Ladies Issue
![]()
I don’t know about you but I love any opportunity to recognize and lift up women who just make life positive and beautiful.
And of course, with Mother’s Day this month, all eyes are on moms, but it’s not just the biological mothers, mother figures and wonderful women in our lives who have made an impact on us. It’s the family members, teachers, friends and neighbors doing awesome things in our communities, pouring into our lives — making themselves unforgettable and irreplaceable.
Personally, without those female influences like my mother, step-mother, grandmothers, aunts, friends, business partners, and team members – this magazine would not even exist. They’re a huge part of how it all began and how it will continue to grow.
While it’s always important to shop local, this month is the perfect time to support businesses owned by women in the Twin Cities. That’s one of my favorite parts of this role – trying to champion, recognize, give back and pay as much forward as possible.
For the May issue, we spoke with Rebecca Illingworth Penichot, owner of Tinto Kitchen, about how her mother, husband Thierry, and her entire restaurant team aims for a fun time, warm atmosphere, and fabulous food all year round. We’ve included some sparkly gems and unique pieces from New Gild Jewelers, while also learning a bit about their custom gallery from owners Jen Bellefleur and Kelsey Lee-Karol. We covered a great little electric driving option from Luther Westside Volkswagen where General Manager Tami Willett and her team are ready to assist with any and all of your questions. We also included a fun DIY article on floral design, some ideas on where to brunch this month and a gift guide for the ladies.
Women are movers and shakers, builders and makers. They are both seen and unseen. I hope you’ll take a few minutes to send a text, make a phone call or get the family on a video call with the women in your life who deserve recognition. It only takes a minute to brighten someone’s day and remind them how much you love them.
Gentlemen, we haven’t forgotten about you, and your issue is up next month!

New Gild Jewelers is a custom jewelry store located in the Linden Hills neighborhood of Minneapolis, providing the most unique and full-service jewelry design available in the Twin Cities. The talented and highly trained jewelers, designers and artisans work passionately and diligently with customers from the moment they walk in the door to the moment they are handed their “sparkle.”
We spoke with co-owner Jenifer Bellefleur about New Gild’s design process, ready-towear pieces, repair services and in honor of Mother’s Day — the perfect jewelry gift.
We sit down with our clients and really listen, not just to what they say, but also what they don’t say–meaning, what they tell us with their body language and emotions. We observe their personal style and often ask to see pictures of the intended recipient if it’s for gifting and honoring another.
Often our clients bring us loose gems and diamonds, as well as old pieces of jewelry that they’d like to incorporate into the new design. We have a special affinity for precious gemstones, and we have quite a bevy of beautiful “rocks” in our collection. Everything from opals to rare garnet varieties to unique diamonds makes us smile and push up our designer sleeves.
We instinctively riff on concepts while we’re sitting with the client, helping to draw out their preferences and likes. Later, we translate our best ideas into CAD imagery that helps the client (and us!) to fine tune the design to perfection. When everyone is satisfied, we move on to the next step, which is a 3D print of the model we’ve designed. We use that “wax” model to ensure that the stones for the project fit perfectly, and that the ring suits our client’s desires as well.
We use lost wax casting to move from wax to metal, which is an over 6500 year old method. The wax is used to create a mold into which molten metal is poured and then cooled. Voilá, we have a precious metal piece! We carefully polish the ring and then set diamonds and gemstones perfectly under magnification. All that’s left is the smile on our client’s face when they see their new sparkle.
In addition to making objects from scratch, we also give absolutely expert TLC to your existing jewelry, including everything from costume to heirloom. Many of our clients have costume jewelry that is priceless to them due to sentimental value. We have the equipment and the expertise to work on those pieces and give them new life, such as converting old clip-on earrings to posts so they can be enjoyed by a new generation.
We also love the challenge of restoring a truly antique ring to its heyday. Our master jeweler can restore the smallest of details to turn-of-the-century pieces, and give them durability for a new generation. Even under magnification, our restoration work is perfect. Restoring antiques is the ultimate embrace of sustainability, and we’re proud to offer these services.
