REFINED DESIGN

Go Somewhere. Try Something. See What Happens.

Honestly? This issue was one of my favorites to put together. Maybe it's because the theme, explore, is basically just permission to be curious. And around here, we never really need an excuse for that.

We're big fans of Leopold Bros. Distillery, and if you haven't been, please go. It's the kind of place that makes you feel good about where you live. We talked with the team about what it actually takes to build something from scratch in Colorado, and the answer is equal parts grit and genuine love for the craft.

And then there's Jen Cohen. If you're not already following her, that changes today. She talks about building confidence and chasing what you actually want out of life, and she does it in a way that feels like a pep talk from a really smart friend, not a lecture.

We got a little dreamy this month and took you to Split, Croatia. Look, we know not everyone is hopping on a flight to the Adriatic anytime soon. But sometimes you just need to read about a walled city on the water and let your mind go there for a few minutes. You're welcome.

And closer to home, we went looking for what Denver looks like after the sun goes down. Turns out, the answer is pretty great.

Good stuff in here this month. Hope you enjoy it as much as we enjoyed making it.

WHERE NEIGHBORS CAN SEE AND BE SEEN

1-7: Who would have thought you’d find twelve masked wrestlers throwing down in the middle of Park Hill? That’s exactly what’s happening at DANG Ice Cream in Oneida Park, where Hugo’s Lucha Libre brought their Monday Mayhem series to the neighborhood — and the neighborhood showed up. Families spread out, kids pressed against the barriers, and neighbors who probably just came for ice cream ended up staying for the whole show.

Where East Meets RiNo

MAKfam started as a New York City pop-up, grew into a Denver food hall staple, and earned a Michelin Bib Gourmand on South Broadway. Now chef Kenneth Wan and co-owner Doris Yuen are planning a second location in RiNo — bigger space, full bar, table service, and room to experiment. With a James Beard pedigree and a loyal following already built, the next chapter looks like one of Denver's most anticipated openings.

Rooted in RiNo, Growing Into the Triangle

Green Seed Market has been a quiet cornerstone of Denver Central Market since 2016 — the kind of place regulars build routines around. Now owner Zach Spott is giving it room to breathe. A new Golden Triangle location at 939 Bannock St. will expand the concept into a full brick-and-mortar experience alongside a sandwich counter and Novo Coffee, all under one roof called Triangle Provisions. It's a neighborhood market with real staying power.

Back to Blake Street

Great Divide has been pouring Colorado craft beer since 1994, but the brewery is writing a new chapter in RiNo. After shuttering its previous Denver taprooms, the brand landed at 3040 Blake St. in the former Stem Ciders space, now its only Denver location. The reimagined Brewery & Roadhouse brings a full food menu, rotating small-batch pours, and weekend brunch to one of the city's most energetic corridors.

TAKE YOUR NEXT VACATION WITH EFFORTLESS FLAIR

YOU WORK HARD ALL YEAR—YOUR VACATION STYLE SHOULD FEEL CINEMATIC, EFFORTLESS, AND UNMISTAKABLY MAIN CHARACTER.

Effortless vacation style isn’t about having the perfect outfit for every moment—it’s about having the right foundation to make every moment look intentional. When you know how to build a capsule travel wardrobe, you’ll avoid agonizing over what to wear and spend more time actually enjoying your getaway, all while looking like you have a personal stylist tucked in your carry-on.

Here’s your go-to list for this season’s travels:

1. THE EFFORTLESS STATEMENT SET

A coordinated two-piece (linen, silk, or cotton) that transitions from day to night. Sets are easy to wear, photograph, and offer effortless ways to look put together. Bonus: you can mix and match the pieces with other items that you pack. I would recommend packing multiple sets to make it even easier to mix and match. For both men and women, simply focus on neutrals and, if you want to add color, make sure it coordinates well with other items in your luggage.

2. THE MOOD-ALTERING PIECE

A sweeping dress in a bold print or luscious fabric that makes you feel sensual, grounded, and free. Find something that moves with you and captures light beautifully. This is your dreamy piece— flowy fabrics with movement that captures the eye and works for any kind of event.

3. THE LUXE FLAT OR SCULPTURAL SANDAL

Find footwear that balances style and comfort. Look for interesting shapes or materials (like leather with architectural cutouts or metallic finishes). More than shoes—they’re anchors for adventure, grounding your aesthetic wherever you land. This goes the same for men. Your footwear can also make an impact through the braided details of your sandals or the canvas of a casual slip-on loafer.

