The true spirit of Thanksgiving encourages the conscious outward expression of gratitude. This season naturally inspires us to give back in a meaningful way. While ambition, healthy competition, and achievement are worthy goals, forgetting to place importance on being present can leave us missing out on what truly matters. We’ll never be content looking outside of ourselves, and our relationship with God, to find fulfillment in material things. True contentment comes from within, and from the pursuit of fulfilling who we are meant to be. This entire life is filled with endless reasons to be grateful.

It truly is the greatest joy of my life to write the handful of stories here each month. This issue, especially, has had a much deeper, more personal meaning. While planning the issue, I had the honor to write the story about Alan Clark, his battle with cancer, and his relationship with Good Shepherd Homecare & Hospice myself. Shortly thereafter, for basically for the entire month of September, I watched my grandpa battle himself. He faced strokes, heart attacks, and the endgame of stage three cancer, alongside his final journey with hospice. I got to see, firsthand, the battle fought from everyone involved — from our family and the caregivers, to my grandpa.

He was comfortable in his final days and moments, and we were able to be with him. As Executive Director of Good Sheperd Homecare & Hospice, Christina Nolte said, “That’s the gift hospice gives. More moments, and more quality, and more time. Because you’re really focused on what is important at that time.”

Our November Issue is also about gathering, gratitude, and giving back to our community. We are so thankful for the residents and businesses in our community who support all of the wonderful organizations that help make our city vibrant. We are especially thankful for our advertising partners who help bring this magazine to your mailboxes each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you. This holiday season as we prepare to gather with our loved ones, and in the true spirit of Thanksgiving, let’s set time aside to consider what truly makes life meaningful, and stop to reflect on those blessings.

REMEMBERING THE LIFE OF ALAN CLARK, AND THE SHARING OF HIS FINAL JOURNEY WITH GOOD SHEPHERD HOME CARE & HOSPICE

We’ve seen his name a million times. It’s featured prominently in bold white letters on a stout, beige building, across the Viaduct on the west side of Bill Snyder Highway, K-177. Many of us have even had to use the services of his business. We’ve all seen and know Alan Clark Body Shop, but who was Alan Clark, the man?

Alan Clark loved doing what he was born to do.

Raised on a farm near Alta Vista, he attended Pittsburg State’s Auto Mechanics & Auto Body Repair program, where he quickly discovered his talent for artistically putting things together. Rebuilding cars on the farm, he found that he was able to visualize projects in three dimensions, envisioning the steps required to bring projects to completion.

In 1967, Alan moved to Manhattan and founded Clark Body Shop, one of Manhattan’s first independent body shops. Originally located in a rented building on Highway K-177, Alan built a new shop nearby, becoming Alan Clark Body Shop in 1969. The business moved to the current location at 2160 Pillsbury Dr. in 1982, as their first owned shop would then become the founding location of Briggs Auto.

Alan married Sharon Macy in 1969, and they had two children together, Alison and Ross. Alan and Sharon owned and operated the body shop before selling it in 1991. They celebrated the 25th anniversary, and then stayed on for another year before officially retiring. The shop retains Alan's name to this day.

A self-proclaimed ‘Wreck Builder & Fabricator,’ Alan wouldn’t purchase vehicles at a dealership, but instead

would comb through salvage yards, finding vehicles to rebuild and fix up. Sharon would drive them, and Alan would sell them. She never knew what she would be driving next! Alan also rebuilt Jeeps. He built at least five from the ground up, and would start with the frame, or the undercarriage. He would then modify them: lengthen, shorten, or widen. He would mainly do Scramblers, after CJ-8’s. A member of the Flint Hills Jeep Club, Alan and his dearly beloved wife of 52 1/2 years loved visiting Colorado, riding with the Colorado Scrambler Group.

In later years, Alan and Sharon spent a lot of time at the family farm redoing their fence. “Him and I, we started it and did them all,” says Sharon. “Then, with the new Highway K-177 project, we had to redo them.