Our gallery of ready-to-wear pieces is so special because each of them represents the love of a stone. Unlike big box stores that need a large quantity of identical pieces and therefore shop for predictable stones in calibrated sizes and shapes, we can make something beautiful one-at-atime from any individual gemstone. We shop gem shows and also have visiting suppliers who shop this way too, and we peruse their goods for stones that speak to us. The stone is like a chord progression from which we will write a hopefully beautiful song.
We interact with our stone collections physically and spiritually in order to determine the best use of their beauty. We design around them, without any preconceived limitations on what we can make. Sometimes, we work individually and other times as a team to help bring these melodies full circle into wearable pieces of art that capture the eternal nature of the stone alongside the immediacy of the design. The items in our gallery are therefore all truly unique and designed to delight the senses.
WOULD YOU RECOMMEND FOR GIFT GIVING?
Gifting is incredibly personal, and we try to bring our clients and their loved ones together with the perfect piece. Different pieces of jewelry have different connotations in our culture. The gift of a ring is one of the most intimate exchanges, and celebrates things from our love for our partner to the love we share with our best friend. We have an amazing selection of ready to gift rings in our gallery. Bracelets suggest a preciousness too, a holding of another’s hand. We carry everything from our Morse code bracelets featuring words of affirmation to diamond tennis bracelets; a bracelet makes a wonderful gift.
“Love shows up in everything we do.”
Necklaces and earrings are a beautiful way to adorn someone with the collision of gems and art. Many people love having different necklaces and earrings to choose from, depending on anything from the season to their outfit to the occasion–from weddings to Wednesdays. We carry an incredible selection of both.
Many people have helped us on our journey over the past six years! WomenVenture is a wonderful example of a women-centric organization that partnered with us to bring our dream to life. We’ve also had wonderful women working on our benches, behind our counters and microscopes, and also shopping with us–all playing their part in our story–and it’s a love story. Love shows up in everything we do: our conversations, our people, and our products. People say you can’t buy love, but we disagree; come in and let us show you!

Spring: the days grow longer, weather turns warmer, and the earth’s greenery starts to make its reappearance. During this time, flowers shoot up from the ground in a ballet of colors and movement. Walking outside becomes a cherished moment to breathe the fresh air and immerse yourself in lush surroundings. Being inside your home turns dreary and dull, everything that thrives is now outside, but this can easily be remedied. Why not bring some life inside? Make a spring floral bouquet to lighten up your space. Flowers add color and character to any room that needs a little lift, and our step-by-step guide will inspire you to create something grand.
Supplies:
• Flowers of your choice
• Scissors
• Twine or floral tape
• Ribbon (optional)
• Decorative paper (optional)
• Bouquet sleeve (optional)
Directions:
Step 1: When creating a beautiful floral arrangement, the first thing to do is decide on a color scheme and prepare the flowers. Have fun deciding what colors you want to play with. Perhaps go pastel for spring or match the hues to other decor items in your house. Once you have picked your
flowers, you need to do a little prep work. First, remove extra leaves and damaged petals from the stems. Then make a fresh diagonal cut to the bottom of all the flowers. This allows each bloom to soak up as much water as they need.
Step 2: Now it’s arranging time — think focal and filler. The best way to start the arranging process is by choosing your most interesting or favorite flowers — this will be your focal point. Hold the focal flower(s) upright and add your supporting blooms around it. Make sure to turn the bouquet as you build so that the design is as desired. Once this is complete, add your
filler flowers to finalize the look. Filler options include baby’s breath, ivy, fern, eucalyptus and more.
Step 3: Let’s get ready to tie. Once you’ve arranged your bouquet, tie all the stems together using twine or floral tape. If using twine, we recommend securing it in a small bow in case you would like to rearrange at any given time. Floral tape is easy to move on and off for this purpose as well.