4. THE TRANSITIONAL THIRD PIECE

Think: kimono, over-sized linen blazer, a lightweight duster, or a gauzy button-down left open. This is your layering hero that adds polish without effort. It’s an aura amplifier that instantly makes your outfit feel styled and intentional.

5. INTERESTING AND IMPACTFUL SUNGLASSES

Sunglasses with personality are a must. They could be over-sized, cat-eye, or tinted lenses that feel more like “cinematic escape” than “just functional.” Because you’re not sightseeing—you’re starring in your own travel film.

6. A SCULPTURAL CARRYALL

A bag that holds your essentials but looks like art— think woven textures, unique shapes, or buttery leather. Practicality meets poetry. You deserve a vessel that carries your dreams...and your SPF.

7. SIGNATURE SCENT OR TRAVEL CANDLE

Pack travel-sized fragrance or a tiny candle that evokes your essence or complements the location. Scent is meant to ignite memories and set the tone— infuse your travels with an olfactory signature.

8. ACCESSORIES WITH A STORY

A few intentional pieces such as a ring from a market you found during your travels, a layered necklace that serves as an easy throw-on, or a straw hat to protect your face from the sun (even if it’s a cooler climate, because remember, safety first: don’t get burnt).

Leopold Bros. has been quietly making world-class spirits in Denver — here's what most people are missing

COLORADO IN EVERY DROP

1. YOU'RE MAKING SPIRITS RIGHT HERE IN DENVER.  WHAT ABOUT THIS CITY, THIS NEIGHBORHOOD, THAT SHOWS UP IN WHAT YOU'RE CREATING? Denver is our home.  We grew up here, so our feelings about Colorado and our community show up in everything we do.  We ferment and distill 200,000 lbs of Palisade Peaches every year.  We also malt, ferment, and distill hundreds of thousands of pounds of Colorado Corn, Rye and Barley.  Colorado is literally in everything we make!

2. WHAT DOES A TYPICAL DAY LOOK LIKE FOR YOU, AND WHAT PART OF THE PROCESS DO YOU LOVE MOST?

A typical day is filled with Dad jokes, technical decisions like how's a particular fermentation or aging regime is fairing, and long term planning.  We have to look at where a Bourbon or our Peach Brandy, for example, will behave in over 10 years of maturation in casks.  I love it all, and there is very little of my day that I don't enjoy.  I'm the luckiest man you'll ever meet.

3. WHAT'S SOMETHING MOST PEOPLE DON'T KNOW ABOUT DISTILLING THAT WOULD SURPRISE THEM IF THEY WALKED THROUGH YOUR DOORS?

There's not much that doesn't surprise folks about what we do here.  Coloradoans understand beer. I think a right of passage for Coloradans is a brewery tour at places like New Belgium, or Bierstadt Lager House.  It's right up there with a show to Red Rocks, or buying a Subaru.  But I think folk treat me like a bit of a wizard, because they don't understand distilling.  It's like a black box to some folks, and most folks can't wrap their head around the fact that everything we put in bottles in turned into a gas at least once!

4. IF SOMEONE READING THIS HAS NEVER VISITED YOUR DISTILLERY, WHAT'S THE ONE REASON YOU'D WANT THEM TO COME IN?

It's just a big piece of your culture in Colorado that most don't get to enjoy.  A tour shows you a combination of science, craftsmanship, bad puns, agriculture, engineering, architecture, water conservation,

and art.  There's really no place like Leopold Bros. anywhere in the country, and distillers from all over the world come to see the things that we do that no one else does.  It's quite humbling.

5. WHAT MAKES YOU DIFFERENT THAN ANY OTHER DISTILLERY?

We're the only distillery in the world that has a Three Chamber still that's produced whiskey and Peach Brandy.  We're also one of two distilleries in the world that malts 100% of the grains it uses.  We're also the only distillery in the world that produces Vinegars made from Peach and Pear Brandy. I could go on....

6. WHAT'S NEXT FOR YOU?  IS THERE SOMETHING NEW YOU'RE WORKING ON THAT DENVER SHOULD KNOW ABOUT?

We just released a line of vinegars made from Peach Brandy.  Each bottle has 6 pounds of Palisade Peaches in them. This was a staple of SouthEastern cooking (think South Carolina and Georgia) in the 1800's and folks will get to enjoy our Peach Brandy Vinegar for the first time in over 100 years.

