Former School Annex Site to Become Affordable SingleFamily Community Plans are in place for the former Ettrick Elementary School Annex site to become an affordable single-family community, called Ettrick Landing subdivision. After the school’s demolition, ownership of the property was transferred over to a land trust to keep the homes affordable into perpetuity even as surrounding real estate values continue to rise. Ettrick Landing will feature 10 affordable one- and two-story single-family homes that will serve families earning between approximately $35,000 and $75,000 annually.

Midlothian’s Brick House Diner Plans a Move and New Location Brick House Diner has plans in place to relocate from their current location in Midlothian further west along Midlothian Turnpike to Westchester Commons in a new, slightly larger building. They will continue to operate in their current location through 2024. Brick House has also signed a 10-year lease for the recently shuttered Kitchen 64 space at 3336 N. Arthur Ashe Blvd, which will operate as their new location. They plan on opening their new restaurant in January 2025.

New Oral History Project Launched by CCPL Chesterfield County Public Library (CCPL) recently launched Chesterfield Remembers, an oral history project that will be accessible through their digital library catalog. Chesterfield Remembers will serve as a way to collect and share stories about the people, places, and events of Chesterfield County. Review of Southside Speedway Complete The Chesterfield Economic Development Authority (EDA) recently hired a consultant to observe conditions at the shuttered Southside Speedway’s facilities.


That review is complete and was presented to the Board of Supervisors at the end of last year. Most notably, the consultant found that “the entire facility needs significant repair and or replacement to create a speedway with the safety elements needed,” as quoted by Chesterfield On Point. Options to redevelop the entire Southside Speedway site, with or without a racetrack, are now being considered by the Chesterfield EDA.

GRAND OPENING CELEBRATION Chesterfield Fire and EMS Dedicates Magnolia Green Fire Station Chesterfield Fire and EMS recently hosted a dedication ceremony at the Magnolia Green Fire Station No. 25 (6730 Woolridge Road). While the dedication ceremony originally scheduled for 2020 was delayed due to COVID-19, the station has been in operation since then serving the increased residential growth in the western Route 360/Hull Street Road corridor. This is the first station in Chesterfield designed with individual bunk rooms in order to accommodate a more diverse workforce.

Nutritious NEW YEAR

At the start of a new year, most people want to change the things they did the year before in hopes of becoming happier and healthier. What better way to start off 2023 than with wholesome, nutrient-rich foods? In celebration of the new year and their brand-new cookbook, The Gluten Free Spoonie, Becky and Logan Pickels of Midlothian share their freshest, most delicious recipes with Midlothian Lifestyle.

Vegetable Frittata I N G R E D IE N T S • 2 tablespoons olive oil • 1 1/2 cups mushrooms (sliced; 4 oz) • 1 cup bell peppers (cut into thin 1-inch strips; 4 oz) • 2 cups spinach • 8 large eggs • 1/4 cup heavy cream (optional) • 3/4 teaspoon sea salt • 1/4 teaspoon black pepper • 2/3 cup cheddar cheese (shredded)

DIRECTIONS

1. Preheat the oven to 350 degrees F (176 degrees C). Heat the oil in a 10-inch cast iron skillet over medium heat. Add the vegetables. Sauté for 6-10 minutes, occasionally stirring, until vegetables are browned and soft, and any extra moisture has sizzled away. Meanwhile, in a large bowl, whisk together the eggs, cream, salt, and pepper. 2. Pour the egg mixture into the pan and add the cheese. Stir together gently. Transfer the pan into the preheated oven immediately. Bake the frittata for 15-20 minutes, until the top is puffy but just set in the center.