Step 4: Add the finishing touches. At this point, you are almost done with your bouquet and all that’s left is embellishments. There are so many ways to further adorn your creation: one way we love is to wrap it in fun decorative paper or put it in a special sleeve made just for flowers. If this idea isn’t for you, we recommend going to Pinterest for inspiration. Just remember, whatever way you choose to decorate your bouquet, you will end with a personalized piece made with love and care.
When I think of the word brunch I imagine fruity drinks, delicious breakfast foods and being surrounded by my best friends or even better - my mom.
I can admit that yes, I’m a brunch girly and yes, I’m proud of it. I mean brunch is incredible! For one, you don’t have to get up super early and still can eat all the egg dishes and croissants you want. And for two, it’s a meal best served alongside your favorite company.
I love treating my mom to brunch. We get all dressed up, listen to some epic music on the drive, eat the best food and have deep chats. My mom gives the best advice, and I could stay in her company for hours.
One day in particular that we always go out for brunch is Mother’s Day. It’s a great way to kick-off the festivities and make mom feel special. As this fun filled day approaches, I thought I would share some of my favorite places to brunch in the area. These aren’t all of my favs, but I will say they made the list for a reason.

Growing up, Rebecca Illingworth Penichot had a mother who worked in the restaurant industry and a father who was a restaurant architect. Later, she put herself through college waiting tables. “Once you’re in hospitality, you end up getting hooked on it,” she says.
It’s no wonder that she eventually decided to open her own restaurants. Her second one, Tinto Kitchen, is located in Minneapolis and offers authentic Latin-inspired cuisine, including hand-made tortillas made fresh daily.
Today, it’s a real family affair. Her husband, Thierry Penichot, is the executive chef, and her son helps in the restaurant when he’s home from college. “It’s so nice to have the family working together,” says Rebecca. “My husband doesn’t brag about
himself, but he’s a very talented chef. He really elevated my recipes to a level that I didn’t even know was possible.”
Thierry was an executive chef for Hilton World Properties for almost 20 years and has worked in the finest kitchens all over the world including Germany and Dubai. “It’s in my blood,” says Thierry. “I grew up cooking, traveling and meeting people, and food for me was interesting and challenging. I like to use the skills I’ve learned and be creative.”
Rebecca is originally from Mexico City and didn’t come to the United States until she was eight years old. “I still have family in Mexico and my palate is something that will always be in me,” she says. “I can’t imagine a life without spice.” She has collected many recipes from her family and her travels.
Tinto Kitchen, which opened in 2015, has been voted best Mexican restaurant in the area not just for its food, but for its cocktails as well, especially the margaritas. “What makes
them so special is we use fresh ingredients such as fresh lime juice, which makes a big difference,” says Rebecca. “We’re a fresh kitchen and that translates all the way through to our craft cocktails.”
While the food that’s served is important to any restaurant’s long-time success, she believes it’s the culture that matters a lot too. “I’m a strong believer that a good leader realizes that the success of a restaurant is not just one person, but a team of people,” she says. “We are very fortunate to have a team that has been with us for almost a decade that are helping us create a culture that is friendly and welcoming. Customers often come in to see our staff, which really makes us happy. My family isn’t just my husband and my son - it’s the entire staff.”
She adds, “We’ve put our heart and soul into this restaurant, and we wouldn’t have succeeded without our amazing team, or of course, our community. They are a part of our team as well.”
Consistency, Rebecca feels, is another crucial aspect of any successful business. “My husband uses his background and talent to train his staff to prepare food exactly as he does, so whether he’s there or not, the food is consistent and that’s just such a big key to a successful restaurant.”
Cinco de Mayo falls on a Friday this year, and the restaurant plans to celebrate all weekend long. “We’re going to have a DJ, some live music, and special menu items,” she says. “On Saturday and Sunday, we’ll have a Cinco De Mayo brunch.”
The restaurant is popular with people, and their pets. “We have a very dog-friendly patio, and I feel like it’s become a landmark on 50th and Penn,” says Rebecca. “It’s really become a great dog spot because
people come off the lake and then come over and have a margarita or join us for lunch or brunch.” Last summer, the restaurant offered puppy beer (aka chicken bone broth) and that was a hit, both with the dogs and their owners.