Our ranch is on both sides of the highway, so he was proud to get the fences rebuilt - even despite fighting aggressive cancer. He took great honor in the conservatorship of the land. Our grandkids are the sixth generation owning different pieces of this ranch, after all!”

It’s not about giving up hope - it’s about changing what you're hoping for.

“We lost our son, Ross, in a car accident, 12 years ago.

I then started their outreach counseling program that they do for the community,” she says. “In January 2021, my mother went there, and I also had an uncle go there as well. As Alan progressed through his cancer, we always knew, even though we have a single-story house, that it would become unsafe getting in and out of bed, and that sort of thing. So, we discussed it, and he knew that’s where he wanted to be.”

“When the care reached that point, that's when Alan and Sharon made the decision the hospice house would be a better level of care, and we transitioned them here,” says Christina Nolte, Executive Director. “We became his 24-hour caregivers. We took on all of the caregiving they were doing at home. That allowed them time to share the final moments of his life.”

“I had one of the little suites, so I had a bed where I could sleep,” Sharon says. “So, I was able to always be there. My daughter works at [Flint Hills] Job Corps. She was able to come over on her lunch hour, and on her way home. She got to spend some quality time too. They helped our family navigate uncertainty with wisdom, mercy, and grace.”

“We want people to think that hospice is something more. When the hope of a cure is no longer feasible, then what are we left hoping for? We are hoping to pass peacefully, comfortably, with dignity, and free from pain. Those are still very valuable, very legitimate hopes.

Those are our goals under hospice. We’re changing the hope, and changing the goal,” says Christina.

lot, and Alan was thrilled to see it. Due to pandemic restrictions at the time, Alan’s family had been able to visit him, but friends had not. So, several of his friends came to the parking lot and were able to see Alan and the car. It was a bittersweet day for everyone.

“It was emotional for all of us," says Christina. “It was really special. He touched the Jeep, and it was running, and his family was showing him what they had done.”

“It was a representation of a lot of moments that happen here. You think about hospice and the sadness and the heaviness of that word, but I have witnessed more inspiring and beautiful moments of life through hospice than I could’ve ever imagined. That’s the gift hospice gives. It is about more. More moments, more quality, and more time. When you’re working with people who know that their time is limited, they’re spending their time with the people who are most important to them, and doing what is most important to them.

That’s where the quality of life comes from — and that's what we get to see here.”

GOING OUT IN STYLE

November is National Home Care & Hospice Month. Good Shepherd Home Care & Hospice is a 501(c)(3) non-profit organization, offering at-home care, palliative home health care & hospice. Serving seven surrounding counties, it is the only hospice house in Riley County. They serve individuals regardless of insurance status or ability to pay. The grief counseling program meets each Wednesday from 12-1pm at St. Thomas More Church. Learn more at goodshepherdhh.org

Alan’s last project was a 1972 Jeep Commando. It was an off-frame restoration, and in his final year, he was unable to get it completed. A family friend, John Poole, helped move things along. While Alan was still at home, John would come up to the house and ask questions on how to do things. John would offer his thoughts, Alan would listen to his suggestions, and then say, “Or…we could do this!” John worked day and night to get it together. He was able to bring the Jeep to the Good Sheperd parking

YOU WERE BORN IN TRINIDAD & TOBAGO, AND RAISED IN THE VIRGIN ISLANDS, IN ST. CROIX, BEFORE MOVING TO TEXAS WHEN YOU WERE 10 YEARS OLD. WHAT WAS LIFE LIKE GROWING UP IN THE CARIBBEAN? Great! We lived a half-mile from the beach. The weather was wonderful. Every weekend we did a bunch of great family things on the beach. You didn’t have to wait until summer to go — we could go every weekend!

WHAT WAS YOUR FIRST STEP IN COACHING BASKETBALL? I started working at a local YMCA, and was substitute teaching. I was having lunch with my youth pastor, Mike Allard, and he asked, “Jerome, what is it that you really want to do?” I said I really want to be the youth pastor at a church that has a Christian school, and I’d coach the basketball team.

