out as a solo practitioner in 2008. I just enjoyed what I did and never had any aspirations of being a business owner. My passion for beauty and wellness was enough to get me started, and I had built up a large following—so large that I reached a point where if I wanted to expand, I would have to hire others to help meet demand and move out of my mom’s basement.”
Once Jessica made the decision to go into business for herself, it continued to bloom. “Over the years,” she says, “I have moved locations a few times as my business continued to grow. I eventually settled in the Lakeshore Plaza of St. Clair Shoes at 13 Mile and Harper, where I have been ever since. I was very proud of the spa I had built.”
Unfortunately, despite her success, Jessica faced a significant setback. “In March of 2021, our spa had a fire. We lost everything overnight. All of the hard work I put into my business went up in smoke and I had to spend some time doing some
real soul-searching as to what I wanted to do next. I had a dream of turning my day spa into a medical spa. I wanted to be able to continue offering the same services to my customers that they had come to know and love but add a few more things to our service menu. I will be honest, as much as I loved the idea, I knew I could not do it alone. I had no idea what running a medical spa would be like. I spent time learning about this new side of the industry and making sure I hired the right team to guide me and help run my business. After a few months of construction, we reopened our doors as Belle Santé Medical Spa in December of 2021.”

For keeping summer skin safe from damaging rays, Josh suggests always wearing sunscreen. “Even if it’s cloudy out or it’s raining,” he says, “put on some sunscreen. The sun can cause so much damage to our skin in just a few minutes, so make sure you’re taking care of yourself and putting on sunscreen every single day no matter what.”
Josh also emphasizes the importance of proper cleansing to keep your skin looking great. “A deep facial once a month is perfect to maintain and protect healthy skin all summer long,” he notes. Belle Santé offers a variety of facials depending on your individual needs, including preventative, hydrafacials, and corrective facials customized by the aesthetician for each client.
The range of choices can seem overwhelming, but Josh emphasizes the best option is to come in for a free consultation. “We have the best staff,” he says. “They are so knowledgeable and truly have mastered what they do. From its start in Jessica’s mother’s basement to its rebirth as Belle Santé Medical Spa, Jessica reflects on the journey. “It has been a real learning curve over the last year and a half. I know that there’s always more to learn—and that’s why I continue to attend conferences, network with people in the industry and stay on top of what the latest and greatest technology is in the beauty industry.”

Sturgeon for Tomorrow
STEVE GUC ON HIS PASSION FOR OUR NATIVE FISH
The lake sturgeon, one of the oldest fish species on earth, has long lived in the Great Lakes. Steve Guc, a State Farm insurance agent in Mount Clemens, is one of their champions. Through his work with St. Clair-Detroit River Sturgeon for Tomorrow, Steve aims to improve public outreach and understanding of conservation of this important fish and its habitat.
St. Clair-Detroit River Sturgeon for Tomorrow was organized in October 2010, says Steve, “by a group of anglers that hosted a National Geographic sturgeon fishing segment for the ‘Monster Fish’ series.” The National Geographic story focused on the invasion of Asian carp and how this could affect lake sturgeon populations in the Great Lakes watershed.
“We came to the realization that we have something very unique and important here. Lake sturgeon are a somewhat inaccessible hidden gem of the Great Lakes. As abundant as they are, they are hardly seen,” says Steve. “Most people do not even know they exist in the St. Clair River, and many cannot identify one when they see it.”

Through Sturgeon for Tomorrow, “we bring people and sturgeon together through our different outreach events, and more importantly, by promoting ethical and sustainable fishing.”
One of the outreach events is their Earth Day event, which seeks to “create understanding that our attitudes and actions have a large impact on the world around us,” says Steve. Held this year in late April at the St. Clair County Earth Fair in Goodells, Steve notes the importance of spreading the word about sturgeon, which were pushed to the brink of extinction by overharvest, habitat degradation, and pollution. “The message is to be aware of the consequences of our attitudes and actions.”
Sturgeon for Tomorrow’s outreach programs are not limited to Earth Day. The Sturgeon in the Classroom program, guided by the cooperation of the Michigan Department of Natural Resources, the U.S. Fish and Wildlife Service, and the St. Clair-Detroit and Black Lake chapters of Sturgeon for Tomorrow, aims to build awareness of the lake sturgeon for schoolchildren. “Students receive a baby lake sturgeon in early fall to raise during the school year,” says Steve. “These are hatchery-raised fish that are a few months old and a few inches long. They are held under special collectors and endangered species permits issued by the DNR. At the end of the school year, the fish, which are typically 12 to 15 inches long, are returned to their native waters to live out their lives in the wild.”
For those interested in getting involved, Steve recommends going sturgeon fishing with a charter captain or joining St. Clair-Detroit River Sturgeon for Tomorrow. “Fishing creates the greatest opportunity for interaction with sturgeon. Most everyone that catches one develops a deep appreciation for the fish. Very few are ever harvested,” he says. “Last but not least, sturgeon are fun.”