“They deserve treats too,” she says. “Thierry and I rescue dogs and have two that are 7 years old. Both of them came from incredibly sad backgrounds and we enjoy being able to provide a loving home where they can regain trust. They just want to be loved.”
The restaurant business is hard, but Rebecca was raised to meet the challenge. “My mother, Matilde, who goes by Mattie, was a single Mexican mom and seeing her work from night to day every day to support me certainly influenced my work ethic and values. As I
tell my son, don’t expect people to give you anything. You have to work for it, and if you do, you’ll one day be rewarded.”
Rebecca was also a single mom for 10 years when she ventured into the restaurant industry. “I was happy to be able to teach my son some of those same values and then I was blessed to have Thierry come into our lives and complete it,” she says. After living in Minneapolis for many years, she and her family moved to St. Louis Park, where she graduated from high school. Her mother still lives there.
“I’m proud to be a member of the Minneapolis-St. Paul Latin community, which is very strong,” says Rebecca.

If Mom likes strategizing, challenge her to a friendly board game competition. (And, no, you don’t have to let her win just because it’s Mother’s Day.)
This activity is especially fun if you have a lot of kids who want to get in on the action. Then, when you all get home, you can whip up a treat for Mom with your selections. (Maybe give her a strawberry in a Champagne glass while she waits.)
There’s no day like Mother’s Day to be impulsive! Book a weekend trip for the two of you at a cute B&B in a city Mom has always wanted to visit.
Find a puzzle with an image you know your mom will love (or make a custom one using a photo of the two of you) and put it together over wine and snacks. You’ll be amazed at how much chatting you can get done while puzzling.
Go to a play or a musical — lots of towns even host outdoor theater events.
Whether you make the brews and treats yourself or head out to an official tea house, Mom will love sipping her beverage out of fancy china and snacking on tea sandwiches.
A curated selection of the most intriguing upcoming events in our area.

Kowalski’s is proud to be the very first retailer in the U.S. to carry Spring Lake Ranch 100% Organic Grass-Fed Beef.
Kowalski’s new 100% Organic Grass-Fed Beef comes to us from Spring Lake Ranch, a beef cattle ranch in the “Napa Valley” of grasslands, the Sandhills region of Nebraska. This area has a rich cattle-raising tradition, in part due to its long grazing season that provides both warm- and cool-season grasses for livestock.
Kowalski’s Meat & Seafood Director Troy Schmeling had the opportunity to visit the ranch late last year as the program was getting off the ground. Spring Lake Ranch, named for the lake at its center, is located on one of the most ecologically diverse grasslands in the world. Ideally centered on the Ogallala Aquifer, the lake provides the cattle with an abundant natural source of water.
“It was an easy place to fall in love with,” says Troy, “with rolling green hills as far as one could see, dotted with large, sprawling ranchlands and cattle scattered all across those acres.”
laboratory, an innovative ecosystem in a real-life environment using iterative feedback processes to create a sustainable impact. Importantly, Tarpoff and team employ experts in regenerative agriculture to optimize grazing plans that improve soil and grass health as they work towards regenerative organic certification.
Kowalski’s 100% Organic Grass-Fed Beef is characterized by:
• Incredible flavor
• Superior tenderness
• Best-in-class marbling
Ranch Manager Nick Tarpoff greeted Troy and company at the ranch house and offered insights into the success of this program. According to Nick, the ranch is a 20,000-acre organic living
“What makes this program even more unique is that these animals spend virtually their entire lives in one place,” explains Troy. “The beef processing plant that the animals are harvested at, as well as the finishing station that gets them prepared for harvest, are on-site. These logistics vastly reduce stress on the animals, making for not only an incredibly humane program but one that is producing a grass-fed product I’ve never seen before in terms of quality, marbling and consistency. The cherry on top of it all is that it’s also certified organic.”