Old Stones, Open Water: Split, Croatia Belongs on Every Traveler’s List

From Roman ruins to the Adriatic Sea, Croatia's crown jewel is closer than you think

We spend so much time chasing altitude here on the Front Range, summit after summit, trail after trail, that it's easy to forget the world holds another kind of breathtaking entirely. Croatia's Dalmatian coast has been quietly collecting admirers for decades, but Split, its crown jewel, is the kind of place that turns a curious traveler into a devoted convert. Pack light, leave your fleece at home, and point yourself toward the sea.

GETTING THERE FROM DENVER

The journey from Denver International Airport to Split requires one connection, and the most common routing goes through London Heathrow, Frankfurt, or Amsterdam before landing at Split Airport (SPU), roughly 20 kilometers outside the city center. Denver travelers now have a particularly convenient option: United Airlines has begun offering a routing through Newark Liberty International, making it one of the more seamless connections you can book straight from DEN. Total travel time runs between 14 and 18 hours depending on your layover, which sounds daunting until you're sipping a glass of local Plavac Mali on a sun-drenched terrace and realize every minute was worth it.

WHERE TO STAY: LE MÉRIDIEN LAV

For Denver travelers accustomed to a certain standard of comfort, Le Méridien Lav Split delivers without compromise. Perched on the cliffs of Podstrana, just minutes south of the city center, this property offers panoramic Adriatic views that will genuinely stop you mid-sentence. The rooms are sleek and modern with floor-to-ceiling windows that frame the sea like a living painting, while the hotel's private beach, multiple pools, and spa make it alarmingly easy to never leave the grounds.

THE OLD CITY: A LIVING RUIN

Here's something that doesn't exist in Denver, or really anywhere in the American West: a 1,700-year-old Roman palace that people still actually live inside. Diocletian's Palace, built by the Roman Emperor Diocletian in the 4th century, forms the beating heart of Split's Old City, and it is

unlike anything you have ever walked through. The warren of narrow limestone streets, underground cellars, open-air peristyles, and centuries-stacked architecture is a UNESCO World Heritage Site — yet it hums with cafés, wine bars, boutiques, and families going about their daily lives. Get up early, before the tour groups arrive, and wander without a map. You will get lost. That is the point.

THE RIVA BOARDWALK

Running along the waterfront just outside the palace walls, the Riva promenade is Split's social spine. On any given evening, the entire city seems to pour out onto this broad marble walkway — locals, tourists, fishermen, kids on bikes, old men playing chess — all of them moving at that slow, deliberate Mediterranean pace that feels almost radical to anyone who commutes on I-25. Grab a coffee at one of the open-air cafés, watch the sailboats drift in and out of the harbor, and let yourself downshift. The Riva has a way of recalibrating your internal clock within about forty-five minutes.

THE SEAFOOD: MAKE ROOM

Denver has become a legitimately great food city, but our proximity to the ocean is, charitably speaking, limited. Split corrects this immediately.

CONTINUED >

Denver is a city that knows how to seek out extraordinary places — we do it every weekend in our own backyard.

The Dalmatian coast is a seafood culture built over centuries, and the results are spectacular in their simplicity. Fresh-caught branzino grilled over open flame with olive oil and herbs. Octopus salad, tender and bright with lemon. And then there is the squid ink risotto — crni rižot — the undisputed local favorite, darkened with cuttlefish ink and deeply savory in a way that's hard to explain until you taste it. For the definitive version, make a reservation at Bokeria, a beloved Split restaurant tucked into the heart of the Old City. The space is warm and intimate, the wine list leans heavily into Dalmatian varietals, and the crni rižot alone is worth the flight. Prstaci, the local date mussels, are a seasonal treat you shouldn't miss either. For a more elevated experience, Restaurant Adriatic delivers not only exceptional seafood but some of the most stunning views in the city — the kind of dining setting where the Adriatic stretches out before you in every shade of blue imaginable, and you find yourself pausing midbite just to take it in. Head to the Varoš neighborhood as well, just west of the palace walls, where family-run konobas (traditional taverns) serve the kind of honest, unfussy seafood that makes you question every landlocked meal you've ever eaten.