Sweet Potato Chickpea Bake INGREDIENTS • • • • • • • • • •

2 sweet potatoes, peeled and cubed 1 onion, diced 1 red bell pepper, diced 1 yellow bell pepper, diced 1 can chickpeas 1-2 tablespoons olive oil 1 teaspoon garlic powder 1 teaspoon smoked paprika 1 teaspoon salt 1/2 teaspoon ground black pepper

DIRECTIONS

1. On a sheet pan, scatter the sweet potato, onion, bell peppers, and chickpeas. Drizzle with olive oil and some of the liquid from the chickpeas. Photo Credit: Ermes Rivera

2. Season with garlic powder, smoked paprika, salt and pepper. Stir everything with a spoon until the vegetables are well coated in olive oil and seasoning. 3. Roast in the oven for approx. 40 minutes at 395*F, flipping approx. every 15-20 min. Cook until the chickpeas are crispy and sweet potatoes are soft and golden. 4. Serve in bowls, top with tahini lemon dressing, sliced avocado, egg, or enjoy as is.

Brown Sugar Oatmeal INGREDIENTS • • • • • •

1 tablespoon butter 1 cup steel-cut oats 3 cups boiling water 1 cup whole milk 1 tablespoon brown sugar 1 teaspoon cinnamon

1. In a large sauce pot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce the heat to a simmer. Keep at a low simmer for 25 minutes without stirring. 2. Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Parmesan Basil Orzo I N GR E D IE N T S • • • • • • • •

2 tablespoons ghee 1 cup uncooked orzo pasta 1 (14.5 ounce) can chicken broth 1 ⁄2 cup grated parmesan cheese 1 ⁄4 cup chopped fresh basil salt and pepper to taste 2 tablespoons chopped fresh basil Choose your protein – shrimp, chicken, or pork

DIRECTIONS 1. Melt butter in a heavy skillet over medium-high heat. Stir in orzo and sauté until lightly browned. 2. Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed about 15 – 20 minutes. 3. Mix in Parmesan cheese and 1/4 cup basil. Season with salt and pepper. Mix in protein of choice. Transfer to a shallow bowl. Garnish with remaining basil.

Attendees and exhibitors spent the evening at Gather Short Pump connecting with one another and tasting delicious treats while exploring all that these local experts had to showcase. Meanwhile, rotating wellness presentations took place in Gather’s Shark Tank room. It was an enlightening evening of education, networking, and fun! Here we share some of our local health and wellness experts’ insights and inspirations. WELLNES S WARRIORS LO G A N A N D B E C K Y P I C K E L S Husband and wife team, Logan and Becky Pickels, are ISSA certified Personal Trainers, published authors, and co-founders of Wellness Warriors. Additionally, Logan is a certified Health Coach and Becky has a master’s in Occupational Therapy. They use their combined professional expertise and personal experiences dealing with numerous autoimmune diseases to help their clients transform their lives through healthier food, fitness, and lifestyle habits. “So many people think that living a life of wellness is difficult and ‘no fun!’ but that just isn’t true,” says Becky. “Honestly, I believe living a life of wellness is easier and more fun!” For Logan and Becky, it’s all about setting priorities and building a strong foundation that you can maintain long-term. “Overall better health and wellness is not a diet; it is a lifestyle. He was inspired to open their Richmond location with his mom, Patty Howle, after experiencing the impact that caring for his grandmother had on their family. Brannon and Patty understand that managing the care of a loved one who is elderly or disabled can be overwhelming for family members. GUIDING TREE YOGA CALEIGH SELIGMAN Caleigh Seligman is a registered nurse, yoga instructor, and the owner of Guiding Tree Yoga. She also holds certifications in Yoga Therapy and Prenatal Yoga and is a Reiki practitioner. “Wellness, to me, is striving to make small, healthier choices, more often than not, that promote balance, fuel your body, and counter the effects of stress and the environment,” explains Caleigh. So what’s Caleigh’s top tip for better health? “Move your body. That’s it,” says Caleigh. “As a nurse, when I met patients that were thriving in older age, movement was the biggest and most consistent theme in their vitality.” Yoga is her preferred form of movement because it, “builds strength, releases tension, and promotes flexibility in body and mind.” It also, “promotes self-awareness, love, and acceptance,” says Caleigh. The broader yoga community defines yoga as, “a remembrance and a practice of coming back to wholeness.” To put that more simply, Caleigh describes yoga as, “a personal journey of self-discovery and growth that doesn’t require purchasing things.” While Caleigh recommends getting started with the help of an informed yoga instructor, she loves that yoga can be done anywhere and anytime.