Two days later, Dr. Cooper calls and says she’s looking for a basketball coach, a Christian guy. He gave her my number, and she calls me. I then drive to Cleveland, Texas. The guys said, “We prayed that God would send us someone that would stay for at least two years.” They had had five coaches in four years. I went home, and told my mom, “Nah, I don't think I’m going to take this job.” I went to bed, and clearly knew God told me I was going to take that job.

So, I took it, and started coaching. In December, a teacher left, so I taught some classes. Then, in June of that next year, the youth pastor left. So, less than a year after I had lunch with Brother Mike, I was the youth pastor at a church, and coaching the basketball team. I was there for ten years! It was awesome.

HOW DID YOU CONNECT WITH SCOTT DREW AND BAYLOR? Our four state championships were won at Baylor University. Ten years later, Scott Drew gets the job there. I don’t know him from Adam, and he doesn’t know me. At the beginning of building the program, Scott had called three people, and all three happened to mention my name.

Scott’s first commitment at Baylor was from Africa, and still in high school. I was thinking, well, he has to place him [at a high school]! So I tracked down Scott’s number, and left a message for him before church. He calls back on Sunday night at like ten o’clock. I gave him the whole spiel about our school. He then says, “Hey, well he promised his parents he would graduate from his school in Africa, so he isn’t coming over now.

But, I would really like to meet you!”

To me, those were code words. It wasn’t a good thing. I had other coaches who said they wanted to hire me. But, they were just doing it because they thought it would give them an in to recruit the kids I coached. I said, “Coach, we don’t have to meet. I’m going to know if you’re a good guy, and if you are, you’re going to have no problem recruiting the kids that I coach.”

The worst thing in the world you can do is tell Scott Drew no. So, now he’s hunting for it! If I hadn't recently had the bad experiences with the other coaches, I would’ve loved to have met [him]. it was like, “why is he not wanting to meet?!” He called at 10, it’s now 11, and he’s still hounding me to come visit him. So finally, to get him off the phone, I told him I would see him on Tuesday.

We chatted in his office for three and a half hours! We get to talking about movies, a little about basketball, and life, and really hit it off.

But, you just don't hire people you don't know.

So, I gave him a hug and said, “Coach, if God wants me at Baylor, there’s nothing you can do to stop it. If God doesn't want me at Baylor, there’s nothing you can do to make it happen.”

On Thursday, he called his dad, Homer [legendary head basketball coach at Valparaiso University], and tells him, "I’m going to hire this guy from Georgia. But, man, I really like this guy from Texas.”

Homer then asked, “Why don't you hire the guy from Texas?”

“Well, I don't know him.”

“Go eat dinner at his house. If you have dinner at a man’s house, you’ll find out everything you need to know about him.”

So, Thursday, Scott Drew calls and asks to come over for dinner on Saturday. [My wife] didn’t even know I went to Waco! We round up everything we have. We had $10.81. Her dad had cooked a slab of ribs, and we had a half slab leftover. So, we bought another half slab that was already cooked. We bought potato salad, and that was going to be the meal. We sat down, ate ribs, talked, and had a great time. After we got done, he said, “The job is yours.” So, he didn’t know me, and I didn’t have a degree. But, we got the job — and we had insurance! And they helped me get my degree!

YOU’RE MARRIED TO CAREYLYEN, (PRONOUNCED KUH-RAY-LEE-EN), WHICH HER MOTHER PREFERS, BUT SHE GOES BY REY. WHEN DID Y’ALL GET MARRIED? Rey: We met September 7th, 1996, and got married in 1997.

Coach: We met one month before my 30th birthday, and were married 11 months later.

Rey: We dated for five, and were engaged for six.

YOU HAVE A SON, SEVEN, AND A DAUGHTER, AYLYN. HOW OLD ARE THEY, AND WHERE ARE THEY? Rey: Aylyn is just down the hallway, and Seven is going to school here. She’s 18, and he’s 21.

Coach: I also adopted two kids when I was single.

Lamar is 36, and Richard is 33. Lamar and Bethany are married, and live in Portland. Then, Richard and Leah are married, and they live in Vegas.