THE BLUE LAGOON

A short boat ride from Split's harbor — most operators run the trip daily in season — sits the Blue Lagoon near Šolta Island, and it earns its name completely. The water is a shade of turquoise that looks filtered, like someone adjusted the saturation in post-production, except it's entirely real. The clarity is staggering: you can see the rocky bottom from ten meters up. Swim, snorkel, float on your back and stare at the sky. Most day-trip boats include a stop for lunch on a nearby island, often with grilled fish pulled from the water that morning. It is, by most reasonable measures, a perfect day.

THE BOTTOM LINE

Denver is a city that knows how to seek out extraordinary places — we do it every weekend in our own backyard. Split is just a backyard that happens to be 5,600 miles away, soaked in history, washed by a sea the color of a dream, and stocked with some of the finest seafood you will ever eat. One trip, and you'll understand why Croatians never seem to be in a hurry. There is simply no reason to rush when you're already exactly where you want to be.

The 10% Target Mindset

Jen Cohen ON THE PRACTICE OF ASKING FOR WHAT YOU WANT

Winnipeg in the winter, and a 17-year-old waits 45 minutes in the cold for Keanu Reeves. Her fingers are numb. She is not there for an autograph. She is there to ask him to appear in her audition tape for MuchMusic, Canada’s MTV. When he finally agrees, she writes her number on a gum wrapper with a borrowed lip liner.

He calls days later.

That 17-year-old was Jen Cohen — fitness expert, host of the Habits & Hustle podcast, and best-selling author. She has built a career on the premise her frostbitten afternoon proved. She calls the practice the 10% Target: 10 attempts at whatever you want most in life.

The premise is simple. Most people never make one attempt. Almost nobody makes two. The math works in favor of the person who keeps going.

The top-rated Habits & Hustle podcast has logged hundreds of conversations with high performers and the people who study what the body does to the mind. Her TEDx talk, The Secret to Getting Anything You Want in Life, has traveled widely inside Fortune 500 sales-training rooms. On the Share the Lifestyle podcast, Cohen sits down to share the working rules that are the foundation of her latest book, Bigger, Better, Bolder.

“You have to be the CEO of your own life.”

MAKE TEN ATTEMPTS

The door opens, or another door does. The unmade attempt and the refused one leave you in the same place — except one of them teaches you something.

STACK THE DECK

Cohen frames her habits as a wager: How do I stack the deck so I win more than I lose? The workout happens first, and the food decisions follow. The email follow-up gets sent, and the answer arrives. The choices compound in a single direction.

3

DISCIPLINE IS A PRACTICED SKILL, NOT AN INHERITANCE

No one is born with it. The people who look disciplined are running a routine they have rehearsed long enough that it no longer feels like effort. The reps are the skill. Miss them, and the skill fades, the same as any other.

4

SELF-TALK ONLY WORKS WHEN THE BODY BACKS IT UP

Confidence does not arrive by repeating the word. It arrives after the body has done the thing — the workout finished, the cold walk endured, the email sent. The mind takes its cues from what the body proves it can do. Talk follows action, not the other way around.

5

NEVER MISS A MONDAY

The first decision sets the slope of the rest. Skip the Monday workout, and the rest of the week tends to follow. Hold the line on Monday, and the slope tilts the other way.

Fabulous Flatbread

This dish is from Chef Evon Profitt, the director of culinary operations for all of Westside Concepts in Arizona. This flatbread with grilled peaches, house-made rosemary paneer cheese, soppressata, fresh mint, and pistachios with a balsamic drizzle is to die for.

Grilled Peach Flatbread with House-Made Rosemary Paneer Cheese

Yield: 4 flatbreads

INGREDIENTS:

• 2 peaches cut into 8 pieces each

• 12 slices soppressata or any salami

• Fresh mint

• 1 tbsp. olive oil

• ¼ cup pistachios, chopped

• Balsamic reduction

• 4 baked naan bread

FOR THE PANEER CHEESE:

• 6 cups whole milk

• 2 tbsp. rice wine vinegar

• ½ tbsp. fresh rosemary, chopped

• 1 tsp. kosher salt

HOW TO MAKE PANEER CHEESE:

Paneer cheese is made by curdling milk using an acidic additive such as lemon juice or vinegar. Paneer cheese does not use any kind of rennet, nor fermentation or aging.

