Welcome to October! It’s the best month on the calendar, and the highlight of the best season of the year. With the leaves changing and the temperatures continually dropping, this interval of time brings forth a shift in the decadence we are craving. While you can certainly still wield an outdoor grill or smoker, October is the month when we start to exchange our grilling tongs for Instant Pots & slow cookers! In honor of this wonderful food month, October is our most delectable issue of the year. It’s our Food + Drink Issue, filled with some of the very best things about Manhattan: eating, drinking, and tailgating! We take you on a journey around Manhattan, meeting a handful of homegrown, artisan food trucks, as they share their unique twists on a wide world of culinary styles. We had the pleasure of sitting down with the famous chefs of Kite’s Aggieville Draft House, Bud & Bobby Cox, as they teach us how to make one of their favorite Southern tailgate recipes — BBQ Spaghetti! With K-State football in full swing, and a few more home games left on the calendar, we show you some of MHK’s favorite spots for game day eats & treats! Then, in honor of spooky season, we take a tour of Manhattan’s most enigmatic fun adventure at Locked Manhattan! There is an art to creating a flavorful dish that not only satisfies our taste buds, but evokes a lifetime of memories and stories. There’s a certain power and comfort in the aromas of certain spices and foods that take us right back to our childhood kitchen tables. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Hillside Cafe Continues David Silva's Legacy A local favorite since 1990, Hillside Cafe is known for its warm service, delicious burgers, and fresh, homestyle Mexican cooking. The restaurant's founders David and Lourdes Silva hail, respectively, from Mexico City and Puebla, Mexico, both known for their culinary histories. Vista Drive-In: Family-Owned for Nearly 60 Years Manhattan's most iconic restaurant has been family-owned and operated since its opening in 1964. Founders Charles and Martha Streeter passed the restaurant on to their son and daughter-in-law, Brad and the late Karen, who oversaw operations. The couple worked alongside their eldest son, Andy, who is the General Manager, while their youngest, Matt, runs the website and the Vista Food Truck. JAMMIN JA MA ICA N Jammin Jamaican’s owner, Horace Thelwell, has been mastering his craft as a chef for over 25 years. A native of Negril, Jamaica, known for its stunning beaches, Horace immigrated to the US almost a decade ago and opened Jammin Jamaican in 2019. It’s officially spooky season. If you’re looking for something to do that captures the spirit and sense of adventure of Halloween, look no further than Locked Manhattan. Founded in 2015, Locked offers six unique escape rooms designed by co-owners Zach Droge and Jess Tegethoff. In an escape room, you work with a team to find clues, complete tasks, and solve puzzles, all of which culminate in finding a key that enables you to “escape the room” within a designated period of time. Jess and Zach both have backgrounds as artists, which has been instrumental in their success as escape room designers. “Don’t let anyone tell you art history isn’t useful,” says Jess, as she shows us “Leonardo’s Last,” a room themed around Renaissance polymath, Leonardo da Vinci. In addition to her academic background in art history and metalsmithing, Jess has a professional background in hospitality management. Her skillset in hiring, people operations, and finance proved essential in the early stages of the business, when she and Zach were running all parts of the business themselves. Zach earned his Bachelor’s of Fine Art from K-State, where he studied Sculpture. He now also works as a software engineer, which no doubt sharpens his creativity and puzzle creation ability. Each room at Locked has a distinctive theme and story, which requires months of planning and research before it is ready for the public. While many escape rooms purchase their puzzles from large companies, Jess and Zach design every last detail themselves. As a result of this time-intensive process, Locked reveals one new escape room (and retires one room) each year. Read on for details about each room.

The Witching Hour • Locked’s most popular room • Best room for beginners • You and your team are tasked with stealing a suspected witch's spell book and escaping her house. The Dinner Party • Good for intermediate players • You and your team have been ordered to investigate the primary suspect in a string of recent murders. Leonardo’s Last • Good for experienced guests • You and your fellow apprentices have accessed Leonardo da Vinci's private study in order to find an explanation for his mysterious disappearance. Exit Strategy • Good for intermediate players • Exit Strategy and Enter Sequence share a storyline, but each room has its own set of puzzles. • You and your CIA colleagues have gained access to the warehouse suspected to house a war criminal’s lab. You must surreptitiously gain access to her criminal team and protect society from her nefarious plans. Enter Sequence • Good for beginners • With the help of a shady hacker, you plan a stealth mission to find out exactly what weapons technologies are being crafted in an old ammunition storage warehouse. Order of the Veil • Perfect for Halloween • The spookiest room: scary & dimly lit • Spider imagery & jump scares • Since childhood, you’ve heard tales of strange figures lurking in the forest. INGREDIENTS • 4 pounds of cooked spaghetti noodles • 2 quarts of BBQ sauce • 2.5 pounds of smoked meat: Bud & Bobby recommend a combination of pulled pork & brisket DIRECTIONS 1. Mix sauce & smoked meat together in a saucepan. 2. Stir in spaghetti, and continue warming until sauce becomes hot. 3. Pour mixture into large pan. 4. Place in pre-heated, 325 degree oven for a few minutes, until sauce begins to thickens. 5. Remove, top with smoked sausage and shredded Parmesan cheese. 6. Cover with foil, and then warm up on a grill on low! -Garnish with fresh parsley!

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