HOW IMPORTANT IS YOUR FAITH TO YOU? I don't know how people do life, much less coaching, without faith. You have got to have something that is your foundation. Regardless of what happens in this game, you yourself must be stable. Without it, I don't know how you make it.

WHY KANSAS STATE? Rey: Because the colors are purple and white!

Coach: Every time there was a job that was of interest, or someone would call, she’d ask, “Is purple in their colors?” One time, I was really passionate. I said, “Babe, there’s only like five schools in America with purple! We won't go to a school that has purple!” I actually said that!

WHAT’S YOUR FAVORITE THING ABOUT MANHATTAN SO FAR? Coach: The people.

Rey: The people.

Coach: The people have been wonderful.

They’re warm, receptive, passionate, and caring.

Rey: And they wear purple!

Coach: The trash cans are even purple!

Rey: Seriously, the people really are all of the above!

Coach: The people are extremely great. The passion that you feel for this University, and the synergy between the town and the University is real. It’s special.

WHAT IS THE LEGACY YOU WANT TO LEAVE BEHIND ON THE BASKETBALL COURT? I want people to say I made them feel special, and they were important to me. That I cared about them as human beings, and as people, instead of just basketball players. Nothing about wins and losses. I think if we focus on that, everything else will take care of itself.

FROM OUR READERS: CAM MORSE ASKS, “WHAT IS YOUR FAVORITE CARIBBEAN ISLAND TO VACATION AT?” Coach: Which one did you like?

Rey: We’ve been to what, three?

Coach: St. Croix, St. Thomas, and St. Lucia. I’ve actually been to Puerto Rico, and thought it was fantastic. Rey hasn’t ever been there with me.

Rey: I would say St. Croix. I would say that because he has family there, and because I can drive on the left side of the road!

@DAKTOTHEFUTURE ASKS, “WHO HAS A BETTER RECORD AT PING PONG, YOU OR [ASSOCIATE HEAD] COACH ULRIC MALIGI?” We have only played two games of ping pong so far, and he has beaten me in both. But, there will be some rematches coming soon.

TO CONCLUDE, JOHN J. ASKS, “HOW MANY NATIONAL CHAMPIONSHIPS WILL YOU WIN WHILE AT KANSAS STATE?” I don’t know how many we’ll win at Kansas State, but we’ll win one here for sure!

Insider Tips for Hosting:

• Build a menu around the season. “In November, people crave turkey, sage stuffing and cranberry sauce,” Chef Kyle says. “Autumn dinners mean bigger-course meals with varied proteins, like turkey, duck and sirloin, hearty starches, and good fall produce, especially root vegetables such as butternut squash and pumpkin.”

• Always greet guests with a beverage and appetizers.

“Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says.

• Draw inspiration from the season’s changing colors, cooler temps and lower humidity to move back outdoors.

“Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.”

• “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with burnished brass for warm fall vibes.”

• An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.”

• Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us.

Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing.

When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.”

• To build confidence as a host, start small and practice.

“Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!”

• As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.”

What does a chef make for Thanksgiving?

For this article, Laura Clement, Head Chef of Arrow Cocktail Lounge, shared one of her favorite family recipes that uses an often-overlooked delicacy: giblets.

GIB L E T GR AV Y INGREDIENTS • Turkey giblets: the liver, heart, and neck • ½ teaspoon salt (or to taste) • ½ teaspoon finely chopped sage • 2 chopped hard boiled eggs • 4 cups water • All-purpose flour DIRECTIONS 1. Boil the liver, heart and neck of your turkey until tender — about one hour.

2. Remove giblets and chop into small pieces.

3. Pull meat off neck bone and add all meat to the broth. Reheat to boiling.

4. Add salt and sage.

5. Add hard boiled eggs to the broth.

6. Stir flour and water together to make a thickening. Stir quickly as you’re pouring in the thickener. Keep adding flour until you achieve desired consistency.

7. Pour finished product over turkey, mashed potatoes, or anything else on your Thanksgiving plate!