In a pot, bring 6 cups of whole milk to 200 degrees. Once milk has reached temp., stir in the 2 tbsp. of vinegar and turn off heat; milk will begin to separate. Allow milk to curd for 5 minutes, strain whey and curds into a cheesecloth-lined colander. Transfer curds to a mixing bowl and add chopped rosemary and 1 tsp. kosher salt, mix ingredients together, reserve the cheesecloth for the next step. Place the curds back into the cheesecloth, pull the corners of the cloth together, ring out excess whey from the curds, and hang for 30 minutes to continue draining. Once the curds have drained, place cheesecloth-wrapped curds back into the colander and place a heavy item on top, in order to press the curds into shape and press more of the whey from the cheese, for 3-4 hours. Use cheese fresh or keep refrigerated up to 4 days.

FLATBREAD:

Brush olive oil onto both sides of naan flatbread, and place in oven on rack for 10 minutes at 400 degrees, or grill for 2 minutes each side. Grill peach slices for 2 minutes each side, or place in oiled sauté pan till each side begins to caramelize. On a cutting board, lay flatbread down, and place grilled peach slices around flatbread. Take small pieces of Paneer cheese and place throughout over the peaches. Be creative and find place for the soppressata or salami of your choice. Garnish with crushed pistachios and torn fresh mint. Cut flatbread, transfer to serving plates, and drizzle with balsamic reduction.

“I love the use of fresh, locally sourced peaches, and giving people the chance to make an easy, versatile cheese at home with ingredients that many already have in their refrigerators and pantries.”

don’t go home yet

Denver summers were made for staying out a little longer

There is a moment in Denver on a July evening when the city quietly transforms. The mountains fade from pink to purple. The air, which spent all day radiating heat, softens into something far more generous—warm without heaviness, dry without harshness. The patio you've been sitting on since dinner stops feeling like an extension of the afternoon and starts feeling like the beginning of the night.

Most people don't think of Denver as a night city. For much of the year, it isn't. This is a place of early mornings, trailheads, farmers markets, and people who genuinely appreciate a reasonable bedtime. But July changes the equation. The days stretch so long that when evening finally arrives, it doesn't feel like a conclusion. It feels like an opportunity.

And it's one worth taking.

A Denver summer night unfolds in stages. The first belongs to the transition hour—that stretch after dinner when the city is still carrying the energy of the day but beginning to slow its pace. Sidewalk patios fill with conversation. Rooftops draw people in with expansive views and the simple appeal of staying outside a little longer. In LoHi, RiNo, and Cherry Creek, the skyline catches the last light while the Rockies settle into silhouette. On a clear July evening, few urban views feel quite as rewarding.

This is when the city seems most comfortable in its own skin. Neighbors linger outside restaurants, cyclists coast home along tree-lined streets, and parks remain dotted with people reluctant to call it a night. The pace softens. Conversations last longer. Even familiar neighborhoods feel subtly transformed by the cooler air and the fading light.

The second act belongs to the city after dark. Live music drifts from venues large and small. Jazz fills intimate listening rooms. Local bands take the stage in neighborhood spaces where the audience is there for the performance, not just the backdrop. Denver has long nurtured a strong creative streak, and summer evenings are when it feels most visible. You don't have to search very hard to find something memorable.

Across the city, outdoor movies flicker in parks, concerts spill into public spaces, and neighborhood gatherings stretch well into the evening. Throughout July, there is a shared understanding that these nights are worth making the most of. The energy never feels frantic or performative. Instead, it feels relaxed and intentional, as though the city has collectively agreed to slow down and stay outside a little longer.

The final act belongs to those who aren't in a hurry. A late meal shared with friends. A stroll through a neighborhood that feels entirely different after sunset. The food hall that's still buzzing long after dinner hours. The corner spot that has become part of someone's weekly routine. Denver rewards curiosity and patience. Some of its best moments reveal themselves only after the crowds begin to thin.

What makes July special, above all, is the sense of possibility. An ordinary evening can stretch unexpectedly. One plan turns into another. Time feels less structured, less urgent. The long daylight hours create the rare feeling that there's always a little more evening left to enjoy.

So the next time July hands you a free evening, take the hint. Stay out a little longer. Watch the mountains fade into the dark. Listen to the city settle into its nighttime rhythm. Denver may never be known as a city that stays up all night, but in July, it doesn't need to be. A few perfect hours are more than enough.

As daylight fades behind the Front Range, Denver’s July evenings prove that some of the city’s best moments begin after the sun goes down.

KIDS AND POPSICLES ARE THE PERFECT SUMMERTIME PAIR
